Introduction
AnumberofpeoplehaveaskedmetowriteasimplepaperconcerningwhyIapparentlylost30 poundsoffatwithouteffort.Thispaperistheresult.Itsnotfancy,writteninPoMoBabble,ora registerthatfewacademicsorpriestsunderstand,butinasimple,straightforward,directway. ThatdoesntmeanthattheresnotagooddealofresearchorunderstandinginwhatImabout to say, its just that Ive noticed that people tend to use logic to justify their emotions. Ive noticed this particularly in academia (18 years of tertiary education can do that to you). It soundslikeanoxymoron,butsmartpeopleareprettystupid.Thewordstupiddoesntmean unintelligent;itmeansunawareofyoursurroundings:inastupor.Wealldothistosomeextent. We are comfortable with the things that surround us. We like them. Any change in our environmentorthewaythatweorganizeourworldcausesusmilddistress.Yet,ourbehaviour does not make any sense to someone who has a more distant perspective. This, then, is the purpose of this little manual: to give a headoutofthesand, larger perspective to our eating habitsinoursocietytoday. Inessence,Ivefoundoutthatthemajorityofproblemsthatwearefacingwithregardtodiet andhealthinourlivestodayisduetotheslowmovingchangeawayfromthedietthatwewere designed to eat by nature and moving toward food that is convenient to store. We developed thesestoragetechniquesinNorthernEuropetogiveussomethingtoeatduringthefamineof winter. To do this, weve had to change the very nature of the food so that it wont decay. Unfortunately,thistransmogrification(asCalvinandHobbeswouldsay)altersyourbodyafter youingestit.Youarewhatyoueat.Moresimply,ifyoupreservecucumbersbyputtingthemina chemicalbathandtheneatthem,youpickleyourself.Theresultisfarfromhumorous.Incidence ofcancer,CeliacDisease,IrritableBowelSyndrome,CrohnsDisease,AcidReflux,andespecially obesity etc. are exploding out of control, particularly where people eat famine food. The good news is that the problem is clearly identifiable and easily eliminated. Really; its easy. The problem is that you have to change the way that you think and eat in order to regain your health.Youhavetoreorganizeyourheadandunderstandthattheveryfoodthatcomfortsyou becauseitisfamiliarisunnaturalandshouldntbefamiliaratall.

Background
There are many ways to change the way that you think. Many would think that schooling is important. While thats true in many cases, its not true here. Tertiary education is not concernedwithexploration,butbygivingstudentsthetoolstodotheirownsearchingintheir field of study when working. Ive found that, while trying to improve oneself through formal educationisimportant,thegreatestbenefitisactuallytravel.Whenyouliveinaforeignculture forawhile,yourmindbecomesaccustomedtohowpeoplethinkinthatplace.Whenyoucome home,peopleseemabitoff.Younoticethattheydooddthings.Forexample,crosswalklaws inCanadakillaboutathousandpeopleayear.Therearesomanypeoplewhodieatcrosswalks thattheaverageCanadianknowsthatchildrenandoldpeoplearemostlikelytobekilledthere. TheaveragepersonintheUnitedStatesdoesnotknowthis.Theydontknowthisbecauseno one dies at crosswalks or when crossing the road. Why is this? The answer is obvious. Unfortunately, the solution would infuriate a Canadian. Heres another example: thousands of people die in the United States from handguns. Preventing this is simple. Unfortunately, the solutionwouldinfuriateaU.S.citizen.Therearemany,manymoreexamples.Theproblemwith allofthesolutionsisthattheproblemislinkedtodeepersocialissues.Ifyouchangeonething, theresafloodofrepercussions.Theproblemsarealsotiedtohabitsthatarecomfortable. Irememberreadingasentenceinanoldbookonce.Thatsunusual;younormallyjustgraspan ideaandmoveonquickly.Heresthesentencewhosesourceisnowlosttomypast:Notonly people,butotheranimalsarealsoaffectedbythiscondition.Thesentenceisabitodd.Itdidnt read,Notonlypeople,butanimalsarealsoaffectedbythiscondition.Hmm.Oddthat.Sothere arepeoplewhoareanimals,andotheranimals.Thatmeansthatwereanimals.Whatastriking thought.Wearenttaughttothinkthisway.Sohowdoanimalslive?Howdotheyeat?Ifanimals eataccordingtotheirnature,whatisournatureashumananimals?Howshouldweeat?How dowebehaveasanimals?Dootheranimalshavehabits?Dowehavehabits?Aretheythesame? If we study other animals, can we then see our own habits in them, or can we become aware thatwehavehabitsthathavebecomedestructivebecausetheyaredifferentthanotheranimals habits? How do you break an animal from a destructive habit? How can we break ourselves fromabadhabit?Thefirststepincuringabadhabitisknowingthatthehabitisdestructivein thefirstplace.Thenextstepistrainingtheanimaltochangeitshabits.Thesestepsaredifficult tofollowifyou,yourself,aretheanimal. Let me give you an example of why the first step of knowing that a habit is destructive is difficulttobecomeknowntous.Imetagirlandtookheroutonadate.Itstartedoffwell,but slowlybecameawkwardforsomeunknownreason.Itookherhome.Shementionedinthecar, You know, I really wish would wouldnt drink (alcohol). That was weird. I only had two glassesofwine;mybloodalcohollimitwaswithinthelimitofthelaw.SoIwenttoseemyfriend Mark and asked him if my personality changed after one drink. He said, Yeah in that Duh, obviouslytoneofvoice.Yousee,Iwasnotawareofmybodychanging.Therestaurantwasnt changing; the walls stayed the same colour; the lighting was the same. I was looking at the world through my own eyes and the world wasnt changing. How was I to know or become awarethatmybodywaschanging?Wearerarelyintellectuallyawareofourshiftingemotions. HeresanotherexamplethathappensallthetimewhereIlive.Iwastalkingtoagirlwhosaid, YouknowAndy,yourecriticalperson.Butletmesaythis...andsheproceededtocriticiseme tonoend.Anothertime,Iwalkeduptoadrunkpersonwhosaid,Andy,youredrunk.Whydo

