foods movement to heart.
On their 25-acre farm, the
Vaseys raise a variety of livestock that have been sold over
the years commercially or simply with family and neighbors.
As Thanksgiving approaches, the profile of one
segment of their livestock rises to the top, with their flock
of 25 free-range Heritage turkeys.

morning of chores on Nov. 17.
It sounds like a paradox,
but we eat them to save them
and preserve them. If they are
consumed, then we create a
demand. With no demand, no
one will raise them. Theyll no
longer exist.
Barth took a longer view
of his farm and related it to
any family involved in animal
husbandry.

diagnosed with cancer.
But things didnt stay grim
for long. This Thanksgiving,
the Rooneys have a lot to be
thankful for, one of which is
their health. Both Clara and
Dave are in remission and
continue to do what they love,
being with their family and
running the Padua Pub.

started shopping around for an enclosed
deer stand this August, he had no idea he
would end up not just finding one, but
buying the business.
Sick of freezing his tail off every deer
hunting season, he saw an ad in the Outdoor News about enclosed deer stands.
He met with the owner, Bob Olson of Alexandria, and they talked for about four
hours. Olson had mentioned his desire to
retire.
I decided it was something I would
really enjoy, May said.
He begged his wife, Megan, to take
the business over and on Oct. 1 they were
in the deer stand business as proud owners of Deer Stands Direct.
If anyone knows hunting, its Jake
May. The 34-year-old was born and raised
in Browerville and has had a love for the
outdoors for as long as he can remember.
It kills me to be sitting in the house,
he said. I love hunting and being out in
nature. It can be so peaceful.
May guesses he began hunting when
he was about eight years old.
As soon as I was able to carry my
dads old .22 Marlin or 410 bolt action, I
was after those squirrels, he said.
As an avid hunter, May was looking
for a high-quality deer stand when he met
Olson. After seeing the stands, he knew
he found what he wanted, and also knew
there was a market for them.

Most of them are made on an eight- to
10-foot base. The most popular stand is
the 6x6-foot Octagon on a trailer.
You can fit two people in there
and use it for bow and gun hunting
and move to wherever you want if you
like to hunt different locations, May
said. Some like to pull it in the shed in
the offseason. One guy told me its his
kids playhouse in the summer in the
back yard and his playhouse all fall.

Hunting stands and blinds are typically used by both bow and gun hunters to be elevated off the ground, be
protected from weather, and prevent
animals from running off due to hunter movements.

a 4x4-foot box stand with cover
that fits one person. Other products
include the 4x4-foot stationary enclosed deer stand that sits 15 feet
off the ground with four 26-inch
slider windows. The 5x5-foot enclosed deer stand fits two adults or
one adult with two small children.
This model is also available on a
two-wheel trailer. The trailer model
allows the hunter to be more mobile.
The 6x6-foot Octagon trailer
model, for example, comes with
eight 16x24-foot cupboard-style
windows, and 8-foot base, a waterproof rubber membrane roof, a
stairwell and base made with treated wood and then painted, a finished
interior with non-reflective paint,
enclosures that are notched for
forks, new bearings, hubs, rims and
tires, and four adjustable anchoring
posts. The five-step stairwell makes
access to the 4-foot high by 2-foot
wide door easily accessible and
safe. Four of the windows are vertical and four horizontal, allowing
for 360-degree viewing and shooting capability.
May has sold stands to as far
away as Missouri and does a large
bulk of business in Minnesota and
the Dakotas. Shipping is one of the
bigger challenges he faces, because
the bases dont fit in standard shipping trucks. So he or his brother-inlaw often ship the product.
But that also allows him to
meet and talk with the customers he
serves.
I enjoy talking with the people and how their hunt has been or

busy with a job, raising beef cows,


spending time with his wife and two
small children, and now, a running a
deer stand business.
But like any avid outdoorsman,
he finds time.
Believe me, he said, any
chance I get I am out there.

Horses, faith spark novel idea

Graham takes on new role as author

NEW LONDON Les Graham has
many interests faith, family and Percheron horses, to name a few. He can
now add fiction storybook writing to that
list.
The city boy originally from Toledo,
Ohio resides near New London with his
wife, Kathy, and two Percheron horses,
Pete and Joe.
I always wanted to be a farmer, so
I moved away from the city to a place
where I could farm, said Graham. I
quickly realized that farming isnt a
strong suit of mine.
So Graham, rather than pursuing a
career that wasnt fit for him, established
a great interest for Percheron draft horses. He has now raised teams of horses for
work, pleasure and entertainment for the
past 25 years.
During this same time, having not
grown up in a religious household, Graham had a desire to find God and establish a relationship with Him.
I think many young people can relate to my previous life, said Graham.
My goal is to encourage young adults
to live from a Godly perspective, not one
that focuses on the individual.
Perhaps it was the interest in horses or his newfound faith, or a little bit
of both, that inspired Graham to write a
book that encompasses his experiences
in life, but also instances that could happen to anyone.
I wish I knew what sparked my interest, said Graham. Honestly, it just
came to me.
One winter evening in 2002, Graham sat down in his kitchen and began

running through the idea of writing a


coming-of-age novel. It would later be
called Judes Gentle Giants, a story of a
young boy named Jude and his two Percheron horses.
In the story, Graham features his
own two horses as the main characters,
creating a sense of connectivity with the
author and his readers.
Originally the storyline was going
to follow two fictitious horses, Molly and
Dolly, said Graham. Eight years ago, I
purchased Pete and Joe. Why write about
Molly and Dolly when I
could now write about my
own horses?
But not everyone was
convinced the novice author would be able to create a book worth reading.
My children, and
even my wife, would
say Dad is wasting his
time, said Graham.
Time would tell of
Grahams success.
A winter hobby soon
turned in to a work of art.
The author spent 12 years
writing, editing and rewriting the novel before
finally publishing it.
I was able to complete it all in my spare
time, said Graham. The words just
continued to flow. I never seemed to
have writers block.
For Graham, writing Judes Gentle
Giants was a way to exercise his mind.
Throughout the days, Graham owns and
operates Radiant Floor Heating out of
a home office. He says that the time he
took to write the novel was a healthy way

