OUR BOTTLED BEERS

Lagers
Lagers use bottom-fermenting yeasts that fall to the bottom of the vessel during fermentation. This fermentation is done at cooler
temperatures, around 41 - 48 degrees F, with maturation at or close to 32 degrees F. The result is a clean, well-rounded beer from
the yeasts working more slowly and thoroughly through the malt sugars.

Pilsner
Straw to light gold, brilliant to very clear. Rich, complex maltiness combined with a pronounced yet soft and rounded bitterness and flavor
from the hops. Bitterness is prominent but never harsh, and does not linger. The aftertaste is balanced between malt and hops. Clean and
are incredibly smooth and crisp.

Premium Lager
A beer that straddles between the mainstream Pale Lager and Pilsner. Not all beers that call themselves Premium Lager are, but those that
are will typically have a deep gold to light bronze color, and distinct influence of malt and hops. They should be free of adjuncts and will
have a softer carbonation than Pale Lager or Classic German Pilsner. Overall accent will be malty-to-balanced. Most often the product of a
microbrewery or brewpub, but macrobreweries can make this style if they jack up the hops a bit and make it all-malt.

Helles Lager
When the golden and clean lagers of Plzen (Bohemia) became all the rage in the mid-1800's, Mnchen brewers feared that Germans would
start drinking the Czech beer vs. their own. Munich Helles Lager was their answer to meet the demand. A bit more malty, they often share
the same spicy hop characters of Czech Pils, but are a bit more subdued and in balance with malts. "Helles" is German for "bright."

Pale Lager
The color of pale lager ranges from light bronze to nearly transparent and the alcohol anywhere from 4-6%. Adjunct usage may be quite high,
though in some cases the beer is all-malt. Carbonation is typically forced, though not always.

Abita Light (Covington, LA) using malted barley, hops, german lager yeast & abita springs water....4.0% ABV $5

Dortmunder
Brewed to a slightly higher starting gravity than other light lagers, providing a firm malty body and underlying maltiness to complement the
sulfate-accentuated hop bitternes.s Low to medium noble (German or Czech) hop aroma.

Vienna Lager
Given this name because the style was developed around Vienna, Austria. A light to medium body, with a malty aroma. Beers produced and
labeled as Marzen or Oktoberfest are likely to be of the Vienna Lager style.

Schwarzbier
Dark brown to black. Medium body. Low sweetness in aroma and flavor. Low to medium bitterness from roast malt, which gives the beer a
very dark color and a mild roasted & chocolate flavor. Hop flavor and aroma, "noble-type". No fruitiness, esters.

Kstritzer Schwarzbier (Bad Kstritz, GER) well-rounded w/a mild hop flavor, based on the pilsner style.....4.8% ABV $5

Doppelbock
Doppelbock, literally "double bock", generally have a high percentage of alcohol, are very sweet, dark brown, almost black, with a rich tan
head.

Ayinger Celebrator (Aying, GER) earthy, creamy & chewy, w/ a gritty effervescence that dances on the tongue.........6.7% ABV $6

Eisbock
A stronger version of Doppelbock. Deep copper to black. Very alcoholic. Typically brewed by freezing a doppelbock and removing resulting ice
to increase alcohol content.

Aventinus Eisbock (Kelheim, GER) mahogany color w/ strong characteristics of banana and clove.........12.0% ABV $7

Mrzen
A traditional pale lager, the origins of which go back to at least the 17th century. Brewed at the end of the brewing season in March (Mrz in
German), it was a stronger beer intended to last through the summer months. The German style is most often characterized by a medium to
full body, a malty flavor balance, a wide range of colors, and a clean dry finish, though wide variations are notable amongst German breweries
marketing Mrzen. Originally these would have been dark lagers, but from 1872 a strong March brewed version of an amber-red Vienna lager
made by Josef Sedlmayr became the favourite Oktoberfestbier.

Rauchbier
An old German style of beer, where the green malts are smoked over an open fire, imparting a roasted meat character.

