now has nine restaurant locations of
Mikuni: Japanese Restaurant and Sushi Bar all over Northern California.
Mikuni means kingdom from
God, Arai said. My dad always
dreamed about making people feel
like they are in heaven and having
heavenly food.
Making and serving heavenly food
is exactly what they did.
When you walk into any Mikuni
restaurant, you will be instantly
welcomed by every employee in the
building.
I want my customers to feel
welcome, Arai said. I want them to
enjoy and have a good experience, not
just eating food.
Arai never thought his business
would grow to be as large and popular. At first Arai and his family was
struggling.
In the beginning, my dad asked me
to quit school, he said. He just kept
dreaming. One day we were having
30 customers and he told me, I have
a dream of having 1,000 customers
a day. I told him he was losing his
mind. But now, we serve 1.8 million
customers each year between our nine
restaurants.
One dish on the menu is very
special to Arai because it saved them,
he said.
The Fair Oaks roll was the ninth
of 300 rolls I originally created and I
broke every rule of sushi, Arai said.
I used tempura shrimp in the roll
and all of the sauces. This is one of my
favorite rolls because it helped us to
get here.

Doing something to help others is


what I love most about it.
Arais favorite thing about his restaurants is as they are growing, they get to
help others, he said.
We just had another golf tournament and so many people signed up, we had
to make it two days long. We raised about $285,000, he said.
Arai has donated $1 million to the Breast Cancer Navigator Program already
and has an infusion center named after the restaurant at the Sutter Medical
Center in Downtown Sacramento, he said.

To be able to make a difference in the community, I wouldnt be able to do


it without all of my customers, Arai said. Doing something to help others is
what I love most about it.
Mikunis newest and final Sacramento County location will be located in
Folsom on East Bidwell Street, just off U.S. Highway 50.
Arai has planned on opening a location in Folsom for a long time. Although
it is close to his Hazel store, it will bring in customers from Folsom and El
Dorado Hills. Arai said he had many requests from Folsom-resident customers
to open up a closer location where they live.
Arai plans to expand his restaurant into the Bay Area and possibly other
states.

My new goal is to have 50 locations


by our 50th anniversary of Mikuni,
he said. We have 20 years to go, so we
better hurry up!
The official opening date for the
Folsom location will be sometime in
October. With construction still underway, there is no set date at this time.
Next year, Arai will be coming out
with his second book which he is excited to share, he said.
I am just so appreciative of God for
this opportunity and all of the customers in the region for helping us, Arai
said. The customers have helped us do
so many great things.

RECIPES

Going plum crazy


FRUIT SPIRAL GALETTE

2 cups gluten-free all purpose flour


cup coconut flour
2 sticks of very cold butter
1 teaspoon salt
2 teaspoon sugar
6-8 tablespoon cold water
2 peaches
2 plums
cup fresh blueberries
Pinch of brown sugar
1 egg for egg wash

Directions:
First of all, place the two butter sticks into the
freezer for 15 minutes. Preheat oven to 400 degrees.
In a large mixing bowl combine flour, salt, and
sugar. Mix well.
Once butter is sufficiently frozen, grate the stick
into the flour mixture scraping off any that butter
that sticks to the grater.
With a wooden spoon begin pressing the cold
butter into the flour until well combined.
Add the water and knead the dough with hands
(if it is too dry add water 1 tablespoon at a time).
Grease a pie pan with coconut oil.
Place dough in the dish and press out evenly with
fingers. Slice the fruit into thin strips and arrange in
a spiral. Fill the middle with whole fresh blueberries.
Sprinkle brown sugar over the top and bush
everything with egg wash.
Place in oven and bake for 20 minutes or until
crust is golden brown.
Serve warm, top with vanilla ice cream, and enjoy.

Nothing is more fun than playing
with your food. Its something kids
love to do and secretly adults do too,
only instead of a sticky mess, I like to make spirals.
I was thrilled when I finally figured out how to make a
tasty and flaky gluten-free pie crust. It is not as easy as it
sounds. This one also has very little sugar and can easily be
made vegan, which leaves room for the fruit to take over
the sweetness.
With my pie crust ready to go, it left me with a world
of possibilities of what I wanted to put on top. I decided
to go with succulent peaches, pretty purple plums, and
vibrant blueberries.
The best part about this dessert is you can make it ahead
of time and then reheat it before eating.
The kitchen is my creative space and I love it when I am
baking. Plus, seeing my friends and family lick their forks
after dessert, makes me think of a tasty job well done.