The purpose of
the book was to showcase how hard work
and undying faith can
help a young adolescent pursue their dreams. Graham wanted to focus his writing towards boys who
may be facing similar struggles as Jude
does in the book; similar struggles that
Graham faced when he was that age.
Its the lessons of life, said Graham. Being able to have a dream, and
with hard work and determination, accomplish that dream.
On Sept. 2, Grahams dreams had
been reached Judes Gentle Giants was
published.
That was the first day, Graham says,
that he truly felt like an author.
Much to his surprise, young boys
werent the only demographic interested
in reading the novel. Girls, parents and
grandparents, alike, have all enjoyed the
messages portrayed in each chapter.
Ive had grandmas and grandpas
tell me that they love reading the story,
said Graham. Thats a true compliment
and blessing.
The book contains 17 illustrations
and a hidden symbol within each. Readers are encouraged to discover the hidden symbol, as part of a larger message,
as they read through the chapters. With
each symbol, Graham wants to provoke
the importance of having faith in God
and His greater plan.

I truly hope young adults can relate


to this book and really understand the
messages, said Graham.
So far, the novel has received rave
reviews by community members of all
ages. As Graham attends book signings,
he is continually pleased with the support of his fan base.
Fans are always asking when the
second book is coming out, said Graham.
He expects to be finished with the
sequel later this winter.
Becoming an author is not something everyone is fit to be. For Graham,
he knows he made the right decision
when he meets people who have read Judes Gentle Giants.
Its a privilege to meet my readers,
especially the young adults, at my book
signings, who arrive at my table with the
book in hand and smiles stretched wide
across their faces, said Graham. I can
strongly assume theyve devoured the
book. Thats a great feeling.

be featured on the TV program Life to

In January of 2012, Clara went to
the Sauk Centre clinic thinking she had
an ear infection after hearing a switching sound in her head when she would
lie down.
After conducting several blood
tests, the results came back. Her hemoglobin was at 6.5 grams per deciliter.
I needed three units of blood in
the next two days, Clara said.
They tested her again two weeks
later, but her counts were still low.
They couldnt figure out why my
blood counts were so low, Clara said.
In February, Clara went back to do
more tests and she found out she needed more blood.
Something was using my blood
up, Clara said. I was also losing
weight about 40 pounds in three
months, I was feeling weak and
couldnt keep any food down.
A week before St. Patricks Day,
Clara needed extra blood and fluids.
I didnt realize I was so low until
the night before St. Patricks Day, she
said. Dr. Sayovitz wanted me to stay
in the hospital, but I told him I had to
go home for our St. Patricks Day celebration.
She ended up going home, but
the Monday after the holiday Clara
traveled to the St. Cloud clinic where
they had her swallow a camera to see
what was going on inside of her. She
was supposed to pass it, but the camera
never came.
It got stuck, Clara said.
The next day, Clara went back to
the Sauk Centre clinic with Dr. Okerlund to schedule a surgery to remove
the camera the following Tuesday. But
on Wednesday, the doctor called Clara
and told her that the University of Minnesota could do a longer scope test. So,
that Friday she went to the University

and did the test.


They found the camera, but they
also found a tumor blocking my small
intestine, Clara said. The doctor from
the University worked with my doctor
in Sauk Centre to plan the surgery that
was already scheduled that next Tuesday.
After the surgery, Clara was diagnosed with small intestine cancer and
was unable to drive for four weeks.
I was scared about it. You never
think youre the one thats going to
be sick, Clara said. But the doctors
seemed optimistic that they could get
it all out.
Clara waited three months before
starting chemotherapy in July of 2012.
We went to Rochester for their
opinion if I should do the chemo or
not, Clara said. We visited with four
doctors and three of them suggested I
do it, so I went ahead with it.
Clara did her chemotherapy treatments in Sauk Centre until October
of 2012, once every other week. Each
treatment took close to three hours.
I never really got sick, Clara
said. The only thing was my hands
and feet felt cold. My hair did thin, but
I never lost all of it.
Once she finished her chemo treatments, she didnt have to do radiation.
They told me I wasnt going to
need to do that, Clara said.
Around the same time, Dave had
gone in for his yearly physical and noticed his pH levels had gone up.
We let it go for a couple of months,
and I went in for more testing in July of
2012, Dave said. My pH count had
gone up again but it had gone up too
fast in that short of time.
The doctors diagnosed Dave with
prostate cancer. Dave didnt let it get
to him.
I had talked to some guys that