yougetdrunkallthetime?Ihadnthadadrop.Anothertime,Iwaswatchingapoolgame.A woman walked up to me and said, You know, I wish youd stop staring at me all the time. I didntnowthatsheexistedandcouldntcareless.Ineachofthesecases,theproblemwiththe person came from within that person. They had a reaction to their environment and looked outside of their bodies to see what was going on. The first person wanted to criticise me; the second as drunk; the third had a sexual response to me. In each of these people, their subconsciousbrainprocessedexternalstimuliandproducedanemotionalshiftinthemwithout informing the intellectual, thinking part of their brain of what was going on. So they looked outsidetheirbodiesforthecauseoftheemotioninsteadofrealizingthatitwasbeinggenerated insidethemselveswithouttheirconsciousbrainbeingawareofit.Sothefirststepincuringa badhabitisknowingthatthehabitisdestructiveinthefirstplace,whichisdifficultbecauseyou arenotawareofyourownhabitsandhoworwhyyoubehavethewaythatyoudo;evenifyou dobecomeawareofsuchhabits,howcanyouchangeahabit? Letssaythateventuallyyoubecomeawareofthatyouhavedevelopedadestructivehabit.How doyouchange?Ah,nowhereiswheretravellingtoforeigncultureschangedmyunderstanding andmakeswhatIhavetosaymoredifficultforyoutounderstand.Wereanimals;therefore,we cant change things through dint of will. That is, you cant put your mind to it and decide to changeahabit.Itdoesntwork.Willpowerisamyth.

Intellectvs.Conditioning:
Heresanexampleofhowourperceptionsandcultureconspiretolimitusfrommakingpositive changesinourlives.WhenIwasyounger,Igotadegreeinphysicsandmath.Iwantedtoshow peoplethatIwassmart,pleasemyparents,andgetahighpayingjob.InowrealizethatIwas just terribly frightened. I then served as a naval officer for seven, hard, painful, lonely years. Later,inmythirties,IwentandgotafullscholarshipandAssistantshiptogetaMastersdegree in Music with a specialty of Vocal Performance in Opera. A bit different you might say from physics.Ithenmadeabigmistake(ordidI?).IdecidedtobethebestoperasingerIcouldbe,so I trained to be a good actor. I studied the Meisner Technique of Stanislavski acting. Method actingisayoungerformofthistypeofactingthatmostpeoplehaveheardof.Iwasfortunateto betaughtbyastudentofStellaAdler,thepersonwhobroughtStanislavskisideastoherfriend, Stanford Meisner. I have to say; I now know what apostolic means. When you work that closelywithsomeonewhowassoclosetotheoriginofamovement,somethingrubsoffonyou. Asmostpeopleknow,thestandardofactinginoperaisexceedinglylow.Youdthinkthatwhat Idlearnedwouldhavehelpedmeintheoperaticworld.Itdidnt.Itmadethingsworse.Yousee, opera singers live in a culture, just as you live in yours. It is as unacceptable for me to Stanislavskiactinoperaasitisforyoutowalktothestorenakedonahotday.Itsawkward andinbadtaste.IthentravelledtoCommonwealth(formerBritishColonies)nationsandsaw the acting there. It was just like an opera house. Im being a bit generalistic, but this is how operaticandBritishactingworks:actorsusetheirintellectstodecideuponwhattheywantto do and then force their bodies to do what their brain have determined is best. I call this Pantomime Acting or Pretend Acting. The actors preconceive what to do on stage at particular points. They then condition their bodies to do that thing during rehearsal. The problemis,wedontliveourlivesthatway.Therearesubtle,smallelementsthatareorarent taking place when you force your body to do something; this is much like that bad date I mentioned.Youarentawareoftheodditiesthatyourconsciousbrainisforcingonyourbody

