VANILLA SPONGE:

500ml (2 cups) Illovo Castor Sugar


4 large eggs
250ml (1 cup) oil
5ml (1 teaspoon) vanilla essence
750ml (3 cups) flour, sifted
15ml (1 Tablespoon) baking powder
250ml (1 cup) milk
Desiccated coconut for coating
CHOCOLATE COATING:
500ml (2 cups) Illovo White Sugar
250ml (1 cup) hot water
45ml (3 Tablespoons) cocoa powder
15ml (1 Tablespoon) butter or brick margarine
Method
VANILLA SPONGE:

1. Whisk castor sugar and eggs in a mixer until light and fluffy.
2. Add oil and vanilla essence, mix well.
3. Add sifted flour and baking powder to mixture alternatively with
milk.
4. Pour the creamed mixture into a greased oven tray and bake in a
preheated oven at 180C for 25 - 30 minutes or until golden brown.
5. Allow to cool and cut into squares.
CHOCOLATE COATING:
1. Heat sugar, cocoa, butter and water until bubbly.
2. Allow to cool, dip sponge squares into sauce and roll in coconut.
KHOBWE

Khobwe balls.soak khobwe overnight,kunsenda then kumusinja to small


pieces,add eggs,spices then flour pang'ono ukamapanga ma balls
then ukazinga.tastes more than meatballs trust me and try it.its
delicious
CARROT CAKE

4 Eggs
2 Cups Flour
1 Cup Cooking Oil
I Cup Grate Carrot
1 Tea spoon cinnamon
2 Tea spoons baking powder
Teaspoon Soda
Vanilla
METHOD
Mix Cooking oil and sugar
Mix one egg at a time in the bowl where there is sugar and oil
Continue mixing until fluffy
Add flour + baking powder + Soda
Add Cinnamon
Grate Carrot and add

Spinach: 1 big white onion 1tablespoon butter pinch of salt, gpepper, 1 carrot,
spinach. method remove the midsterm of the spinach cut the
leavesand let it drain of any exces h2o, cut the onion, gpeper in rings
grate the carrot. Melt the buter, add onion gpeper and sweat them
(sweat means cookin at low heat and dont let them turn to brown)
add carot and spinach, salt & herbs of choice.
Chocolatae Cake
2 cups flour
2 cups sugar
1 tsp baking powder
1 cup cooking oil
1 cup milk
2 large eggs
Pinch of salt
3 tsp coffee (optional)
3/4 cup boiling water
1 tsp vanilla essence
3/4 cup cocoa powder
-Mix all the dry ingredients together in one bowl.
- Mix oil, milk, water, vanilla and eggs in another bowl and mix well.
Then add all ingredients together and mix well.
Bake in a pre heated oven for 1 hour 10 mins or till its done.
Don't add or remove anything apart from cofee if u don't like it. Really nice and
moist

PANCAKES

100g flour, 25g shuga, pinch mchere, 250g milk, 3 mazira, 25g mafuta. Put mazira,
shuga, salt ndi mkaka together whisk. Thirani flour mix. Pamapeto mafuta leave
for few mins. Start making pancakes I think u can take over.

HOME MADE BISCUITS


Ingredients:
2 cups sifted flour
2 tsp. baking powder
4 tablespoons butter or shortening
1/2 tsp. salt
about 3/4 cup milk
Sift Flour once, measure, add baking powder and salt, and sift again.
Cut in shortening or butter. (This is where I use my hands by
rubbing the butter into the flour). Add milk gradually, stirring until
soft dough is formed. Turn out on slightly floured board and lightly
"knead" for 30 seconds, enough to shape. Roll 1/2 inch thick and cut
with 2 inch floured biscuit cutter. Bake on ungreased sheet in a 400
degree oven for 12-15 minutes. Makes 12 biscuits. You can also make
tiny tea biscuits that are only 1 1/2 inches wide with a small cutter or
glass bottom. These are great served with tea, jam or honey.
Mango Chutney...
1 large yellow onion 1 red onion diced pan fired with olive oil add salt and
pepper till yummy and soft then add 1 large tomato chopped into
cubes add 3 tblsp. of water 1 very soft yummy mango dice into cube
squeeze all remaining juices into frying pan. Add Chilli pepper/ or
chilli depending how hot you want it..to taste..if needed add salt to
your liking..Once Mango is semi cooked lets stay 2mint in frying
pan...pour everything into a bowl or Braun blender and mash it
up...uuummmmm ready to serve on side order of Steak/rise as a
savoury sauce. Had that today yummy!

