Could you please explain where the spa
concept comes from? What does it mean?
I have heard two denitions: sante per aqua
and salutem per aqua.COSETTE, VIA EMAIL

Tis is a question we have spent no small amount of time
wrestling with ourselves. In our July/August 2008 issue,
we asked a number of experts to weigh in and came up
with the following answer:

Precisely when and how the term spa rst came into use is still
un resolved. Spa historian Jonathan Paul De Vierville notes, One possibility
is that the word is an acronym created from three wordsallegedly
scrawled as grati on the walls of ancient Roman public bathssalude per
aqua. Tough there are at least eight other renditions of the phrase (salus
per aquum, sanitas per aquum, and sanitas per aquas are also common), all
versions have roughly the same translation: health through water. De
Vierville adds that the Latin word spargere (to pour forth) may also be the
source. Spa, a Belgian town established in the 14th century, could also be
the birthplace of the word. Derived from the regional term for fountain

REGNANCY IS A BLESSED and
exciting time in a womans
life. But lets be honest: Its
likely she wont feel like a
radiant Earth Mother during the entire
span of those nine months. Her once-
clear complexion can be dotted with
pimples. Ankles and calves are some-
times swollen. The waistlinewell,
it pulls a disappearing act. And thats
just the physical side of things; theres
also the mental and emotional stress
of becoming a parent. Fortunately,
a prenatal visit to the spa can deliver
some much-needed relaxation. In fact,
it may also make labor more tolerable:
When a mother is in good health and
feels better, shes more likely to have an
easier labor and be more comfortable,
says Eileen Ehudin Beard, senior prac-
tice advisor for the American College
of Nurse-Midwives.
Tat said, there are spa services every
expectant mother should steer clear of,
which is why many spas offer treat-
ments created specically for pregnant
women. Because studies suggest expo-
sure to high heatespecially in early

whirlpools, for instance. When it comes
to massage, its best to skip deep-tissue
work or stretchingwhich are often too
vigorous and can overwork and cause
pain to already-relaxed jointsunless
the therapist is specially trained to work
on pregnant women.
Treatment ingredients are another
key consideration. Many pregnant
women are particularly sensitive to cer-
tain scents, so its a good idea to ask to
smell any lotions and potions before
theyre used. Also, essential oils should
be a red ag; although some experts say
lavender and other ower-based oils are
safe when diluted, others caution against
them entirely. No matter what products
are used, make sure they are organic to
avoid any potentially dangerous chemi-
cals entering the bloodstream.
Despite these limitations, there are
still many spa options for pregnant
women. Check the menu for prenatal
treatments, which have been adapted
to address an expectant mothers spe-
cial needs. For instance, because its
unsafe for a pregnant woman to lie at
on her back or on her stomach, during
a pregnancy massage the therapist will
help her find a comfortable and safe
position on her side using pillows or
other supports. And most pregnancy-
specic facials avoid harsh ingredients
or anything that will leave the skin
more susceptible to sun damagelike
strong peels, lasers, or extractions
because high levels of hormones can
make complexions more sensitive.
Ultimately, its important to men-
tion the pregnancy when a treatment is
booked so the spa can oer guidance. It
will be well worth it: Even just an hour
of pampering can allow a mom-to-be
to connect with her changing body
and genuinely improve how she feels,
beneting both her and the baby. R