have had it. I realized its a cancer that


can be easily dealt with, Dave said. I
decided to do the surgery instead of going through radiation.
Daves surgery was scheduled
shortly after in St. Cloud.
It was a robotic surgery, Dave
said. It was really interesting.
Dave spent one night in the hospital and was released to go home.
I didnt have to go through chemo or radiation, Dave said. I just
had two weeks where I couldnt lift too
much. I was still able to work.
With both Clara and Dave in and
out due to their health or doctor visits,
there were many people that stepped in
to help them run the Padua Pub.
There were a lot of days that we
were not feeling well or had to be away
for doctor visits, Clara said. Thankfully, our children, brothers and sisters
and local friends and neighbors stepped
in to help. We are so thankful for their
help. It meant a lot to us.
Less than two years later, both
Clara and Dave are in remission.
We are feeling really good, Clara
said.
With Thanksgiving just a week

away, the Rooneys have plans to celebrate with their children after their
annual Thanksgiving buffet at the pub.
Their family includes Wanda Ahrens
(40), her husband, Jeff, Lisa Lenarz
(39), her husband, Steve, Anita (37)
her friend, Jamie Deters, Darron (35),
his wife, Sarah, Paula Johnson (33) and
her husband, Paul, and their 19 grandchildren.
We will have some family time
later that afternoon, Dave said. We
will be snacking more than anything
since most everyone will have had a
big meal before.
The Rooneys have a lot to be
thankful for this year.
We are so thankful for our family, our business, our loyal customers,
Clara said. But we are also thankful to
be alive and healthy.
Dave agreed.
We are thankful for our life
we have, he said. We are not only
thankful for our family but our faith
and health, too. There were so many
people that had prayed for us. Without our faith, we wouldnt have pulled
through.

The Vaseys currently have three varieties of


heritage turkeys: Narrangansetts, Bourbon Red
and Standard Bronze.
We started with the
Narrangansetts about 10
years ago. They were
hard to come by, and we
bought five that started
our flock. Weve added a
lot since, said Barth.
The initial flock of
turkeys wasnt the first
livestock on their farm.
After purchasing the land
and farmsite in 2003,
Barth spent the first winter still living in Sauk
Centre while coming out
to remodel and repair the
farmhouse with the help
of his mother-in-law,
Kathy Schmiesing.
Patty grew up here
with her three siblings.
Her brother farmed it as
a dairy farm before getting out of farming. Its
mostly pasture of about
15 acres, plus six acres
of alfalfa and then the
building site. We went
through the whole house,

a lot of work. Once that
was done, I thought, we
need some chickens out
here. We started with
eight chickens and had
about 20 by the end of
the winter, said Barth.
The
following
spring, the Narrangansett
turkeys were bought, and
then Bronze and Bourbon Red turkeys.
Barth explained his
view of the lineage of
Heritage turkeys, From
the time of Columbus,
turkeys became common
in Europe. Researchers
think most domestic turkeys come from Central
America, though. The
Aztecs were already
breeding different kinds.
Theyre still piecing together the history, but its
pretty much a given that
the domestic turkey was
brought to Europe and
then back to America.
Barth related the

Our Heritage turkeys attract wild

toms and roost in our shelter at night.
If you go back hundreds of years to

a hardier bird for the elements of North

The Vaseys third variety, Bourbon
Red, were bred in the early 1900s in
Bourbon County, Ky.
Barths view on respect for nature
extends to plants as well as animals.
His regular occupation, besides livestock farming, is working as a full-time
seasonal landscaper at Tree Top Nursery. He worked on and off with Tree
Top Nursery from 1987 to 1994 and
has been steady there since then.
Before we moved out to the farm,
we had a large garden in Sauk Centre.
We saved 40 different kinds of tomatoes among other seeds. Learning the
right breeding of plants and animals
takes time and trial and error, he said.
Ive always had an agrarian nature. If you try raising broad-breasted
bronze turkeys, the forerunner to the
commercially-raised turkey, youll
learn they cant reproduce without
mans help. I was in that situation. I
had my tom and had my hens, and the
hens would sit on their eggs all summer but they wouldnt hatch. The eggs
were infertile.
That revelation sparked Barths interest in turkeys, which after the Heritage flock developed on their farm,
turned into commercial selling through
the Whole Foods Coop in Long Prairie
until 2012.
While Patty was raised on their
current farm, Barth grew up with eight
sisters and one twin brother on a small

25-cow dairy farm near Sebeka. His


family depended on food in large part
from their garden and the dairy cows.
We all got to play sports and be active
with school, but you did your chores
before anything else happened, recalled Barth.
While Barth is up north helping
his mother throughout the year, all the
chores fall on Pattys shoulders.
None of this is possible without
her help. She takes an avid interest in
every aspect. She cooks the way we
want it. She makes it possible to live
the life we want to live on our farm,
he said.
Just this past October, the Vaseys
purchased three young pigs to fatten
and sell later this winter.
Its a new thing for us. They have
their quirks of nature. We have more
learning to do, said Barth.
The Vaseys are very conscious
about what they eat, especially relating
to Barths diabetes that he first learned
about at the age of 30.
I have always been alternative-minded with respect to treatment
of ailments or the food that we eat. Ive
tried different things, some work and
some dont. You never really know
with scientific proof if it has helped or
not. But some of it is simply done on
faith. Humans are supposedly sophisticated people, but yet we dont give
enough attention to our soils health?
I believe things have gotten better than
50 or 60 years ago, but we can do better, he said.
Barths ultimate goal is simple.
Some year for Thanksgiving I
want us to have a Thanksgiving dinner
where we dont buy anything from the
store thats on the dinner table. It wont
be easy to achieve, he concluded.