BUTTERMILK WAFFLES

500ML cake flour


15ml baking poweder, 3 ml salt, 10 ml salt, 2 large eggs 90g butter melted. 250
buttermilk or milk
Sift the dry ingrediants together, add the other ingredients and beat until smooth.
The mixture should be thick and leave it for 30 minutes.
Heat the waffle iron and spray or brush the plates. Pour the mixture onto the plates
to cover about 2/3 of the iron. Close it and cook the batter mixture for about 3 4
minutes until waffle turns light brown on each side. You can serve it with syrup or
ice cream or can put a fruit on top
Doughtnut
(1) Butter (2) Flour (3) Baking powder (4) Milk (5) Egg (6) sugar..... sefani flour

EGGPLANTS
prepare eggplants : cut egpla, cut onions, garlic +kambuzi, grind, peel
tomatoes, heat oil. Put onions on pan , then eggpl. Stir, do not cover
lid 2 avoid loosing its colour. Put garlic+kambuzi before tomatoes.
Boil for 5min. Achawa sakonda mabilinganya kaya amayesa chani?

LETTUCE SALAD
1. Prepare your Lettuce/ Cabbage
2. Clean the Lettuce with cold water and put aside
Clean the cabbage with hot water to kill worms and the like
3. In a small pot add carrot, well cut in small pieces /peas/zitheba
add salt and bring to boil.
4. Let them boil just a little bit but shouldnt be cooked.
5. Pour into a colander
6. Take a pan; add cooking oil just a little bit, Olive oil is good for
salads for better

7. Add all the boilings, make sure they dont stick, and make sure
they dont
change colour
8. Add Broccoli/ Cauliflower
9. Add your lettuce/Cabbage
10. Add Onion and green pepper
11. Stir very well
12. Add your salad sprinkle for flavour and save
Note: You can add mayonnaise if you like
MEAT BALLS
mince meat, 1egg,2 slices of bread, milk spices of Ur choice, onion, green paper,
garlic flour (baking powder optional) dice onion& gpaper, put ur mince in a bowl
add onion,gpaper garlic & spice mix well, soak the bread in the milk & drain the
milk by squezin the bread make them into bread crumbs.
Add the bred crumbs, egg to the mince mix well. Make them into balls roll then in
flour and fly them in a pan with little oil
BEANS SALAD
(This is very very easy but mouth watering)
YOU WILL NEED: 1 tin baked beans,3tspns mayonaise or as
required and Mango achaar(not the hot chillie one but mild)
METHOD
Open the beans and drain the fluids and put in a dish then add 3
Tbsps mango achaar lastly add the mayonaise and mix well
Put in the fridge before serving......IT ONLY TAKES ABOUT 5
MINUTES
There is yet another easiest one. All you need is a tin of beans(of your choice),1
tomato (medium size),1 Onion (preferably red), 1 green pepper and 2/3
tablespoons of mayonaise. You can add garlic thus according to your liking.
Cut tomato,onion and green pepper into fine cubes,together with the garlic if you
want it. Mix these with the beans. Add the mayonaise and mix well.
You can serve this with some baked potatoes ndi kanyama or any main meal of
your choice.

LIVER 2
Kaphikidwe kena ka liver ya ng'ombe kuti muinjoye. Cut your liver in small
pieces very small ikani poteropo. Enough onions, tomatoe, cooking
oil and spices according to your like (flavour), salt to taste. Heat ur
pot, pour cooking oil, add onions (sliced) until it is brown, add spices
stir then add sliced tomatos and salt cook until its done then add
your liver stir pafupi pafupi and pliz cook at a low temperature (3)
when u experience a lot of oil than liver fluids add some water slowly
up until it is done. U will enjoy it
PASTA N CHICKEN
pasta n chicken, zofunika: mnofu wankhuku, spagheti/maccaroni,1g/paper,1o
nion, 12table spoon batter, 1tea spoon white paper,2tspoon floor,&
12 cup milk ndi mchere.

BANANA FLITTERS

Ingredients:
1 2/3 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons confectioners' sugar
1/4 teaspoon salt
2/3 cup milk
1 egg
3 bananas, mashed and sprinkled with 1 teaspoon
lemon juice to keep from discoloring
oil for deep frying
confectioners' sugar
Preparation:
Measure, sift and mix all dry ingredients. Whisk together the milk and egg; add to
dry ingredients. Fold in the mashed bananas. If too thick add a little milk, and if
batter seems too thin, add flour. Batter should have consistency to mound up in a
spoon. Heat deep fryer to about 375 or add 1 inch of oil to a deep skillet or kettle
and use a deep fryer thermometer to check tempperature. When fritters will cook in
5 minutes, the oil is ready. Drop by spoonfuls in small batches. As fritters brown
on one side turn. Drain on paper towels. Keep warm and just before serving
sprinkle with cinnamon sugar or powdered sugar.

