William Hill Estate 2007 Napa Valley
Chardonnay Perfectly Paired with
Smoked Salmon and Apple Relish
on a Goat Cheese Crostini
Officially the season is fall, but Mother Nature has graciously
extended the cool afternoons and balmy evening hours for several
more days so why not enjoy the last days of summer enjoying good
food, wine and company al fresco. The hospitality staff at William Hill
Estate Winery is certainly still entertaining guests on their beautiful
picnic arbor with simple and delicious recipes like this one.
William Hill Estate Winery starts with the preparation of the cros-
tini – thin rounds of sourdough baguette lightly baked and cooled.
While the crostini bake, core, peel and chop a tart, local apple and
blend with the remaining ingredients for the relish. The crostini and
relish can be made the day before they are to be served and if you
prefer, the crostini could be topped with crab, lobster or shrimp. The
apple relish is equally delicious on a grilled ham and cheese sandwich SMOKED SALMON AND