Ales
Ales are brewed using top-fermenting yeasts, meaning the yeast rises to the top of the brewing vessel during fermentation. More
often than not, this is also done at higher temperatures than Lagers, (60-75 degrees F), and needs less time for maturation. Ales
are characterized by their subtlety, complexity, and fruity/floral flavors and aromas.

Altbier
This beer style is Germanys answer to the Brown Ales of Britian and Belgium. Bronze to copper in color, they have a well-balanced malt
flavor, and a smooth drinkability due to their cold temperature maturation. You may note a hoppy bitterness in the finish.

Uerige Doppelsticke (Dsseldorf, GER) germanys interpretation of a hop-heavy barley-wine, w/ 75 ibus...8.5% ABV $8

California Common
An American West Coast original. Large shallow open fermenters (coolships) were traditionally used to compensate for the absence of
refrigeration and to take advantage of the cool ambient temperatures in the San Francisco Bay area. Fermented with a lager yeast, but one
that was selected to thrive at the cool end of normal ale fermentation temperatures.

Klschbier
First only brewed in Cologne, Germany, now many American brewpubs & a hand full of breweries have created their own version of this
obscure style.Light to medium in body with a very pale color, moderate bitterness, but fairly prominent hop flavour (typically Spalt, Tettnang
or Hallertau). They have high effervescence, medium esters, but a rounded, stylish character derived from lagering.

Metropolitan Krankshaft (Chicago, IL) a nod to the beer of cologne, w/ wheat to round out the santiam hops.....5.0% ABV $5
Reissdrf Klsch (Kln, Germany) this klsch beer is restrained on fruitiness, w/ a delicate dryness in the finish..4.8% ABV $6

Blonde & Golden Ale


An ale version of the American lager style. Produced by ale brewers to compete with lager brewers in the Northeast and Mid-Atlantic States.
Originally known as sparkling or present use ales, lager strains were (and sometimes still are) used by some brewers, but were not historically
mixed with ale strains.

Amber
A style without definition, amber ales range from bland, vaguely caramelly beers to products with a fairly healthy malt and hop balance.
Often the differentiation between a quality amber and an American Pale is that the amber might have more dark malt character, or a less
assertive hop rate.

Extra Special Bitter (ESB)


A more complex version of the original English Bitter (noted primarily for its hop content and dryness), this brew is even higher in hops, but
with great balance from a pronounced maltiness.

Fullers E.S.B. (London, England) the original! bursting w/ cherry & orange, balanced by soft malty toffee notes......5.9% ABV $5

Small Beer
The tradition of brewing two distinct beers from one mash has existed for thousands of years, and for centuries the term "small beer" was used
in English to describe the lighter and weaker second beer. Historically an ale brewed for peasants, laborers and children, the modern small beer
is made by re-using the mash intended for a strong ale (usually a barleywine style ale) to produce a lighter bodied, biscuit-dry ale with relatively
low alcohol and similar to what modern brewers call a "bitter."

Pale Ale
This style originated in 19th Century Burton, England, along the River Trent. Despite their name, Pale Ales are actually golden to amber in
color, generally have a good malt-to-hop balance and a light, nutty flavor.

IPA
This golden to amber ale is similar to the Pale, but with a bit more hops and complexity. Born in the late 18th century when more hops and
grains were added to a pale ale recipe to help the beer survive the long and hot journey to India, to supply the English troops with beer.

Extra, Imperial & Double IPA


A strong, often sweet, intensely hoppy version of the traditional India Pale Ale. Bitterness units range upward of 100 IBUs and alcohol begins
at 7.0% but is more commonly in the 8.5-10% range. The flavour profile is intense all-round.

Black IPA
An emerging beer style roughly defined as a beer with IPA-level hopping, relatively high alcohol and a distinct toasty dark malt character.
Typically lacks the roastiness and body of a strong stout and is hoppier than a strong porter. Expressive dry-hopping is common. Also called
India Dark Ale, India Black Ale, Cascadian Dark Ale, Dark IPA and sometimes India Brown Ale.

