Description of Duties:
My primary teaching responsibility (25%) is to teach Food Chemistry II (or called Food Analysis, FDSC
402/602) and its labs (every Spring semester) and course FDSC 820 Advanced Food Chemistry:
nutraceuticals and flavors and course 421 for undergraduate creative inquiry program. My research
(75%) interests have been focusing on several aspects including: (1) functional food/nutraceuticals, which
focuses on characterizing the bioactive chemicals in foods and agricultural products, especially those health
benefiting chemicals from medicinal plants, and inducing bioactive phytochemicals through various
techniques of chemical stresses, fermentation, genetic engineering, etc; (2) food flavor chemistry, which
encompasses determining the volatile chemical profiles of interested foods and non-food agricultural matrix
by using modern state-of-art instruments, such as GC-MS, LC-MS, etc, and studying mechanisms and
pathways of characteristic flavor formations; (3) Food safety on rapid chemical analyses and development
of antibodies for medicinal therapeutic research combined with the nanotechnology; and (4) making
biodiesel and biofuels from agricultural byproducts.