Chicken is always a go-to meat in my house and since I felt compelled


to purchase a whole chicken at the grocery store, I decided I might as
well put it to good use.
Now I am not a whole animal kind of girl. Even my mom took out the
unwanted giblets of my turkey last Thanksgiving. Well ... it was about
time I learned to roast a chicken and get my hands a little dirty.
Oh my goodness, it was worth it!
The skin got crispy, the jalapeo plum jelly came out perfect and was
the best of savory, sweet, and a hint of spicy. In fact I had to pass the jar
around so my family could dip the chicken in more of the jelly. The meat
was falling off the fork and not a single piece of that chicken went to
waste.
Not bad for my first try.

ROASTED
CHICKEN WITH
PLUMS

1 whole chicken
cup olive oil
1 tablespoon dried rosemary
2 tablespoons smoked paprika
Salt and pepper to taste
Fill the cavity with large
chunks of whole: lemon, garlic, rosemary, onion.

Directions:
Preheat the oven to 365
degrees.
Remove the giblets from
the cavity. Fill cavity with
lemon, garlic, rosemary and
onion. Place chicken on a large
baking sheet.
Combine the spices and rub
over the entire chicken (add
more if you have a larger bird).
Roast for 90 minutes or
until juices run clear. Chicken
should read 165 degrees when
tested with a thermometer.
About 40 minutes into the
timer, add, plums, pearl onions,
or small potatoes to make this
meal complete.
Once it is finished, rub
the jalapeo plum jelly (see
accompanying recipe) on the

chicken. (Be careful because it


is hot. I used a spoon.)
Let cool for 10 to15 minutes
and serve.

JALAPEO PLUM
JELLY

2 ripe plums, pitted


2 jalapeos
1 cup sugar
cup water
2 tablespoons lemon juice
tablespoons butter
1 packet of gelatin

Directions:
Slice plums and remove pits.
Puree in a food processor.
Scoop out majority of the
seeds of the jalapeos and
blend with the plums.
Once that is well blended,
add the sugar, water, lemon,
and butter. You should have
some chunks, but they should
not be too big.
Place the mixture in a pot
on the stove.
Add the gelatin packet and
boil for 30 minutes on medium heat. It will thicken quickly
so be sure to keep an eye on it.
Once done, place in a jar
and refrigerate for up to an
hour.
Serve and enjoy.

My husband and I have this tradition where whenever he travels


without me, I surprise him with some form of homemade granola
when he comes home. It all began before we even started dating
and then slowly evolved into a family tradition. It is one of the ways
I show him I missed him. But what to make this time?
I decided to bring my husband breakfast in bed and my fridge
just stared at me until I thought parfait! I threw in my granola with
yogurt and sliced plums on top and voila. It was the perfect little
trifle and just the right amount of breakfast for a busy day.

PERFECT PLUM
PARFAIT

3 cups of gluten-free oats


1 cup raw almonds
1 cup crushed pecans
cup dried cranberries
cup unsweetened shaved
coconut
cup honey
2 teaspoons of coconut oil, melted

Directions:
Preheat oven to 350 degrees.
Mix oats, nuts, and shaved
coconut. Spread the dry mixture on
a baking dish and toast for 10 to

15 minutes. Be careful to watch so


they dont burn.
Combine wet ingredients.
Once the nuts, oats, and coconut
are done toasting, drizzle the wet
ingredients over the top.
With a wooden spoon make sure
all ingredients are well coated.
Place back in the oven, but turn
the oven off in order to not burn
the granola.
Let it sit in the oven for 5-8
minutes. Remove from oven and
let it cool completely before either
making bars or breaking into
granola.

interactive displays, music, food and the opportunity to talk with the people who make this
event happen, Brewer said.

Blue Angels

It is not just going to the autograph tent, she said. It is


about talking to the restorers and the crew. It is a massive
fair and is highly interactive. You never know when or where
jets will fly out.
At this event guests will get the opportunity to see 18
different authentic aircrafts that have been restored.
Brewer is excited about the return of the Blue Angels. She
said they are mind-boggling.
The Viper Team will knock everyones socks off, she
said. It is an emotional showcase that shows the heroism of
those back in 1941 to 1947. It will look like a movie set or
a video game. It is a good way to learn about the legends in
our history.
Over the course of the whole weekend, the event brings in
over 100,000 guests, Brewer said. There is plenty of room for
even more guests and a ton of parking, she said.
It is bone chilling, Brewer said. If you are not inside the
gates, you are not getting the full experience. It is so much
more thrilling and exciting when you are seeing it right
there flying overhead.

Give your dog the time of their life.


