s Pure Vans approaches its fth anniversary, founder, David
Greenhaf has decided to introduce cars to the company
sales portfolio.
David said: We have already exceeded all our targets we set
ourselves for this year and we have received a number of enquiries
for cars from our regular customers as well as new customers.
We found that with our connections we are equally able to be
extremely competitive with cars or vans and thought that now is
the right time for us to offer both in our sales.
We have considered cars for a while but the number of
enquiries received made it an easy and must do decision.
We offer the same door-to-door service along with our normal
considerable discounts.
In addition to the
introduction of
cars, Pure Vans, has been offered additional
facilities with a number of specialist nance
companies and is now able to offer contract
hire, leasing and PCPs in addition to regular
hire purchase.
These extra facilities mean that Pure Vans
is denitely, now, a one-stop-shop and is able
to tailor nance packages to suit customers
needs and circumstances.
Following the recent advertorial in Voice,
Pure Vans has begun to attract a large number
of enquiries from local businesses, something
that really pleases Mr Greenhaf.
I was born and bred in Newport and am
proud of it, he said.
I still live locally and we are extremely
excited that we are now beginning to establish
ourselves locally and are building a strong local
customer base.
This is something we consider to be very
important to us and we want to be seen as a
local company.
Pure Vans is ready to expand, and in
addition to considering moving to larger
premises we are looking to take on additional
sales staff.
We have premises in mind and if successful
we would require a few weeks to prepare the
ofces and once complete we could add one or
two additional members to our sales team.
I had a vision when I started the company
and it is getting closer each year.

2014
Y
um! The March edition is always
one of my favourites because I
just love food.
This year weve been really spoiled
thanks to our lovely customers who have
prepared food for us to photograph
and then let us devour it.
Weve had Chinese, weve had
steaks, lamb and loads more.
Its been a foodies Christmas every
day here in the Voice ofce its been
delish.
So, as youve guessed, this months
mag is full of food. Tasty spring bites,
local producers and even Nigella
Lawson what a treat.
As well as all of that, we have all
the usuals days out, weddings, style
and beauty, as well as an all-new mens
page and an interview with Russell
Kane.
This months Voice is a fantastic
edition, even if I do say so. I hope you
enjoy. See you next month.

Narcissus (the Latin name for the daff)
was rst introduced as a patriotic symbol

id you know that a glowing, healthy tan
is in fact the exact opposite? A natural
sun tan is a sign of skin damage caused
by the release of melanin to absorb UV from the
suns rays. The melanin is what makes the skin
look darker and its actually trying to protect
damaged skin.
Of course, we all know that too much sun
exposure can cause skin cancer, with four out of
every ve skin cancer cases triggered by over-
exposure, so it really is all-important that skin is
taken care of every day not just when youre
planning on sitting out in the sun.
So with the British climate getting warmer, it
really is essential that you wear some sort of SPF
everyday even in the winter.
There are plenty of ways to protect your
skin without smothering it in Ambre Solaire 365
days of the year, and while sunscreen is extra
important right throughout the summer, why not
invest in a moisturiser or even a foundation with a
light SPF during the winter and spring months?
This moisture foundation from The
Body Shop has a protection
of SPF15, which wont stop
you getting sunburned, but
will help protect your skin
from some of the suns
rays.
So, dont become
one of the 10,000 who
are diagnosed with
skin cancer every year
think about your skin
and protect it.

he 16th annual Curves food drive starts up
again this month with Curves of Newport East
challenging its members to meet or exceed
last years donations.
Winners of the V Award for local health club
of the year for the last ve years, Laura and her
team from Curves at Leeway Industrial Estate are
now looking to have another great year with their
annual food drive.
Our goal is to top the donation that we made
last year, said Laura.
This is a great opportunity for the members
of our Curves community to help strengthen their
communities, too.
Everything that our members donate goes
to Kings Church and will benet local people in
need.
This years drive encourages Curves members
to feel doubly good about themselves as they
make time to exercise for good health and take
time to help others in the community with a
donation of nutritious food.
Laura added: All our members get behind us
every year and generously donate to our annual
food drive.
We want people to help us again this year by
giving what they can.
For the month of March, non-members who
make a worthy food donation can join Curves
Newport East absolutely free, pop in today for
more information or give them a call for terms and
conditions.
If you would like to make a food donation
for a worthy cause, pop in and see Laura and

