CHAPTER 1
INTRODUCTION
1.1. Introduction
A restaurant business is a lifetime business, since it provides primary needs of human
beings, which are food and beverages. Restaurant is one of the great industries and never
losing its attractiveness in customers persuasion, which is proven by Statistik UKM
2005 that the restaurant industry have inflation around 8,54 from 2003 until 2004 [1].
This industry is full of potential, prospect, fast growing industry, and a business that can
lead to success if the owner is capable to manage and operate it well [2].

Some people may have an idea that it will be easy to establish and manage a restaurant if
it has good quality of taste and cozy environment towards the customers; in fact, there are
several issues that can affect the success of the restaurant. The equipment utilized and the
business process flows of a restaurant are several examples that can construct the way to
be succeeded for a restaurant. It will be useless if the restaurant has a fine quality of taste,
but it has a terrible flow of process that can decrease the process efficiency.

Therefore, it should have a good knowledge towards designing an efficient business
process to increase the performance of the restaurant itself. The implementation of
existing restaurant POS software would be a good idea, but it is hardly affordable for
small and medium business. In order to fulfill the needs of knowledge, this project will
provide an analysis towards existing business process, and develop it to be more efficient
for a restaurant to establish their business. This new business process will be

implementing on COMPIERE ERP. COMPIERE ERP is an open source ERP system that
mostly used and also provides many customization possibilities from one study about
comparison of existing open source ERP system [3]. Thats could be the reason why in
this thesis, we will implement the business process on COMPIERE ERP.

1.2. Scope
This thesis will discuss the business process analysis and the implementation of the new
business process on COMPIERE ERP. Before we conduct the analysis to the restaurant
business process, we will conduct a research and study of COMPIERE ERP. Afterward
we will analyze existing restaurant business process and design new process that could
provide a more efficient and effective business process for a restaurant.

The analysis phase that will be discussed only covering the general restaurant business
process such as customer service process, kitchen procedure process, and procurement
process. However, the financial report process will not be included. It will also be applied
when we conduct the testing of new design of business process to the restaurant that is
generated according to the scope stated above. In order to do that, there will be requires
data collection that will be obtained through the following process:
Interviews or questionnaires
Observations and time studies
Documents from existing data

1.3. Aims and Benefits
The aims of this thesis are to analyze current restaurant business process and design new
restaurant business process, so that the new proposed process will provide more efficient
process and can be adapted when the business is begun to expand. Later on, the business
process can be also implemented to the existing ERP system and can be implemented to
improve its process, minimize wait time of customer and to eliminate the waste of
information movement.

1.4. Structure
The thesis will be written in seven chapters, as listed below:
Chapter 1 Introduction
This chapter describes the background of the thesis, scope, goal to be achieved,
and general description.
Chapter 2 - Theoretical Foundation
This chapter explains about the theories that be used during the thesis. It will also
explain common process that be used for restaurant.
Chapter 3 - Analysis of Existing Business Process
This chapter overview on existing restaurant business process, describing the
business process and used it to design new business process.
Chapter 4 - Solution Design

This chapter will describe in detail about proposed business process for the
restaurant, including the diagram.
Chapter 5 Implementation
This chapter will elaborate the implementation, observation, and the result of the
new business process.
Chapter 6 Evaluation
This chapter explains about the evaluation of the new business process and its
implementation.
Chapter 7 Conclusion
This chapter will summarize all the process in this thesis and provide the
conclusion.