Bring your furry friend to the 14th annual Bark n Splash Bash event. This
unique event provides a social and recreational outlet for dogs and their owners,
said Lesley Miller, of the Folsom Parks and Recreation Department.
Dogs will be able to play and swim in two separate pools. One is shallow and
one with a deeper base to plunge into, she said.
Canines are allowed to swim and frolic in the centers activity pool, which features a pooch-pleasing play structure and sloped beach-style entry into the water,
Miller said. For water-shy pups, theres abundant lawn for romping, lounging and
socializing.
They can run on the grass or play fetch in the water, Miller said. It depends
what the dogs are into. Owners should be aware their dogs wont be going home
dry.
Once dogs are let inside the gate, owners can remove their leash and let the fun
begin.
Each year, every dog leaves and just crashes once they get into the car, Miller
said. It is a great way to tire out your dog.

This event is strictly for dogs only and people are not allowed to go into the pool during
the event, except up to their ankles, she said.
Additionally, there will be lifeguards on duty
the whole time.
This event is a fun alternative for some of
the people who dont have kids and wouldnt
necessarily go to our other events, Miller said.
It is a good opportunity for them to socialize.
At the event there will be a number of dog
vendors handing out samples which include
Sbarkles, Folsom Dog Resort, Veterinary
Healing Center of Folsom and Folsom Animal Service.
Every owner is required to bring written
proof of their current animal license for their
dog(s). The Folsom Animal Service will be
checking licenses and no dog will be admitted
until written proof is shown.
Folsom residents who need to purchase or
renew their dogs license prior to the event
may do so from 8 a.m. to 5 p.m., Monday
through Friday at Folsom City Hall.
FAS will also have staff on site to provide
rabies vaccinations, licenses and microchip
implants, Miller said.
Tickets for this event are not sold in advance. Owners and dogs should arrive ahead
of time to start the check-in process. Once
paper work is approved, owners will be able to
purchase their dogs entry and go inside.
Tickets are $10 at the door for dogs only.
Human companions are free, Miller said.
I am excited about this event itself, Miller
said. It is so fun to see the dogs have a good
time and the owners having an equally good
time. It is a feel-good, fun event.
After the event, the pool will be drained,
sanitized and inspected as a standard
post-season procedure, Miller said.

While DAmbrosio is the only performer of the night, he will be
performing various famous Broadway songs of the Great White
Way, said Edward Lee, president of the Classical Masters Musical
Festival.
This event is a fundraiser for the festival which is a musical competition for children performing the piano or string instruments, Lee
said.
We are raising the money to give children the opportunity to
perform in front of judges at the Harris Center, he said. We have a
master class with pretty well-renowned instructors. We raise money
for the community.
Lee said guests can look forward to DAmbrosio performing all of
his famous Broadways songs he has performed throughout the years.
DAmbrosio is very involved in the community and supporting
various charity organizations around the world, Lee said. He is
very attracted to the fact that we are really trying to help the growth
of young performers in our local musical community.
This year they hope to sell out and draw in a large crowd, Lee said.
I really think it is important to assimilate music in young
children, he said. With the lack of funding in schools, it is really
important to help children develop their musical talents.
The musical program is a local nonprofit.

of musicians among Silicon Valley entrepreneurs is legendary.

of several schools with award-winning music
programs, not every child is able to participate. Many youngsters who could benefit
from music education are not receiving it.
This is where the Folsom Lake Symphony is
stepping up.
One of my goals in wanting to start a
symphony here, said founder and board
president Bruce Woodbury, was to bring
beautiful music to people who otherwise
wouldnt experience it.
Woodbury was a French horn player in a
start-up symphony before moving to Folsom
in 1999. When he realized the area didnt
have an orchestra, he set about starting
one. The Folsom Lake Symphony made its
debut in 2004. Woodburys goal to reach

VACATION DESTINATION: Jenkinson Lake is about an hour drive from Folsom.

hen it comes to beauty and recreational versatility, Jenkinson Lake in Pollock Pines certainly
stands out as a destination of choice. This beautiful lake nestled in the heart of the Sly Park Recreation Area,
is just a short drive up Highway 50 and well worth the trip,
regardless of what your recreational fancy may be.
It began as a flower covered meadow with spring-fed
streams and was a favorite stop for native travelers and

ranchers in the early 1800s. It transformed into one of the


regions most scenic lakes in 1955 upon completion of the
Sly Park Dam, which was led by Walter E. Jenkinson.
Jenkinson, manager of the El Dorado Irrigation District
at the time, had convinced the United States Bureau of
Reclamation to perform a study on the water shortfalls in
the lower regions of El Dorado County. That study found