top prenatal treatments Although pregnant women dont need a permission slip to
visit a spa, its still wise to run any treatments by a doctor because every woman and pregnancy
is diferent. Also, feel free to request a particular therapist at the spa; all licensed bodyworkers
are trained to work on pregnant women, but some therapists specialize in this area.
PRENATAL MASSAGE The back supports much of
the added weight pregnant women carry, which
can affect alignment and lead to soreness and
stifness. Regular massage sessions (the American
Pregnancy Association recommends Swedish) can
ease trouble spots as well as help increase circula-
tion and decrease swelling. Because of this extra
strain on the back, treatments should be done
with the woman on her side, sup-
ported with pillows. (There is some
concern that massage tables with
the belly area cut out cause uterine
ligaments to stretch painfully.)
MANICURE/PEDICURE Boston author
and OB-GYN specialist Laura Eliza-
beth Riley, M.D., says there are no
statistics that prove nail polish is
harmful to a gestating baby. To be
safe, however, expectant mothers
should avoid formulas that contain
toluene, which at high levels may cause birth
defects and delay a childs physical and mental
development. (SpaRitual and O.P.I. have both
banned the ingredient.) Also look for a spa or salon
with good ventilation because some odors could
make pregnant women feel nauseated.
GENTLE FACIALS Surging hormones can throw
complexions out of whack, leading to breakouts
or bouts of dryness, but facials can bring balance.
Just make sure the products and methods used
are gentle (no strong peels or extractions) because
skin can be extremely sensitive at this time. And
theres no need to worry about steam; when its
directed onto the face it wont raise the bodys
temperature.
ACUPUNCTURE Visiting a licensed acupuncturist,
preferably one who has experience working with
pregnant women, can be helpful in
treating nausea and vomiting dur-
ing the rst trimester. Though little
research exists, some acupunctur-
ists believe the therapy can rotate
breech babies and induce labor
thats slow to start.
LEG TREATMENTS The legs are
working overtime during preg-
nancy to support a womans grow-
ing gure, and treating them to a
little TLC can relieve soreness and
reduce swelling. Look for treatments that use cool-
ing ingredients like peppermint and eucalyptus.
STRETCH MARK TREATMENTS Think of these as
facials for the belly; hydrating masques and
creams applied to stretched skin can ease itching
and potentially minimize stretch marks.
COUPLES MASSAGE Going to the spa with a partner
for a side-by-side service allows both parents-to-be
to enjoy some relaxation time.

IMAGINE BANISHING WRINKLES, age spots, and
unwanted hair for a fraction of the cost of a trip to the
local medical spa or dermatologist. Such is the promise
of a host of new devices making their way onto retail
shelves, but how safe and eective are these tools? It
depends on the gadget, where you purchased it, how
you use it, and how you dene eective.
Rod Rohrich, M.D. , chairman of the Department
of Plastic Surgery at University of Texas Southwestern
Medical Center at Dallas , notes that the wattage
limits of over-the-counter light therapy units and laser
hair removal tools , as well as the restrictions on how
deeply consumer-available micro-
dermabrasion units can penetrate the
skin, typically keep these products from
being able to achieve the sorts of results people are
looking for. (Read: spa-quality.) Basically, if theyre
strong enough to work theyre probably not really
safe for you to use at home, and if theyre safe theyre
probably not strong enough to really work, he says.
However, there are some gadgets that the experts
(including top estheticians) rave about. Clarisonic is
a very eective and e cient cleansing device, says
Neal Schultz, M.D. , a Manhattan-based dermatol-
ogist . He notes, though, that Clarisonic is a cleansing
tool only, not an exfoliating device or a microderm-
abrasion replacement .
If you do opt to purchase an at-home beauty
gadget, its a good idea to do so at a spa or dermatol-
ogists o ce (as opposed to a drugstore), where the
products are typically of a more professional grade
and the experts can assess your skin, show you how
to use the tool, and ensure that there are no contra-
indications. We tested a few of the most popular units
available today (see Te Scoop at right ) and had