Porter
In England, the brewers of brown ales started brewing a drink more suited to modern tastes, which they called Entire or Intire Butt, possibly
as a reference to the longer aging process compared to the quick-and-dirty Brown Ale of the day. This Entire then grew to be called Porter,
probably as a reference to its popularity among Londons street-market workers.The black or chocolate malt gives the porter its dark brown
color. Porters are well hopped, heavily malted, medium-bodied beer. Porters can be sweet.

Stout
In eighteenth and nineteenth century England, the strongest versions of Porter were known as Stout Porter; over the years, this was shortened
to simply Stout. Stouts as a rule are very dark in color, with roasty malts, a heavy body, strong and balanced hop content, and vary in range
from sweet to dry.

Imperial Stout
Imperial stouts are usually extremely dark brown to black in color with flavors that are intensely malty, deeply roasted and sometimes with
accents of dark fruit (raisin, fig) or milk sourness. The bitterness is typically medium and often the low side of that. Imperial stouts are strong
and often exceed 7% by volume.

Barrel Aged Beer


A wood- or barrel-aged beer is any lager, ale or hybrid beer, either a traditional style or a unique experimental beer that has been aged
for a period of time in a wooden barrel or in contact with wood. This beer is aged with the intention of imparting the particularly
unique character of the wood and/or what has previously been in the barrel. New wood character can be characterized as a complex
blend of vanillia and/or other unique wood character, but wood aged is not necessarily synonymous with imparting wood-flavors. Used
sherry, rum, bourbon, scotch, port, wine and other barrels are often used, imparting complexity and uniqueness to beer.

Red & Red Rye Ale


Often overlooked styles of beer that combines the graininess of a porter, the smoothness of a cream ale and the spiciness of a pale ale in one
delicious brew. While it still can be tough to find in some parts of the country, the style has been slowly gaining in popularity over the last
few years. Its unique combination of flavors makes it a great beer to enjoy during the spring or any time of the year.

Brown Ale
Brown ale is a style traditional in the Northeast of England. It is rich without being filling and is dry with the slightest hint of honey. Its color
has less copper tone than Pale Ale, and has a slightly reddish hue. Exceptional smoothness is produced in balancing malt and hops.

Strong Ale
A newer category of beers that are richer and more complex, higher in alcohol content, and not for the weak-hearted. But damn good!

Scottish & Scotch Ales


Typically very malty. Scottish ales are generally dark, full-bodied brews. Many examples have a hint of smokiness derived from the use of
peated malt. 60, 70, and 80 shilling examples are all session ales under 5% abv, but the stronger "wee heavies" can range closer to 8%.

Old Ale
With a name taken from their ability to age well, these ales have a rich, malty flavor and a full body, resulting from a shortened fermentation.
The good ones are full of character.

Barley Wine
A strong ale style originating in England in the nineteenth century, named barley wine because it can be as strong as wine, but since it is
made from grain rather than fruit it is in fact a beer. One of the strongest beer styles, these intense beers are often sweet and fruity.

American Wheat
Golden in color, body is light to medium. The wheat lends a crispness to the brew. Some hop flavour maybe be present, but bitterness is low.

Hefe Weizen
An unfiltered, German style of beer, with a high ratio of wheat. The Palate and aroma of banana and clove with low hop bitterness.

Dunkel Weizen
Much like the paler Hefe-weizen, but brewed with darker, roasted malts. With a fuller mouthfeel and plenty of flavor and complexity.

Franziskaner Dunkel (Freising, GER) the dark roasted malt adds some maltiness to the refreshing hefe flavor.....5.5% ABV $7

Weizenbock
These are stronger versions of Dunkel Weizens, that feature a malty spiciness, complexity, and full flavor.

Weihenstephaner Vitus (Freising, GER) a spicy wheat beer w/ a full body & a distinctively great mouthfeel.....7.7% ABV $7

Berliner Weisse
Very wheaty, very sour style of weissebier that has a barely perceptible hop content, low alcohol, w/ a intense acidity. Very thirst-quenching!