and how others perceive that. In the very end, British acting and singing is inferior to StanislavskiactingandOldItalianschoolsinging.Theformerisintellectualbased;thelatteris emotionalbased,oratleastwithanunderstandingofhowweareconditioned. SowithPantomimeActing,youlearnyourwordswithaninflectionorattitudethatyouthinkis correct,called a LineReading(wherewe getthe expression of giving a line to someone in a bar).Thenthepitchandvolumethatyouvechosenbecomeonewiththewords.Itsthenahabit andcannotbeeasilychanged.Then,whenyouspeakthewordswithyourpartneronstagefor thefirsttime,thegiveandtakeofvolumeandinflectionbetweenthetwoofyoudontoccuras wouldinarealisticconversation.Notonlythat,butoncethelinereadingislearned,itisalmost impossible to change. It is now a part of you. So, if you learned a line as an angry statement whenyouwereathomeandthenfindoutthatitwasmeantasasarcasticcomment,youhavea bigproblem.Yourspeechhasbecomeahabit,anditwillbealmostimpossibletochangeit. Hereshowthisrelatestodiet:withtheMeisnerTechnique(Stanislavskiacting),youknowthat linereadingconditioningresultsinbadacting.Soyoupreparememorizingyourwordswiththe understandingthatyouareacreatureofhabit.Thesolutionistolearnthewordswithoutany attitude, and, whats truly strange for a Pantomime actor, without stage direction. You simply placeinyourheadanimaginarysetofcircumstances(givencircumstances)thatsurroundthe character youre playing, and then act (literally) accordingly, without any preconceptions of whatyouwilldo.ThisisperhapswhyStanislavskiactingisonlypracticedmypeoplewhoare on the fringe of society. The style implies that the only difference between any two people is howtheyseethemselvesintheirworld.Environmentwinsovergenetics.Thereisnodifference between a whore and your daughter, Jesus and Jeffrey Dahlmer, Mother Teressa and Hitler. They are the same; they merely see themselves in their world differently. So beware. The differencebetweenyouandsomeoneyoumayrevileismicroscopicallysmall.Thatisnothow we are trained to think in our materialistic society today. We try to separate ourselves from ugly,uneducated,lowclasspeople.Whowantstoleadabeggarslife?Unfortunately,ifyoudont understand and acknowledge your animal, habitual nature, you may start to behave like the very people you revile. If you dont acknowledge your habitual nature, you can never change yourcircumstancesandtherebyaffectpositivechangeinyourlife.

WhoWeAre(OurGivenCircumstances)
Weareanimals.Weeatfood;wepoop.Wesweat,throwup,arefrightened,love,hate,getangry, andgethungry.Thedifferencebetweenhumanferalanimalsandcivilizedhumanbeingsishow we are conditioned by our parents and society. Our flesh, our minds, our instincts, our brains andemotionalreactionsarehardwiredintousandnotonlyarebeyondourabilitytochange, but are part of what we admire in others. For example, when someone is valorous, loyal, trustworthy, loving, protective, etc., those are root, animal emotions, not that of some learned sophisticated,civilizedethos.Inshort,weneedtounderstandwhoweareandwhywedothe thingsthatwedosothatwecanseehowourconditions(givencircumstances)havechanged, particularly in the last few hundred years. This change has caused massive and profound un health in us as a species. Once we know what that root creature is, we can see how our circumstances over the last few hundred years and changed, and then change them back to produceapositiveresult. Deconstructing who we have become back to our origins is difficult. We are slathered in our conditioning and dont pay attention to small, nagging truths. Theyre annoying. They dont

make sense. Theyre not important (we think). If you look at who you are and your own personalgivencircumstances,smallpointsofanomaly(pointsofconflict)areeasilydismissed or ignored. Heres an example: we have small canine teeth (fangs). OK; big deal. Who cares. Whether you have big or small canines or none at all mean nothing in our society today. Yet, many years ago, it was an issue of survival. You didnt eat what you couldnt eat. Our teeth dictatedwhatwecouldeat.Insocietytoday,thefoodissoftandwehaveknifesandmachinesto mechanically break things down. So we now eat things that we couldnt eat a thousand years ago. Yet, the human animal has not changed much in the last nine thousand years. We have machinestodoworkforus,andwehaveaccumulatedmachines,oneontopoftheother,yetour brainsandbodieshavenotchangedonebit.Wearegeneticallythesame.Ourfoodhaschanged, andwehavebecomeunhealthy. LetscontinuewiththecanineteethreferenceIjustmade.Wehavecanineteeth,buttheyare not large. Omnivores and carnivores all have these teeth, but they are longer for carnivores. They are designed to rip the flesh off of large animals. That balltugging game that your dog playscanyouremember?Heputshisbumintheair,lowershisfrontlegsandbouncesupand down,tuggingattheballinyourhand.Thatoriginatesfromwhenhewouldsinkhislongfangs intothefleshofadeerorbison,orsomelargeanimalthatthepackbroughtdownandtugtorip the flesh off the bones. We cant do thatour teeth are too short. If we were starving and we stumbleduponadeadcowlyingontheground,wedstillstarve.Wecouldntpullthefleshoffof the animal. People might argue with triumphant certitude that Ah ha! Thats why we have brainstomakeaknife!Thatsmuddledthinking.Wewerentbornwiththeknowledgetomake knives;therefore,theconstructionofourbodiesisnotdeeplylinkedtomakingknivesandwhat thatcanprovideforus.Feralhumansdontknowhowtomakeknives. Speaking as a scientist, once our society found the knowledge to make knives, it affected our genetic makeup through natural selection: only people who could eat and digest the flesh of large animals could survive if that was the only food available. That has begun to change our geneticmakeup,butonlyslightly.Ourcanineteetharestillshort. Thisalsoworksinacontrarymanner.Youhavesmallcanineteeth.Youredesignedtoripthe fleshoffofsmallanimalslikefowl,rodents,fish,etc.Avegetariandietisflawed.Withoutsome protein, you will die. Vegetarians counter that there are some vegetables that are high in protein.Unfortunately,thosevegetablesarenotavailableorgrowingthroughouttheyear.More tothepoint,wehavecanineteeth.Ourbodiesaredesignedtoeatmeat. This may seem petty. Why should anyone focus such a small meaningless point? But its not meaningless.Noneofthepointsaremeaningless.Theyrethere,onepointafteranother.When you add them up, they all spell the same story. Were not eating the food that we used to eat thousands of years ago. In order to understand our dietary requirements, we have to understand how we have moved away from our natural diet to a diet designed to only get us throughthefamineofwinter.Wenoweatthatfaminedietallthetime.

