rian Deleon was convincing his clients to make purchases every day,
but he wanted to convince them to
invest in themselves. The 21-year-old car
salesman wasnt inspired by his day job
and wanted others to share in the joy
and fulfillment hed found in the gym.
I hated it, Deleon said of his old profession. I worked 60 to 70 hours a
week If I dont have a passion for
something Im not going to do it.
Two years into college and passionless
in his workplace, Deleon redirected
his energy into Motivated4More, or
MTVD, an active-wear brand meant
to build communities amongst gymgoers like himself.
Determined not to fail after two slow
weeks, Deleon took a single order of
T-shirts and sold his product in the
parking lot of a regional gym he frequents, as well as through email and
going door-to-door.
I sold out that same week, he recalled.
I invested again, and again, and again
from there Its just own since.
People see were not trying to sell shirts,
were trying sell the meaning behind
the shirt.

The meaning he refers to is the same factor that sustained his business early on:

The brands spring product line featured only T-shirts and tanktops, but it
is just a few months away from adding
joggers, pullovers and special products Deleon believes will be the staple
of the company.

While many fitness-based organizations tout results, MTVD


encourages its supporters to share the reasons they work out.
Everyone has a purpose, Deleon explained. You could be
motivated just for fitness, you could be motivated to stay
healthy for your family because someone has diabetes or
something like that, I could be motivated for my business
I want it to be broad. I dont want it to be something where
its just fitness-related.
He added, I kept seeing so many shirts where it said, beast
mode, or Lift weights, and I thought, All right, I get it. Those
are cool shirts, but is that really it?
Roughly a year and a half into its existence, the MTVD brand
reportedly has followers all over the country. More than
10,000 Instagram followers share their life and fitness goals
with one another using the hashtag #Motivated4More daily.
I saw him at a booth and I thought, Thats exactly what Im
about, said Sonia Rodriguez, a member of Sac Town Fitness
Club. I lost about 75 pounds, and now I want to motivate
others to reach their goals. I want to become a personal fitness
trainer. Im actually leaving my job to do it.
It was Deleons own journey that inspired Rodriguez to become a personal fitness trainer. Rodriguez is now one of five
sponsored athletes with the MTVD brand, a public ambassador to the online community.
Deleon said hes personally met and interacted with more
than 1,000 MTVD supporters. The companys swelling
ranks of supporters have also sparked a new slogan in the
upcoming line: Remember why you started. Deleon sees
it as a fitting phrase to represent the MTVDs rise from sustainable brand to thriving product. He knows more growth
means he will face challenges similar to those he did at the
companys inception.
At the beginning I hated it, because I lost a lot of money
I had a company that I worked with, and they messed it all
up, Deleon recalled. The designs were not what I wanted
and it cost me a couple thousand I just put everything at
half price and rebuilt myself up. It took three months. And
I expect (losing money) to happen again, because it will. If
you dont get the results that you want, just be prepared.
You may set a plan and everything, but everyone is going to
fall sometimes.

Verma, grew up in India where
she received a Masters in Business
Administration. She was never a baker
in her homeland, in fact, she loathed it
as a kid because of the measurements
required to bake a cake. She had her
intentions and focus on her marketing
career for eight years.
While living at home in India, Verma
spent her free time watching Master
Chef of Australia, and it was then she
knew she wanted to pursue the dream
of becoming a cake designer. Already
engaged to be married, she spoke with
her father about learning to bake in
Paris, however, he encouraged her to
focus on her wedding because he was
only able to afford one of the two.