five turkeys, 20 pounds of ham and 20
pounds of beef and used seven loaves
of bread for the dressing. Some of the
side dishes are brought by family members, but most of the food is cooked in
Orbecks kitchen.
Each table receives a platter of
food promptly at noon, allowing everyone to say grace and enjoy the meal
together. Once dinner is complete, its
time to clean up and everyone pitches
in.
We setup wash pans in the kitchen area and everybody helps clean the
dishes, said Orbeck. Its quite the
system we have.
The day continues as cousins,
nieces and nephews and siblings spend
the afternoon catching up with one another. The older family members enjoy playing a round of cards, while the
children love to play outside.
Oftentimes, Thanksgiving is the
only time we are all together, said
Mary. Its a great time spent catching
up on each others lives.
When evening rolls around, Orbeck sets out the leftovers on the kitchen counter. The supper meal is served
as a buffet and family members can eat

as they please.
We are much more laid back
come supper time, said Orbeck. But
we never run out of food. Theres always plenty of leftovers.
Orbeck is 82 years old now, and
has yet to be disappointed with her
Thanksgiving celebrations. She hopes
her children may carry on her tradition,
but realizes its her special holiday and
they may choose to celebrate in a different way.
Im not holding anyone to it and
promise not to haunt them over it. Ill
let their conscience be their guide,
said Orbeck, with a grin.
For now, Orbeck is grateful for
being able to spend this one-of-a-kind
holiday with her ever-growing family
and is looking forward to this years
celebration.
Thanksgiving has been mine and
Dads holiday, said Orbeck. Its a tradition that has become a great family
affair.

a string. The fall harvest meant a pair of new shoes.
Milk soup with old bread was commonly all there
was to eat. Things like that stick with a person for
life.
This Thanksgiving, we can all be grateful for
what we have. Ironically, one of the things Norbert
Kollodge is most thankful for is having had nothing.
Because when youve had nothing, you see everything after that as a gift.
We are so blessed.

How long have you


lived in the country? I have lived
here all of my life.
Its the home place
on my mothers side
of the family.
Describe your place
in the country. Our
place is a very typical farm site. We
have 10 acres here.
There are several small buildings
around the place that
we use for various
things. There is a tool shop and a few small storage sheds. There are items in the
landscaping around our buildings that I have made. There is also an old barn on
our farm, which my cousin is currently using to house his dairy heifers. He comes
out here every day to take care of them, unless there is a snowstorm. Then, I take
care of them.
What is your favorite thing about living there? The best thing about living out
here is that I can pretty much do what I want without having to bother a neighbor.
I also love having fresh air and, of course, the country air. I grew up on a farm,
so I am used to it. There are some alfalfa fields close by and I just love the smell
of fresh-cut alfalfa.
Whats your favorite activity to do at your place? I still drive some tractors
around and help out with fieldwork. That is one of my favorite pastimes. I also
enjoy mowing the lawn because it just makes everything look really nice. I also
enjoy working in my woodworking shop. I really enjoy making things.
Whats been your most memorable country living experience? One thing I
remember is driving the tractor around the farm when I was a little kid. You cant
do that in town. When I was on the tractor, I was always happy. I learned to drive
the tractor when I was five years old. It was on a little Ford tractor. What makes it
memorable is because I was able to go outside and do what I wanted to do.
What do you enjoy doing in your spare-time? If I have time, I love going to
auctions and even antique shops. I also enjoy doing my woodwork. I have made
little flower boxes and a little barn to put in our landscape around the house and
buildings. I even made a flower wheel. I am really proud of that. I am planning to
make one now out of a bike wheel.
Tell us something about yourself that most people dont know. Something
people dont know about me is that every once in a while, I wash the dishes.

on Nov. 2. On
one side of the
woods there was a cut bean field and on the other side there was a field with
standing corn. During the evening hunt, I had deer around me almost the entire
time. I saw several does being chased by small bucks, so I knew the rut was on.
I was watching a doe with two fawns and there was also a flock of turkeys up
towards the corn field. As I was looking around, I looked over towards the bean
field and saw a big 9-pointer standing on the edge of the woods, about 100 yards
away. The buck stood there looking into the woods for approximately 20 minutes,
not moving, just standing there. Out of the corner of my eye, I saw a doe running
across the bean field towards the buck, which caught the bucks attention and he
chased her into a thick swamp. I decided not to try my grunt call because it was
still early and I thought they would come out of the swamp towards me. Soon
after that, I saw a doe come out of the woods. I could see a buck following her
but it was a small 6-pointer, not the buck I was looking for. I watched them run
around in front of me then I looked back towards the swamp and saw another doe
appear with the big 9-point following. The doe walked about 30 yards from my
stand, but the buck stayed back for a while; he was a little more hesitant. All of

a sudden, the buck started to run towards the doe, so I grabbed my bow and got
ready to take aim. The buck ran on the same trail as the doe, 30 yards away and
gave me a nice broadside shot. I let the arrow fly and the buck dropped.
What is the biggest buck youve ever shot? The biggest buck I ever shot was in
2012. I shot a 15-point buck that scored 175 1/8 with my bow.
What do you like most about deer hunting? I enjoy sitting out in the woods
watching the wildlife. Theres something about not knowing whats out there and
knowing that, at any second, you could see the buck of a lifetime.
Tell us your best deer hunting story? Its tough to think of one specific hunting story that stands out as the best, but the hunt on Nov. 2 is definitely one of
my favorites. There were deer running around the entire time I was in my stand,
which always makes hunting more enjoyable. There is something magical when
all the hours of practice, shooting my bow in the offseason, scouting and stand
placement all come together and the result is a nice buck.