TREATMENTS
Q. What are the benets of getting extractions during a facial? Are they necessary?
A. Te purpose of extractions is to draw out pore-clogging
sebum using a precise technique and gentle pressure
without scarring or tearing the skin. Te goal is to leave the
skin looking and feeling clean, clear, and healthy. Facials
that dont include extractions will not accom-
plish this goal. However, there are situations
when one should stay away from them,
depending on the expertise of the esthetician.
PROS: Pores are sensitive, but if the skin is
treated properly before and after the extractions
(cleansed, using steam when necessary; dis-
infected appropriately; and moisturized afterward), the man-
ual cleaning of the pores can do wonders for the complexion.
CONS: Oftentimes extractions are performed incorrectly,
with the esthetician using too much force with both ngers
(which creates too large of an opening on the pore), approach-
ing the opening from the wrong angle, or using instruments
incorrectly. Even with decent extractions, the skin needs
to be disinfected properly, and steps to close the pores and
heal the skin must be taken. Tese steps are
often neglected, causing subsequent breakouts.
To make matters worse, if extractions are not
done correctly and all of the infection is not
removed from the area, the skin will become
red, inamed, and irritated. Tis can lead to
a bigger and more serious problem than there
was to begin with. THE VERDICT: I do believe in extrac-
tions, but only if they are done correctly. Otherwise, skip

ways to support optimal
wellness throughout life is
to eat a balanced diet packed
with all the nutrients your body needs
to keep it functioning properly. Unfortu-
nately, even if your diet includes nearly
all of the recommended food groups
and quantities, it may not be enough
to keep your body in peak condition.
According to a 2007 study by the
Council for Responsible Nutrition,
nearly 80 percent of doctors recommend
that their patients take multivitamin/
mineral (MVM) supplements to ensure
against def iciencies, and a separate
study published in JAMA found that
most people do not consume enough
vitamins through food alone.
Tis becomes an even greater issue
as you age because the digestive system
becomes more sluggish over time, which
inhibits nutrient absorption. Fortunately,
its never too late to boost your nutrient
intake; according to David Heber, M.D.,
director of the UCLA Center for Human
Nutrition, supplements can be benecial
even for adults who just begin to take
them in midlife.
How They Work
Vitamins play a critical role in helping
the body derive energy from food and
in regulating various biochemical reac-
tions, such as the synthesis of neuro-
transmitters. With the exception of
D and K, vitamins cannot be made by
the body and thus must be consumed.
MVM supplements designed for
optimal aging include formulations that
help reduce oxidation and inammation
(which are believed to lead to chronic
illness) while also providing nutritional
support for bone, joint, and eye health.
Choosing the Right One
Te supplement industry is not regu-
lated by a third-party organization
such as the FDA, which means the
safety and eff icacy of supplements
do not have to be veried. To ensure
youre picking the right MVM supple-
ment, its a good idea to consult your
health practitioner, who can also help
you decide whether to augment your
MVM supplement with any additional
nutrients to address specific vulner-
abilities, such as a family history of a

One of the f irst things to con-
sider when selecting any supplement
is whether the formulation is water
soluble or fat soluble, which affects
how it is processed in the body. With
water-soluble vitamins, anything that
is not immediately used is eliminated.
Any excess from fat-soluble vitamins,
however, is stored in the body and
can accumulate to toxic levels. It is
important to understand that more
is not better, says Jeanette Brone,
founder of Path for Life, a nutrition
center in New York City. She notes
that excess vitamins can stress the
body and cause inammation.
Another key consideration when
choosing an MVM supplement is
the origin of its nutrients. Many are
chemically sourced: created in a lab
and isolated from the elements that
make them eective when ingested as
part of a whole food. As a result, many
nutrition specialists advocate formulas
made from whole-food ingredients,
which they say are better absorbed
and used by the body.
The Bottom Line
Although taking the right MVM sup-
plement can help address the internal
and external signs of aging, eating
a diet rich in fruits and vegetables
remains extremely important. Accord-
ing to Zhaoping Li, M.D., professor
of medicine and clinical chief of the
Division of Cl inical Nutrition at
UCLA, Alzheimers disease and other
age-related conditions are often linked
to the reduced consumption of fruits
and vegetables. She recommends eating
as many varieties of produce as possible
and enhancing meals with spices, which
slow oxidation. Between the nutrients
in your diet and those provided by your
MVM supplement, you ll be healthier