LOCAL CHICKEN
Kaya ndiyankha nchizungu zako izo! Look for a chicken, find it, ask the children
to catch it, boil water ask anyamata azinge, Put in a basin, Poor boiling water on
top, pluck the feathers, when done cut the chicken to desirable pieces. Boil the
chicken, prepare ground chillies, salt, curry powder, tomato, onions, then when the
boiling is done add a little timafuta... kukazingila eyetu. then add onions then stir a
little then the rest of the ingredients stir until all blended in ndipo yayamba
kununkhila... add a little water for sauce then undigaiyire ikapsya ndifuna chiboda
ndi mutu wamva
APPLE PIE
Peel ur apples, remove middle part with the seeds & cube the apples. Boil them in
water with 2x tables spoons of brown baking sugar for a few minutes. Drain the
water and set aside. peel ur mangoes and remove meaty parts from the seed. add to
the apples. peel ur pineaaple, cut half of the pineapple in cubes and add to the
apples and mangoes. put the fruit mixture in a glass dish e.g microwave dish.
put the flour in a mixing bowl, add the butter and with ur fingers, mix the butter in
the floor to make crumbs like bread crumbs. u can add a bit of cinnamon to this
mixture or vanilla but i like the buttery taste so i dont add anything u can also
sprinkle a little bit of sugar if u have a sweet tooth. sprinkle this mixture on top of
the fruits. make sure it covers the fruits very well. if it doesnt, u can make the flour
mix again. Put in ur oven for 15 minutes at medium temperature (dont know exact
temperature) if the top mixture has melted and is a nice brown then its ready for ur
consuption.
Sweet potato muffins with butter, shredded sweet potatoes, milk, spices, and
walnuts or pecans.

Ingredients:
6 tablespoons butter, softened
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cup sifted all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2/3 cup evaporated or regular milk
1 1/2 cups peeled finely shredded sweet potato
2/3 cup chopped walnuts or pecans
Preparation
beat butter and sugar until light and fluffy. Beat in egg and vanilla
until well blended.
In a separate bowl, combine flour, baking powder, cinnamon,
nutmeg, and salt. Stir into the butter mixture alternately with milk,
mixing just until dry ingredients are moistened. Stir in sweet potato
and chopped nuts. Spoon batter into greased muffin cups, filling
about 2/3 full. Bake at 375 for 25 to 30 minutes, or until centers
spring back when pressed with fingertip. Cool in pan on rack for 5
minutes. Remove from pan and serve muffins warm. Makes about 1
dozen sweet potato muffins.

1fish, fresh or dried
half cup milk

piecez.beat eggx,add milk+a litu salt then add fish.pour in2 a greased basin,cover
wt another basin.cook by steaming method till eggx n milk bignz 2seto.its swt.
CHIGWADA

Uthyole masamba a fresh a kunsonga ndipo muwasinje mu mtondo, akasinjika


muyike tomato odula bwino monga mwa kukonda kwanu ndipo mukamaliza
muyike m'bale. Wiritsani madzi molingana ndi kuchuluka kwa chigwadacho ndipo
akawila muyike mchere ndi soda kenaka chigwadacho, chikawila pang'ono ikani
nsinjiro ndi kumatakasa pafupi pafupi kuti chisayale (kupselera pansi), mukawona
kuti nsinjiro zapsa phulani ndiye kuti chigwada chanu chili ready kudya. Ambiri
amati chimakoma chikagona. I hope u will like it.
SPICY CHICKEN PIZZA
BASE
375ml Snoflake self raising flour (210 g), 2 ml salt, 125 ml
buttermilk, 60ml olive oil
TOPPING
30ml cooking oil, 2 skinless boneless chicken breasts cut strips, 1
large white onion cut rings, 2 cloves garlic, crushed, 15ml chopped
root ginger, 1 green pepper cut into strips, 45 ml peri peri sauce, 125
grated mozzarella cheese, 15 ml chopped fresh herbs or 5ml dried,
Salt and freshly ground black pepper to taste.
Base,
Sift flour and salt. Whisk buttermilk and oil and add to dry
ingredients to make a soft dough. Press dough into a greased 28 cm
Pizza pan
TOPPING
Heat oil in a heavy based sauce pan. Add chicken strips and fry until
starting to brown. Add onion, garlic , ginger and green pepper and
saut until soft. Add peri peri sauce and heat through. Layer all
ingredients on pizza base
Top with cheese, herbs and seasoning. Bake in a preheated oven at
200 degree C for about 25 minutes. Serve immediately