Bayerischer Bahnhof Berliner Weisse (Leipzig, GER) a beautiful balance of tartness, fruitiness & sweetness...3.0% ABV $7

The Belgians have taken the art of brewing to a level unto themselves. From the Trappist brews (a designation allowed to only
the 8 Trappist monasteries), to Abbey beers (the non-Trappist, trappist beers) to their wheat beers, their Lambics & beyond. The
brews below are artisanal masterpieces, and obviously deserve a class of their own.

Witbier
A true Witbier beer must be made of at least 25% wheat malt in combination with barley malt. They' naturally cloudy since they are
unfiltered with a pale-yellow tint, slight spicy characteristics, & an occasional citrus quality from the addition of orange peel & coriander.

Singel
Lighter in body and alcohol than Doubles and Triples but with the big aromatic profile typical of the style. The Abbey Ales initially were
marked with a certain number of Xs to indicate strength, & perhaps quality. The Singel, the table beer, is usually lighter in color, with a
crisp hoppiness, and is rarely seen outside of the abbey.

Dubbel
This usually dark, slightly sweet, ale is rich with maltiness, showing some spicy characteristics and mild hops.

Tripel
Tripels are usually pale, complex with moderate to significant spiciness, moderate fruity esters and low alcohol and hop aromas. Generous
spicy, peppery, sometimes clove-like phenols. Esters are often reminiscent of citrus fruits such as oranges, but may sometimes have a slight
banana character. A low yet distinctive spicy, floral, sometimes perfumy hop character is usually found. Alcohols are soft, spicy and low in
intensity.

Trappist Beers
While not considered a style of beer, the term Authentic Trappist Beer is a designation of the brewery of origin. These beers are brewed
within the walls of eight Trappist monasteries (six in Belgium, one in the Netherlands & one in Austria) under control and responsibility of
the community of monks and whose revenue is devoted to social service. There are four rules of the International Trappist Association that
must be observed: The product must be made within the walls of a Trappist abbey or in an immediate vicinity, the equipment necessary to the
production must clearly express a dependency in regard to the monastery, the product must be made by or under the supervision of the
monastery community & the largest part of the profit must be spent on social work and to better the community.

Belgian Brown Ale


Also called Brune, or Bruin (not to be confused with Flander Oud Bruin), Belgian Brown Ale consists of a range of dark, low to moderate
alcohol Belgian Abbey-style beers. They may be dry or sweet, but either way malt and yeast flavors are usually dominant; they usually lack the
complex alcohol and spice flavors of a Dubbel, but the styles are each flexible enough that there is some overlap between them.

Belgian Amber
These are beers similar to the traditional pale ales of England, although somewhat less bitterly hopped. They were based on British styles to
please troops stationed in Belgium during World War I.

Belgian Blonde
Light earthy or spicy hop nose, along with a lightly sweet pils malt character. Shows a subtle yeast character that may include spicy phenolics,
perfumy or honey-like alcohol, or yeasty, fruity esters (commonly orange-like or lemony). Light sweetness that may have a candi sugar-like
character. Subtle yet complex.

Belgian Pale
Pale straw to amberish in color, these ales feature aged hops, a malty sweetness, and often spiciness.

Belgian IPA
A newer style of Belgian ale that uses hops as liberally as they do their yeasts. Its Belgian yeast meets American hops. This results in a
cloudy, dry ale with a higher alcohol content, and a fantastic billowy head.

Light in color, these ales are strong in their alcohol content, with flavor profiles that are complex, and tend toward well balanced hops.

Belgian Stout
Belgian Stout is one of those styles that has seen increasing popularity of late as more brewers, particularly American brewers, have turned
their attention to brewing this style. Which is interesting, because it is a style that has very little lineage in Belgium itself. What is typical
with Belgian yeast strains, the actual flavors and aromas that they produce in the final beer can be really variable brewer to brewer. So the
style becomes a bit of a grab bag, sufficiently loosely defined that the brewer can take it and turn it into something all their own. Which is
the real spirit of Belgian brewing in the first place.