History
When Ive travelled to other countries, I immediately noticed the local diet. One of the most striking points to me was the nature of the food that was brought from Britain to Commonwealthnations.Ialsonoticedthebrutallyoppressiveeffectithadonaboriginalpeople. For example, consider a British breakfast sausage. Im from North America, so breakfast

sausagestherearemadefrommeat,seasoning,casings(realorfauxanimalinstestine),andfat. This is not so in Commonwealth nations. There, theyre made from what appears to be bread saturatedbyfatorbloodandputinacasing.Strange.Aflavouredbreadtube.Wheredidthis comefrom?TheresaninterestinganswerthatIllgivelateron. On the topic of strange, how about cheese. Why? Why do we have cheese? Its like what the French say about tomato ketchup: why? Do you know how cheese is made? Bizarre. To make cheese,youneedtoseparatemilkintocurds(solids)andwhey(liquid);rennetdoesthat.You then take the curds and process that into cheese. So, thats strange enoughdrinking or eating bovine (most often) milk product (Cheese Whiz: processed cheesefood spread). You are weanedfromyourmotheratoneyearold,andnowitssomehownaturaltorunoutintoafield andsuckontheudderofacowwhenyouretwenty.Strangethat. Forcheese,youhavetoturnliquidmilkintoasolid.Alsostrange.Toreallyspinyourheadon your shoulders, consider how rennet is made. Rennet is what you add to milk to get it to separate into solids (curds) and liquid (whey). Rennet is made from the stomachs of young calves(notoldones;itsnotaredundancylikebabypuppy).Right.Sotheresthisguysitting aroundwithnothingbettertodothansay,Hey,Iknowwhattodo!Illkillacalfafewdaysold, extracttheinnermucosaofthefourthstomach chamberandadditto itsmothersmilk.Sure. Hey, the solids are separating! Maybe if I squeeze the excess water out, this time, something mighthappentomakeitlastawhilewithoutspoiling.Toamodern,educatedperson,ourfood seemstocomefromsomeoddplaces.Yet,theresareasonformakingcheeseandareasonfor whyandhowitdeveloped;wevejustforgottenthosereasons.Weveforgottenalotaboutwhy weeatthefoodsthatwedo.Soletstakealookatlifealongtimeagoand,likeanactor,createin our heads the imaginary circumstances that surrounded people who could have intentionally createdsomethingasweirdascheese. Imagine the world as it was nine thousand years ago. There had been a slow movement of peoplefromtheAfricatotheMideasttoEuropeandthenNorthernEurope.Thelandbeganto bedifferentfarthernorth.Itwascold.Nothinggrewinthewintertime.Thiswasntthecasein Southern Europe. When I was in Sicily and Italy, they had two to three growing seasons. That doesnt happen farther north. In most northern areas, the winter and snow are synonymous terms. Scholars talk about huntergatherers but most people dont consider that the act of gathering changes as the seasons, particularly in the north (or south, if youre below the southernequator),change. So imagine yourself standing outside your shack, cave, or rude blackhouse (stone hut) in the dead of winter. Youre hungry. What will you eat? Before winter, there were green plants, running bunnies, swimming fish. Now theres nothing moving. Everything is white or brown. Youcanthibernate,andyourenotasquirrelsoyouhaventstoredanynuts;orhaveyou?What canyoudotostorefoodthatwilllastuntilthespringandsummer?Whatfooddoesntrot?Well, Ijustmentionedsquirrels,soyouvegotnutsonyourmind.Thatworks.Whatelsedoesntrot? Seeds; seeds dont rot. Unfortunately, theyre made mostly of starch, so you cant really digest themandpullenergyfromthem.Butarentweclever?Ifyoutakegrassseedwhichyoucant digest well, grind it, and add yeast (small bugs), they can change the starch to a type of carbohydrate.ThebugsbelchoutCO2andpoopoutcarbohydrate.Breadisaprocessedfood.Its heatedupbugshit.Rufflespotatochipsarelessprocessed. OK, bug poop is not enough to sustain you; you need some protein. You look around. Theres twofeetofsnowontheground.Youneedsomemeat;whatareyougoingtoeat?Ifyoukillone

