PHA Topnotes in Propylene Glycol (PG)

General:
PHA Topnotes are prepared from cone hops by specific extraction and distillation methods. They
consist of original hop oil compounds in a propylene glycol (PG) solution.
PHA products are exclusively supplied worldwide by the Barth-Haas Group.

Characteristics:
PHA Topnotes are soluble in beer (or other beverages). In general PHA products offer an
alternative means of adding hop aroma independent of any other product or process. Specifically,
PHA Topnotes give a very intense dry hop aroma to beer that is characteristic of the specific
variety from which it is prepared. They enhance pleasant existing flavours in the beer/soft drink and
can mask some off-flavours.
All products are free of -acids and can be used with any beer
packaging type.

Provided as a standardised solution for dosing into bright beer.

100% derived from hops by physical processes.

Product use:
PHA Products are fully soluble in beer and are intended for addition to fined or filtered beers. They
can therefore be dosed into finished beer without the need for subsequent filtration. However,
even distribution over total volume of beer is important for consistent impact.
Regardless if the beer is intended to be bottled, kegged or filled into casks, the optimum way of
dosing PHA products is in-line dosing into the beer stream on transfer to the bright beer tank or
racking vessel.
Should in-line dosing equipment not be available we advise adding the PHA product into the bright
beer tank or racking vessel prior to transferring the beer. Depending on tank volumes this should
ensure the PHA product being mixed in well enough.
If you prefer dosing directly into casks, we recommend doing so either during the racking process or
into the full cask. Do not mix in with priming sugar (solution) or cask finings.

Product Development:
We recommend bench scale trials to determine the concentration required to give your required
flavour effect. The rate of initial dosing should be 100 ppm of the PHA as supplied. This can be
dosed using a micro-pipette at a rate of 0.1 L/ml bottle volume (i.e for a 330 ml bottle dose 33 l).
Chill the beer to normal drinking temperature. Open and introduce the required volume of PHA
into the headspace of the beer bottle. Re-close the bottle, invert, chill for minimum 2 hours then
open and taste.

Dose rate:
Typical dose rates start at 10 20 ml/hl (0.1 0.2 ml/l). Depending on the base beer and on the
effect you want to achieve the dose rate can be increased. Some brewers are using up to 100 ml/hl!
(1ml/l).
Calculation example for a barrel or cask 1 UK barrel = 36 gallon = 288 pints = 163 litres; at 10ml / hl this equates to approx. 16.5 ml
per barrel
9 gallon cask = 72 pints = approx. 41 litres; at 10 ml per hl this equates to approx. 4 ml per
cask

Packaging:
The standard pack size is a 1 litre or a 5 litre aluminium flask. Larger pack sizes are available
upon request.
Storage and shelf life:
PHA products are stable in unopened containers for at least 24 months in the packaging supplied .
Store at 0 20 C (32 68 F).

Regulatory
PHAs qualify for natural status with regard to their flavouring properties. In the European Union
they may be classified as natural hop flavouring according to the flavouring legislation (both
88/388/EC and 1334/2008). In the USA, PHAs may be classified as natural flavours, since essential
oils, oleoresins and natural extractives (including distillates) from hops are GRAS for their intended
use (21.C.F.R. 182.20)
