Economics Class ha.e 2een s*e$ifi$ally designed to assist 0ith the im*lementation of this e1$iting area
0hi$h $om2ines 2oth theory and *ra$ti$al a$ti.ities5 #t is ho*ed that the +8+ 0ill introdu$e students to
the 0onderful 0orld of sensory analysis9 $reate an a0areness of the im*ortant role it *lays in all as*e$ts
of the food industry and hel* them de.elo* some of the language and s!ills of sensory analysis5 #t
should also 2e 2enefi$ial to students for the food studies *ra$ti$al $ourse0or! area of the sylla2us5
Se$tion 1 of the +8+9 0hi$h in$ludes many images from the food industry9 *ro.ides some 2a$!ground
theory on sensory analysis9 in$luding a 2rief history9 the role of the senses9 sensory analysis in the food
industry and an introdu$tion to the testing *ro$edures used5 #t also in$ludes guidelines on $arrying out
sensory analysis testing in the $lassroom5 #t is suggested that this se$tion of the +8+ 2e sho0n as a
unit to the $lass 2efore *rogressing to the se$ond se$tion5
#n Se$tion 2 students are introdu$ed to ten different sensory analysis tests5 All of the tests are stand-
alone so that the tea$her $an sele$t the *arti$ular test:s to 2e demonstrated at any gi.en time5 The
tests ha.e 2een s*e$ially tailored from industry for use in the $lassroom5 They are designed in a user-
friendly manner and are demonstrated on the +8+ using a sele$tion of e.eryday foods ;other suita2le
foods $an 2e su2stituted<5 4a$h test 2egins 0ith an e1*lanation of 0hy it might 2e used9 follo0ed 2y a
$om*rehensi.e set of instru$tions for $arrying out the *arti$ular test in the $lassroom5 This in$ludes a
list of materials re=uired ;2ased on 0or!ing grou*s of four to si1 *eo*le<9 a ste*-2y-ste* *ro$edure for
setting u* ea$h test9 instru$tions for testing and an e1*lanation of ho0 results $an 2e $ollated5
