With no nutritional value and only extra calories to offer, I thought (still do) these are just waste of money. But is just so happened that a few weeks ago during a promotional offer at our local super market we got a packet of these potato smiles for free. On a lazy sunday afternoon when there was nothing much to do, I ventured out into the kitchen to fry a batch. Expectantly, all of us loved it and that's where the story of these frozen goodies ended. Now that we had a taste of them, we wanted more. That's when I thought of trying a copy-cat recipe from the ingredients listed at the back of the packet. When you know what exactly goes in your food, it gives a nice feeling about gorging on it. Isn't it? The recipe was super delicious and super fun to make. Try some for your kids or for any gathering with friends/family. They will luuurve it! Enjoy! Sending this recipe as an entry to Healthy Vegan Fridays and The Wellness Weekend. ...the potato dough ready to be rolled out into smiles.. 9/26/14 Cooking With Siri | Recipes, Reviews and Reflections.: [A Copy-Cat Recipe] Potato Smiles | Potato Smileys www.cookingwithsiri.com/2013/05/a-copy-cat-recipe-potato-smiles-potato.html 3/9 Tast espot t i ng Gal ler y Feast i e Gal l er y Fi ndi ng Vegan Gal ler y [A Copy-Cat Recipe] Potato Smiles | Potato Smileys Makes about 2 dozen Ingredients: 3 large potatoes 1/4 cup coriander leaves (or use any other finely chopped herbs/greens) 4 tbsp cornflour (or use all purpose flour) 1/2 tsp ginger garlic paste 1/2 tsp (or more) red chilli powder 1/2 tsp garam masala (optional) 1/4 tsp turmeric salt - to taste 2 tsp lemon juice oil, for frying Preparation: 1. Wash potatoes, cube them with skin and boil for 2 whistles in pressure cooker (or) boil in water until fork tender. Once cool, peel. 2. Mash potatoes in a bowl and add coriander leaves, cornflour, ginger garlic paste, turmeric, chilli powder, garam masala, salt and lemon juice. If the dough is too sticky, add a little more flour. Refrigerate the dough for atleast 30 mins. 3. Make small lemon sized balls, flatten and shape into a circle. Using the backside of a (clean) pencil, make two eyes and a smile with a blunt knife. Continue to do the same with rest of the dough. Note: These can be frozen for few weeks and ready for frying. Heat oil. Just put them in preheated oven and let it bake for around 18-20 mins at 200 deg C. They turn crisp on the outside. I follow same method for any store brought frozen potato chips/wedges. When baking, just brush them with some oil so that the top don't dry up & they turn out golden.
