3 tablespoons olive oil


1 lb peeled, deveined, large shrimp
3 garlic cloves, minced
¼ teaspoon dried oregano
½ cup sweet, red vermouth
1 14oz can diced tomatoes, drained
¾ cup heavy cream
½ teaspoon fresh lemon juice
½ lb vermicelli (you can sub thin spaghetti)

In a large skillet heat olive oil. Add shrimp, garlic, oregano, ½ teaspoon salt and ¼ teaspoon
pepper. Turn shrimp occasionally- cook until golden, about 2-3 minutes. Add vermouth and
tomatoes- scrape up any brown bits from bottom of pan. Add cream and simmer until sauce
thickens slightly- about 1-2 minutes. Remove from heat and stir in lemon juice.

Meanwhile, cook vermicelli until al dente in a pot of salted water (reserve about ½ cup pasta
cooking water). Drain pasta and toss with shrimp sauce. Use reserved cooking water to thin if
necessary. Top with fresh Parmigiano-Reggiano before serving. Serves 4.