ajes owner, Nicola Davies, has almost 25
years of experience in the beauty industry and
still plays a hands-on role, providing treatment
to clients.
She is also a senior lecturer at Wales largest colleges,
giving training to future therapists in many of the treatments
and therapies provided at the salon.
The salon is certainly known for providing the most
up-to-date, highly professional treatments and has racked
up many accolades, including the V Award for Innovation
in Beauty on several occasions.
Now on the verge of a decade in business, owner
Nicola has seen the salon undergo a major makeover.
Even more glamorous than ever before, the salon
looks as good as each and every one of its clients. Its
light, airy, beautiful and as welcoming as ever.
The refurbishment has also allowed for a little
reconguration with a new treatment room added to the
salon as well as the amazing Dermalogica Skin Bar.
Taj is an approved Dermalogica salon and a free
appointment at the Dermalogica Skin Bar offers face
mapping and skin analysis.
Once done, a prescriptive skin treatment to suit all
skin concerns can be customised to make each treatment
individual.
Also new to the salon is the incredible age-defying
Caci Ultra system which is a favourite of many celebrities.
The Caci Ultra combines the facial toning functions
of the award-winning Caci Classic non-surgical face
lift system with the skin regenerating applications of the
world-acclaimed Futur-Tec system.
The Caci Ultra system incorporates four different
technologies in one state of the art treatment device,
microcurrent, ultrasonic peel, hydratone and LED light
therapy photo stimulation.
The system utilises a special ultrasonic handset that
vibrates at 27,000 vibrations per second on the skin
surface to exfoliate and deep cleanse the epidermis.
Ultras unique wrinkle comb applicator is used to
effectively and painlessly plump out and soften deep lines
and wrinkles, thereby providing a needle free alternative
to cosmetic surgery.
So, if youre worrying about the years taking their toll,
why not give this treatment a try?
We like to think that we lead the way in beauty
innovation by offering the latest treatments that are
available, said Nicola.
Here at Taj we aim to make each client feel that
they have received the beauty treatment they requested,
but at a much higher level than their expectations.
Taj has also launched its own loyalty scheme and
regulalry posts special offers on its Facebook and Twitter
pages - make sure that you hit the like button so that you
dont miss out!
With lots of products available for retail, why not pop
into the salon and pick up a gift for Mum, or a Taj gift
voucher?
When you visit Taj, you can expect much more than
just a treatment. It is a retreat from the street, a place
where you can visit and leave the daily stresses and
distractions behind, to relax and focus on yourself, while
being pampered by professional, caring staff who say
our product is condence and self esteem and thats a
pretty great thing to sell.

T
hese techniques are aimed to speed up
recovery after an injury, restore function
and help to return you to your normal
daily activities as quickly as possible.
Preventing injury and optimising
performance is benecial to everyone
whether on a sports eld, at work or at home.
Through a comprehensive assessment of
posture, muscle imbalance, biomechanics and
exibility, Sian can identify potential issues
and problem areas.
A programme addressing these
inefciencies will allow you to continue your
sport or activities with a decreased risk of
injury, while at the same time enhancing
performance.
Although some physiotherapists focus
on sports-related cases, sports therapy
and rehabilitation is a separate profession,
requiring three years of intensive study at
university.
As a therapist I can advise sport and
exercise participants on how to train and
compete safely, said Sian.
I can also treat injuries and assist with
rehabilitation.
The main aim of my treatments is to
prevent injury and to help those who are
injured to return to full tness, she added.
There are two main areas that I focus on
sports therapy and rehabilitation and sports
massage.
Therapy and rehabilitation is concerned
with musculoskeletal conditions arising from
sporting activity, not with general healthcare.
It focuses on understanding and
preventing sports injuries, and also deals with
the effects of physical and emotional trauma
due to sports and exercise-related injuries.

Sports massage helps to alleviate the
stress and tension that builds up in the bodys
soft tissue during activity.
Massage helps to break down lesions
that form at the site of injury.
Most importantly, it helps to prevent
niggling injuries that often effect performance
at all levels of competition.
People who take part in sports on a
regular basis, or keep active generally, can
greatly benet from regular deep tissue
massage work.
It is ideal for body maintenance
(prevention), rehabilitation, pre-competition
preparation and post-competition recovery.
Although the word sports is mentioned
in the name, you do not have to participate
in sport or exercise to benet from Sians
therapies anyone can have it done.
Sports massage differs from regular types
of massage that you might have at a beauty
clinic or health spa.
It is a much deeper massage, with the aim
of getting deep into the tissue to release the
tension that occurs as a result of exercise and
everyday life.
People who suffer with common ailments
such as neck pain, headaches, back pain,
tennis elbow, shin splints, and sciatica can
benet greatly from Sians services at Peak
Performance, give her a call today to talk
about any recurring problems that you may
have.