150 yards away and I blew my grunt call twice almost as loud as I could without
bottoming it out. Then he turned and ran right at me. He stopped twice on his way
to me. Each time I grunted softer and he came out at 60 yards and I took the shot
and hit him where I wanted and he died 142 yards from my tree in a hay field.
What is the biggest buck youve ever shot? The biggest buck is a 13-point that
scored 177 and was 6 1/2 yrs old.
What do you like most about deer hunting? For me the time spent with family
and friends in the field are the best reason for doing it. But one big thing for me
also is setting out cameras year after year and letting little bucks go and watching
them grow up to a point to where I try and harvest them.
Tell us your best deer hunting story? Shooting my 177-inch deer last year was
one of the best times Ive had deer hunting. Ive been as far away as Alaska deer
hunting so its hard to pick my best story. Last year we drove the cattails along a
hug pond and I walked in about 80 yards and the cattails exploded and that monster shot outta there. I ran out of the brush a ways and he was running straight
away and I shot three times. Went and looked for blood and couldnt find any and
had to go back and finish the drive. Later we found blood 150 yards from where I
shot him and he went a total of 500 yards before we found him and I freaked out.
Ive spent a lot of time, money and been a lot of places to try and kill a deer that
big. Being 28 at the time, it felt gratifying to finally have all that effort pay off,
even though it was on a drive.

own property south of Regal. I have bow hunted every year between 1991 to
2012 and rifle hunted a few years, as well, near Cuyuna in 2003 to 2007.
How big of a buck did you shoot this year? This year I shot an 11-point,
186-pound buck with 11-inch G2s.
Explain how and when it happened? After seeing a fair amount of action and
a few other small bucks, at 8:30 a.m. this 11-pointer snuck in to check his scrape
about 167 yards away from me. He was not in a hurry, just going about re-marking his territory. He was almost directly downwind of me. I had scent glands
hanging out that I had frozen from my wifes 10-pointer last year. I am not sure
if that caused him to head my way or if he was just in his routine. I had a clear
broadside shot at him standing still. Knowing where he was, I knew I only had
time for one shot. He was tipping his head back smelling either me or the scent
glands I had put out. I was very confident my gun was dialed in for that distance.
I take a lot of time each year to target shoot prior to the season. Just hitting a pie
plate at 100 yards doesnt cut it for me. I need to shoot consistently in a 3-inch
bulls eye. I wasnt going to take the chance that he would come closer, or worse,
leave. I was fairly calm considering the size of this buck, so I squeezed off one
shot. He immediately darted forward. I did my preparation now it was up to me
to wait it out an hour before running to look if I got him. When I did, it was an
easy track. The first thing I saw was one side of his antler sticking up out of the
grass only 40 or 50 yards from where I made the shot. My wife was there when I
gutted him to witness the bullet hole right through his heart.
What is the biggest buck youve ever shot? For all of the deer we have harvested over the years, this is the largest rack to date. Not sure if this is the heaviest.
What do you like most about deer hunting? Gun hunting deer and bow hunting deer are very different experiences for me. I like the whole experience gun
hunting with my wife, Julie. Mostly just hearing her story of how things went
down for her deer (she usually outdoes me). And feeling fulfilled knowing we
can completely provide our own meat for our family. Julie and I walk from our
house and climb up into our stands really early. They are not cozy stands; there
is just enough room to sit and be still. We do not eat, drink, or read from them.
We usually sit from 6 a.m. to 11 a.m., take a dinner break at the house, and then
go back in the afternoon to sit from 1:30 p.m. until dark. We do not drive deer at
all. After we get a kill and gut the deer in the woods, it is drug by hand in a sled
to our house, where we do all of our own processing. We skin it in the garage
and take the quarters into the kitchen, further processing into steaks, roasts and
ground venison. Bow hunting is a solitary, serene, peaceful experience, swaying
at the top of a tree and equally exciting.
Tell us your best deer hunting story? Too many to count. One morning in 1996,
I was on my way to my bow stand well before sunup. While trying to enter unnoticed, not using any flashlight, I walked past my stand and got temporarily lost
in the woods. It was the only time in my life I got to see the sun rise in the west.

we would be eating the next day. We all have a blast and

with our hand prints a couple years ago. We always eat
our holiday meals on these plates. It is a lot of fun to see
how much our hands have grown. On the Blonigen side,
the cousins always get to draw names for Christmas. It
is fun to see who you get.
What are your favorite Thanksgiving food and
drinks? I love the potatoes, gravy and chicken. I also
like the fruit punch Grandma always serves.

I love the food at Thanksgiving mostly the desserts.
My mom usually makes a cranberry pie, my dad does
the pecan one and relatives bring scads more.

usually cooks fish on Thanksgiving, which isnt a typical dish. My dads extended family comes over to our
house from Appleton, Wisc., and we eat for hours with
the football game on.
What are your favorite Thanksgiving food and
drinks? I like fish, fruit salads, cranberry pie, pumpkin
pie and these delicious glazed crescent rolls my uncle
makes.
How has the meaning of Thanksgiving changed for
you over the years? In elementary school, I thought
Thanksgiving was very historical; it had to be about
the pilgrims and the Native Americans sharing a meal.
I dont picture pilgrims anymore. I think of spending
much-needed time with my family and those relatives
(and now their children) I dont see very often. Thanksgiving is a delicious excuse to come together.