When faced with a life-altering decision, how can

HOULD I MARRY MY BOYFRIEND? Leave my
job and start the business of my dreams? Have
another child? Life is full of momentous deci-
sions that cant be resolved by simple logic or
reason. Despite an endless examination of the choices, a
clear-cut answer may not come. Fear may get in the way
of change, yet theres often the sense that sticking to the
status quo wont bring satisfaction or comfort, either.
In moments like these, there are two choices: to stay
put and embrace the security of the known or to trust in
what lies ahead and take a leap of faith. But what is faith,
exactly? Irene Goldenberg, Ed.D., a Los Angeles-based
family therapist and professor emeritus in the UCLA
Department of Psychiatry and Biobehavioral Science,
denes it as belief in a higher powersomething that
suggests everything is not under your personal control.
For some, that means trusting in a god, being, or
spirit that watches over them. For others, its the belief
in destiny, karma, or self, and the conviction that there is
some kind of balance in the universe. Irrespective of how
we dene faith, its restorative power can bring positive
outcomes above and beyond any specic goals we may be
striving for. In fact, the American Psychological Asso-
ciation cites numerous studies indicating that faith helps
increase coping skills, provides greater resilience to stress,
and improves overall life satisfaction.
Another benet of faith is a deeper understanding
of self and personal mission, according to Lisa Nichols,
author of No Matter What: 9 Steps to Living the Life
You Love. Sometimes your soul cries out for you to do
something radically dierent from what youre presently

emotional precipice just a few
years ago. Something kept tell-
ing her to leave her six-figure
consulting job and create a
program that would help trou-
bled teenagers turn their lives
around. But as a single mom,
she knew that a startup business
was a huge risk. She kept saying
no to this voice until it got so
loud it was keeping her up at night.
Finally, Nichols said yes to the
dream. She spent the next three years
squirreling away money and creating a
business plan, then left her consulting
job. I took a leap of faith, she says.
Ten, I worked hard to evict fear and
worry from my body. I kept saying yes to
myself until I forced my plan into exis-
tence. Was the gamble worth it? Abso-
lutely, says Nichols. A decade later, she
is a successful motivational speaker and
a New York Times best-selling author.
Nichols combination of faith and
planning is exactly the sort of leap
Goldenberg recommends. Sometimes
faith is what you needits a quality
that can help you through a crisis,
she says. But you need to base deci-
sions on more than faith. In order to
make realistic choices you should talk
with people you care about and listen
to what they have to say. Goldenberg
also suggests speaking to people whose
situation is close to yours and really
hearing the advice they have to give.
Making faith-based decisions can
also inspire a renewed sense of creativity
and adventure, according to Mallika
Chopra, founder of intent.com (and
daughter of spi rit ual gur u
Deepak Chopra). Choosing to
get o the track you are on and
take a leap of faith can help you
break out of certain negative
patterns, she says. It invites
creativity and opportunity.
Chopra has taken many leaps
in her life, such as moving to
India when she fell in love with
the man she eventually married,
and then leaving an MBA program to
start mypotential .com. Although that
business failed a year after she started
it, Chopra never regretted her choice.
I learned to make decisions on a gut
level and trust that things will work
out in some way, she says. Most of all,
Chopra notes, taking such leaps built
her condence in making other bold,
faith-based decisions, such as starting
her latest website venture. Ive learned
to live in the wisdom of uncertaintyto
believe that no matter what choices we
make, the future holds innite possi-

THESE DAYS it seems no chic
spa is complete without the aesthetic
imprint of a famous interior designer.
From treatment rooms envisioned by
Philippe Starck to relaxation areas decked
out in Jonathan Adlers trademark pillows,
a bold new spa look is emerging.
Moving away from the zenlike, Asian-
inspired interiors that have helped soothe