BOATING ON THE LAKE


Jenkinson Lake allows both two- and four-stroke engines on the water, however, the lake prohibits personal
watercraft such as jet skis. As the primary water source
for much of El Dorado County, the El Dorado Irrigation
District does a superior job balancing the demand for
water sports and importance of maintaining the areas
water supply.
This lake has two active boat ramps, one for each
unique part of the lake. The main boat ramp is accessible
just beyond the park entry, with a wide ramp and ample
trailer parking. The marina is near this boat ramp and
open to the main part of the lake which is popular for
water skiing. The second part of the lake, known as The
Narrows, consists of approximately a half mile of tranquil
territory limited to 5 mph travel. This area is popular for
fishing and has a boat ramp nearby for smaller boats and
canoes. Seasonally, paddle boats, boards and kayaks can
be rented for a day on the lake.
FISHING ON JENKINSON LAKE
Jenkinson Lake not only offers great surroundings for a
day of fishing, it is an ideal lake for experienced anglers
and beginners. Popular fish in the waters here, include
Lake, Mackinaw, brown and rainbow trout. Large mouth
bass are also in the waters. Select species are planted
generously each season.
Just up the street from the park entrance is the historic
Sly Park Resort General Store. This quaint little establishment is a great go to place for fuel, last-minute bait, ice
or snacks. The sign outside the front door tracks the big
catch of the day. One can also donate here to help keep
the lake well stocked. Next door is the Knott Hole Bar and
Grill where you can enjoy a spirit or a meal.
Forgot a fishing license? Not a problem, pick one up
just minutes from the lake. In a short drive, several locations in the heart of Pollock Pines offer the service.
HIKING, BIKING AND RIDING THE TRAILS
While the landscape is a sight to behold at Jenkinson
Lake, there is a great way to see it other than by boat hit
the trails. This area offers amazing trails for hikers, mountain bikers and equestrians whether its a short morning
walk or an all day hike.
The main shoreline trail at Jenkinson Lake is rated
an easy level hike on a route that is shaded throughout
the day. The full hike around the lake is just over eight
miles. These are multi-use intersecting trails that sharing
territory with mountain bikers and horseback riders now
and then at certain crossroads.
At the rear of the lake is home to the seasonal Park
Creek Waterfall. Reach this sight by accessing the trail just
past the second dam on Morman Emigrant Trail. Some

choose to park on the roadway near the dam, but there is day-use parking
nearby at the Bumpy Meadows access for just $5. In this area are restrooms
and a few picnic tables, enjoy a meal before descending to the trail. From
this access point, the hike to the seasonal waterfall is just over three miles.
If your choosing to bike on the trail, remember that it is shared with
others and to keep your eyes open. The nature of the trail doesnt allow for
an abundance of speed and has a good share of mid-level technical areas.
Wearing a helmet and protective gear is crucial, as many sections have
exposed jagged rocks and large tree roots that can easy spoil a good ride if
not careful.
CAMP AND TAKE IT ALL IN
One of the best ways to enjoy the recreational opportunities at Jenkinson
Lake is to camp on site. Many campsites are near the water with direct
beach access. There are wide choices for different types of sites to host
tents, trailers or even the open sky in a sleeping bag. The park has many
sites with fixture barbecues and safe fire pits to enjoy a campfire with
family and friends. Overnight camping and day use is permitted. The park
does accept reservations.

My patients have to do the work when getting
braces. Its not just about putting brackets on their
teeth, they need to do the upkeep and work to
finish the set treatment plan, he said.
When they do, the rewards are sweet in his
office, not the typical sticker youd see at other
practices. Dunbar offers chocolate kisses, or even
better, a Hostess Twinkie if wished.
Dunbar uses the leading industry products,
including braces by 3M incorporated. He said
that they are by far the best product hes used
throughout his career, including their clear braces,
which are barely visible on the teeth as opposed
to the metal kind. Dunbars office also offers
Invisalign, a soft composite removable alignment
tray. According to Dunbar, the office recommends
the traditional metal or clear braces over Invisalign
because the patient needs to be diligent when
wearing the Invisalign trays. Patients can remove
the trays and forget to put them in after a length
of time, which can delay treatment results.
Dunbar has a long standing relationship with
his staff members. He and his staff work together
to help make the patient feel relaxed with comfort and humor, which also makes the day a sweet
success for employees.

Who knew glowing in the dark could be so much fun?