Three years ago, when she moved to


America as a newlywed to be with
her husband, she took her interest in
baking more seriously. Verma decided
that making a career change was possible with the support of her new husband, Apoorv Kishore.
Through some online custom baking
classes and several hours of watching
Youtube videos, the self-made baker
learned as much as she could. She
baked and practiced, took recipes and
revamped them, making sure it was
perfect. She practiced creating velvety
butter cream icing, delicious chocolate
cake and red velvet, and unique designs
from scratch. Other avors included
lemon, pumpkin spice, vanilla, topped
with an array of frostings like raspberry,

the weekend is perfect, because
I can focus my details on them.

salted caramel, ganache both white and


milk chocolates. The combinations are
endless at Baked Box and are all made
from scratch.
One cake order gradually turned into
over 300 custom cake orders over the
course of three years. Verma had discovered her culinary niche and turned it
into a profitable home-based business.
The aroma of freshly baked cakes fill her
home each weekend, when most of her
orders takes place. Verma said that she
budgets her baked goods which allows
for approximately four orders, not too
many at a time, so that she can give
each the personal detail it deserves.
Many of the cakes she delivers brings
tears to her clients eyes, with repeat orders on the horizon.
I am a perfectionist at what I do, and
making a few cakes over the weekend is

perfect, because I can focus my details


on them, said Verma.
Bake Box custom confections are all
unique to order, like edible sculptures.
Verma has studied the art of cake and
cupcake baking extensively, allowing
her to offer an abundant of ideas for her
customers to choose from. Cakes with
vibrant fondant garnishes like handcrafted owers.
Her business has grown popularity
substantially on social media. Bake Box
has 23,000 followers on their Facebook
page. The former marketer said that it is
important to utilize social media to self
promote, but to also learn from. She
said that shes learned some valuable
tips as well as provided them to other
bakers via social media. Verma added
that she always gives artist credit when
mimicking another designers cake.
Verma traveled directly to Roseville from
India where she married her husband.
The baker instantly fell in love with the
city and its residents where she now
calls home. She is optimistic on opening
a storefront.

MX, Bicycle Motocross, became all


the sports rage with young kids
in the 1980s. Riders took off and
rode with it, and the sport continued to
gain popularity even up until these days.
Bruce and Linda Minton raised two sons
who relished in the sport. Both parents
endured in their sons new passion
where their involvement took them
from the spectator to the facilitator. They
went to competitions, coached them,
and cheered them on from the back of
their pickup truck. All that BMX excitement wasnt enough for the couple,
they wanted to do more.
The Mintons transitioned their hobby
into a business in 1983 with a new
BMX park in Sutter. The park did well
and it was possible for expansion again.
1985 the couple spotted a vacant lot
while passing through Roseville and
they quickly visioned a second racing
establishment, Oak Creek BMX Park.
Suddenly BMX racing became a way of

life for the family, making it a second


full-time job with track management
and race organizing.
According to USABMX, Oak Creek BMX
Park is rated the number one outdoor track out of 380 in North America.
The perfectly groomed track features
plenty of skill testing rolling hills and
sweeping berms. Oak Creek BMX Park
will play host to the NorCal State Championship Finals this summer.
Oak Creek park entices the expert riders
who seek the competitive track, and the
novice who is looking to get a taste of
what its like to ride. The youngest of
riders, average age about 3 years old,
start on a push bike also called a balance bike. They move the bike through
the track with a walking motion instead
of riding the pedals.
The Mintons are always eager to spread
the joy of BMX racing to novice enthusiasts. So coming up with the gear lending

program for interested riders is an opportunity for them to get a taste of the
track before committing to the sport with
gear purchase, that can be costly. Seasoned riders are always willing to share.

of its perfectly groomed track, weekly
races, and helpful sta.

Competitors of all ages come from all


over California to ride at Oak Creek.
Roseville Bud Roberts, 63 has been
riding BMX in his spare time for 42years. Hes won several trophies over
the course of his riding experience.
Ive been riding for 42-years, BMX
keeps me out of trouble, Roberts said.
Roberts said that he will drop down
to younger age groups for the chance
to compete. Not many 63-year-olds
cycle the track locally anymore. Roberts
own children were competitive racers
at Oak Creek, and his daughter continues to race at 44-years-old, but on
the national level.
The track is open for practice on Thursdays, and anyone who is interested can
pay the low cost practice fee. Races take
place three days per week, Wednesday,
Saturday, and Sunday. There are approximately 28 race heats. Each category gets two qualifying rounds before
the main event. Oak Creek BMX offers a
one of a kind birthday party packages,

Puff shop is the place to get your sweet tooth fix.