of your livestock, youd seriously eat (pun intended) into your wealth. A dead animal cant produceoffspring.Notonlythat,butiftheweatherwarmsup,themeatwillspoil,anditwillgo towaste.Youneedsomeproteinforthefamineofwinter.Sinceyoudontwanttoeatintoyour principalinvestmentofyourlivestock,youcanliveofftheinterest.Youeitherbleedyouranimal (addingittobreadandputtingitinacasingcalledblackpudding)ormilkit.Nowthepurpose of having dairy products and livestock in general becomes clear. Its a gimmick to get you throughwinter.Itsbadforyou,butitsenoughuntilspringcomes.Unfortunately,wereeating anddrinkingthisfaminefoodproteinallthetimenow. Ifyoustandbackandlookatit,winterfaminefoodisallverybadforyou.Youcanseethisby thewayNorthernEuropeanfaminefoodadverselyaffectspeoplefromothergeographicalareas of the world. Ive seen this up front and personal. If you understand natural selection, this impactmakessense. Evenifyoudontbelieveinevolution,youwouldhavetoadmitthattherearesmallethnictraits associatedwithagroupofpeoplewholiveinacertainarea.Thosevariabilitiesseemfittedfor the climate and geography to give people living there an advantage. If you believe in natural selection, the explanation is simpler and clearer. But that requires that you understand the process of natural selection, and that understanding is difficult to grasp because it has to do withmathematicalprobabilityandanenormoussamplesize. If you dont know the concept or need a refresher, here is, roughly, how natural selection is supposedtowork.Letssaythatsomepeoplehavejustinventedawaytosurviveinthesnowy winterinNorthernEuropebycreatingatleasttwofoodprocessingsystems.Theysowatypeof grassseedandharvestit,threshit,andgrindit.Whentheyneedcarbohydrate,theyaddwater, yeastandthenbakedthebugshit.Forthesecondsystem,theyslaughterayoungcalfandsave andprocessitsstomach.Thentheymilkthelactatingcow(orgoatorsheepyouneeditsown young for the rennet) and add the appropriate rennet. Then you separate the curds from the whey and then add a specific yeast strain (or not) and then store the cheese. Now you have bread and cheese for the winter (I knew a Swedish woman who absolutely HAD to have a cheese sandwich every day). Now people take this new technology and move north. They eat this stuff during the winter and survive; well, some of them survive. Some cant handle this weird new food, and since theres nothing else to eat, they starve to death. Only those people whocaneatthisfoodwillsurviveandreproduce.Thosethatcanttoleratethenewfooddont reproduce. The result is that in a few hundred years, almost everyone now being born can handlethisfood.Almost.Theoddonehereandtheremightpopupwitharecessivetrait,which preventsthemfromprocessingthenewfood(actually,perhapsitsnotrecessiveitsunnatural foranadulttoprocessmilkwhentheywouldnormallybeweanedatayear;lactoseintolerance isanormalandhealthytraitinanadult).Ittakesalongtimeandanenormoussamplesize(a greatmanychildrenbeingbornwhohavetoeatthisnewfoodandperish)fortoleranceforthis food to become normal in the gene pool. For an ethnicity to undergo such a shift, thousands uponthousandsofpeoplewhocannottoleratebreadanddairy(newfaminefood)mustdie. Nowimaginethis.Youtakethisfoodthathaskilledoffagreatnumberofpeopleninethousand yearsagowhenagriculturewasbroughttoEuropeandintroduceittoanethnicgroupthathas never experienced this natural selection process. The result is an extreme response that kills any who cant tolerate it, which is a relatively high percentage. Look at the average Maori, Hawaiian,FirstNations,orNativeAmerican.Theyrefat.Imeanreallyfat.Theiroutsidesmirror their interior. They are now suffering from massive heart disease and other internal organ

damage.Thisisadirectresponsetoeatingwheat,dairy,andotherNorthernEuropeanfamine foods.ImofEuropeanancestry.Ican,somewhat,handlebreadanddairy.Mywifecant.Ithink Europeans ability to process famine food diminish as they get older. An average aboriginals definitelycanthandleEuropeanfaminefoodatall.Whatsmallpoxcouldntdo,wheatanddairy food certainly will. The understanding that people may have intentionally given Native Americans/FirstNationspeople(aboriginals)blanketsinfestedwithsmallpoxseemsshocking to us today. So why is it that feeding such a vulnerable group of people Northern European faminefoodissomehownotasshockingwhenitsproducingthesameeffect? If you consider all of the different geographical areas and consider the different famine foods thatdifferentcultureshaveproduced,youcanperhapscometorealizethenegativeimpactthat oneculturesfaminefoodhasonanother.FaminefoodfromanEskimowouldnotgooverwell withme.NorwouldricefromAsia.Faminefoodsofmyancestorswouldhaveatremendously illaffectontheChinese.SowhyaretheChineseeatinganddrinkingNorthernEuropeandairy productswithsuchabandon?Goodquestion.Theyreimportingdehydratedbovinemilkfrom New Zealand at such a rate that the traditional supply of lamb from New Zealand is being strangled. Farmers are shifting from sheep to dairy production to feed the Chineses new addiction. Whenwedonteatthefoodthatispresentduringthedifferentseasonsandfollowtheseasonal food cycle according to our particular heritage, we get ill. Were not supposed to eat winter faminefoodafterthewinter.Eatingwinterfaminefoodyearroundwillbegintohurtus.Eating winter famine food from ethnicities different from our own will most assuredly hurt us. We needtoknowourownbackground,noteatforeignfaminefoodandalsostopeatingfaminefood whentheseasonchanges.Moreover,eatinganyfaminefoodatallisnotgoodforus. Thistendencytoshiftwiththeshiftingseasonswasoncenotuncommon.ConsidertheFrench and their cuisine concerning chicken eggs. The French (like most people) did not feed their chickens food, but let them scavenge around their home. The chickens would eat insects. The cyclesofinsectlifevariesbyinsecttype.ThetermsJunebugandMayflyexistinNorthAmerica becausetheyappearmostoftenduringthosemonths.Theflavourofthechickenseggswould change depending upon what insect the chickens were mainly eating. Therefore, the French changed what they cooked depending upon the season: omelettes, souffls, or pastry types variedbytheseason.Youdidntusetoorderwhateveryouwantedatarestaurant.Ithadtobe inseason.Ifnot,youdbeconsideredarube. So the word diet in this context does not make sense in our modern way of thinking since people changed their diet to meet the changing environment. Diet did not mean some fixed thing, but a rotating, shifting pattern. Yet we are not taught that today. A diet is a fixed, unvaryingsetofingredients.Youeatwhatyoueatalltheyearround.Eventhenormaltimingof acowgivingbirthinthespringisnowbeingalteredsothatwecanhavemilkyearround.They didnt do that a hundred years ago. Cows gave birth when they did; you didnt artificially inseminate them so that theyd give birth in November, December, January, etc. This keeps a portionofthecowsalwayslactating.Ourdietnowisayearround,consistent,fixed,unmoving thing.Howodd.Now,ourdietonlymoveswhenwegoonadiettoloseweight.Afterwelose weight,wegobacktothedietthatcausedustobefattobeginwith.Howstrange. Id like to discus some of the most significant diets, perhaps fad diets, that are the most well known and how there is a modicum of truth to all of them. Ive combined them in a way that seemsthemostwellbalancedandhealthfulbaseduponmyownrationalityandexperience.