CHEESE CAKE
You will need 1pkt tennis biscuits,1 tsp butter, 1 tin condensed milk,1tab cottage
cheese,1/4 cup lemon juice.........Method: crush biscuits the mix them with butter
(to use it as base) press into a shallow dish.....Then mix condensed milk,cottage
cheese and lemon juice make sure its smooth, Pour over the biscuit base

Sorry didnt finish,after that make a topping of your choice but with me I like to use
granadilla pulp topping or fruit jam topping after that put it in a fridge for atleast 2
hours before serving the left overs you can put them back inthe fridge...........
Salad wa masamba a Chinese.
Dulani masamba anu size yaying'ono bwino kwambiri ndipo
mukamaliza muwaviike mu madzi otentha pang'ono oyika mchere,
viyikani kwa mphindi imodzi kapena ziwiri ndi kuwachotsamo ndi
kuwayika mu chosefera madzi. Dulani tomato ndi kuchotsa za mkati
(any shape u lyk), green pepper, white onions (preferably
with green leaves) sakanizani ndi masamba aja ngati atha madzi ndi
kudyera chakudya monga nsima, tchipisi, spaghetti kapena mpunga.
Kumbukirani kusankha/kugula masamba a nthete (fresh) osati
onyala. Enjoy!

some time When cooked make sure u have oil or butter to rub on your chapati for it

try this one too 3cups flour, 2 eggs, 1/2 tablespoon salt, 1/4 pound butter,1/2 cup

around sausage until it is completely covered, brush the exterior of the sausage
rolls bake until slightly brown enjoy trust me they will be delicious
CHOCOLATE CHIP COOKIES
2 cups home made cookie mix 2tsp Vanilla 1 egg 1 cup semi sweet chocolate chips
half cup chopped nuts
1. Method: combine all ingredients in large bowl and blend until welll mixed 2.
Drop by tsp onto un greased cookie sheets and bake at 375 degrees 8 to 10

- In an oven proof dish, pour white sauce just enough to cover the base of the dish,
then put a layer of minced meat, then a layer of lasgne sheets
- repeat this mixture till you reach the top of the dish, pour white sauce and then
sprinckle cheese

water and a pinch of salt,then put ur banana to boil.Wen boiling u can cover with
plastic,and a lid.On the other hand u r also boiling ur meat,until the fryin point.
Wen ur banana is ready, u add ur fried meat on top of ur banana,then u cooking
oil,onion,tomato,and ur fovorite spiece.(i always advice royco or brwn onion) 4
gravy put ur plantain to boil,then serve...... U can cook with fish,offals,mang'ina
kapena nyama.
The ripe ones taste nice when you fry them, if you do that, the more ripe it is, the
better. Or you can try roasting them or barbequing them- again tastes nice when
they are ripe. With roast/bbq, cut them diagonally in big pieces and either roast in
roasting tin or wrap in foil and roast. Best not put spices on it as will spoil it....
CHICKEN
Tired of the usual fried chicken ya msuzi or whatever chicken we eat at home,
today i prepared chicken kebabs with rice. Family loved it. Kebabs
marinated for 8 hours in soy sauce, honey, chicken spices, meat
tenderiser, paprika, cooking oil, honey, salt, vinegar. I dont have a
griller but used the oven, not bad too much juices though, more than
enough for basting ended up using them for the sauce. it was yammy
Forgot the vegetables, had green paper, onion, tomato n carrot. I would not use the
carrot though too hard, if I had baby marrows i could have tried them n instead of
just green pepper I guess could have done red and yellow pepper as well
MEXICAN QUICHE
My dear freinds 2de i wld like to tell u hw we make a "MEXICAN QUICHE"
Ingredients: 8(2cups) egg beaters, 1cup skim milk 1/2 cup sliced
mushrooms 1 large onion,finely chopped. 1container(16ounces)fat
free cottage cheese 8 ounces fat free cheddar cheese,shredded 2cups
chopped fresh broccoli 1/2 cup chopped green pepper 1/2 cup
salsa,1/4 teaspoo salt,1/2 teaspoon pepper and cookin spray.

DIRECTIONS: Preheat oven to 350 degrees.In a large bowl,mix all


ingredients and pour into a 9x 11 baking dish sprayed with cooking
spray.Bake for 1hour or until eggs are firm and top is slightly brwn.