The Parlor, opened in August of 2015, and has had


a steady ow of customers filtering in and out with
satisfied grins.
The Parlor, lives up to its popular reputation, creating
sweet combinations using a doughnut packed icecream, making it the ultimate ice-cream sandwich.
The brother and sister foodie duos concocted the
idea after visiting several other trendy eateries where
they sampled unique foods, and the siblings wanted
to have their own culinary niche.
The doughnut bun creates a sticky and crispy texture once heated with the ice-cream inside, which
remains frozen. According to Parlor employee, Gabriel Cicero, once the bun is loaded with a scoop of

pays off for
Don Quixotes.

or centuries the world has been fascinated by the tale of Don Quixote,
a half-mad, sentimental adventurer
who gallops off to follow his dream
despite realitys looming shadows.
Knowing the chaos of the restaurant
business, James and Linda Misakian
always felt a certain connection to the
image of a starry-eyed lunatic riding
out to conquer the unknown. So, when
they decided to take the risk of leaving
the international food industry to
chase their deeply personal vision of a
hometown taqueria, they turned to the
symbol of Don Quixote the literary
icon beloved by Spanish-speaking cultures across the globe.
Ten years later, the Misakians gambit
has paid off with Don Quixotes Mexican Grill, a true Rocklin original using
fine-tuned freshness and family-owned
originality to keep foodies excited in
the city.
The origin of the business at 2164
Sunset Boulevard goes back to a day
in 1995 when James wandered into a
little taqueria in Southern California.
He noticed that all of the orders were
being made quickly by cooks working

together on a line. It was the era before


massive chain restaurants had adopted
the model, and James who was employed in the restaurant industry in East
Asia was sure that if someone incorporated prime recipes from California
and Mexico, and ultra-fresh ingredients, they could create a unique neighborhood taqueria that would have a
following anywhere.
James met Linda while working at
restaurants in Australia. When the two
later found themselves living in the hyper-speed life of Beijing, China, they realized it was time to move to the Golden
State and give James taqueria idea a
chance. In 2006, they picked Rocklin as
the best city for launching their concept.
But they still needed a name.
I had a print in my home of a Don
Quixote painting by Picasso, James
recalled. Linda said, What about that?
At first I thought, But Quixote is from
Spain. But then we learned that his
story is so ingrained in all of the Spanish-speaking cultures. Later, some of
our employees who are originally from
Mexico told us that theyd all grown up
with Quixote. Its a beloved story in so
many countries.
James added, And at the end of the day,
the idea of the crazy man riding out on
a quest to chase his dream just felt like
it fit for what we were going through.

bright, biting hues and a searing level
of pepper presence. Fans of a little
sweat on the brow can also push their
tortilla chips into Don Quixotes Red
Chilies and Tomatillo salsa, a thin concoction the color of red bricks baked in
the sun. This popular dipping option
has a savory afterburn to its slightly sour
base.

Turpin to paint the spacious south wall
of their taqueria with a memorable
scene directly from Miguel De Cervantes novel. They also had a life-sized
wood carving of Quixote brought to the
restaurant from Mexico. But while the
couple was finding the right notes for
the ambiance, their main focus was on
finding the proper cooking philosophy.
They decided that all ingredients would
be made from scratch, in-house. That
approach, coupled with swapping recipes with other unique taquerias and
Mexican members of their cooking
team, quickly made for a avor-punch
that gained Don Quixotes a strong
reputation.
One of the standouts on its menu is the
Chili Relleno Platter, a at iron-shaped,
fire-roasted Pasilla chili loaded with
Monterey cheese and beautifully covered in a marigold sauce and mini pools
of sour cream, all carefully decorated in