When it comes to family-friendly fun events, the Folsom Glow Run has
become a big hit.
The fun, non-competitive 2-and-a-half-mile run/walk beginning at 7:45
p.m. will be held for the fourth time on Oct. 1 in Historic Folsom. Last
years event sold out at 1,500 participants and event planners this year
have increased the size of the event by 200 people.
Participants are encouraged to deck themselves out in glow sticks,
neon garb, costumes, sparkles and lights, as one of the appeals of the
event is seeing the creativity of the costumes. New this year, all registered
participants will receive a commemorative finishers medal.

The Glow Run is a unique idea and a great family event and can
even be a date night, said Sarah Trobee, senior recreation coordinator with the City of Folsom. Where else can you go to have a huge
silly string battle, a disc jockey dance party, a beach ball bash and a
finish through foam all in one place?
The event starts and finishes in the Historic District, as participants
will follow a route across the foot bridge and take the bike trail to Negro Bar where they will turn around and head back to the finish line
via Lake Natoma Crossing. The course is mostly flat and appropriate
for all ages. Strollers and leashed dogs are welcome.
Proceeds from the event help fund Folsoms community events
and programs.
Participants are encouraged to register early, as last years event
was a sellout.

The seventh annual Folsom Railroad Festival will celebrate the Placerville and Sacramento Valley Railroads 151th anniversary. This year is gearing up for another year of family fun.
Incorporated in 1862 and built between Folsom and Shingle Springs 1863-1865, this
railroad had a major influence on the history of California. This year, the time machine will
be dialed back even farther as PSVRR celebrates the completion of the very first railroad
built west of the Rocky Mountains.
The original Sacramento Valley Railroad was completed from Sacramento to Folsom in
1856, making it first in the west.
As always, the festival will feature train rides, antique equipment, model trains, food,
music, and plenty to do for the kids.
RailFest events and train departures take place along Placerville Road, right across the
street from the Hampton Inn. Parking is available courtesy of Hampton Inn, in designated
parking areas. Events will take place along the tracks, and trains will depart from Hampton
Station, near the Highway 50 overpass.

It is likely youve been to one of his previous restaurants,
but now you can try Brian Knadles own creation.
After 26 years of cooking and co-owning fine dining
establishments on July 27, Knadle opened his own neighborhood restaurant, Marly and Moo.
I thought of the concept about a year ago, Knadle
said. I wanted to have a neighborhood community
restaurant and to me that sounds personal.
The name of the restaurant is also very personal to him,
he said.
My daughters name is Macy Moo, Knadle said. In
the Urban Dictionary, Marly means the most beautiful
girl, the one you want to hangout with. I also like having
restaurants with two names, it is easy to remember.
The concept Knadle had was to create a restaurant that
anyone can come in and enjoy. He wants everyone who
comes in to feel welcome and a sense of belonging, he
said.

original establishment including the murals and sign, but added their own decoration style with more seating and a custom commercial
kitchen.

THREE ENTREPRENEURS RESTORE LOCAL ICONIC EATERY


Poor Reds Bar-B-Q was the place to eat in the town of El Dorado. It
was the epic culinary stop off the beaten path for travelers on their way
to such destinations as Tahoe and the Amador wine country. It was a
place where locals would flock to, where people knew your name and
invited you to sit next to them on the empty seat at the bar.
Poor Reds opened in 1948. The roadhouse barbecue earned its
reputation with their signature cocktail, The Golden Cadillac and their
succulent slow-cooked pork ribs with a mind-blowing rub and handcrafted barbecue sauce.For years patrons would order their food at
the bar, and wait for a table to open in the limited seating at the back.
After they mowed down their meal, patrons would make room for the
next group waiting at the bar. In 2013 Poor Reds doors were closed,
but that wasnt the end.
Three entrepreneurs quickly grabbed the location with hopes of
making it new while keeping the historic taste of original Poor Reds.
The trio went after their dreams, bringing Poor Reds to life again.

grounds and shared joys of experiencing Poor Reds back in the day. It
made sense to gang up and co-create a plan to open the doors again.
Long-time traditions at Poor Reds have changed a bit with the new
owners, brothers Mike and Jeff Genovese and well-known restaurateur Mike Hountalas, owner of the Purple Place. In 2016 some of the
old ambiance was matched with a rustic style for the re-opening in
April.
They kept what longtime customers were accustomed to, and they
brought in Chef Dean Hyatt, a lifelong El Dorado resident whod
grown up eating at Poor Red's.
I grew up playing in sage brush. I basked in the rosemary bushes
in my yard. My tree house was built in a bay leaf tree. So I was destined to be a chef, Hyatt joked.
Hyatt with 20 years of experience, creates his own rubs using locally farmed herbs and