And to think we almost missed it. My girlfriend
and I had been told of a place to witness an epic
sunset in the South Pacic, and we vowed to
catch an evening performance before we left.
But the weather on Tahaa, a small gem of an
island across the channel from Bora Bora in
French Polynesia, had been uncooperative.
Sudden showers, wind, and cloudsalthough
interspersed with periods of glorious sunshine
and rainbowshad stymied us on our quest.
By our last day on Tahaa, the sunset stakes had
grown sky high.
Not that we had come thousands of miles
from California solely for a sunset, but we
were determined to make activities like sunset-
watching the focus of our week. Deadlines,
road rage, and microwaved meals were to give
way to aimless strolls on the beach, backstrokes
in the lagoon, and a quest to learn more about
the ancient wellness practices of Polynesian (or
Maohi) culture, which have inuenced treat-
ments around the world.
Traditional therapies in French Polynesia
date back more than 2,000 years and rely heav-
ily on the abundant natural ingredients found
throughout these scattered islands, which cover
an area about half the size of Europe. Being
some of historys greatest navigators, Polyne-
sians carried their healing practices and botani-
cals with them throughout the vast Polynesian
Triangle, including the far-ung islands of New
Zealand, Samoa, and Hawaii.
B
ORA BORA WAS OUR FIRST STOP, and
we didnt have to look very hard to
discover one of the most important
resources in the Polynesian wellness
canon: towering coconut palms, which are
everywhere. A virtual supermarket in the sky,
they provide shelter, food, water, and medicine.
Coconuts, or haari, are naturally dried on large
beds in the sun, then pressed to produce a pure
organic oil that is vital for both daily life and
special-occasion cultural rituals.
Ten there is tiare Tahiti, or Tahitian gar-
denia. Perhaps no other botanical element is as
pervasive and symbolic here as this small, white,
fragrant bloom. Married together, ref ined
coconut oil and tiare create monoi, which in
Tahitian means sweet-scented oil. During our
stay, whenever I asked about traditional and
contemporary Tahitian therapies, monoi always
came up. From coconut farmers on the back
roads of Tahaa to spa managers in gleaming
ve-star settings, everyone stressed that monoi
is absolutely elemental to Polynesian wellness.
So important is monoi to the Tahitian identity
and economy that Monoi de Tahiti was the rst
Tahitian product to earn an appellation of origin
designation, nearly 20 years ago.
We had our rst experience with monoi on
this trip at Four Seasons Resort Bora Bora,
which opened in September 2008 and is the
latest resort to be built on Bora Boras famed
lagoon. After a tour of the lagoon via Jet Ski,
it was time for some relaxation at the spa. We
walked the footpaths ribboned by lush pandanus
and tropical owers to the vaulting, hardwood

structure that sits at the center of this private
islet. An attendant greeted us with that heart-
melting smile Polynesians seem to possess, and
as I looked up at the 72-foot ceiling, I felt as if
we had arrived at a cathedral of wellness. We
chose a couples treatment called the Kahaia
Haven Ritual, named after an indigenous tree
with many healing properties and a fragrant
bloom that will be featured in a new Four Sea-
sons spa line set to be introduced at years end.
The treatment was a multi-step affair that
began with a oral footbath, which left us time
to get over the cool-factor of the Kahaia Spa
Suites transparent overwater f loors. Next, we
experienced a modern interpretation of Tahitian
traditions and elements: an Espa body polish
with ground apricot kernel and aloe to which the
spa had added black pearl powder and local vanilla;
a deeply soothing couples hot stone massage
(called ofai here) with volcanic basalt rocks; and a
sybaritic nish worthy of Tahitian royaltyside-
by-side coconut milk baths with lagoon views.