the heart shape of the chili itself. Slicing


into the presentation offers a molten
ow of cheese that erupts across the
center of the plate: This Don Quixote
item is moist, mastered cooking meets
graceful presentation.
Another sought-after option at the
restaurant is the shrimp burrito, which
proves its kitchen crew knows how
to wrap a bulging, avorful burrito
without making it runny or greasy. The
burrito gets some extra accents from
Don Quixotes yellow fried rice doused
in chicken stalk, and it keeps a straight
grilled shrimp taste that isnt hidden in
copious incarnations of fat.
We dont have a style thats from any
particular hometown in Mexico, Linda
observed. Were using recipes from
all over Mexico, and in one case, all the
way from Argentina. But the overall authenticity comes from the little touches
like making our refried beans with lard,
and marinating our chicken and steak
for hours.
And beyond Don Quixotes seafood
tacos, quesadillas and meat platters,
the restaurant also excels with
its orid salsa bar. The crews

can also hit the salsa bar. Don Quixote
mixes up a crisp green Tomatillo dip,
which stands out with its sweet, tingling lime touch over elements of salt
and a light citrus kick. The Misakians
have lately been trying out another
mild salsa, their white pickled jalapeo
swirl. Its a creamy amalgam of chipotle
traces, zesty notes and a settling backtaste akin to textured, milky cheese.
As with most of the restaurants salsa,
it pairs well with the cold, Agave wine
margaritas sold at the counter.
Just months after Don Quixotes opened
in Rocklin in 2006 the national chain
Chipotle brought in a similar operation.
According to the Misakians, local fans of
Don Quixotes didnt go anywhere.
It actually didnt affect us at all, Linda
remembered. People think of us
in a different way. We have a larger
menu, and were more of a family-style
taqueria for the whole neighborhood.
While Rocklin residents have been big
supporters of Don Quixotes, helping
it to branch out to Sacramento and
Natomas, James, Linda and their team
arent done writing The Dons story of
being on an odyssey for excellence.
Weve been in Rocklin 10 years and
Rocklin has kept us going, James acknowledged. And wed like to re-invite
anyone who has come in before didnt
have the experience they hoped for. We
want to be here to stay, and be part of
the community for a long, long time.

Fresh produce is abundant at Placer Grown Farmers Markets.

lacer Grown farmers markets are


in full boom with an abundance of
seasonal fruits, vegetables, breads,
and much more. Placer Grown has six
outdoor markets, including the new location at High Hand Nursery, to choose
from within Placer County. Shopping
for fresh locally produced items can be
done nearly every day of the week.
Carol Arnold, CEO of Placer Grown, has
seen an uptick with people choosing to
shop farmers markets for their weekly
groceries. Produce grown from local
farmers are rich in avor, bursting with
color, and nourish the body with fresh
nutrients. Going to the source for food
enables the consumer to know whats
in the foods as opposed to purchasing
growers out of the area. The farmers are
generally the sellers at the farmers markets and are typically very knowledgeable in their products.
Arnold has said that Placer Grown has
had the crop-to-table outlook since the
beginning of Placer Countys strong agricultural farming industry. She added,
Its a way of life, its how you live when
referring to the abundant availability
of eating either from your own garden,
shopping at a fruit stand, or at the
farmers markets.

Arnold said there has seen a slight


change with this years summer vegetables as some have hit the stands a
bit early. Cucumbers and stone fruits
popped up at Roseville Farmers Market
in May. This year will be an exceptional
year for stone fruits like apricots and
peaches that will rotate varieties as they
ripe over the summer.
Part of the specialty of the farmers
markets is when you have small farms,
varieties come and go, which add to
the joy of shopping, Arnold said. If
people have access or chose to buy
freshly picked produce, they would
have a whole different relationship to
vegetables.
This season the market seems to be
providing summer varieties early. The
Natural Trading Company was the first
of the local farmers to offer first cherry
tomatoes in May.
The Newcastle based farm sells their
locally grown goods to three farmers
markets weekly. Tes Sullivan of Natural
Trading Company said they have been
growing and selling produce for the
past 21 years. Theyve added eggs to
the markets which produced by pasture
raised hens.
Sullivan said that Natural Trading Company is a one-stop shop for many of
their customers because of the varieties
of produce they offer as well as their
fresh eggs.