PIZZA
Its very easy - Ingredients
100g each strong white and strong wholewheat flour
1 tsp or 7g sachet easy-blend dried yeast
125ml warm water
Mix the flours and yeast with a pinch of salt. Pour in the water and mix to a soft
dough. Leave to rise for about 30 mins to an hour. Remove the dough and roll out
on a lightly floured surface to a round surface about 30cm across.
Lift onto an oiled baking sheet.
Place the toppings (whatever you want, however you want it) starting with some
tomato puree all over the base and then add the ingredients bit by bit. I like to top
with cheese as much cheese as you want. My cousins LOVE cheese so when I
make it, I usually add quite a bit!
Heat oven to 240C/ fan 220C/gas 9 or the highest setting. Bake the pizza for 10-12
mins until crisp and golden around the edges.
Remove from the oven, cut into slices and enjoy!
VEGETARIAN
Vegetable Cheese Omelette. 3 eggs beaten wth all sorts of vegs i.e broccolli,
onions, green pepper, abit of cabbage, abit of tomatoes,salt,pepper,cauliflour and
sme milk. beat together. put butter in frying pan and pour egg into pan. fry one side
then turn over. you can put cheese on top. Serve wth toast or rice. Enjoy!
Easy Lemon Cookies
Ingredients
1 (18.25 ounce) package lemon cake mix
2 eggs
1/3 cup vegetable oil
1 teaspoon lemon extract
1/3 cup confectioners' sugar for decoration

1.Preheat oven to 375 degrees F (190 degrees C).
2.Pour cake mix into a large bowl. Stir in eggs, oil, and lemon

3 cups all-purpose flour
1/2 cup white sugar
5 teaspoons baking powder

1 egg, beaten

2.In a large bowl, combine flour, sugar, baking powder, and salt. Cut in butter. Mix
the egg and milk in a small bowl, and stir into flour mixture until moistened.
3.Turn dough out onto a lightly floured surface, and knead briefly. Roll dough out
into a 2 cm thick round. Cut into 8 wedges, and place on the prepared baking sheet.
4.Bake 15 minutes in the preheated oven, or until golden brown
BOMBE FISH
First of all you marrinate it with lemmon, garlic and salt. Let it dry a little bit in the
sun. Then u smoke or grill it medium heat in the oven or charcoal until its semi dry.
Beat ur egg then deep ur fish in it and fry it in oil. If u have fresh mint leaves u put
them in the oil while frying together with ginger. Comes up really nice... You will
love it!!!
When serving it u can put it in a pirex dish, cut ur round onions, tomatoes, green
paper & carrots... fry them a little or soak them in hot salty water and put them on
top as part of decoration.

U want regret. Serves 8 Ingredients 250gm dark chocolate, finally
chopped.2 eggs, beaten.Half cup plain flour.Half cup chopped roasted
walnuts. Half cup sour cream. 1 cup brown sugar. 2 tbp vanilla essence.

30gm butter.30gm extra butter. For the chocolate icing: 125 gm dark
chocolate, chopped. 60gm unsalted butter. METHOD 1. Grease a square
cake pan and dust with the flour and keep aside. Melt the butter over a
low frame. Add the chocolate and stir till it melts and mixes well with
the butter. Cool.2. Beat the extra butter in a bowl and add the sugar and
essence.Add the eggs. 3. Sift the flour and stir into the mixture. Add the
chocolate-butter mixture and the nuts and cream. Beat 2getha and mix
well. 4. Spread the butter in the prepared pan and bake in a moderate
oven 4 45 minutes. Cool. 5. 4 the icing, melt the chocolate and butter
over a low frame let it cool. Spread over the slice. Cut and serve when

fry the rice in 7 table spoons of cooking oil for 2 min,add 2 cups of
water and wait till the water is dry,chop the chicken fillet small pieces
and fry in atleast 12 table spoons of cooking oil ,when it turns brown add
small chops of onion as much as u like (u can put spices if you like) mix
for 3 min,mix the fried chicken, the rice and the dry peas and cook for 6
min when the food is ready,chop the carots in small pieces and scrumble
the eggs in 4 table spoons of cooking oil and mix with the rice (ADD
SALT TO TASTE)