Building models can be a great hobby, if
you have some spare time on your hands. It can
also be very rewarding, especially once youve
completed your task as youll have something cool
to show off in your man cave.
Model building can be a great way to bond
with your son too. When I was young I can
remember having loads of fun building model
aeroplanes with my dad, and hed tell me how his
dad used to work on real-life Spitres during the
World War II.
Model kits come in a wide variety of scale
sizes and skill difculty to build. You can make
anything from 16th century battle ships and classic
trains, to modern sci- spaceships and ghter jets.

new centre encouraging
women of all ages to take part
in physical activity has opened
in Pengam in the Rhymney Valley. The
Us Girls Hub is run by Diva Sport,
thanks to the help of the sport charity
Streetgames, the Welsh Government
programme Communities First and
Sport Wales.
The venture, which is the rst of its
kind in South Wales, is the brain child
of Mel Gill and Claire Williams, who
saw a gap in the exercise market three
years ago when they launched Diva
Sport. We were both single parents
Mel says who found it hard to exercise
when we worked full time because we
felt guilty leaving the children.
The answer to their dilemma was
to set up classes where people were
encouraged to bring along their
children so they could play together.
As well as holding zumba, kettlebell
and bokwa sessions, Diva Sport also
runs classes that the whole family can
take part in, like roller skating, so that
everyone is exercising and having fun
together. Its not just for gym bunnies,
we want everyone to come along.
The next step for them was to open
a dedicated centre for women in
particular to exercise. To do this, they
were given funding by Sport Wales,
with aim of doubling the amount of
women and girls taking part in specic
activities. Claire says We didnt expect
to be able to run a facility like this so
soon. Weve been amazed by the
response weve had on Facebook and
the number of people whove been in
to pick up timetables and ask about the
classes on offer.
The Us Girls Hub is situated at
Willow Court in Pengam and is
open to women and girls of all ages,
abilities, shapes and size. With so
many exercise classes available, theres
certainly something for everyone.

...AND MAKE A
MINI-GREENHOUSE!
Learning to Make A Difference
S
o, youve decided to get outside and get
planting? Yay! But its still so cold at
night, isnt it? Seedlings dont stand a
chance in the frost, and without a greenhouse,
theyve no protection unless you decide to go
green that is.
Why not salvage some bottles and jars and
make some mini-greenhouses? Theyre so easy,
so effective and best of all theyre free. Oh, and
theyll help you save the world. Heres an idea:
A pop bottle
mini-greenhouse:
1 Take two 1 litre bottles and
cut both in half.
2 Take the top half of one (with
the lid still on) and insert it,
upside down, into its bottom
half.
3 Take the top half of the second
bottle and put it on top, and
voila, a mini-greenhouse.
TIP: Be sure to add drainage at
the bottom of the greenhouse.

College, Cardiff

C
oleg Gwent is promoting equality and
diversity with a number of events to
celebrate difference and promote fairness.
Organised by the colleges Students Union, the
equality and diversity events were launched in style
at Coleg Gwents Pontypool campus on Monday,
February 3, with African drumming workshops,
hula-hooping, Zumba classes and representatives
from local organisations.
Coleg Gwents own support services provided
information and guidance, as did visiting
organisations such as Womens Aid, Monmouthshire
Youth Service, Developing People and Diverse
Cymru.
Lindsay Whittle, Welsh Assembly Member for
South Wales East, visited the event on Monday.
He said: Events like these provide brilliant
support for students, and its fantastic to see it
organised with them in mind.
Everyone is different and we need to recognise
this and celebrate it.
Cathy Rogers from Diverse Cymru, said: These
events provide us with a fantastic opportunity to get
young people involved with the sector we represent
and show the importance of promoting equality to
make a real difference to peoples lives.
Organiser Adam Smith, Coleg Gwent Students
Union (CGSU) sabbatical president, was delighted
by the success of the colleges equality and diversity
events.
He said: The atmosphere was great, with lots of
students talking to exhibitors.
If this event has helped even just a handful of
people then CGSU will have achieved its goal.
I cannot thank everyone enough for making
Mondays event such a success and Im looking
forward to the rest of our planned events at our other
campuses.
CGSU is run by students for students and the
hard work of all the student officers to organise these
events has been outstanding.
The diversity roadshow will visit Coleg Gwents
City of Newport Campus on Wednesday, February
5; the Blaenau Gwent Learning Zone on Friday,
February 7; and Usk Campus on Monday, February 10.