SEASONAL SENSATIONS: Placer Grown,

go, which add to the joy of shopping
including the seasonal artichoke.

Eating locally produced becomes a way


of life with options like the farmers
markets. Small farms like Natural

using sustainable techniques, picking
produce just hours before delivering to
the market.
We take tending our soil very seriously. Its not just about purchasing
organically produced food, we nurture
our soils, so that it last for generations

Remember: the darker the color, the
sweeter the cherry.
Cherries remain fresh at room temperature for approximately three days, and
last longer when refrigerated or frozen.
If they are divided into small bags and
stored in the refrigerator, cherries will
stay fresh for two weeks. If the cherries
are pitted and kept frozen, they can also
be enjoyed in pies and jams throughout
the year.

1. In a food processor, pulse the

resembles coarse cornmeal. Add the
remaining butter and pulse to peasized pieces. Transfer the mixture to
a mixing bowl and stir in the cream
until dough just comes together.
2. Scrape the dough onto parchment
paper and knead enough for the
dough to form a loose ball. Dont
overwork the dough or it will become
tough. Press into a at circle and refrigerate at least 20 minutes, covered.
3. Preheat oven to 425F.
4. Remove the dough from the
refrigerator and roll into a large
circle, about inch thick. Slide
the dough onto a baking sheet with
the parchment still underneath and
refrigerate another 30 minutes.
5. Mix the cherries with the sugar,
salt, cornstarch and liquor (if using).
When the pastry dough has nished
resting, spoon the cherry mixture
into the center of the dough circle.
Spread evenly to approximately
1 inches from the edge. Gently
fold the edges of the dough over
the cherry mixture to contain the
lling. Bake the crostata until crust
is evenly browned and the cherry
lling is bubbling, about 45 minutes.
6. In a small mixing bowl, whisk
together the yogurt and honey. Cut
the crostata into 6 to 8 slices, divide
among serving plates, and spoon a
little of the crme fraiche over each
slice. Serve immediately.

Unfortunate for some, a fitness program fell off


the priority list or they may not look and feel their
summer best. Of course, there is no quick fix solution for a rapid body change in just a few weeks as
your summer body is actually made in the winter.
However, here are five simple steps to jump start
your fitness in any season but are extra fun in the
summer.
DIAL IN YOUR NUTRITION

No starvation diets or silly fads are required for a


beach bod. One of the most sinister and confusing
subjects in American health media is nutrition.
I am dismayed with the overwhelmingly inaccurate
information and miracle products fraudulently
pushed into the homes and plates of desperate
people seeking a body figure solution.

The hard truth is you need to balance nutrient


density against calories consumed. This works in
concert with ensuring the amount of energy you
expend exceeds the volume of calories you eat
each day. But its summer and that means parties,
barbecues and vacations. All of these events can be
positive and fun even when managing your personal calorie consumption.
Make a daily commitment to yourself to manage
your calorie consumption. Take a moment to consider your favorite foods from the grill, favorite
summer treats or if that margarita will be blended
or on the rocks. And get some information on approximate calorie values beforehand. This research
will take very little time and there are dozens of
great resources online that give details about the
approximate calorie value of most foods.
Decide how much you are willing to consume understanding that moderation is key and keeping a
deficit will keep you feeling fit and less uffy. Of
course, the above advice is not seasonal but should
be your year and lifelong habit.
TAKE AND EARLY MORNING WALK AND BEAT THE HEAT

Some of the more advanced runs can be used as a


motivator or call to action for your personal fitness.

Summer is a wonderful time to get out early and


enjoy the beauty of Roseville neighborhoods with
a planned walking route. The weather is just about
perfect in early to mid-morning for nearly all ages.
I suggest waking up one hour earlier or altering
your schedule to accommodate this lifestyle enhancing activity.

In addition, many of these more challenging events


are great for groups so get friends or co-workers
involved. Fitness is way more fun when others are
working alongside you and the accountability can be
powerful. Not to mention, the satisfaction and sense
of accomplishment from crossing the finish line on
some of the difficult courses can be quite rewarding.

