In recent years, Conshohocken has become Montgomery Countys go-to spot for downtown
dining, with great restaurants lining Fayette Street. The neighboring communities,
including Plymouth Meeting and norristown, are also worth checking out.

Is it fair to say that the menu begins and ends

with steak?

You might have seen him smiling on a

billboard, heard him discuss fine dining
on the radio or read a review about one
of his much loved restaurants. Chef Luke
Palladino is a local celebrity and culinary
king of Italian dining. We at Crave Montco
couldnt wait to ask him a few questions
about his latest culinary adventure, LP
Steak at the Valley Forge Casino Resort in
King of Prussia.
Luke, youve had an interesting career so far.
Tell us fans a little bit about your life how did
your interest in fine dining begin?
LP: I grew up in the restaurant business. I
worked around the States. I always wanted to
go to Italy its my heritage. I went on and off
about three times, totaling about five years,
traveling, studying and working with food

And today, you pilot a few of our regions

top Italian restaurants. LP Steak is a Luke
Palladino restaurant, except the focus isnt
on Italian-style food. How does LP Steak
incorporate the philosophy of Italian cuisine?

LP: No way. You wont really see much of what

we serve anywhere else. Though, you may see
some familiar items with a twist.
For starters, we have amazing appetizers tuna
tartare, crab and shrimp Louie, grass-fed beef
carpaccio, and a chilled seafood tower with
fresh king crab, lobsters and oysters.
Theres a delicious fish of the day, and our
salads and sides are truly special. For our
onion soup, we caramelize onions for four
hours before we do anything else its in total
a five-and-a-half-hour soup. The Millionaires
Maccheroni with black truffle is a house
favorite.
How would you describe the ambience?
LP: In three words: modern, comfortable,
warm. I dont like anything to be of an era.
I like a lot of texture in a room. Earth-tone
colors. But, at the end of the day, it has to
feel warm, and it has to feel timeless. People
dont remember every detail of their dining
experience, but theyll remember how the
experience felt.
Why King of Prussia?

LP: Following the seasons. You wont see

tomatoes in January. Seasonal change a
living menu. That said, I do things here that I
wouldnt do with Italian cuisine, from using
cilantro to serving king crabs. Dont get me
wrong. I love Italian food, but Im having a lot
of fun by making the focus American.

LP: A lot of my customers live nearby. They

come to Philadelphia and to the shore to eat at
my restaurants. Now, Im coming to them.

What makes LP Steak really special?

LP: Theres a chef in France I love. Alain

Passard. His restaurant is LArpege in Paris.
Hes from the French Riviera, if memory serves.
He gets the fact that simplicity is complexity
resolved. The cuisine is vibrant, its beautiful
and its perfectly simple.

LP: First, we have some really, really great

steaks. I use different suppliers for different
cuts of meat that I like. Ive been working with
suppliers in this area for a couple years now,
and Ive been able to see who does what best.
Understanding the meats, the cuts, how theyre
prepared it all comes together to determine
what we serve. The variety of tremendous
steaks is exceptional. Plus, we have some
amazing sauces to go with the steaks.

If you could have a guest shift at any

restaurant in another chefs kitchen, which
would you pick and why?

To tell you the truth, Ive been to many, many

steakhouses. I see what they do. I see sameness
everywhere. So I asked myself, what can I do
thats different? What can I give to people thats
new and exciting and delicious? Thats what LP
Steak is all about.