Saison
Saison (French, "season") is the name originally given to refreshing, low-alcohol pale ales brewed seasonally in farmhouses in Wallonia, the
French-speaking region of Belgium, to refresh farm workers during harvest season. Modern-day saisons are also brewed in other countries,
particularly USA, and are generally bottle conditioned, with an average range of 5 to 8% abv, though saisons at the more traditional 3.5%
strength can still be found. This is a very complex style; many are very fruity in the aroma and flavor. Look for earthy yeast tones, mild to
moderate tartness. Lots of spice and with a medium bitterness. They tend to be semi-dry with many only having touch of sweetness.

Bire de Garde
Traditionally from the northern part of France along the Belgian border, the name means beer to keep. These ales have a subtle hop
character, generally accent the malt with spicy aromas (sometimes slightly tart), and range in color from golden to deep copper or brown.

Sour/ Wild Ale


Beers that are introduced to wild yeast or bacteria, such as: Brettanomyces, Pediococcus or Lactobacillus. This introduction may occur
from oak barrels that have been previously inoculated, pitched into the beer, or gained from various sour mash techniques. Regardless of
which and how, these little creatures often leave a funky calling card that can be quite strange, interesting, and pleasing to many.

Lambic

Lembeek, Belgium is the birthplace of the use of wild yeasts and spontaneous fermentation. Brewers there still traditionally cool their brews
in the attic of the brewhouse overnight with the windows open, to invite wild yeasts to visit their brew. The classics are tart and citric, and
use the Brettanomyces yeast that imparts its horse blanket aroma and flavor. Many add fruit once fermentation has begun to sweeten the
brew, creating an especially tasty beer.

Fruit Beer
A generic form of flavored beer, some breweries actually use real fruit or veggies, though most use an extract, syrup or processed flavor to give
the effect of a particular fruit or vegetable. Usually ales, but with not much ale character to them and commonly unbalanced. Malt flavor is
typically hidden with a low hop bitterness to allow the fruit or vegetable to dominate.

Non-Alcoholic
Most brands of non-alcoholic beer are about .5% alcohol. The reason non-alcoholic beer contains alcohol is because it starts its life as regular
beer in most cases. The alcohol is removed after the brewing process has ended. This is accomplished through evaporation, which basically
means cooking the beer until most of the alcohol is gone, then bottling the results.

Mead
Mead is a fermented beverage made from honey. It generally has a higher alcohol content than beer, usually 10%-18%. Mead is made by
adding water to honey, leaving an unfermented mixture of two to four pounds of honey per gallon of mead, dictated by whether the
meadmaker wants a dry or sweet mead, or somewhere in between. Spices are frequently, but not always, used.

Gluten-Free
For beer lovers with celiac disease, also called gluten intolerance, the gluten that appears in most common brewing grains, including barley,
wheat, and rye, can make a glass of beer a dangerous proposition. A beer made from fermentable sugars, grains and converted carbohydrates.
May or may not contain malted grains that do not contain gluten. Luckily, there are grains that don't contain gluten, and they can be used to
make beer as well. Some celiac sufferers have started homebrewing simply so that they could have beer again, and some commercial breweries
have also started creating low-gluten beer or gluten-free beer for this growing market.

Cider

Made from fermented juice, cider comes in a number of varieties. English cider is dry, w/ fruity, tannic qualities & low carbonation.
Normandy is another major cider-producing region, w/ a sweeter, more effervescent, very complex style. Ciders produced elsewhere are often
sweet, simple beverages for mass consumption, though there are some good English-style ciders in North America. For at least 2,000 years,
humans have been making apple cider wherever they could grow the fruit. In America between 1650 and 1850, almost every Yankee farmer
had a basement full of cider barrels, and hard cider was on the table for each meal. In most apple-growing regions of the world today, the term
cider means a beverage made from the juice of milled apples that has been collected in large barrels and fermented with yeast, like grape
wines.
