Although there should be a business standard for roast types, there is not. Well, not necessarily.
Most coffee professionals will tell you there is but there's not. There is more a collection of
'guidelines' in lieu of standards because every roaster I have met on the planet, including myself
includes a different look at what coffees in the light, dark and my way through between are. I like to
utilize these 'guidelines' loosely anyway. It's more around interpretation than whatever else.
Over the years coffee may be accused of causing some different medical problems. Now that we
have been doing dedicated testing of coffee we have been seeking the opposite really was. Over

certain kinds of brain cancer. Scientific studies show the likelihood of type 2 diabetes is lowered by
coffee consumption. It is suspected that coffee's advanced level of antioxidants may boost cells'
sensitivity to insulin which regulates blood glucose. Yet other studies implicate these antioxidants in
lessening the probability of strokes. It is speculated that the compounds in coffee widen the
bloodstream which results in a lesser blood pressure level. Recent research implies that coffee
drinking may even lower the incident of liver diseases including cirrhosis.