TALK PANTS!
Bringing up the topic of sexual abuse
with children is probably the most
diffcult conversation youll ever have,
which is why the NSPCC has developed
its Talk Pants advice to help explain the
underwear rule.
Heres how it goes.
PRIVATES ARE PRIVATE
Be clear with your child that the parts
of their body covered by underwear are
private. Explain to your child that no one
should ask to see or touch their private
parts or ask them to look at or touch
anyone elses.
Sometimes doctors, nurses or family
members might have to. Explain that
this is OK, but that those people should
always explain why, and ask your child if
its OK frst.
ALWAYS REMEMBER YOUR BODY
BELONGS TO YOU
Let your child know their body belongs
to them, and no one else. No-one has
the right to make them do anything that
makes them feel uncomfortable. And if
anyone tries, tell your child they have the
right to say no. Remind your child they
can always talk to you about anything
which worries or upsets them.
NO MEANS NO
Make sure your child understands
that they have the right to say no to
unwanted touching even to a family
member or someone they know or love.
This shows that theyre in control of
their body and their feelings should be
respected.
If a child feels confdent to say no to their
own family, they are more likely to say no
to others.
TALK ABOUT SECRETS THAT UPSET YOU
Explain the differences between good and
bad secrets. Phrases like its our little
secret are an abusers way of making
a child feel worried, or scared to tell
someone what is happening to them.
Good secrets can be things like surprise
parties or presents for other people.
Bad secrets make you feel sad, worried
or frightened.
Your child needs to feel able to speak
up about secrets that worry them and
confdent that saying something wont
get them into trouble. Telling a secret
will never hurt or worry anybody in your
family or someone you know and love.
SPEAK UP, SOMEONE CAN HELP
Tell your child that if they ever feel sad,
anxious or frightened they should talk
to an adult they trust. This doesnt have
to be a family member. It can also be
a teacher or a friends parent or even
ChildLine. Remind them that whatever
the problem, its not their fault and they
will never get into trouble for speaking up.

CHILDREN SEARCHING FOR
THEIR FOREVER FAMILY
M
illie is six-years-old, she
lives with her sisters with
her current foster parents.
She has been through a lot in her
short life and she understands that
unfortunately not all children get to
live with their birth parents.
She often talks about the future
and how much she would like to
belong to a family and have a
mummy, a daddy and a pussycat.
Millies younger sisters are four
and five.
They know they will not be living
together in the future, but they hope to
continue to see each other after being
placed for adoption.
While everyone tries hard to keep
siblings together, sometimes we have
to make the hard decision to find
separate families for them.
Johnny is six-years-old. His
younger sister has already been
adopted and he is waiting for his
forever family.
Johnny has had many moves in his
life and he has suffered many losses.
He often says no family would
want him and he is finding it hard
to identify people that hold any
significance in his life.
Johnny needs to belong to a
family able to stick with him through
good and bad, as any family would
with their child.
We are keen to find families for
children like Johnny, Millie and her
sisters.
We need more families to come
forward and consider their suitability
for adoption, either for one child or a
sibling group.
You dont have to own your own
home to adopt, you dont have to be
married and there is no upper age
limit.
You can apply to adopt as a single
applicant too.
If adoption has ever crossed your
mind, now may be the time to find
out more.
There is no waiting list and
we give each enquiry time and
consideration.
We pride ourselves in
providing a friendly and
prompt service, helping
people to make the right
choices for them and their
future family.
We look forward to
meeting you

We are currently recruiting
adopters... Could this be
you?
The South East Wales
Adoption Service
Adopters come in all shapes and sizes and
from all walks of life. One of the things they have
in common is the ability to provide a loving
and stable forever home for children
who cannot live with their birth families.
We are currently looking for families who could
adopt babies, toddlers, school aged children
as well as sibling groups.
Some said we were mad for wanting to adopt two
pre-school children together. But giving two siblings
a new start in life is hugely rewarding and great fun
for everyone. Now, three months in it feels like we
were never without them. The payback as a parent
watching them grow and learn is priceless.
The South East Wales
Adoption Service is an
adoption agency that
covers Blaenau Gwent,
Torfaen and Monmouthshire
Local Authorities.
We encourage anyone who is
interested in adoption to
contact us. There is no upper
age limit and you dont have
to married or own your own
home.
For more information, an
informal discussion or to
receive an information pack
please contact us and ask to
speak to one of the team.