This meal can serve 4 to 6people depending on your appetite

Peanut Butter Cookies Recipe


INGREDIENTS
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup peanut butter
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
METHOD
1 Beat the butter until creamy, 2 minutes. Add the sugars, beat for 2
more minutes. Mix in the peanut butter and egg. Mix together the dry
ingredients - flour, baking soda, baking powder and salt. Stir the dry
ingredients into the sugar butter mixture.
2 Wrap dough in plastic and refrigerate at least 3 hours.
3 Preheat oven to 375F. Shape dough into 1 1/4 inch balls. Place about
3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern
with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking
sheets for a minute; transfer to rack to cool completely.
For chewier cookies, bake at 300F for 15 minutes

MANGO ACHAR
Ingredients:
Green fresh mangoes 1 sizable basin
Achar Masala mix 500g
Paplika 250g
Chillie powder 4 Table spoon
Cooking oil 1L
Pounded garlic 1 Table spoon
Salt to taste
1st stage:
Wash mangoes cut them in small slices
Put them in a dry basin & add salt mix them well cover with a cloth/lace
leave it for 24 hrs
Remove the mangoes to a clean dry mart or lichero, leave them to shrink
for a day or 2 (depending on the weather)
2nd stage:
Boil oil for 20-25 mins when its done leave it aside
Put the mangoes in a clean dry basin
Take all the spices mix them in oil then pour the mixture into mango
basin, stir them using a dry wooden spoon until they are all mixed
Keep your achar in a dry tight jar with oil full to the brim
NOTE
Always use a dry spoon whenever serving it!
You can keep mango achar for a yr in fridge or on the shelve
If you put it in a fridge always keep it there

Ingredients
2 1/2 cups white sugar
1 cup shortening
3 eggs
1 1/2 cups mashed bananas

3 cups all-purpose flour


1 1/4 cups buttermilk
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 cup chopped walnuts
Directions
Preheat oven to 350 degrees F (175 degrees C).
Cream together shortening and sugar. Add eggs one at a time, beating
well after each addition. Mix in bananas, buttermilk, and vanilla. Mix in
flour, baking powder, and soda. Stir in nuts if desired. Pour batter into
two greased 9x5 inch pans.
Bake for 50 to 60 minutes in the preheated oven, or until a toothpick
inserted into the center of the loaf comes out clean.
Marinade for grilled chicken
(Yieds 50 servings of half a chicken each)
25 whole chickens
1.5 litres (6 c) wine vinegar
1.5 litres (6 c) oil
250 ml (1 c) worcestershire sauce
10ml (2 t) chill sause
6 onions chopped garlic
30 ml (2 T) ground paprika
4 bay leaves
250ml (1 c) tomsato sause
20 ml (4 t) prepared mustand
90 ml (6 T) salt

1. Halve the chicken lengthwise with a sharp knife or

kitchen scissors.
2. Combine all the ingredients for the marinade and mix
well
3. Marinate the chicken for about 12 hours
4. Slowly grill the chickens over coals or in the oven.
5. Brush the chickens frequently with alittle of the sauce
while grilling.
Banana loaf
125ml (1/2 c) butter or margarine at room temperature
125-250 ml (1/2-1 c) sugar
5ml (1t) vanilla essence
2 eggs, at room temperature
500ml (2c) cake flour
10 ml (2t) baking powder
2.5ml (1/2 t) salt
4-6 ripe bananas, mashed with a fork ( 400 g/1 3/4 c)
1. Preheat the oven to 180 grease and line a small loaf pan with baking
paper.
2. Cream the butter and sugar and add the vanilla essence.
3. Add the eggs one at a time, beating well after each addition.
4.Sift together the dry ingredients and add to the mixture.
5. Lastly,mash the bananas with a fork and add.
6. Blend well and turn the mixture into the pan
Bake for 1 hour or until done
7.Slice and butter.

Pounded green chillies, to taste
1 teaspoon crushed garlic
1 teaspoon ground dhania (coliander seeds)

1 egg
Beaten egg
Sesame seeds (optional)
1.Soak the bread in water and squeeze. Add the remaining ingridients for
the filling and mix well. Roll into 20cm long rolls, place into a tray and
refrigerate until firm enough to handle.
2. Roll the pastry out on a surface sprinkled with cornflour. Cut into long
strips measuring appoximately 20cm x 8cm.
3. Place the mince rolls up as for swiss roll, sealing edges with water.
4. Cut into little rolls, about 4cm apart (you will obtain 5 little rolls from
one strip of pastry)
5. Place onto an oven tray. Brush with beaten egg and sprinkle with
sesame seeds. Make two or three slits with a sharp knife across the top
of each roll.(Now freezer suitable)
6. Bake in a moderate oven until brown and crisp.
BASIC PUFF PASTRY
500g butter
31/2 cups cake flour
Pinch salt
1 egg yolk
2 teaspoon vinegar or lemon juice
11/4 cup well chilled ice water
3/4 cup cornflour
3/4 teaspoon cream of tartar
1. Sift the dry ingridients into a dish. Grate 125g butter into the dough
and rub to resemble breadcrumbs.
2. Whisk the egg yolk, vinegar and water together. Add sufficient liquid

to the dry ingridients to form a soft dough.


