Maple Hot Chocolate
1/4 cup sugar 4 cups milk
1 Tbsp. baking cocoa 1 tsp. maple flavoring
1/8 tsp. salt 1 tsp. vanilla extract
1/4 cup hot water 12 large marshmallows
1 Tbsp. butter or margarine

In large saucepan, combine sugar, cocoa and salt. Stir in hot water
and butter; bring to a boil. Add milk, maple flavoring, vanilla and 8
marshmallows. Heat through, stirring occasionally, until
marshmallows are melted. Ladle into mugs and top each with a
marshmallow. Makes 4 servings.

Garlic Vegetable Soup


2 Tbsp. olive oil 2 (14.5 ounce) cans peeled and
2 carrots, chopped diced tomatoes
2 stalks celery, chopped 3 1/2 cups water
1/4 medium head cabbage, 1 cup elbow macaroni
shredded 3 cloves garlic, minced
6 cups chicken broth 1/2 tsp. ground black pepper
Heat oil in large pot over medium heat. Saute‟ the carrots, celery
and cabbage in the oil for about 8 minutes, stirring well. Raise heat
to high and pour in the broth, tomatoes and water. Bring to a boil,
reduce heat to low, cover and simmer for 1 hour. Stir in macaroni
and heat for 5 minutes or until it is tender. Remove from heat and
stir in garlic and ground pepper. Makes 6 servings.

Oven Beef Stew with Vegetables
A diabetic recipe!

1/4 cup all-purpose flour 1 1/4 cups water


1/2 tsp. celery seed 1 pkg. (1.4 oz.) dried onion soup
1/2 tsp. paprika 1 Tbsp. horseradish
1/4 tsp. freshly ground pepper 3 small onions, halved
1 1/4 lbs. lean stewing beef 1 cup rutabaga or carrot chunks
1 Tbsp. canola oil 2 cups small whole mushrooms
Preheat oven 450 degrees. Combine flour, celery seed, paprika and
pepper in a plastic bag. Cut beef into cubes, lightly toss in seasoned
flour. Add oil to 8 cup oven-proof casserole; place in oven for 5
minutes. Remove casserole; add beef. Return to oven, brown meat,
uncovered for 15 minutes. Remove casserole from oven. Reduce
oven temp. to 350 degrees. Combine water, soup mix, horseradish
and reserved flour; pour mixture over meat. Return to oven; and
bake for 1 hour, stirring once. Add onions, rutabaga, mushrooms and
extra water if needed. Bake covered for 45 minutes or until meat and
vegetables are tender. Makes about 6 servings.

The Best Valentine Sugar Cookies


7 cups flour 1 1/2 cups shortening
2 cups white sugar 3 Tsp. almond extract
2 tsp. salt 1 cup milk
2 tsp. baking powder 3 eggs
Preheat oven 375 degrees. Mix flour, sugar and baking powder
followed by shortening. Once shortening is well blended, stir almond
flavoring and milk into the dough at the same time, followed by eggs.
Roll out dough thick on floured surfaced. Cut out cookies. Bake for
8-10 minutes or until bottom is golden. Makes 48 cookies.