Last month, Lullabyz Nursery opened a brand
new annexe building called Kidz @ Lullabyz.
T
he spacious new annexe has been
specifically built for the care of children
before and after school and is filled with
lots of fun activities and games to keep the
youngsters entertained.
Whereas our main Lullabyz building
is aimed at learning and child care, Kidz @
Lullabyz focuses solely on childrens enjoyment,
where they are invited to relax, play and have
fun without getting too tired, said owner and
manager Nicola Reed.
Its been a great success, parents have
commented on how much fun their children
have when they spend their time here, with some
children not wanting to leave.
Kidz @ Lullabyz offers a breakfast club on
school days from 8am until 9am. After school
care starts from 3pm until 6pm and children can
enjoy a specially created healthy meal.
Being located on Tregare Street, close to
Clarence Place in Newport, Lullabyz also offers
a pickup service from many local schools in the
surrounding area, including Glan Usk, St Julians,
St Josephs and the Caerleon schools.
From September the team are hoping to add
more schools to the list.
Throughout the school holidays Kidz @
Lullabyz will be open all day from 8am until
6pm.
Children from the ages of 4 to 11 can take part
in a whole host of fun activities such as art and
crafts, toys and board games, console and internet
games, as well as enjoying freshly prepared
home-cooked meals.
Also, during the holidays Kidz @ Lullabyz
will run special themed weeks such as circus
skills and pirate adventures.
The annexe can comfortably accommodate 16
children at any one time and is always supervised
by two or more highly trained Lullabyz carers.
As you would expect from Lullabyz, the
annexe is closely observed by CCTV and the
doors are always locked for safety purposes.
Nicola added: Although we want our
children to have fun, we must always make sure
that they are safe thats why we always go that
extra mile when it comes to childcare and child
safety.
The next major school holiday is during
Easter and lasts for two weeks.
So if youre looking for a safe environment,
where your child can have fun and play with
other children, why not let them spend a couple
of days at Kidz @ Lullabyz?
The daily childcare rates are very competitive.
Lullabyz is situated very close to the city
centre of Newport and within easy reach of the
M4 motorway.
There is ample parking in bays outside the
nursery, as well as a dedicated drop-off point on
site for the safety of children and parents alike.
It has an open door policy at all times, so
Nicola and her team invite you to come along
and find out what makes this nursery and clubs
so special.
Lullabyz Nursery is located at Riverside
Court, Tregare Street, Newport, NP19 7AP and is
open from 8am until 6pm, Monday to Friday, all
year around except bank holidays.

Daniel Jenkins-Jones, of
RSPB Cymru, will be leading
two bi-lingual bird-watching
walks around the Garden on
Saturday February 15.
Daniel says there is every
likelihood that those joining him
on the walk will see kingfsher,
woodpeckers, dippers and
more: The Garden has a
number of different habitats so
bird-watchers are in for a treat.
There should be dabchicks
little grebes on the lakes;
dippers in the streams;
meadow pipits and thrushes
on the farmland, as well as
woodpeckers and members of
the tit family in the woodland,
possibly even the scarce marsh
tit.
We can also expect to
spot winter migrants such
as feldfare and redwing.
Sparrowhawks, buzzards,
ravens and red kites are a fairly
common sight in the Garden,
too.
The two expert-led walks are
at 12noon and at 2pm. Please
wear stout footwear and dress
appropriately for an hour or sos
walk in February weather.
ADMISSION TO THE GARDEN
IS 8.50 (CONCESSIONS 7)