Walking is very low impact and provides a host of


benefits and may: improve circulation, fortify bone
density, elevate mood, activate joint stabilization
muscles, enhance blood oxygen levels and can contribute to body fat loss. It is also shown in multiple
peer-reviewed research initiatives that walking at a
brisk pace for over 30 minutes each day may even
increase natural lifespan. You can structure your
walks based on time, intensity, distance or all three.

WORKOUT ON VACATION

I have formed a habit of walking 4.5 miles at least


five days or more each week and complete the circuit within one hour. This is a very brisk pace and I
am able to allocate a whole hour but 30 minutes
is a reasonable starting place. A great starter goal
would be to get a good two or more miles in within
a half-hour.

I know it sounds like a terrible idea but working out


on vacation can be very satisfying. Naturally, one of
the biggest objections I hear about this stems from
lack of fitness facilities. The second biggest objection I suppose most people tell me they have no
interest in working out on vacation.
I have always marveled at how much people complain about how much weight they gained while
away. In regards to gym access, there are dozens of
bodyweight exercises and cardio routines you can
follow while in an area that lacks a proper fitness
center. Not to mention, many resorts or vacation
spots do have adequate facilities to keep your routine on track.

One of the most powerful ways to maximize your


walk is to take some time and listen to an audiobook to enrich your body and mind simultaneously.

I encourage you to simply take an hour of your vacation morning and enjoy a walk on the beach, a
bodyweight circuit or visit the local fitness club. In
the end, it will really come down to your nutrition.

GET INVOLVED IN FUN FITNESS EVENT

Summer brings some really fun events to the greater


Roseville area that can get you and your family active
or test your fitness.
My company deliberately participates in 5k runs
that support our local charities and we find this to
be such a worthwhile use of time and energy. With
so many people or animals in need, we choose to
support these events and love the combination of
fitness and community service.
Training for a 5k is actually quite straightforward
and most of the charity events are walking events
anyway. So dont be shy about walking three miles
for a cause and get you and the family out there.
For those individuals seeking an adventure or to
test their fitness, several companies provide more
hard-core events in the form of mud and endurance runs. I recommend you take some time and
research the intensity of some of these events to be
sure you are ready now or should train for race day.

Citizens of Roseville really are fortunate when


it comes to outdoor recreational opportunities.
Summer brings some classic activities such as
camping, hiking and boating. With Auburn and
the shores of Lake Tahoe a short drive away there
are so many fun and exciting ways to get active.
Try paddle boarding, white water rafting or another
watersport this summer and you may discover a
new seasonal hobby along with some muscles you
never knew you had. As for camping and hiking,
there are so many wonderful trails for the beginner
to advanced hiker in our immediate area so get out
there and explore.
Summer is such a wonderful time to boost your
activity level and create some new adventures. Remember, the foundation of wellness and health is
rooted in nutrition so be sure to maintain an effort to
moderate your consumption while balancing the enjoyment of the seasonal fare. Get active and engage
the outdoors and make this a fit and fun summer!

Suspected Child Abuse and Neglect Team

hild abuse is a signicant public health concern,


but one that many people dont feel comfortable talking about or reporting. About 700,000
children in the United States were substantiated
victims of maltreatment in 2014, a heart-wrenching
fact we can help change by knowing more about
what constitutes child abuse.

Physical abuse is the use of physical force, such


as hitting kicking, shaking or burning.

Weve known for years that abused children often


suffer physical injuries. But thats far from the only
type of maltreatment that does serious damage
to a child. Theres also sexual abuse, emotional
abuse, and neglect.

Emotional abuse refers to behaviors that harm


a childs self-worth or emotional well-being.
Examples include name calling, shaming, rejection, withholding love, and threatening.

Id like to elaborate on the different ways children


suffer maltreatment, how it affects their future,
and what our local community can do about the
problem.
While signs of physical abuse may be among the
easiest to spot, its not obvious to us when a child
next door, or on the community soccer team, or in
the classroom has been a victim of other types of
maltreatment.
The Centers for Disease Control and Prevention
has very clear denitions for the different types of
mistreatment:

Sexual abuse involves engaging a child in sexual


acts. It includes behaviors such as fondling, penetration, and exposing a child to other sexual
activities.