HE NEXT DAY, we made our way to
Bora Bora Pearl Beach Resort & Spa,
and over a lunch of poisson crua sort
of local ceviche dressed with lime,
coconut milk, and veggieswe learned more
about Tahitian traditions and techniques from
Anthony and Kamala Nayeli, an American
couple who co-manage the resorts Manea Spa.
Tey both stressed the responsibility they feel
to preserve the local heritage, even within the
boundaries of a modern luxury resort. Rather
than a fourteen-thousand-dollar pedi chair, we
have tradition, says Anthony. When youre in
our spa, youre in Polynesia. In fact, what drew
us to Manea Spa in the rst place was a rumor
that it oered that most traditional of Polyne-
sian art forms, the tattoo.
Not only was the rumor true, but we were in
lucktheir tattoo artist, a boldly marked Mar-
quesan named Matatiki, was on site and sched-
uled to work on Kamala. To mark the birth of
her second son, she was receiving a discreet
addition to an existing tattoo above her left
ear. Tere would be no ames or big red hearts;
traditional artists, called tahuaa tatau, work
only in black ink and stick to classic themes like
stylized animal and plant motifs.
Although we ultimately opted not to get
tattooed, we decided this was the place to get
another very traditional treatment, the taurumi,
or Tahitian massage. Reminiscent of Hawaiis
lomilomi, taurumi incorporates long, owing
strokes and kneading motions to release knots in
the body, free subtle energies, and impart over-
all balance. My Polynesian therapist integrated a
silky monoi to loosen every big-city bind I had,
and as we exited the spa through its lush gar-
dens; open breezeways; and natural elements of
woven pandanus, kahu wood, and lava rock, I
decided tradition was in good hands there.
Next we explored an entirely dierent take
on Polynesian-inspired well-being. Arriving at
Deep Ocean Spa at InterContinental Bora Bora,
I was struck by the hypermodernity on display.
Yes, there are pandanus roofs and stacked-stone
walls, but there is also glinting stainless steel,
sleek nishes, and ultramodern equipment like
dry f lotation beds. Tahiti 2.0, I thought to

myself. But what really sets the spa apart and
gives it an almost science-f iction approach
to wellness is reected in its name. Instead of
using monoi or crushed pearls, this spa nds
its inspiration more than a half-mile below the
oceans surface, where a tube system is used to
extract deep ocean water that is beyond the reach
of contaminants. Tis pure seawater, featuring
essentially the same mineral composition as
human plasma, is integrated into multiple treat-
ments and Algotherms Destination Bora Bora
products. Curious, we opted for the signature
Bora Bora Deep Blue Massage. Although Im
certain the products applied were benecial, it
was the therapists very skillful and human touch
that made it such a memorable treatment.
S
EDUCTIVE AS BORA BORA WAS, our plans
also included visits to some neighboring
islands renowned for their quiet seren-
ity. We could have made the journeys
by twin-engine plane, but since we were in no
hurry, we chose to go by boatalthough calling
the Tia Moana cruise vessel a boat is a vast
understatement. Not a fan of big cruise ships,
I was swayed by the fact that Tia Moana has only
18 cabins and two suites and that its smaller
size (226 feet) means it can sail to islands no
big cruiser could reach, such as our rst desti-
nation, Huahine. Stepping aboard, the feeling
was more luxury yacht than cruise ship. Owned
by Tahitians, Tia Moana features everything
from traditional artifacts like stone carvings
and towering tikis to a phenomenal French chef
and two top-deck Jacuzzis. Te international
staff was incredibly welcoming and efficient,
but unfortunately the onboard therapist wasnt
available, so the spa treatment had to wait.
When we learned the sta could also arrange
a massage on one of the isolated beaches, we
vowed to return. For that day, however, we were
content with paddle boarding over crystal-clear
reefs and hiking jungle trails.
The next morning, we disembarked from
Tia Moana on the f lower-shaped island of
Tahaa. Perched on the tranquil lagoon side of
the Tautau islet, or motu, was our new home,
Le Tahaa Island Resort & Spa, a ve-star prop-
erty where Tahitian traditions prevail. Elements
like Marquesan stone, coconut wood, and an
enormous kahaia tree sprouting from the lobby
(which is designed like a Polynesian canoe house)
are testaments to the hotels cultural focus.
Where we were most aware of the local con-
nection, however, was in the intimate, open-air
spa set back from the property amid a grove of
coconut palms. We spent a morning chatting
with spa director Terii Salmon about Tahitian
wellness and the appeal of this isolated motu
and learned that Tahaa is called the Vanilla
Island due to its many family-owned planta-
tions, which supply high-quality vanilla to cus-
tomers around the world. We also discussed the
many other local ingredients used here in treat-
ments: sea-green tamanu oil, ground coconut,
honey, and, of course, monoi. But he was most
passionate about his therapists, all Polynesian.
A spa menu is like a recipe; anyone can follow
it, he said. Really, the most special ingredient
is the energy of the therapist. We like to think
ours are the guardians of our culture.
It was later that day that we found ourselves
racing the sun to the wild side of the motu to
catch the sunset. We were winded but exhila-
rated as we arrived at the lava shore just in
time. Most of the clouds had cleared, but a few
remained anchored on the distant peaks of Bora
Bora. Slowly, the sun surrendered to a dark sea,
shimmering like an ocean of black pearls. At
that moment, Tahiti revealed itself to us, giving
us a small blessing for our journey home. R T