3. Mix the cornflour and cream of tartar together in a cup.
4. Roll the dough out into a very large rectangle on a surface sprinkled
with the cornflour-mix. Grate the remaining butter all over the dough
and fold over five times. Fold over twice to close, cover with plastic
wrap and refrigerate for fifteen munites.
5. Roll out one last time, fold and seal well in plastic wrap - freeze until
required. Or altarnatively, roll out and cut into long strips, squares,
circles or any desired shape (ready to fill pies, sausage roll, etc.) Pack

Samoosa freezer suitable/fry:
Chapati:
5 cups Cake Flour, sifted
1/2 teaspoon salt
21/2 cups cold water
Melted butter or oil

Flour in a sprinkler
1. Place the flour and salt in a bowl, add sufficient water to
form a firm dough
2.Knead the dough until smooth and elastic. Allow to rest
for 15 minutes.
3. Divide dough into 14 balls. Roll Seven balls out on
floured surface into 20cm circles.
4.Stack the seven circles one on top of the other after
brushing each circle with a teaspoon melted butter and
sprinkling flour between them (only the underside of the
bottom circle and the right top one should be left un
greased).
5.Now roll the stack out evenly to fit 29 x 39cm baking tray.
Place the dough onto the greaced tray and spread the top
lightly with oil
6.Bake in preheated oven 180c until the top sheet puffs up.
7,Remove from the oven and separate sheets whilst
hot.stack together once again. When slighly cooler trim
edges then cut into 6cm strips (if you should get 6 sprips
from one shit).
8.Place the half side of a damp kitchen towel at bottom of a
flat container place the chapati strips on top then cover with
the remaing towel.
9.Repeat the procedure with the remaining seven balls
Tip, ensure that the dough is always covered with a damp
cloth or kitchen towel to prevent drying out.
MINCE FILLING
4 cups mince
1/2 cup water
Pounded green chillies to taste
1 teaspoon crushed garlic
2 teaspoons whole jeero (cumin)
2 teaspoon salt
3/4 cup grated onions

1/2 lemon juice


2or3 tablespoon butter
1/2 cup grated onions squeezed (optional)
2 tablespoon freshly spring onions
2 tablespoon chopped fresh dhania (coriander)
1.Place the mince and water in a heavy based pot over heat,
stirring occationally to break lumps until it begins to get
dry.
2. Add the chillies,garlic.cumin and salt. When dry, add
lemon juice and 3/4 cup onions.
3.Allows to braise until moisture is evaporated. Add butter
the mince should now be fine and dry empty into another
bowl or dish and allow to cool.
4. Add the remaing onions and the chopped greens mix well
and set aside.
FLOUR PASTE:
1/4 cup cake flour

METHOD OF FILLING
1.Take a strip of chapati in your hand. Place a teaspoonful

Ingredients:
4 sizable egg plants
2 XL eggs
1 red onion chopped
1 green pepper chopped
2 big tomatoes
Spices if u like (paprika, masala, etc)
Salt to taste
Oil for frying
Method:
Beat your eggs in a bowl leave it aside
Wash &peel the outer skin of the bringels, then cut them in small fine
round shape
Heat oil in a pan, deep bringels in eggs and fry them until brown then
remove to a plate.
In the same pan or pot add oil then add onions stir it until soft then add
spices if you want then add tomatoes, let it simmer for some few
minutes. when its cooked add your bringels and green pepper to the

Easy way of cooking Chicken Stew

1 chicken
3 tomatoes
1 big onion
1 big green pepper
Enough cooking oil (depending on how much oil u like to
use)
2 teaspoons paparika
Enough salt to taste
A pinch of sugar (this is just for the chicken not to become
mince)
Method
Cut yr chicken into pieces and then wash and let it drain
Put yr pot on the stove until it is warm, add the oil, when
hot put in the chicken first add the sugar, onion, tomatoes,
green pepperand salt, let it cook, dont not cover.

When all the water is finished start cooking adding a little


water at a time (dont put to much water else the chicken
will overcook) until it is cooked, then add water enough for
yr soup. Let it simmer for a few minutes, then take it out, it
is now ready.
Ingredients:

1 stick of butter
3/4 cup sugar

2 eggs

1 teaspoon vanilla

1 1/2 cups self-rising flour

1 teaspoon cinnamon

3 cups 1 minute OR old fashioned oatmeal

Directions:

Preheat oven to 350 degrees.