FadDiets:
Faddietsdontwork.Thewholeconceptisludicrousifyoulookatit.Letssaythatyourefat. Yourgivendietaryconditionsgotyouthatway.Ifyougoonadietinordertoloseweight,you may succeed. Unfortunately, after youve lost the weight, you somehow think that you wont gaintheweightbackusingyourolddietandfollowinghabitsthatgotyoufatinthefirstplace. Whywouldyoudothat?Followingthiscycleofnormaleating,goingonadiet,andthengoing backtonormal eating meansthat yourefat,you loseweight, and then you get fat again. Why notjusteatahealthydietandfirstlynotgetfat,andthenifyouhappentogetfat,realizethat youre diet is causing you to be fat and then shift your diet to a healthy one so that you will slowlygethealthyagain.Theproblemisthatnooneknowswhatahealthydietisbecausetheir dietissaturatedwithfaminefood.Eatingwholewheatbreadinsteadofwhitebreadmadewith bleached flour just means that the poison that youre eating isnt quite as poisonous as white bread.Whyareyoueatingpoisonatall?

Atkins
TheAtkinsdietisadangerousone.Sinceitsbasictenetisthatitisadiettoloseweight,itsafad diet. If you think that it is a diet for life, you have made a serious mistake that I mentioned above. The Atkins diet came about because someone noticed that some tribal people who primarilyhuntforfoodwerenotfat.ThesehighproteindietsarefineforEskimosbecausetheir ancestorsperishedwhocouldnteatsuchahighproteindiet.EatinganEskimodietisasbadfor me as an aboriginal eating my Northern European famine food diet. Furthermore, the Atkins high protein diet places your body in an active state. It makes your cell reproduce at a high rate which promotes cancer and other dangerous conditions. You want your body to be in an inactivestatesothattheenergythatcomesfromthefoodthatyouareconsumingistargetedat maintainingandrepairingyourbodyinsteadofspendingenergyonreproducingcells.Idalso like to point out that Eskimos are being pressured into eating a balanced diet (from the mentalityofaEuropean)andarenowgettingfatandunhealthy.

52Famine
The52dietisaresultoftheobservationthatfastingcausesyourbodytobeinapassivestate whichhasmassivelypositiveconsequences.Thefirstislongevity.Peoplewhoroutinelyfastlive longer than people who do not. If you fast, your body thinks that there isnt much food in the environment, so it switches from an active state where energy from food is directed from reproducing cells into a passive one where it repairs itself. Bad cholesterol drops; good cholesterolincreases.Insteadoffastingcontinuouslytoproducethisresult,itwasfoundthatif youreduceyourcaloricintaketo600caloriesadayformen,500forwomen,twodaysaweek (nonconsecutivedays),yourbodythinksthatitsfastingandgoesintoapassivestate.Thisdiet is not for athletes but for moderately active people and certainly for sedentary ones (people whohavedeskjobs). AfterIstoppedeatingfaminefood,mybloodsugarlevelevenedout.Mostpeopleexperienceup anddownswingswhentheyeatbreadandotherprocessedfood.SinceIstoppedeatingthose foods, my body never had to dump large amounts of insulin into my blood to handle excess sugar.Therewasalwaysalittlesugarthere,soIfeltgood.SowhenIfastedabit,Ireallydidnt notice. I wasnt hungry. The cycle of eating and being hungry within a few hours and then

needingtoeatagainisafunctionofeatingprocessedfood,particularlywheatandotherfoods that are converted too readily by our bodies, into glucose (blood sugar); its a vicious roller coaster.StoppingthisterriblerideproducedanantidotetermedTheZoneDiet.