Neglect is the failure to meet a childs basic physical and emotional needs. These needs include
housing, food, clothing, education, and access to
medical care.
Over the past few years we have learned about how
child maltreatment is detrimental to early brain
development, and how children who are abused
or neglected have a higher risk of emotional and
physical health problems as adults.
Much of this was conrmed in groundbreaking research known as the Adverse Childhood Experiences
study, which linked childhood trauma to long-term
health and social consequences. The study, based

on collaborative research between Kaiser Permanente in San Diego and the U.S. Centers for Disease
Control and Prevention, relied on more than 17,000
volunteers.
The study is ongoing and identified 10 adverse
childhood experiences including child abuse,
an incarcerated parent, witnessing domestic violence, a mother who is the victim of domestic
violence, an alcoholic parent, and family member
with mental illness. The study determined that
individuals who endured four or more of the
adverse experiences were at much greater risk
for high-risk behavior in adulthood, and were at
higher risk for multiple chronic illnesses such as
high blood pressure, heart disease and cancer that
lead to early death.
Sadly, victims of abuse tend to grow up to be
abusers themselves.
The notion of adverse childhood experiences
is becoming a more recognized topic, and a lot
of hospitals and clinics are looking for ways to
screen for these kinds of cases early on, said Michele Evans, a Kaiser Permanente pediatrician in
Roseville.
Dr. Evans and the rest of the pediatrics staff at Kaiser
Permanente are committed to finding solutions.
That is why Dr. Evans devotes part of her time
to SCAN, or Suspected Child Abuse and Neglect Team, an organization comprised of Placer
County pediatricians, law enforcement officials,
the District Attorney, County Counsels office, nonprofit child advocacy groups and Child Protective
Services representatives who meet regularly to
analyze cases involving maltreatment detected at
Kaiser Permanente Roseville Medical Center and
Sutter Roseville Medical Center.
Dr. Evans was instrumental in starting SCAN in
summer 2014 after she served on the groups Sacramento County counterpart.

Dr. Evans and another local Kaiser Permanente


pediatrician, Dorothy Wilborn, were recently honored by The Permanente Medical Group with the
prestigious Sidney Garfield Exceptional Contribution Award for their leadership in identifying and
preventing child abuse throughout Kaiser Permanente in Northern California.

SCAN is building solid relationships across disciplines. The team can identify trends and share
information that can lead to the prevention of
maltreatment.

Im happy we have Dr. Evans and Dr. Wilborn on our


staff. But we can all help to reduce child abuse by
working together in our neighborhoods, schools,
churches, hospitals, community organizations to
not only detect signs of abuse but provide positive
experiences for children.

In order to adequately protect children, we really


need to work together in partnership so that all of
these organizations and agencies are in constant
communication, so that were never missing out
on sharing crucial information, Dr. Evans says.

When all parents and caregivers can provide


young children with safe, stable and nurturing
relationships, we will make greater strides at providing a better future for everybody in Roseville
and surrounding communities.

ccasionally I get a craving for a dessert so decadent that only something with chocolate,
chocolate, and more chocolate will satisfy.

Cupcakes are an easy treat to satisfy any craving


and I absolutely love making them. They are less
hassle than baking an entire cake, you get a perfect
ratio of frosting to cake, and as an additional bonus
you feel a lot less guilty eating three cupcakes than
eating three whole pieces of cake. Plus they are a
simple and just plain cute dessert. Any dessert you
can eat with your hands is a bonus in my book.
I decided to make Chocolate Baileys Irish Cream
Cupcake and they were divine. The extra sweet liquor frosting was perfectly paired with the bittersweet chocolate cake. It was a very rich dessert and
one was definitely enough. I made them special
for my mother-in-laws birthday and they were a hit
with the entire family.