Spiny Lobster and
Mango Gazpacho
Shooters
From Golden Door Cooks
at Home
MAKES 20 SHOOTERS
INGREDIENTS
1 (1-lb.) live spiny or
Maine lobster, or 68 oz.
(11 cups) shelled
cooked lobster meat
1 large mango, peeled and
diced (2 cups)
2 cups fresh orange juice
(from 6 oranges)
3 tsp. fresh lime juice (from
2 limes)
2 tbsp. extra-virgin olive oil
1 medium cucumber, peeled,
seeded, and nely diced
(1 cups)
1 small red bell pepper, seeded
and nely diced (1 cup)
1 medium red onion, nely
diced (1 cups)
1 small serrano chili, seeded
and minced (1 tbsp.)
2 garlic cloves, minced
2 tbsp. chopped fresh cilantro
1 tsp. sriracha or Vietnamese
chili-garlic sauce, or a few
dashes of hot pepper sauce
(optional)
tsp. kosher salt, or to taste
tsp. freshly ground black
pepper, or to taste
20 pea shoots
DIRECTIONS
( In a large saucepan, bring 3
quarts of lightly salted water to
a boil. Put the lobster into the
pot headrst and lightly sim-
mer, covered, until the lobster
turns bright red, 1113 minutes.
(If the lobster is boiled too
harshly, it will make the meat
tough.) Transfer the cooked
lobster to a bowl of ice water to
cool. ) When cool enough to
handle, twist the claws o the
body if using Maine lobster.
Crack open the claws and slice
open the joints that connected
the claws to the body and dice
the meat. Twist the tail to
separate it from the body. Split
the tail open lengthwise and
remove the meat. * Dice the
tail meat; set aside about cup
for garnish and add the rest
of the diced tail meat to any
claw meat. Refrigerate until
ready to serve. + In a blender,
combine the mango, orange
juice, lime juice, and olive oil
and process until smooth, about
1 minute. , Transfer the puree
to a medium bowl and stir in
the cucumber, bell pepper,
onion, serrano, garlic, cilantro,
sriracha, salt, and pepper.
Refrigerate the gazpacho for at
least 3 hours and up to 6 hours.
- When ready to serve, stir
the diced lobster meat (except
the meat reserved for garnish)
into the gazpacho. Divide the
gazpacho among 20 chilled shot
glasses. Top each shooter with
1 scant tsp. of diced lobster and a
pea shoot. Arrange the shooters
on a platter and serve.
CHEFS TIP > Te lobster can be
replaced by 12 oz. of shrimp
that has been steamed, shelled,
and chopped.

INGREDIENTS
1 whole-grain baguette, sliced
-inch thick
1 ripe mango, peeled and diced
7 oz. cooked lamb, cut into
-inch cubes
Juice of 1 lemon
1 tsp. garlic, nely chopped
1 tbsp. fresh mint, nely chopped
1 tbsp. olive oil
1 tsp. fresh ginger, grated
1 tsp. Dijon mustard
1 tbsp. honey
Salt and pepper to taste
DIRECTIONS
( Preheat the oven to 400.
) Place baguette slices on a
baking sheet and bake 6 minutes.
Remove from oven and cool.
* Combine remaining ingredi-
ents in a large bowl and adjust
seasoning to taste. + Top
baguette slices with chutney.
Serve cool.