THE TASTE INTERVIEW
B
ut they can only give the judges one
spoonful of their food and every
tasting is done blind, so the judges never
know whose food they are eating.
Each judge has mentored four
contestants throughout the show
Here, the judges discuss everything gastronomic,
from the show to British cuisine to their guilty food
pleasures.
For those who are just getting into The Taste, can
you try and explain a little more about what the
show is all about?
NL: We taste all the food blind, and we have just
one mouthful, on a spoon, from each cook. We dont
know whos cooked what. We have no idea if its been
cooked by a home cook or a chef or some other catering
professional. This continues throughout the whole
competition. So you might easily eliminate someone
from your own kitchen, someone youre mentoring. So
we really are judging only on the food.
And the one mouthful thing means you have to
think about food in a slightly different way. If you
were cooking someone a meal, as you eat, the flavours
develop, and you would not want everything to be
turned up too high. When you have one spoonful, you
dont want it to be turned up too high, but on the other
hand, you cant say Oh yes, theyll feel the heat by the
third spoonful, because there isnt a third spoonful, so
everything has to be delivered upfront.
AB: Youre telling a big story in one mouthful of food.
The ability to tell that story concisely, without over-
complicating it or leaving anything important out, is an
adjustment the cooks have to make. But it also makes
it a level playing field between professional chefs
and home cooks. Technique is of little importance,
presentation is of absolutely no importance.
So the aesthetics are completely irrelevant?
NL: Yes. In fact, were often slightly alarmed if it looks
like someone has spent all their time making something
look pretty.
You all mentor your teams. Have you become close
to them during the process?
NL: I got very invested and very involved. You have an
hour in which to cook with them in each programme,
so if you spend too much time chin-wagging with them
which is easily done then youre not going to get
an awful lot cooked. But theres certainly a rapport
that builds up, and the longer people have stayed in
the competition, the closer we become with them. But
you can also feel very warmly towards cooks in other
mentors kitchens, if you like the food they cook every
week.
AB: When you love food, you are automatically
romantic, and when you see people rise above
expectations, when you see people with unlikely back
stories, cooking far beyond the level you thought they
were capable of, week after week, even if theyre on
another team, you become very invested in how they
do. And its devastating when someone youve come to
really like and respect, gets sent home.
What are the different attributes you each bring as
mentors?
NL: I think everyone should answer for themselves
here, before it gets too ugly!
LL: Look, they are all jealous of me, because Im
French. Its not my fault! I trained in France, I trained
with a lot of master chefs. I learned like its the army
its oui, chef, and thats it. You listen to the chef, you
do what he wants. Ive run my kitchen the same way
here on The Taste. Listen to me, and thats it. Thats the
way I want it. Im here to make you better, so listen to
me. Thats it. Its very simple. Im always right. They are
WE GOT THE TASTE
If you havent seen it, The Taste is a unique blend of ery
cookery challenges, blind-taste eliminations and simmering
egos as the contestants battle it out to please the palates of
the judges to stay in the competition.