handcrafted barbecue sauce, something he created just for the restaurant.
Prior to Poor Reds opening, Hyatt worked with the Genoveses and Hountala
to create a menu that catered to longtime customers, as well as entice the new
clientele. Hyatt prides his love and knowledge of food that fills the dining
room up with eager patrons.
The menu caters to mostly adults, in fact, the eatery doesnt offer a children's
menu or booster seats.
Thirsty grownups can wash down their meals by choosing a drink from Red's
abundant beer, wine and cocktail menu. There is no shortage of libations, in
fact a must-try is Poor Reds signature drink: A frothy blended Golden Cadillac.The drink base is Galliano, blended with crme de cocoa, and half and half.
According to General Manager Steve Anderly, Poor Reds is the biggest
consumer of Galliano Italian liquor in California, and possibly even in the
world. Anderly said that bartenders empty a bottle of the imported beverage
every hour.
For pet lovers, there is a dog friendly patio seating area in Poor Reds now
doubled seating capacity.

Harvest Festival, and dont miss out.
The Big Crush is an annual event when the grape harvest is celebrated, said Melissa Lavin, executive director of
the Amador Vintners Association. It is not just grapes; it
is everything else that grows during the fall.
At this event guests will have access to all 45 of Amadors
wineries along with samples of wines, grapes and some
food parings, Lavin said.
This event educates people on how the grapes are taken
from the vine, by hand or machine, how they are crushed
and being apart of generational families that have been
doing this for about 80 years, she said. The fun part is
sometimes you get taste the wine before it is wine.
Every winery processes the grapes different from the
moment the grape is removed from the vine to the time it
is crushed, Lavin said.

the beginning of the wine-making cycle, she said.
Guests will get to start their weekend or day excursion at
any of the 45 wineries they choose. Guests should check out
a map of the county and get a sense of the terrain and where
the wineries they want to visit are located, Lavin said.

their wrist band, she said. It is a minimum of two to four


types of wines per winery to taste and most of the wineries will have live music, food pairings that match the grape
and some will even have barrel sampling. Some wineries
will have a vineyard tour as well.
Each year Amador is visited by more than 3,500 people
for this specific event over the course of the whole event
weekend, she said.
Guests can look forward to a great time with family
and friends, Lavin said. Every single one of the wineries
really do treat everyone like family. Getting to know the
wine growers and how their wine is made is something
they can also look forward too. It is truly an art form.
Lavin said she is looking forward to seeing what some
of the wineries are doing with sustainable farming. Some
of the wineries are very good with water, dirt and pesticides, and Lavin wants to see what sustainable techniques
they are using, she said.
My favorite part about this event is the discovery of the
grapes, Lavin said. I love feeling like our house is full. I
love that people are coming to try our wines and discover
Amador. It is just a blessing.

NEW WINES EVERY 60 DAYS

Fresh fruit, deep flavors and soft tannins are the three things you get when your drink
Jeff Runquist wines.
Unlike most of the winemakers in Amador County who have multiple wineries, Jeff
Runquist only owns one. This makes him different and distinctive right off the bat.
Runquist has a deep knowledge of wine and years of winemaking experience that started
when he was in college at the University of California, Davis. He didnt have the intention
of learning how to make wine, but fell into a group who was making wine all over the
state, he said.
Once he learned how much he enjoyed the winemaking process he took some time off
from school to work at wineries in Amador for two harvests.
I worked for other people for 16 years, Runquist said. My first was in 1977. This year
will be my 40th harvest. This is how I know time flies, because I am having fun.
Runquist went back to school and graduated in 1980, he said.

In 1997, Runquist released his own brand


with his own label. It wasnt until 2006 that
Runquist purchased the land to build his
own winery. The winery and tasting room
opened in 2008, but he didnt move all of
his equipment up until 2011, he said.
Currently, Runquist has 17 acres of land,
with 10 of it under vines, he said.
The majority of the grapes I use are
grown in Amador County, Runquist said.
But I dont limit myself to grapes grown