What do you enjoy most about Thanksgiving? Time off to spend with family and
the great food that comes with the big day. Also, its the start of the holiday season
and everyone is usually pretty cheerful!
What are your Thanksgiving traditions? Both of our parents are in the area, so we
are able to spend some time at both places and see our parents, siblings, nieces and
nephews. Bonnie: Occasionally Ill participate in Black Friday, but as I get older, I
find it harder to get up in the middle of the night or get the urge to leave everyone
Thanksgiving evening. Thinking about this makes me want to start some of our own
traditions for our immediate family.
What are your favorite Thanksgiving food and drinks? Sweet potato casserole,
pumpkin pie, homemade stuffing, eggnog and wine. Oh and The other meat Pauls
dad cooks along with a turkey usually lamb but one year it was a turducken.
How has the meaning of Thanksgiving changed for you over the years? As our
families grow and become busier we dont get together as often, so we cherish the
holiday season as it is a chance to spend quality time with everyone.

that the holiday is focused on sharing a meal
together and being thankful, not on gifts. I

health, being able to get around and spending time with
my family. When I was younger, Thanksgiving was
meaningful because it was a feast day. We always had
turkey, or goose when the prices were too high for turkey. That was during the days of the Depression.

church and pray about what we are thankful for this
past year. In the past, we used to always have turkey
or goose with all the trimmings. Now, we either go to
our sons in Sauk Rapids or our daughters in Mound.
Bertha always brings some food, usually the breads and
pie.
What are your favorite Thanksgiving food and
drinks? Turkey trimmings and pumpkin pie. Im no
longer able to have much for drinks, so its really just
water now.
How has the meaning of Thanksgiving changed for
you over the years? Im thankful for my health and being able to spend time with my family. Ive realized its
most important, as Ive gotten older, to not travel much.

family starts growing. We also have Sunday breakfast every week, which Im thankful for. There are
always cars in the yard and people just stop by and
grab breakfast.
What do you enjoy most about Thanksgiving?
Back when I was still able to cook, I was in charge
of all the meal planning and cooking. I loved doing

that. Now, we have in-laws that like to cook, which


is nice. Its always a nice day to be all together since
everyone is able to have the day off.
What are your Thanksgiving traditions? Our biggest Thanksgiving tradition is being able to get all
the family together. We are also known for inviting
anyone to dinner. If some people need a place for the
holiday or do not have any plans, they are always at
my house. Back in the day, I was in charge of planning and executing the dinner. There is always a lot
of food; well have leftovers for days.
What are your favorite Thanksgiving food and
drinks? Turkey and ham, mashed potatoes and gravy, dressing and cranberries. One year, we didnt
have gravy and everyone went nuts. We always have
pies, at least four. My favorite is sour cream raisin.
How has the meaning of Thanksgiving changed
for you over the years? I dont think the meaning
has changed much. Its still about getting together
with family and keeping up family traditions. What
has changed is the way Thanksgiving is done, like
Stove Top dressing instead of the real gizzard-andhearts dressing. As the kids have grown up, everyone
is scattered about and its difficult to get everyone together for dinner. Shopping early on Thursday night
or Friday morning never was a thing. I dont go shopping, but to me, Thanksgiving kicks off Christmas.
Thats when things get fun.

Short noses

Many of us are drawn to those cute, squished


in faces. Pugs, Boston Terriers, Bulldogs, Persians
and Himalayans are just a few of
the dog and cat breeds that share
that special look. These are all
brachycephalic breeds, which is
a long word meaning short-headed. These animals have been
bred over time to have a more
compressed upper jaw and nose
which has led to several health
by Wendy problems unique to these breeds.
Womack, DVM These health concerns can be
broken down into three categories airways, eyes and skin.
Brachycephalic Airway Syndrome is a term for
the collection of abnormalities we see in the upper
airways of these breeds. These include nostrils that
are too small, a roof of the mouth (palate) that is too
long and a windpipe that is too narrow. These make it
much harder for the dog or cat to breathe freely and
to pant effectively so they can cool themselves off.
Over time, trying to breathe through these structures
that are too narrow and past a palate that hangs down
and gets in the way can lead to the larynx (voice box)
collapsing and other tissues of the throat being pulled
out of position, thus adding to the blockage of the

air flow. Symptoms can include exercise intolerance,


gagging and coughing, open mouthed breathing,
increased noise while breathing, and if severe, can
cause fainting and inflammation of the lungs and inadequate oxygen intake. Symptoms are worse if the
pet is overweight and if the weather is hot and humid.
Surgery can be performed to open up the nostrils and
to shorten the palate if needed. In addition, for all
these breeds keep exercise moderate and stress to a
minimum. Anything that makes them breathe harder
or asks them to pant heavily to cool off is going to be
a potential problem for them.
The next collection of problems involves the
eyes. As the nose and upper jaw got smaller with
breeding, the bony eye socket got shallower. A shallower socket means that the eyes bulge out more and
are therefore at increased risk of injury, including
popping out of the socket entirely. The eyelids often
cannot close completely over the eye leading to the
eye drying out. You may even see them sleeping with
their eyes partly open. Chronic dryness can lead to
corneal ulcers and the production of dark pigment in
the cornea that interferes with vision. With the eyes
set forward so much, they can actually rub against
fur over the bridge of the nose leading to additional irritation and more corneal injury. Finally, the
ducts meant to drain the tears away can be kinked or