Zone
TheZonediet(sometimesreferredtoastheCaliforniadiet)isdesignednottoloseweight,but tomakeyouhealthybykeepingyourbloodsugarlevelwithinazone.Thelowerlimitiswhere thereistoolittlesugarinyoubloodwhichmakesyouweakandhungry.Theupperlimitisthe pointwherethereistoomuchsugarinyourblood.Thislatterconditionisextremelydangerous. Yourbodydoesnothaveamechanismtopreventtoomuchfoodfrombeingprocessedinyour intestinesandturnedintosugar.Havingfoodquicklyconvertedintosugarisnotsomethingthat is normal in the nonprocessed/nonfamine food world. Your body does not have a way of metering how fast to process the food that is in your intestines. It just digests it at the same speeditalwaysdoes.Withfaminefoodssuchasbread,itisalreadysomewhatprocessedsothe absorptionrateisveryhigh.Soifyoueatasliceofbread,yourbodyconvertsittosugarvery quickly,sendingitintoyourblood,andraisingyourbloodsugarabovethesafezone.Atthis point, your body sees that there is too much sugar in your blood and goes into an emergency state,sendingagreatdealofinsulinintoyourblood.Thisimmediatelylowersyourbloodsugar level.Italsoconvertsthesugarintofat.Thisishowyougetfat.Toomuchsugarinyourbloodat anytimetriggersthecreationoffat.Eatingfatdoesnotmakeyoufat. In order to keep the blood sugar level within this zone, a measurement was created to help peoplemanagehowquicklysugargetsintotheirblood.TheGlycemicIndex(GI)isameasureof this.Avaluebelow55isconsideredlow,between56and69isconsideredmedium,andabove 70isconsideredhigh.AhighGImeansthatyourbodyrapidlyabsorbsthatfoodandconvertsit intosugar;alowGImeansthatittakestimeandisthereforesafer.Althoughlessconvenient,the Insulin Index (II) is a better measurement tool for a person trying to eat more healthily; it measures the insulin response to various foods. Unfortunately, II varies somewhat by person andislessaccurate.ThesimplereasonpreferringtheIIovertheGIisthattheGIonlymeasures foodswithcarbohydrate(therearenoGIvaluesformeat).Also,whiletheGIandIIarealmost perfectlycorrelated,theyvarysharplywithregardtodairyandbakeryproductstheverythings that are important. Researchers found, [P]roteinrich foods and bakery products (rich in fat andrefined carbohydrate)elicitedinsulin responses that weredisproportionatelyhigher than theirglycemicresponses. 1Anotherfound,Therearesomeinstances,however,whereafood hasalowglycemicvaluebutahighinsulinindexvalue.Thisappliestodairyfoodsandtosome highlypalatableenergydenseindulgencefoods.Somefoods(suchasmeat,fish,andeggs)that contain no carbohydrate, just protein and fat (and essentially have a GI value of zero), still stimulatesignificantrisesinbloodinsulin.2ThisisfurthersupportedbyHoltandotherswho havenotedthatthereisastrongcorrelationbetweenGIandII,highproteinfoodsandbakery

A recently published book has documented the problems with wheat. The author (William Rodale Davis) clearly documents the ill effects of wheat on our bodies today. His point is directed mostly at how the wheat plat has undergone severe genetic manipulation that has causedthisproblem(inhisopinion).Hemaintainsthatbread,inanyform,nowcomesfroma geneticbasethatiscorruptanduntestedforhumans.Soanywholewheat,pumpernickel,white, multigrain,organic,etc.breadthatyoueatwillmakeyoufat.Generallyspeaking,hescorrect.I stopped eating bread (and dairy) and went from 205 lbs to 175 in three months. It is often dangeroustolosesomuchweightsoquickly,butIfeltgreatandateasmuchasIwanted.Iwas neverhungry. Like the Zone Diet, Daviss antiwheat diet wasnt designed necessarily to have people lose weight.Iwasdesignedtohelppeoplewiththeirhealthissues.HemadeacommentIfoundto resonate with me, What convinced me further were the many instances in which people removedwheat,thenpermittedthemselvesawheatindulgence:acoupleofpretzels,acanapat a cocktail party. Within minutes, many would experience diarrhea, joint swelling and pain, or wheezing.5 BoththeZoneDietandthe WheatBelly(antiwheat)DietfitwithinmyFamineFoodForbidden Dietboundaries.Ihighlyrecommendthatyoureadthem.Thislittlemanualisnotdesignedto reiteratewhattheysay.Theresnoroomhereforthat.SoifyoureadtheZonediet,trynottoeat cheese or a slow absorbed bread if they say to; substitute something else. If you read Wheat Belly,followthewheatproscription,butdonteatdairyproductswhenDavissuggestsit. Theadvantagethatmydiethasisthatithelpsyouwhenyouaremakingachoiceofwhattobuy atastoreortryingtodecideifyouwanttohaveavegetablegarden.WhenIgotoastore,Ihave very clear and obvious choices to make. I try to limit the damage that my body will suffer. Be warned:freshvegetablesareoftentheworstchoiceyoucanmake.Moreonthatlater.

Alcohol/Liquids
The first thing that a fad diet tells you to do is to drink a lot of water. Often our bodies are storing something that might be in short supply in the environment. If you are dehydrated, drinkingwaterwillmakeyoubodystoptryingtohordeitandyouwillloseweight.Sothefad dietthatyoujuststartedseemstobeworkingbecauseyoustarteddrinkingwaterandlostfive pounds.Thatsthefirstthing. Thesecondpointisthis.Whatdootheranimalsdrink?Water.Theydrinkwater.Howbizarreis itforyoutodrinksomethingthathasflavourtoit.Thinkaboutit. There are no wild orange juice trees. There are orange trees. Fruit juice is unnatural. Eat the fruit.Drinkwater. Alcoholisfermentedwheat(orsomefruit/vegetable)juice.Itssomethinglikewetbreadwith the bad carbohydrates replaces with a mild poison. Its another processed food thats bad for you.Ifyouregoingtodrinkalcohol,inimizethedamage.Beerandalehavewheatinit.Trynot to drink alcohol with wheat in it. Try to have the wheat removed (like vodka) or made from