here. I have worked in a lot of other regions in


California. I have other flavors I like from other
places.
Runquists style and marketing of his wines
has always been to make the wines individually
and not blend them together, he said.
We have about 19 different varieties, but
roughly 25 wines, he said.
Currently, the winery produces 25,000 cases,
Runquist said. To him, it isnt work, it is who he
is and it is fun, he said.
Of the varietal wines we produce, the most
popular is the Barbera, but my best selling bottle
of wine is the Petite Sirah, Runquist said.
The winemakers favorite wine to make changes because they are always making new things,
he said.
I think one of the fun wines we have been
making lately is the Tempranillo because it is
new to us and we are discovering if we do it this
way, or that way. We craft it a little, he said.
Runquists favorite thing about making wine is
the opportunity to express his creativity.
It is not unlike cooking, there are rules and
certain physical properties that you cannot violate, he said.
The style of the Runquists wines has three
main components that you will always be able to
taste.
You are going to get a wine with some fresh
fruit character, you are going to get good color
and rich flavors because everything we produce is
always aged in a barrel, and our wines have softer
tannins that dont leave you a drying after taste in
the finish of the wine, Runquist said.
One thing about Runquist that is different
than most wineries is that they dont release all
their wines at once; they release three new wines
every 60 days, he said.
The first of every odd numbered month,
there will be three new wines to try, Runquist
said. There is always something new and some
different.
Runquist distributes his wines in 31 states
across the country.
What makes us different is the diversity you
get here. You dont just get Zinfandel, Barbera
and Sirah. You get Zinfandel, Barbera, Sirah,
Charbono, Petit Verdot, Malbec, Merlot, Cabernet, Pinot Noir and the list goes on and on,
Runquist said.
The way we make wine is long, hard, hot and
laborious, but you can taste the difference and
the satisfaction is tremendous.

When we hear about sake, we always associate it with Japanese food but strangely enough
when we eat at a Japanese restaurant not too many patrons indulge in a glass of sake. Why is
that? More than likely, most people do not have an understanding of the different styles of sake.
It is generally believed that sake was discovered in the third century with the cultivation of rice.
Four ingredients are used in the production of sake: Rice, water, koji and yeast.
RICE: Sake is made with rice that is used solely for the purpose of sake production. The grains are about 25 percent
larger than table rice grains, higher in starch, lower in fats and proteins. There are about 80 types of sake rice in Japan
WATER: Depending on the water composition, soft or hard water a different style of sake is
manufactured. Soft water produces sake that is soft and melting and it is often described
as feminine in character. Hard water produces sake that is crisper and more compact and
therefore described as masculine.
KOJI: Koji is steamed rice that has Koji-kin inoculated and cultivated onto it. Koji creates enzymes that break down the complex carbohydrates into simple sugars. Without simple sugars
there can be no alcohol production.
YEAST: There are many different strains of yeast in the production of sake, each producing
specific characteristics. Yeast is the key to the fermentation process. Yeast and sugar yield
alcohol and carbon dioxide.

weather is ideal. Lets face
it. There are some tough decisions
in life and then there are some
TOUGH decisions in life. Living
in the Folsom area, in Indian summer,presents some of those tough
decisions. With the weather so nice, there are just so many
choices of things to do its one tough decision that is fun
to make.
Oh sure, school is in session, high school football is
starting and summer is winding down and into fall. So that
means its Apple Hill time. Did you know that pears were
the major crop in Apple Hill until about 36 years ago. Now,
the area has the largest concentration of apple growers in
California.
One of my favorite things to do in the fall is to go to
Apple Hill. It is located in Camino, a short drive up Highway 50. Were lucky as we live so close, which continues to
attract people from all over the world.
Whether youre the type that likes to plan your day or
just go with the flow, my best advice is to go early, beat the
traffic and enjoy your day. With 55 ranches, 16 different
varieties of apples, 14 bake shops and 10 different wineries,
and yes, a day spa too, theres always something to enjoy,
somewhere to go, something to see and do, and something
to go taste!
I enjoy the weather as it feels a little cooler in the mountains. I enjoy the view of the mountains, the smells of the
outdoors, including the trees, apples and bake shops oh,
the bake shops. My day is complete with early hike in the

area followed by a picnic that includes a slice of apple pie,


some apple cider and maybe an apple donut for dessert and
while sitting under the trees on a beautiful sunny day. What
a fantastic day. You can bet that Ill be back to visit one of
the Christmas tree farms in a couple months.
Real estate in the Apple Hill area is a little different from
Folsom. In Camino, the heart of Apple Hill, there are only
28 homes for sale. The average home is more than $676,000.
In nearby Placerville, there are 180 homes for sale. The
average home is more than $560,000. But in Folsom, where
there are 177 homes for sale, the average price home is more
than $605,000. All Folsom residential real estate continues
to thrive. Yes, $605,000 for the average price home. But
like I mentioned in previous columns, the most active price
range in Folsom is from $400,000 to $600,000. Of the 177
Folsom homes on the market, 45 percent of them are in
this price range. Fifty-five percent of the homes currently
in contract (pending) and 59 percent of the homes sold this
year in the area are also in this price range.