blocked by this position of the eye, leading to tears


spilling down the face resulting in discoloration of
the fur and skin infections from the moisture. Some
of these problems can be corrected with surgery, but
many must just be managed.
The skin folds on the face of brachycephalic
breeds are one of the hallmarks of their charming
look, but are also a source of potential problems.
Deep in those folds is a nice warm, moist environment perfect for growing bacteria and yeast. This
can lead to chronic irritation and a very unpleasant
smell. Surgery can be performed to remove some of
the folds if the problem is severe, but most issues can
be managed with routine care. You can use over-thecounter alcohol free acne pads, baby wipes or antimicrobial wipes from your veterinarian to clean out
the folds every 12-72 hours. Sometimes a benzoyl
peroxide gel or antibiotics may be needed to keep infections under control. You can adjust the treatment
regime as you find what works best to keep your pets
face clean and fresh smelling.
Brachycephalic breeds are truly some of the
sweetest and happiest companions around. If they are
dear to your heart, just keep a close eye out for any
of the above problems and discuss any concerns with
your veterinarian.

Norbert Kollodge of Holdingford holds a small jar of


moonshine dating back some 50-60 years. He enjoys
giving visitors a taste of it now and then.

the chance to have their whole family with them at the


same time.
As Kollodge, the second youngest in the family,
explains, by the time the younger kids were born, one
of the older brothers was in the service in Alaska. He
came back at times, but never when one of the sisters
was home from where she lived in Oregon.
Thinking back on his childhood, Kollodge says life
was tough. Feeding that family took everything they
had during the years of the Great Depression and Prohibition.
Dad did everything. He farmed, hauled cattle to
St. Paul, did threshing for farmers, did carpentry, and
chuckling, Kollodge added and made moonshine.
Like a large number of Stearns County residents in
those days, making moonshine helped make ends meet
during the Depression.
We had to make moonshine to survive. We never
got rich. We only got a dollar a pint for it, he said.
Looking out of his window on the edge of Holdingford, Kollodge can see the farm site his family lived on
and the barn his dad built.
A hurricane couldnt take it down. Its all built of
solid oak.
The house, where all 15 of the children were born,
is where they made their moonshine. Once, when Catherine was busy with four 20-gallon crocks of moonshine cooking, Federal agents paid them a visit.
Normally, they would smash everything, but when
they saw all the children, they just told her to get rid of
it, said Kollodge, recalling the story his mother had
told him.
Kollodge, being one of the youngest, doesnt remember nearly as much about the moonshine business
as his older siblings. They were much more involved,
pedaling it to people by the pint around town. He does
remember, though, at a very young age, maybe around
four years old, having his own task. His dad would
cut pieces of oak one foot long. Norbert would feed
them into the wood stove one by one. When they were
charred, they were put into the whiskey to give it an
amber color.
Kids like fire, so I enjoyed it, he said.

for brewing, he said, Oh
yeah, everybody did.
He said they made
good whiskey.
If you distilled it
twice it was good. Dad
always did it twice, he
said.
We had a copper still
for the longest time. After
we moved off the farm,
we used it to save water
for washing clothes, he
said.
Though he never saw
it, his older siblings told
him they hid the whiskey
under the steps that led
up into the second story of the farmhouse. His
dad, being a carpenter, put
hinges on the steps. The
steps could be lifted up to
access the whiskey. When
the Feds came, they didnt
find it.
The moonshine days
were not without their humor. Laughing, Kollodge
said he had to tell his favorite story of all.
My first cousin, Lorraine Feia, told me this.
She said Its Gods truth,
I saw it! In those days, the
cooked mash was thrown
out in the pasture or into
the pig pen if the Feds
came. My cousins family raised geese. The geese
ate some of the mash and
passed out. Thinking the
geese must be dead, and
not wanting to waste all
the down, they stripped
the feathers off of them
and threw the dead bodies
out in the woods. Later,

with feathers only on their
wings!
For the Kollodge
family, things took a turn
for the worse in 1936.
Dad owned two
farms. He owed $2,000
on the second one and
was unable to pay it. They
took both farms, he said.
They moved into his
grandparents house.
There was not much
food to go around.
When my brothers
would go hunting wed
hope and pray theyd
shoot a pheasant so we
had something to eat, he
said.
In 1939, some relief
came from the county
when a commissary truck
came around and families
could get a certain amount
of food. It was Norberts

job to take the wagon and


go get it.
Dad died in 1941,
when I was ten years old.
At 57, I thought well hes
pretty old, he should be
dying. When I reached 57
I changed my mind, he
said.
As for his mother, he
said, When she died, she
should have gone straight
to heaven. In those days,
she milked cows, raised
chickens,
butchered
washed clothes with a
scrub board. She had a
tough life, poor woman.
And as for himself,
even though life was
tough, he doesnt regret
those times at all.
Kids are spoiled
nowadays. I enjoyed those
tough times, and thats
why now I appreciate
what Ive got.