THE TASTE INTERVIEW
lucky to be with me in the kitchen. Im very passionate
about teaching people how to cook. I love it.
AB: Im a great believer in the idea that old age
and corruption beats youth and beauty every time.
Ludos a better chef than I, he has a stronger culinary
background, hes worked with chefs who never would
have hired me as a prep-cook or even a dishwasher.
But Ive been around the business for 30 years, so a
lot of what I try to do is figure out what Ludos going
to do and try to be smarter or trickier. Im not going to
go head-to-head trying to get my crew to make a better
classic French dish or take Ludo on head on. Well try
and figure out what hes not doing, and do that. Lets do
something different. Im much more about strategy.
NL: And Im completely different because Im a
home-cook, and not even a trained one. I love food,
Im a food obsessive. Ive eaten a lot, and I carry on
eating a lot. For me, whats important about food
is the emotional connection it makes as well
as how good it tastes. As much as possible, I
encourage the cooks in my kitchen to develop
an authentic voice, while learning a language
they didnt have before. Im not going to teach
people technique anyone whos ever seen
my technique knows I have no technique
to offer but I feel very passionately about
flavour and taste. And its surprising how often
quite successful cooks do not taste their food
enough. Its about taste, taste and taste again. Im
not sure you can teach palate, but if I have people
who arent very experienced and have maybe only
cooked a narrow range of foods, its about giving those
people certain things to taste and encouraging them to
understand what the components are.
Youre dealing with people who put their heart
and soul into this, and then, the nature of the show
is that you sometimes have to be quite critical of
them
NL: Not of them, of their food. That makes a huge
difference.
AB: Its awkward when you get a mouthful of food
and you not only hate it, it angers you. And you express
that, and then you find out who made it, and it was
someone on your team, who you like, and care about.
NL: Yes, it doesnt feel good. And sending people
home I hate that. Im such a conflict-averse person
that having to tell someone sorry, your dreams ended
is ghastly.
Have you ever had any angry reactions from them?
NL: Defensiveness, sometimes. But, on the whole, in
the shock of the moment, they behave pretty well. They
may well, Im sure, be pretty furious afterwards.
AB: We have our moments. You see it on a lot of
cooking shows: Joel Robuchon, what do you know?
Theres sometimes a bit of conflict between you guys
on the judging panel as well, just adding to the spell.
Is that good fun?
NL: Yes, it is. Im used to it I come from quite a large
family, I have siblings who will tease me, irritate me or
amuse me as they choose. I think the important thing
[on the show] is we respect each others opinions. I
dont think a disagreement has ever continued when
weve gone off set. But of course you clash, if youre
defending someone you really believe in, and that
person is being attacked. We can get ugly.
When Ludo shouts at me, the difficulty is, as brutal
as he can get, hes just so charming and endearing that I
cant really get angry with him.
When you guys go out for a meal together after
filming, does the face of the head chef drain as you
walk in and he sees who he has to feed?
NL: We dont go to those sorts of places. When we
were filming in LA we had the most fabulous Korean
barbecue. Theres something rather decadent about
working on a food programme all day and then going
out and having an enormous meal in the evening.
Do you think most of the participants leave the show
better cooks than they came on to it?
AB: Yes.
NL: Without a doubt. Obviously someone has to be
eliminated from programme one, so they havent had
time to learn much. And obviously its up to them as
to whether they listen or not. But yes, people do leave
better cooks than they arrived.
You have mouthfuls to test from all the contestants
do you ever get given mouthfuls that are genuinely
bad?
All three: Yes!
NL: At the audition stage, definitely. We have had
frightening times.
AB: Weve had professionals who have just had the
most extraordinary brain-lock, where they freeze in the
headlights, or try something that might have worked in
1989, but is the very opposite of what we want now.
NL: Or they have a concept, and the concept may be
clever, but the actual food doesnt taste good.
AB: It happens, and its unbelievable when it happens.
Weve had incidents of mass psychosis in the past,
where everyone has a really awful day and produces
far, far below their abilities. Other times you see people
reach down and come up with wonderful things, they
just levitate.
If you have something really spicy, doesnt it become
more difficult to taste other mouthfuls afterwards?
AB: If something blows out your palate, there will be
some water and some bread its something were
aware of.
They arent small mouthfuls
NL: They may not seem small to you, but when youre
trying to work out what has gone into something, they
can seem all too fleeting. You often think I want to try
that again. Sometimes you taste something new and
you love it, and want to try it again.
AB: Thats the really fun bit for me, particularly during
the selection process. As happened in season one of
the US version, someone made an extremely obscure
regional Laotian dish butt ugly, but absolutely dead-
on authentic, and I just couldnt believe it. I was so
impressed and excited and surprised. Thats a good
feeling.
So you dont get towards the end of the tasting and
start to feel full? That would make it more difficult
for those coming later.
NL: If youre a greedy person, you always want to eat
good food.
Are there any foods that you really dont like, and
therefore someone will be at a disadvantage if they
use it?
NL: I dont like green peppers, and unless youre
Hungarian there is no real call for them. But if I liked
the taste of something, I wouldnt abandon someone
because they used green pepper. Im a promiscuous
eater, and that is the only thing I have any dislike
or disdain for.
AB: I will eat something I dont particularly like.
As a chef you have to all the time. I might not
ever want to order scallops in a restaurant, but I
certainly need to know how to cook and serve
them. And I think thats true of anyone who cooks
at any level.
LL: I like everything. Seriously. I dont know if I
like English food, because I dont know about it.
NL: I did offer you a spotted dick at lunch. You liked
your fish and chips the other day.
AB: Have you ever had deep fried haggis and curry
sauce?
Ludo, Anthony, what do you think of British
cuisine?
AB: My favourite restaurant in the world is in this
country. St John. Im taking Ludo there as soon as
possible. I love it here; Ive been coming for a long
time. I love English food, executed well. There are
plenty of great restaurants here that are non-English,
but I think there are an increasing number of proudly
English restaurants serving classic English country
cooking. Thats really exciting to me.
LL: I have travelled a lot in the world, and eaten in a lot
of three-starred Michelin restaurants, and the best meal
of my life was in this country. It was in 2005, at The
Fat Duck. It was amazing. Its very hard for me, as a
French guy, to say that. London is a great city with a lot
of great chefs and good restaurants.
When you get home after a hard day, what is your
lazy, guilty food pleasure?
LL: Cheerios and milk.
AB: When Im over here, a pint of Guinness and a
meat pie.
LL: Oh, here, I would say a pint of beer and some fish
and chips.
AB: At home, really bad macaroni cheese. Really,
embarrassingly bad macaroni cheese. Like macaroni
cheese at KFC. Ill put my hood up and sneak in.
Something really nasty like that. Dirty hot dogs, a good,
greasy burger.
NL: I dont feel guilty about any pleasure. I think you
should only feel guilty if you dont take pleasure.
The Taste is on Channel 4 on Tuesday evenings at
9pm. The series culminates this month.

