Sang Har Mein (Fresh Water Prawns Noodles)

I can't believe that I have not blogged for more than 2 months. How time flies? What
happened?
Well, sometimes a distraction comes along and I find myself...."distracted". Poor
ec!se b!t that's my wea"ness. # change of ro!tine and I get distracted easily. In this
case was a fantastic vacation in Italy. $on't mis!nderstand, I was not in Italy for 2
months. %& days to be eact b!t I g!ess I needed a month to get ready and a month to
recover. '(
In 2 months of not blogging, the )!ality of my coo"ing has also deteriorated. I find
myself *!st coo"ing the same dishes with same ingredients. +o passion to search for
new recipes or trying new dishes. I myself was "inda getting sic" of my own boring
dishes.
,o, I am bac" to the food blogging world and letting photos of food, recipes from
others inspire me again. I decided to ma"e this delicio!s noodles ,ang Har -ein ./resh
Water Prawns +oodles(. ,ince I only order this dish when I eat o!t in -alaysia, I had a
fied impression that it is a diffic!lt dish to ma"e at home. 0efore I came to $allas, a
friend gave me the simple ingredients on how to coo" this dish. It so!nded easy
eno!gh so I tho!ght I wo!ld really try it o!t this time. 1r!e to her words, it was really
simple to ma"e and can be ready in less than %2 min!tes.
Simple Ingredients :
234 large freshwater prawns, clean and deveined 3 sliced in half hori5ontally
2 pcs of dried6fried wantan noodles
2 stal"s spring onions, c!t into % inch lengths
237 tbsp oil
% tsp sesame oil
% tbsp chopped garlic and % tbsp shallots
%&3%2 slices of yo!ng ginger
% tbsp ,hao Hsing H!a 1ia! coo"ing wine
7 c!ps water or stoc"
8ptional 3 % c!p of chopped cabbage
Seasoning (sauce):
2 tbsp oyster sa!ce
% tbsp chic"en gran!les .not re)!ired if !sing chic"en stoc"(
# pinch of salt, s!gar and pepper for taste
7 c!ps water or chic"en stoc"
Thickening (combine):
%9 tbsp corn flo!r
2 tsp water
% egg, beaten lightly
Simple steps :
%. If yo! get to b!y the ready fried wantan noodles then s"ip the step below. If yo!
have fresh wantan noodles, please follow these steps. :oosen the wantan noodles and
place on a steaming tray. ,team noodles over boiling water for 2 min!tes. ;emove and
let it cool. :oosen the noodles and deep3fry in batches in hot oil for 7& seconds !ntil
crispy and golden. ;emove and p!t aside in a 2 separate serving plates.
2. <!t the freshwater prawns into halves. ,prin"le lightly with a little salt and pepper.
Heat some 237 tbsp oil on pan. Place the prawns shell down onto the pan of oil and let
it fry for 2 min!tes. =o! can t!rn the prawn and let it coo" the flesh side. ;emove
immediately once the prawns are coo"ed. Place the prawns on top of the noodles.
7. In the same oil, p!t in the chopped garlic and shallots. /ry till fragrant and add the
ginger and contin!e to stir fry. 0y now yo!r "itchen will be filled with the aromatic
smell of garlic and ginger. #dd the coo"ing wine and sesame oil. 1hen add the
seasoning sa!ce. 1hen add water and let it come to a boil. #dd the cabbage as
desired.
4. 8nce the broth is boiling, lower the heat and add the cornstarch mi to thic"en the
sa!ce. :et it thic"en for % min!te and then t!rn off the heat. Po!r the egg into broth
and stir well. #dd in the chopped scallions.
2. Po!r the sa!ce over the noodles and serve immediately.
