Smoking meat and poultry
Where there is smoke, there is well-fla-
vored meat and poultry. Using a smoker is
one method of imparting natural smoke fla-
vor to large cuts of meat, whole poultry and
turkey breasts. This slow cooking technique
keeps them tender, too.
Smoking is slowly cooking food indirect-
ly in the presence of a fire. This can be done
by using a “smoker,” which is an outdoor
cooker especially designed for this purpose.
A covered grill can also be used for smoking
food by placing a drip pan of water beneath
the meat on the grill.
Preventing Foodborne Illness
The national Fight BAC!® food safety
education campaign advises adhering to the
four steps in preventing foodborne illness
throughout the smoking procedure.
n Clean: wash hands and surfaces often
n Separate: do not cross-contaminate
n Cook: cook to proper temperatures
n Chill: refrigerate promptly
Defrost Meat before Smoking
Completely thaw meat or poultry before
smoking. Because smoking uses low tem-
peratures to cook food, the meat will take
too long to thaw in the smoker, allowing it
to linger in the “Danger Zone” (the temper-
atures between 40 and 140 degrees Fahren-
heit) where harmful bacteria can multiply.
Defrosted meat also cooks more evenly.
Never defrost food at room temperature.
Keeping meat and poultry cold while it is
defrosting is essential to prevent the growth
of harmful bacteria. The best way to safely
thaw meat and poultry is in the refrigerator.
Cook or refreeze it within 1 or 2 days.
The microwave oven can be used to
defrost more rapidly. Smoke the meat im-
mediately because some areas may begin to
cook during the defrosting.
Food may also be thawed in cold water.
Be sure that the sink or container that holds
food is clean before submerging food. Two
methods may be used when thawing:
1. Completely submerge airtight
wrapped package. Change water every 30
minutes.
2 Completely submerge airtight wrapped
food in constantly running cold water. If
thawed completely, it must be cooked im-
mediately.
Marinate in the Refrigerator
Some recipes state to marinate meat
and poultry for several hours or days, ei-
ther to tenderize or add flavor. Acid in the
marinade breaks down connective tissue in
meats.
Always marinate food in the refrigerator,
not on the counter. If some of the marinade
is to be used for basting during smoking or
as a sauce on the cooked food, reserve a por-
tion of the marinade. Do not put raw meat
and poultry in it. Do not reuse the marinade
from raw meat or poultry on cooked food
unless it is boiled first to destroy any harm-
ful bacteria.
Partial Cooking
Some people like to cook food partially
in the microwave oven or on the stove to
reduce smoking time. Partially cook meat
or poultry ahead of time only if the food
goes immediately from the microwave or
stove to the hot smoker. Partial cooking of
food ahead of time allows harmful bacteria
to survive and multiply to the point that
subsequent cooking cannot destroy them.
And once food is in the smoker, cook until
it reaches a safe temperature as determined
with a food thermometer.
Using a Smoker
Cook food in smokers made of materials
approved for contact with meat and poultry.
Do not smoke foods in makeshift contain-
ers, such as galvanized steel cans or other
materials not intended for cooking. Chemi-
cal residue contamination can result.
When using a charcoal-fired smoker,
buy commercial charcoal briquettes or
aromatic wood chips. Set the smoker in
a well-lit, well-ventilated area away from
trees, shrubbery and buildings. Only use
approved fire starters ? never gasoline or
paint thinner, for example.
Follow the manufacturer’s directions
for igniting charcoal or preheating a gas or
electric outdoor cooker. Let the charcoal
get red hot with gray ash ? about 10 to 20
minutes depending upon the quantity. Pile
the charcoal around the drip pan for smok-
ing. Add about 15 briquettes about every
hour. The most satisfactory smoke flavor is
obtained by using hickory, apple or maple
wood chips or flakes. Soak the chips in wa-
ter to prevent flare-ups and add about 1/2
cup of chips to the charcoal as desired.
Using a Covered Grill
To smoke meat and poultry in a covered
grill, pile about 50 briquettes in the center of
the heat grate. When they are covered with
gray ash, push them into two piles. Center
a pan of water between the two piles and
place the food on the grill over the water
pan. The water prevents flare-ups that oc-