In a large bowl, using a mixer, beat butter and sugar until
smooth.
Add eggs and vanilla, mix well.
Add flour and cinnamon, mix well.
Add oatmeal, mix well.

you should have, cooking oil, grarlic, onions, black pepper, turmeric
powder, tomato paste/paprika, and tomatoes :
heat oil and fry onions until brown
add your beef and fry it for some 15-20 minutes
you dont have to brown the meat as it get brown on its own because of
the onion
add garlic, turmeric powder and black pepper and fry until the curry is
cooked
add black pepper, and tomato paste/paprika and keep tossing the beef
Add grated tomatoes and let them cook until they are done (not too
much tomatoes, one or half is enough depending on how much you are
cooking since you have already added tomato paste)
add little bit of water and let the beef simmer until you feel its done.

Ing
2 cups cassava roots, grated, dewatered
1 level cup Minced meat
1 large Pepper, chopped (optional)
1 medium Onion,sliced
1 level tsp Curry powder
1 level tsp salt
1 level tsp White pepper
3 Cups Vegetable oil
Method
1. mix grated cassava mash, minced meat, salt, white
pepper and curry powder thoroughly.

2. Add the sliced onions and pepper.


3. Mix to form a smooth dough.
4. Cut into desired size and mold.
5. Deep fry until brown.
6. Serve hot.

Method:
Mix all the dry ingredients in a bowl, then mix with the

Ingredients

2 large potatoes, peeled


1 cup frozen peas, thawed
2 tablespoons vegetable oil
2 large onions, finely chopped
1 kg ground beef (mince meat) cooked
4 cloves garlic, crushed
1 1/2 teaspoons salt
2 tablespoons chopped green chile peppers
1 quart oil for deep frying
1 kg flour
3 cups Boiled water
Making chappat:
Mix flour with tsp salt in a bowl,then add hot boiled water little by
little to the mixture until its ready to knead(kukanya ndi manja) ikhale
yolimba bwino kuti u can spread it ndi ndodo/cocopina bottle. Make
small round balls sread ur balls with the spreading stick to make sheets.
Method:
Bring a medium saucepan of lightly salted water to a boil. Stir in
potatoes and peas. Cook until potatoes are tender but still firm, about 15
minutes. Drain, mash together and set aside.
In a large saucepan over medium high heat, heat the oil.Mix in onions
and ground beef. Cook until beef is evenly brown and onions are soft,
about 5 minutes. Mix in garlic. Season with salt. Stir in the mashed
potato mixture. Remove from heat and leave until cool.
Heat oil in a large, heavy saucepan over high heat.
Mix green chile peppers into the potato and beef mixture. Place
approximately 1 tablespoon of the mixture onto each sheet. Fold sheets
into triangles, pressing edges together with moistened fingers.
In small batches, fry until golden brown, about 3 minutes. Drain on
paper towels and serve warm.
TOMATO JAM
12 ripe tomatoes
2 1/2 c. white sugar
2 c. vinegar

1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. salt
Peel tomatoes. Boil tomatoes with sugar for 1 hour. Add vinegar,
cinnamon, cloves and salt. Boil together until thick enough for jam. Put
in sterilized jars and seal.

CLASSIC CHICKEN CURRY


30 mli cooking oil
1 Onion Diced
1 Green Pepper, Sliced
20ml RAJAH ALL-IN-ONE Curry Powder
500g chicke pieces
1 x KNORROX Chicken Stock cube
400ml Boiling

3 Tomatoes, chopped (or 410g tin chopped tomatoes)


2 Carrots, rougly chopped
2 Potatoes, cubed
1 Packe KNORR Minestrone Soup
METHOD
1. Heat oil in a pot and fry onion
2. Add Green pepper and RAJAH ALL-IN ONE Powder
and fry for 1 minute
3. Lower Heat and add chicken pieces and fry until brown
(optional as i feel it is not necessary to make it brown)
4. Mix the KNORROX Chicken Stock with 400ML boiling
water, add to the chicken pieces and simmer for 15 minutes.
Add tomatoes, carrots and potatoes and simmer until the
vegetables are cooked
5. To thicken the curry, add 2 TBSPs of KNORR
Minestrone Soup mixed with 75ml boiling water. Simmer
for 10 Minutes!
Serve with Rice or roasted Potatoes!!!!!