YIELDS:
DIET:

INGREDIENTS
FOR THE CUPCAKES

2 cups gluten free all purpose our


1 teaspoons baking powder
teaspoon baking soda
teaspoon salt

cup unsweetened cocoa powder
cup oil
1 teaspoon vanilla extract
1 cup almond milk
cup water
4 large eggs
FOR THE FROSTING

14 tablespoons softened unsweetened butter


4 cups Confectioners Sugar
8 tablespoons Baileys Irish Cream
DIRECTIONS
FOR THE CUPCAKES

1. Preheat oven to 350 F.


2. Mix all dry ingredients together.
3. Add the softened butter, oil, and vanilla.
4. Add almond milk, water, and eggs.
5. Mix until all ingredients are well combined.
6. Pour batter into cupcake liners until of the way full.
7. Bake for 18-20 min or until a toothpick comes out clean.
8. Let cool completely before adding the frosting.
DIRECTIONS FOR FROSTING:

1. In a mixer, place the softened butter and


confectioners sugar and mix on low until well mixed.
2. Add the Baileys Irish Cream 2 tablespoons at a time.
3. Taste to make sure the avor and consistency is desired.
4. Pipe or spread onto cooled cupcakes.
5. Shave dark chocolate on top and enjoy.

ne of my favorite trips was to Los Cabos, Mexico.


Being gluten free is really simple when the
majority of the foods there are rice, beans, and
corn. My husband and I took this trip a little over a
year ago with the family and since we were having
them over for dinner I decided to recreate our wonderful trip. Fish tacos are a fan favorite with the
Konrads and I have to say these were a hit. They
were perfectly aky and subtly spicy, but the avocado-cilantro sauce and the lime helped tame the
bold avors. I had a dinner party of five to serve.
I would say that the portions would have worked if
everyone only wanted two tacos.
So warning, make a little extra because they were
gone faster than I could put them together. Pair
with a glass of white wine and fresh salad or fruit. I
promise it will impress your guests. This meal has
been in-law tested and husband approved.

INGREDIENTS
FOR THE BLACKENED TILAPIA

1 pounds tilapia lets


1 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
teaspoon cumin
1 teaspoons chipotle powder
teaspoon brown sugar
teaspoon salt

teaspoon black pepper


2 tablespoon olive oil
12 corn tortillas
FOR THE SLAW

red cabbage sliced thin


medium white onion sliced or diced
cup cilantro
Juice of 1 lime
AVOCADO-CILANTRO SAUCE:

cup sour cream


1 ripe avocado, pitted and skinned
cup cilantro
Juice of 1 lime
Salt to taste
DIRECTIONS
1. In a small bowl, combine the dry seasonings.
2. Sprinkle the mixture over both sides of the lets
and pat in.
3. Combine the ingredients for the Avocado-Cilantro
sauce in a food processor or blender.
4. Blend until well combined.
5. Heat the oil in a skillet over medium heat.
6. Once heated place the sh into the pan.
7. Cook for 4-5 minutes on each side or until
blackened and akes easily.
8. Remove from heat and drain excess oil by placing
the sh on a paper towel.
9. Warm the tortillas (in the same skillet if
preferable).
10. Assemble all the ingredients, serve, and enjoy.

hile the 1989 Loma Prieta Earthquake caused extensive damage


throughout the Bay Area, one
positive outcome was the revitalization
of San Franciscos waterfront and the
rebirth of many tourist attractions along
the historical port. One such place, the
famed Ferry Building, a must see when
visiting San Francisco.
The Ferry Building is an eye opening
structure that sits just off the Embaracado at the base of Market Street.
The building is trademarked by its
245-foot-tall clock tower and dials that
are 22 feet in diameter and can be
seen from several landmark areas of
the city. The structure has survived San
Franciscos major earthquakes, outlasting some of the Citys other major
landmarks.

Originally built in 1898, the building


was later renovated to house both office
space and unique retail and dining outlets to increase tourism after a decline
in everyday ferry use through the years.
After the extensive revitalization, the
building reopened in 2003 and now is
home to many of areas hallmark businesses outlets unique to the bay.
The Ferry Building is packed with many