INGREDIENTS
CUCUMBER RELISH
cup rice vinegar
8 tbsp. honey
1 small cucumber, peeled,
seeded, and sliced
3 tbsp. chopped cilantro
2 tbsp. diagonally sliced
red chilies
ALMOND SAUCE
1 tbsp. red curry paste
cup coconut milk
cup water
cup roasted ground almonds
2 tbsp. soy sauce
2 tbsp. tamarind juice
1 tbsp. grated palm sugar
CHICKEN SATAY
10 oz. chicken breast, skinned
and sliced into thin strips
cup coconut milk
1 tbsp. honey
1 tbsp. soy sauce
4 cilantro roots, minced
3 garlic cloves, minced
tsp. ground turmeric
tsp. curry powder
DIRECTIONS
CUCUMBER RELISH
( In a saucepan, bring vin-
egar and honey to a boil. Stir
frequently until honey has
dissolved and continue to cook
for 15 minutes. ) Remove from
heat and, once cooled, stir in
cucumber, cilantro, and chilies.
ALMOND SAUCE
( In a saucepan, stir-fry red
curry paste with half of the
coconut milk until fragrant.
) Add remaining sauce ingre-
dients and stir. Simmer on
low to medium heat, stirring
frequently, until the mixture
is reduced by half.
CHICKEN SATAY
( Combine all satay ingredi-
ents in a large mixing bowl and
allow chicken to marinate for
2 hours. ) Skewer oz. of
chicken on each of 15 wooden
sticks. Grill satay until cooked.
* Serve warm with Cucumber
Relish and Almond Sauce on
the side.

2 cups ltered water
2 cups fresh lemon juice,
strained through a ne sieve
Assortment of tiny herb leaves,
owers, and berries
DIRECTIONS
( Combine the water and
lemon juice and pour carefully
into clean ice cube trays. Set
one or two leaves or owers in
each cube and push them under
the surface of the water with a
skewer. Freeze overnight.
CHEFS TIP > For herbs, try
mint, lemon balm, tarragon,
cinnamon basil, dill, and thyme.

INGREDIENTS
MANGO MOUSSE
1 vanilla bean
cup pure maple syrup
1 very ripe mango, peeled
and chopped
1 tsp. almond oil
1 tbsp. Splenda
NESTS
9 (14-by-18-inch) sheets
phyllo dough
1 tsp. ground cinnamon
1 tbsp. confectioners sugar
2 pints strawberries
1 pint blueberries
1 pint blackberries
1 pint raspberries
Mint sprigs for garnish
DIRECTIONS
MANGO MOUSSE
( Scrape the vanilla bean
into the maple syrup in a small
saucepan and bring to a boil
over low heat; the vanilla seeds
will be released into the syrup.
) Strain the mixture into a
blender and add the mango,
almond oil, and Splenda; pro-
cess at high speed for 1 minute
or until smooth. * Spoon into
a bowl and chill for 2 hours.
NESTS
( Preheat the oven to 350.
) Layer 3 sheets of phyllo
dough on a work surface and cut
into fourths. Pleat the pieces into
mun cups sprayed with non-
stick cooking spray, leaving the
edges extended. Repeat with the
remaining phyllo dough. * Mix
the cinnamon and confectioners
sugar in a shaker and sprinkle
lightly over the nests. Bake
the nests for 6 minutes or until
golden brown. + Puree 1 cup
of the strawberries in a food
processor or blender and strain.
Slice the remaining strawberries
and combine with the blueber-
ries, blackberries, raspberries,
and strawberry puree in a bowl;
mix gently. , Spoon the berries
into the phyllo nests. Top each
with 2 tbsp. Mango Mousse and
garnish with mint sprigs. R F

what you are grateful for.
