CONCLUSIONES
- Se determin la mejor combinacin de los factores de con-
trol utilizando los niveles mnimos de trabajo, siendo SM
y HDA las variables independientes que influyeron
significativamente (p<0,05) en la calidad sensorial. En for-
ma conjunta estas variables de control tuvieron un 83% de
contribucin relativa sobre la calidad sensorial del produc-
to. Como resultado del test confirmatorio se obtuvo un valor
de CS igual a 4,6 0,2 equivalente a muy buena.
- En cuanto a las caractersticas qumico nutricionales, so-
bresalieron los componentes protenas y fibra mostrando
valores muy superiores a productos comerciales equiva-
lentes.
- De acuerdo a los ensayos de estabilidad al almacenamien-
to, el parmetro que mostr mejores preferencias a tempe-
ratura de refrigeracin fue el sabor seguido de la aparien-
cia, mientras que el ms afectado tanto a 7C como 20C
fue la textura. Se debe destacar adems el excelente resul-
tado obtenido en el test hednico obtenindose un 100%
de respuestas favorables al producto optimizado.
- Se demostr que el empleo de la metodologa Taguchi, es
efectiva como estrategia de trabajo obtenindose resulta-
dos con reducidas corridas experimentales y en corto tiem-
po, factores que tienen un impacto significativo en los cos-
tos de los ensayos experimentales.