China Garden
D

Danny told us.
Id personally like to say a great big thank
you to all of my very loyal customers who are

Its this passion for traditional homemade
cooking, where Danny only uses the finest
locally sourced ingredients (most of which come

Dannys love for cooking originates from
watching his grandfather, Honyin, cook for his
entire family when he was a little boy.
Danny encourages families to gather around
the table at China Garden, just like his family
does in Hong Kong, to eat and share a freshly
prepared homemade meal.

pork, succulent roast duck and flavoursome sea
bass.

On his new tour, he is shunning the
sprawling arenas and has booked
rooms which vary in capacity from 200 to
1,200 seats, all of which is in keeping with
the theme and title of his show Smallness.
As a warm-up to the tour, at the
Edinburgh Fringe, he even played
the tiniest room he could find at the
Pleasance Courtyard, performing to
just 55 people each night.
Russell said: Im by no means the
first person in the theatre to do this,
but I wanted the space to comment on
the material, and you dont often get
that luxury.
But if you were doing a show about
the letter T and you could find a T-shaped
theatre, youd be insane not to do that.
I see what I do as work, so for the last
show I was promoted up a level, playing
slightly bigger rooms and being a little bit
more recognisable.
Maybe the next one will be called
Largeness and Ill put ten Hammersmith
Apollo dates on sale.
The idea of his new show has several
layers, revolving around notions of
smallness, whether its to do with the British
psyche or the way that we all look back on
our lives.
Ive experienced this feeling of
nostalgia a hundred times, said Russell.
I left university and landed the dream
job doing copywriting, so why am I thinking
about university?
When Im at university, why am I
thinking about my nans flat?
Well, were addicted to the smaller.
I think it was Schopenhauers theory that
were cursed by longing for the thing in
front, so we grab it and then long for where
we were before.
Russell Kane is the ideas man of
comedy. He crams stories, references and
(yes) observations into his shows, but
which remain fixed to a central
idea.
So, in his Edinburgh
Comedy Award-
winning set,
Smokescreens
and Castles, he
explored
Englishness and the relationship he had
with his father, cultural snobbery is analysed
in Russell Kanes Theory of Pretension, and
the transatlantic divide is picked apart in
Gaping Flaws.
In Smallness, his theory is fleshed out
with material about semi-celebrityhood
(he makes much comedy hay out of
being mistaken quite a few times
for Radio 1 DJ Nick Grimshaw), his
relationship with fiance Lindsey
(shes from the North, hes from the
South) and a surreal encounter in a hot
tub with former Pussycat Doll Nicole
Scherzinger and her Formula One
partner, Lewis Hamilton.
And there are moments of ugly
confrontation, with bullying schoolkids
in an art gallery and drunken Geordies on
holiday in the Far East.
Russell said: I dont write down my
stand-up ever you wont find a document
on my laptop that says Smallness by Russell
Kane.
At the top of the show just now, theres a
bit about Britishness and falling over, theres
the thing in the art gallery, theres a routine
about Nicole Scherzinger, theres Lindsey
saying booter (butter), theres a bit about
sleeping through the night and then theres
the Thailand story thats an hour as it is.
If youve ever seen a show by me two
nights in a row, I think youll be shocked
at how different each night is, there are
different endings and Ill leave bits out.
I dont know how to write jokes and I
dont have punchlines.
So when Im on the road, the show will
be bits growing off the end of other bits.
I may add a dramatic element to a
story, but everything is true, really true.
Im literally telling the stories that
would have made my friends laugh down
the pub, and Im still doing that.
want to play it with the third one,
Russell will be bringing his
show to The Riverfront,
Newport on Saturday,
March 8. For tickets
and details go to
russellkane.
co.uk
He may be a larger-than-life presence on stage and able to sell out large venues
across the country, but Russell Kane is currently intrigued by small things.