Pork Chop Dinner

6 pork chops
Seasoned salt
1 can cream of celery soup
1/2 cup sour cream
1/2 cup milk
1 cup shredded cheddar cheese, divided
1 can French fried onions, divided
24 oz. package hash browns
Sprinkle pork chops with seasoned salt and brown. Mix together celery soup, sour cream, milk, 1/2 cup cheddar cheese, 1/2 can
French fried onions and hash browns. Spread in casserole dish and
lay pork chops on top. Bake 40 minutes at 350, then sprinkle with
remaining French fried onions and cheddar cheese. Bake 5 more
minutes.

1 Tbsp. butter
3 large sweet potatoes
1 cup orange juice
1 tsp. grated orange peel
3/4 tsp. salt
1/2 tsp. grated nutmeg
1/4 tsp. ground black pepper
1/4 cup packed brown sugar
Preheat oven to 375. Coat a 9x9 inch baking dish with cooking
spray. Brown the butter in a small skillet over medium heat, swirling
the skillet, until butter turns a nutty color. Remove from heat and set
aside. Peel sweet potatoes, cut in half lengthwise and then into 1/2 inch
thick slices. Place in the prepared baking dish. Pour the orange juice
over the sweet potatoes. Sprinkle with the orange peel, salt, nutmeg
and pepper. Top with the brown sugar and browned butter. Cover and
bake 40-45 minutes or until sweet potatoes are crisp-tender. Uncover
and bake 12-15 minutes until juices are almost absorbed.

Dried beef or corned beef


Turkey breast fillets
Bacon
1 - 2 cans cream of mushroom or cream of celery soup
1 - 2 cups sour cream
1 cup marsala cooking wine
Line bottom of roaster or casserole with dried beef or corned
beef. Wrap turkey breast fillets with bacon slices and place over
dried beef. Mix soup with sour cream and cooking wine. Pour
over turkey and bake at 325 until fillets reach 170 in center.

Cranberry Coffee Cake

Crunchy Brownies

1 stick butter or margarine, softened


1 cup sugar
2 large eggs
1 tsp. almond extract
2 cups flour
1 Tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup sour cream
17 oz. can whole cranberry sauce
1/2 cup chopped pecans
Frosting:
3/4 cup powdered sugar
2 Tbsp. warm water
1/2 tsp. almond extract
Preheat oven to 350 for tube pan, 325 for bundt pan. Cream
butter and sugar; add eggs one at a time and beat well. Add flavoring. Sift dry ingredients together and add approximately 1/2 cup at a
time alternately with sour cream until all is blended. Put 1/3 batter
in pan. Swirl half of cranberry sauce over and through batter. Spoon
another 1/3 batter into pane; layer remaining cranberry sauce; top with
remaining 1/3 batter. Sprinkle with pecans. Bake 50-60 minutes in
tube pan, about 45-55 minutes in bundt pan. Cool thoroughly before
removing from pan. Combine frosting and drizzle over cake. Flavor
improves if made a day ahead of time. Freezes well.

2 sticks melted margarine


2 cups white sugar
2 tsp. vanilla
4 eggs
6 Tbsp. cocoa
1 cup flour
1/2 tsp. salt
1 jar marshmallow cream
6 oz. package chocolate chips
6 oz. package butterscotch chips
3/4 cup peanut butter
3 cups rice krispies
Cream margarine and sugar together. Add vanilla, eggs, cocoa, flour and salt. Put in greased 15x10 jelly roll pan. Bake at
350 for 25 minutes. Spread marshmallow cream on brownies.
Melt chocolate chips, butterscotch chips and peanut butter. Mix
in rice krispies and spread over the marshmallow layer.

Mozart Mozzarella
1 lb. ground beef
Chopped onion
6-8 oz. tomato sauce
1/4 tsp. garlic salt
1 cup mozzarella
1 cup cheddar cheese
1 pkg. crescent rolls
Sour cream
Oregano
Basil
Brown ground beef with chopped onion. Add mushrooms, tomato
sauce and garlic salt. Spread in 9x9 inch pan. Cover with mozzarella
and cheddar cheeses. Unroll crescent rolls and spread with sour cream
and sprinkle with oregano and basil. Roll up and place on top of cheeses. Bake uncovered until golden for 35-40 minutes at 350. Serves 6.

Easy Ice Cream Bar Dessert


Ice cream sandwiches
Cool Whip
1 jar caramel sauce
1 jar chocolate sauce
Chopped pecans
Line 9x13 inch cake pan with ice cream sandwiches. Spread a
layer of Cool Whip over the first layer and sprinkle with chopped
pecans. Place a second layer of ice cream bars over the top.
Spread on another layer of Cool Whip and drizzle on a jar each of
caramel and chocolate sauce. Garnish with more pecans.

Praline Brunch Toast


8 eggs
1 1/2 cups milk
1 Tbsp. brown sugar
2 tsp. vanilla
8 slices French or Italian bread
1/4 cup butter
1/2 cup brown sugar
1/4 cup maple syrup
1/2 cup chopped pecans
Blend eggs, milk, 1 Tbsp. brown sugar and vanilla and pour
half of mixture into 9x13 inch pan. Place bread slices in mixture. Pour remaining egg mixture over bread. Cover and refrigerate overnight. Melt butter in another 9x13 pan. Stir in 1/2 cup
brown sugar and syrup. Sprinkle with pecans. Then, carefully
place the soaked bread slices over the nuts. Pour remaining egg
mixture over bread. Bake at 350 for 30-35 minutes or until lightly browned.