open. Add about 10 briquettes every hour to
maintain the temperature in the grill.
Use Two Thermometers to Smoke
Food Safely
To ensure meat and poultry are smoked
safely, you will need two types of ther-
mometers: one for the food and one for the
smoker. A thermometer is needed to moni-
tor the air temperature in the smoker or
grill to be sure the heat stays between 225
and 300 degrees Fahrenheit throughout the
cooking process. Many smokers have built-
in thermometers.
Use a food thermometer to determine
the temperature of the meat or poultry.
Oven-safe thermometers can be inserted in
the meat and remain there during smoking.
Use an instant-read thermometer after the
meat is taken out of the smoker.
Cooking time depends on many factors:
the type of meat, its size and shape, the dis-
tance of food from the heat, the tempera-
ture of the coals and the weather. It can take
anywhere from 4 to 8 hours to smoke meat
or poultry, so it is imperative to use ther-
mometers to monitor temperatures.
Smoke food to a safe minimum internal
temperature.
n Beef, veal, and lamb steaks, roasts,
and chops may be cooked to 145 degrees
Fahrenheit.
n All cuts of pork to 160 degrees Fahr-
enheit.
n Ground beef, veal and lamb to 160 de-
grees Fahrenheit.
n All poultry should reach a safe mini-
mum internal temperature of 165 degrees
Fahrenheit.
If using a sauce, apply it during the last
15 to 30 minutes of smoking to prevent ex-
cess browning or burning.
Chill Promptly
Refrigerate meat and poultry within 2
hours of removing it from a smoker. Cut
the meat or poultry into smaller portions or
slices, place it in shallow containers, cover
and refrigerate. Use it within 4 days or
freeze for later use.

Making your home senior-friendly
(StatePoint) With more older Americans re-
maining in their homes as they age, it’s important
for their houses to be equipped to deal with their
changing needs.
The number of Americans age 65 and over
will reach more than 70 million within the next
20 years, with almost all Baby Boomers (90 per-
cent) hoping to live in their current home for as
long as possible, according to statistics from the
Delaware Valley Regional Planning Commission
and AARP.
“With Boomers leading this trend of ‘aging in
place,’ they are realizing home modifications are
essential to maintain independence as they age,”
says Eric McRoberts, incoming chair of the Amer-
ican Institute of Architects’ (AIA) Committee on
Design for Aging.
The AIA recommends Boomers make their
homes and communities safe and navigable — de-
spite age or physical ability — by following four
steps:
Clear Your Paths
Remove clutter that can obstruct your home’s
pathways, such as plants, magazine racks and
small home accessories. If one of the home’s resi-
dents uses a walker or wheelchair, allow at least
36 inches between objects. Make sure to have lots
of light to ease strain on older eyes and install
wall switches at all room entry points.
Adopt Universal Design
Small adjustments and basic retrofits can
transform first or ground floors into everything
a person needs — namely, a bedroom, bathroom
and kitchen. Universally designed rooms feature
elements such as dropped countertops, grab bars,
level door handles, step-less entryways, wide
hallways and curbless showers for safety and ac-
cessibility.
In multi-level homes, upstairs rooms are of-
ten converted into guest bedrooms or hobby ar-
eas that are seldom used. Using this rightsizing
concept, McRoberts says, “An architect can help
homeowners craft their physical environment so

ergy-Star certified appliances and making sure
renovations involve environmentally friendly
materials, such as bamboo flooring or VOC-free
paint.
Good landscaping can create natural shad-
ing for the home, while tightly insulating doors
and windows can significantly cut energy waste.

The record number of Americans expected to
retire in the coming years, combined with their
desire to stay in their homes, will result in sweep-

currently used as an insecticide.
“Chemicals such as fluvalinate and TTX target sodium
channels in insects and mites, so this basic research opens
the door for more applied research on chemicals to control
mites and other pest insects,” Dong said.

