Below are the links to the two lesson plans I have selected and the analysis of their strengths and weaknesses: Lesson Plan 1: http://healthymeals.nal.usda.gov/hsmrs/Nutrition%20Expeditions/Unit%20III%20Lesson%205%20Kitche n%20Safety.pdf This lesson plan provides a great way to introduce safety within the kitchen and acts as a "gateway" to allow student access within the classroom. The Instructional section within the lesson plan should be adapted to more clearly state what the intention of the activity is. It also states what FACS Education standards it covers and I believe this will be important to include within all lesson plans. On a negative note there is not a list of materials needed.There is a complete reference list of all the sources used. This lesson is very much student centered. It will actually be used to have students pass to enable them to enter the kitchen labs. If they don't comprehend the information they will not be allowed within the classroom. The only technology used within this lesson is the video all the students watch. I believe something else could be added to make the student's experience better. There are clear goals and objectives that would be successful. There are simple materials used and they would be available to teachers. One negative thing is there are no alternative ideas for the material needed. There is a full detailed plan with sequenced procedures for following through with the lesson plan. A field trip to the grocery store is also within the lesson plan. I would like to see an alternative activity added if this was not possible for a certain school. They have added many forms of assessment to evaluate the student on the information they have just learned. A teacher would have multiple options is they wanted to modify for their students. They have clearly cited the sources where they acquired all their information. Overall I believe this lesson allows students to learn for themselves and discover practical information that relates to them. One place I would like to see improvement is within the technology area. There aren't many options to have students use technology resources. The teacher should give options for students to use technology to present their findings/data after their activity.

Learning Objectives
Students will 1. Learn to distinguish differences between expiration, sell-by, and use-by dates on food containers by examining a bag of groceries. 2. Evaluate a grocery store for food safety and sanitation practices. 3. Creatively construct a project of that examines, describes, and/or displays what food safety looks like within a grocery store. They must depict the perspective of a store manager, employees, and/or consumers.
Procedures
Introduction: Grocery stores utilize a set of special procedures to sell safe foods to consumers. In this lesson we will take a look at what those procedures are, why we as consumers should be aware of these practices and, how we can spot them while shopping. Class Period One 1. Assemble a bag of groceries with foods with various dates. Display the foods individually and explain the use-by, sell-by, and expirations dates. 2. Show Overhead 1: Safety Tips at the Grocery Store. Explain each tip and give examples of would happen if these tips were not followed. Example: The grocery store didnt follow protocol when organizing the new shipment of groceries. Fresh raw meat was stored above the eggs and milk. This means there is a possible chance of cross-contamination. 3. Introduce Overhead 2: Four Simple Steps to Fight Bac. Relate these principles to food safety within the grocery store. Clean: Wash hands and surfaces often. Employees are clean and the grocery store is clean all the time. They must sanitize all surfaces that hold food. Separate: Dont Contaminate! Eggs, milk, meat, poultry, deli foods, and produce are kept in separate refrigerated storage to prevent crosscontamination. Food is stored from non-food items. Raw foods are kept away from cooked foods. Cook: Cook to proper temperatures. Deli foods such as chicken, ribs, pizza, and macaroni and cheese need to be cooked to proper temperatures to ensure that no bacteria grow and cause foodborne illness. Chill: Refrigerate promptly. Maintain appropriate temps (40 F for refrigerators and 30F or below for the freezer) for refrigerated and frozen foods. Deli counters must maintain correct temperatures for luncheon meats, cheeses, salads, sandwiches, etc. Class Period One Closer: Homework, Have students develop a project displaying food safety within the grocery store. (Display, Poster, PowerPoint, etc.) This project should be an example of what could be displayed or handed out to employers, employees, or customers within the grocery store. Class Period Two 1. Schedule a field trip to the grocery store. 2. While on field trip Have students rate the grocery store for the following items. Use Grocery Store evaluation sheet (Worksheet 1). -Rotation of food on the shelf, in refrigerated section, and frozen food section. Check dates on foods. Are older dated foods in the front and newer dated foods in the back? -Dating of food: Examine foods for current use by, sell by, and expiration dates. Check for expired dates on foods. -Clean store: shelves, display cases, deli cases, refrigerator and frozen food sections, floor, employees, etc. -Maintain foods at appropriate temperatures. Bring thermometers to check temperatures of refrigerator and freezer sections. -Food is not damaged, old, bruised, blemished, etc. (Bring this to the attention of the grocery store manager). -Food items are stored away from non- food items. Food such as eggs, milk, meat, poultry, deli foods, and produce are stored separately to prevent cross-contamination. While at the grocery store, pay close attention to the deli counter and display cases. What might be the source of contamination behind the deli counter? Slicers! The safety of food behind the deli counter depends on the personal hygiene of the employees, the monitoring and cleaning of the equipment and utensils, temperature maintenance, and display cases that keep the product chilled at a safe temperature (36 to 40 F).
Class Period 2 Closure: Homework, have students write paragraph that summarizes the data taken from the grocery store evaluation. They must ensure it identifies all the area they noticed that need food safety improvements.
Assessment
1. Set up lab situation where students have to identify expiration, sell-by, and use-by dates on products. 2. Completed evaluation and finalized summary of grocery store data. 3. Grocery Store Safety Tips project will be graded upon accuracy, creativity, and overall neatness.

Safe handling procedures are placed on food packages, containers, and wrappers. Food is stored separately from non-food items. Many foods are kept in separate refrigerated storage areas to prevent cross-contamination (eggs, milk, meat, poultry, deli foods, produce). Check for damaged packages that may be torn or leaking.

Be sure packaging/storage is sound: refrigerated foods are kept cold, frozen foods are frozen solid, and there are no holes or tears in the packaging. Notify the grocery manager if there are problems with food packaging, storage, or sanitation of the store.
When possible, keep raw meats, poultry, and fish products in separate plastic bags before setting them in your cart with other unprotected foods. This helps prevent crosscontamination.
Select refrigerated and frozen foods last, just before checking out. Place perishable foods in the coldest part of your car (not in the trunk) or in a cooler if travel time is more than thirty minutes.

Below is a link to the google doc I created and my comparison of Word Documents and Google docs. https://docs.google.com/document/d/1p9YD_ce67yO-VCDiWaSpANQsquOYuwM84TCE6RFlUY/edit?usp=sharing When creating my first google doc I found that most of the settings are very similar to word processor. There are not as many aesthetic applications within the options on google. I could not find where to add columns and the border as I had in word. Adding pictures was a little different as well. Within word I added pictures within the background of my document on google docs I had fit the pics in within the words. Overall google docs are a great way to share documents easily but if you want a more professionally crafted final product using word is you best option.