somethingbesideswheat(likepotatovodka).Personally,Ihaveanallergicesquereactiontoale and beer. Two glasses of beer makes me very fuzzy and almost drunk. Two shots of vodka (whichisthesameamountofalcohol)doesalmostnothing.Itsthewheatandthestillpresent yeast.Ifyouareanalcoholicandyoumustdrink,shifttosomethingwithaslittlewheatresidue in it as possible. That means no NA beer or no lowcarb beer. You need to get away from the wheat. Elegantwomeninapastageusedtodrinkdiuretics(thingsthatpullwateroutofyou)during the day before going to a party that night. Homes didnt have sewer systems, so there was no whereforthewomentogotorelievethemselves;themencouldalwayswanderouttoatree, butthewomencouldntgooutsideandsquatonthegrass.Iguessitjustwasntconsideredlady like.Sotheydranktea. Iknewamanwhowouldbringacase(yes,acase)ofDietPepsitoworkeverydayanddrinkit all. You see, one can of Pepsi made him slightly dehydrated which made him thirsty; so hed drink another, then another, and another. He was thirsty all day and would try to solve the problem by drinking something that dehydrated him. It made things worse. At the end of the day,helookedgauntandtired. I have another friend who had onetoomany bad experiences with alcohol. CitiesandtheIndustrialMentalitytheRealProblem
In the discipline of physics, one of the fundamental laws of nature is that energy is neither creatednordestroyed,justmovedaround.Ifyouthinkthatyoucancreateit,yourboundaries are not set properly. If you reset them, you find that the energy is not created/diminished. With food and how it is grown, our boundaries have become confused. If you have an acre of landanddrawastiffboundaryaroundit,thereisplentyoflandandsoiltofeedyouandyour family. The problem is that the boundaries have become extended. Things pass across the boundariesthatshouldnt.Thisismainlyduetoourmentalityofindustrialprocessesandour overconfidenceinourtechnologyandourownmetalcapabilities.

Our boundaries are porous. Ingredients are being transferred from one system to another withoutbeingreplenished.Soallofourarable(growable)landisbecomingseriouslydenuded ofnutrients,loweringtheabilityofthelandtoproduce.Letmegivetwoexamplesofthis.For the first one: where I grew up, there was a plain that came down to the lake outside of Chittenango,NY,U.S.A.Thesoilwasblackitwassorich.Theygrewonionsonit.Thelandisnot palegreyandthecropispoor.Thenutrientsinthesoilwereshippedoffthelandtocitieswhere people lived. AsImentionedabove,Ilackedmotivationandfounditinmywife.Ihadknownwhattodofor the most part, I just didnt care. I had been conditioned by my environment and, since my environmenthadntchanged,Icouldntchange.Idgorightbacktothesameoldbehaviourthat wascreatedbymycircumstances.Willingyourselftodosomethingisfutile.Youhavetocreate thecircumstancesaroundyousothatyouwouldnaturallymakeahealthydecisionwhenfaced with a choice. Most of our lives are spent with the back of our brain choosing for us, not our intellect. IlearnedthiswhenIwastaughtItalianschoolsingingandStanislavskiacting.Youshouldnever force yourself to do something through force of will; it doesnt work. You have to seduce yourself.Admittedly,thissoundsweird.Letmeexplain. Singing is structured speech. If you make a difference between speaking and singing (as conservatory singers are trained to do), you sound odd; in effect, youre speaking a foreign languagethatnooneunderstands.Theonlysignificantdifferenceisthatwhenyousing,youre speakingbydeclamation,andfewpeopletodayknowhowtospeakloudlytoassembledpeople wehavemicrophones.PresidentObamadoesnotknowhowtodeclaim;MartinLutherKingJr. does. Unfortunately, there are ten to a hundred variables that combine to make that pitch occur. Conservatory trained singers always miss those few nagging points and so constantly misspronounce the sound or sing the wrong pitch. The solution to the problem is to imaging when you would naturally speak that musicallymandated pitch when you are comfortably speaking.Soifyouchangeyourattitude,thepitcheasilypopsout.Really;itworks.Theproblem is,ifyouuseforceonyourbodyasdirectedbyyourintellect,yourbodyreactsasthoughthereis an outside force pushing your body to do the act that your intellect wants. Also, grocers take advantage of Genetically Modified (GM) vegetablessuchassometomatoeswhichhavealmostnonutritivevalue.Theyaremodifiedso thattheydontdecayontheshelf,savingthegrocermoney.Theresultispaper(cellulose)with aredvegetabledyeexterior.Yougetmorenutritionfromthetomatoeswithhighernutritional valuethattheypulpintosauceor,asmyfrienddoes,blanche,peel,deseed,andfreeze.Hesays thethawedtomatoesarealmostasgoodasfreshtomatoesinpastasauce(heobviouslydoesnt sharemyviewsonwheat). Stayawayfromflavouredwaterifyoucan.Ifyouregoingtohaveacupofcoffeeortea,havea glassofwaterrightbeforetominimizetheeffectsofdehydration.Sodaispoison. Try to have less protein in proportion to the vegetables that you eat. Ivealsoreachedaplateauwithweightloss.Imnottryingtoloseweight,buthavedecidedto continue with eating along the lines of the diet Ive mentioned above. So I have now stopped eatingwheatsubstitutesandalsorootvegetablesexceptforflavourfoodssuchasgarlic.Well seewhathappens. I also wonder about soap. My face gets a bit numb when I leave home in the morning and I wonderifsoapisthecause.Soapisoriginallymadebypouringwateroverashes.Youcollectthe liquid(calledlye)andaddittosomethingthatthinsandholdsitabit(likepurifiedanimalfat).