Michigan Gov. Jennifer M. Granholm has proclaimed October as

“Michigan Car-Deer Crash Safety Awareness Month.”
In Michigan in 2008 there were 61,010 reported car-deer crashes with 12 motorists killed and 1,648
injured. About 80 percent of all car-deer crashes take place on two-lane roads between dusk and dawn.
(Of the reported car-deer accidents Kent County is number one and Montcalm County is number five in
the state’s highest accident rate).
What can you do?
• Stay aware, awake, alert, and sober.
• Remember, safety belts are your best defense in any collision.
• Be alert for deer in spring and fall, especially at dawn and dusk.
• Heed deer crossing and speed limit signs, particularly on two-lane roads.

Prevent Tire Decay

Rotating your car’s tires is like going to the
dentist. Nobody likes it, but it’s something
that should be done. Depending on where and
when it happens, getting a flat tire is similar
to teeth issues. If a tire goes flat in your
driveway, it’s like a small cavity that has to be
filled. It’s annoying but not that big a deal. If a
tire blows in rush-hour traffic, you’re talking
full-blown root canal, and who wants that?
Here are some tips to prevent tire decay.
Most newer model cars are front-wheel drive,
and tire rotation becomes important because
the front tires wear faster than the rear. The
reason for this is simple: When you make any
kind of full turn in traffic or follow the curve
of the road, more of the vehicle’s weight is
placed on the edges of the tires. This especially
affects the front tires because these are ones
that are actually turning while the rear tires
stay in a straight line. This turning causes
the edges of the tires to wear over time. If
your tires wear unevenly, you’re susceptible
to spotty braking and poor handling-real
toothaches, er, headaches.
Another important aspect to tire rotation is
the eventual replacement of your tires. If you
don’t rotate your tires, you’ll replace them
two at a time, and that means always having
uneven wear on your wheels. If you replace
your tires four at a time-and keep them rotated
regularly-you’ll have even wear on all four.

Going Farther on a Gallon of Gas

As much as we’d like to hope, lower gas prices
aren’t likely here to stay. But with prices lower
than they have been in awhile-and especially
when they really start to rise again-here are some
tips to help you save gas.
Gettin’ in tune Keeping your car in proper running
condition is vital to getting good gas mileage and
saving money, so make sure your engine is tuned
up. Especially crucial under the hood are the spark
plugs. Are they firing correctly? One that isn’t can
cost you as much as 30% in fuel efficiency. All
thumbs? You can still replace your own air filter
and improve your gas mileage up to 10%. Check
the filter periodically for the things that can clog
it-dirt, dust, bugs, etc.-and change it according to
your owner’s manual guidelines.

An Alternative to
Pain at the Pump

Gas prices have risen dramatically in
recent years, and it looks like the situation
won’t be improving any time soon. To ease
the pain, many consumers are looking at
alternatives like hybrids and vehicles that
run on vegetable oil. While the latter may
not conjure up a pleasant image, it most
certainly has helped drivers keep more
money in their pocket.
Almost any vehicle that runs on diesel fuel
can be converted to vegetable oil for about
$1,000 to $3,000. Known affectionately
as grease cars, these vehicles have two
tanks, one for diesel fuel and one for
vegetable oil. The vehicles must start
and stop on diesel fuel and will run on
vegetable oil after it has heated up.
Restaurants generally donate the vegetable
oil required, but in order for drivers to
use it, they must take great pain to filter
it. Any old food particles and water must
be eliminated from the oil. Generally,
this involves letting the oil sit for several
weeks, enabling the food particles and
water to settle to the bottom. The oil is
then heated and filtered. Filtering systems
can be purchased or made from scratch.
In some places around the country, drivers
can find vegetable oil at the pump. There
are companies that actually manufacture

the oil and sell it. The price per gallon
can be high, but not nearly as high as
regular gas. Drivers also don’t have to fill
up their tanks as frequently. Depending
upon the size of the vehicle, drivers can
get as much as 200 miles per gallon on
vegetable oil.
Although beneficial, the alternative
technology does present some problems.

fuel, and purchasing a diesel vehicle can
