Abstract

Aspergillus niger is the most commonly found fungus as its able to adapt to the environment
with moderate temperature or also known as mesophilic environment. Its composed of white or
yellow felt surrounded by dark fungal spore which reproduce asexually. Aspergillus niger
commonly used to produce industrial enzyme such as amylases, proteases, and lipases. Its also
known to produce citric acid. It has a metabolism system for both amino acid and carbohydrate
which take place in cytoplasm, mitochondria, and peroxisome. This metabolism process involved
both catabolic and anabolic reaction. A.niger is an xerophilic fungi (it can grow in humid
condition and not require of free water), and also a thermotolerant organism (growth in extreme
temper ature). In this experiment, we studying the kinetics of kojic acid fermentation by A.niger
using various sources of carbon and nitrogen based on logistic and LuedekingPiret equations
models. The model based on logistic and Luedeking-Piret equations was found suitable to
describe the growth, substrate consumption, and efficiency of kojic acid production. Kojic acid is
a biologically produced organic acid by different types of fungi during aerobic fermentation
using various substrates.We obtain the yield of 7.410-5 g of kojic acid/g of glucose. Glucose is
an excellent substance for the yield of kojic acid as it is a simple sugar with low number of
carbon thus it able to be consumed easily for biomass built-up followed by the production of
kojic acid. The fermentation process is indicated by the measure of pH and also the dissolved
oxyen supplied. It noted that the concentration of substances is not constant and changing
according to time.