WHAT DO YOU CONSIDER TO BE YOUR


GREATEST SUCCESS?
The truth is survival thats the thing that
any entertainer with some longevity is going
to feel. How lucky I am after all these years, Im
doing the job that many people would kill for.
Its somewhat of a survival in an industry that can
be fickle.
Wow, what a lucky boy I am.
There are those that wait a long time for
success and there are those like me who work
toward it and able to hang on to it for decades.
Thats my sense of explaining success. Its also
about having fun. At the end of it all you have
to enjoy what you do. Its a little bit irresponsible
we get paid a lot to entertain.
WHAT IS YOUR BIGGEST REGRET?
I dont have any huge ones maybe lots of
little things along the way. I have regrets on a
personal level about many of the people Ive
worked with over the years relationships that
sour or professional relationship has can go awry.
In that long storyboard of people and events and
any many musicians that assessed through the
ranks. Many didnt get along with one another.
Its not all meant to be in an apologetic context. Its more to do with artistic things.
Always question your ability when you are the
captain of a ship. You have to steer a difficult
course sometimes.
IF YOU COULD PICK ONE BAND OR LEGEND TO
PERFORM WITH, WHO WOULD IT BE?
It would be Beethoven, Bach, Mozart to
prove to them how great they are. These are all
renowned improvisers. The detail, calculated
constructors of concertos and great works.
They could just play within the context of their
classical tradition.
Thats something the world doesnt know
about the improvisations of the regimes of classical music. Specifically of those three composers.
These great musicians could do all that we do
in rock, jazz and folk music. And those practitioners of those great works have no improvisational ability.
WHO ARE THE CURRENT BAND MEMBERS?
Ian Anderson, on flute, vocals and acoustic
guitar. Florian Opahle on electric guitar. Scott
Hammond on drums. John OHara on keyboards
and David Goodier on bass. With the additional
vocal and theatrical input of Ryan ODonnell on

WHAT IS IAN ANDERSON UP TO?


Anderson, known throughout the world of
rock music as the flute and voice behind the
legendary Jethro Tull, celebrates his 48th year
as an international recording and performing
musician.
He was born in 1947 in Dunfermline, Fife,
Scotland. Tull formed in 1968 out of the amalgamation of the John Evan Band and McGregors
Engine, two blues-based UK groups.
After a lengthy career, Ian Anderson and Jethro
Tull have released 30 studio and live albums,
selling more than 60 million copies since the
band first performed at Londons famous Marquee Club in February 1968.
After undertaking more than 3,000 concerts
in 40 countries throughout four decades, he has
typically played 100-plus concerts each year to
longstanding, as well as new fans worldwide.
Widely recognized as the man who introduced
the flute to rock music, Ian Anderson remains
the crowned exponent of the popular and rock
genres of flute playing. Anderson has so far
recorded six diverse albums under his own

name during a long career: 1983s Walk Into


Light, the flute instrumental Divinities album
for EMIs classical music division in 1995 which
reached No. 1 in the relevant Billboard chart,
and the more acoustic collections of songs, The
Secret Language of Birds, Rupis Dance, plus
rock albums Thick As A Brick 2 and 2014s
Homo Erraticus.
In recent years, he has toured more and more
as simply Ian Anderson, often with orchestras,
string quartets, featured soloists.
Anderson lives on a farm in the southwest of
England where he has a recording and rehearsal
studio and offices. He has been married for 38
years to Shona who is also an active director of
their music and other companies. They have two
children James and Gael and two grandchildren. Gael is married to actor Andrew Lincoln,
starring in episodes of the hugely-acclaimed
zombie thriller, The Walking Dead.
His hobbies include the growing of many
varieties of hot chili peppers, the study and
conservation of the 26 species of small wildcats

of the world and the appreciation of mechanical


watches, fountain pens and vintage cameras. He
reluctantly admits to owning digital cameras and
scanners for his work on the photographicpromotional images related to Tull as well as his solo
career.
In 2006, he was awarded a doctorate in literature from Heriot Watt University in Edinburgh, the
Ivor Award for International Achievement in Music
and, in the New Years Honours List 2008, an MBE
for services to music. In 2011, he received another doctorate in literature from Dundee University.
Anderson owns no fast car, never having taken
a driving test, and has a wardrobe of singularly
uninspiring and drab leisurewear. He still keeps
a couple of off-road competition motorcycles, a
few sporting guns and a saxophone which he
promises never to play again.
He declares a lifelong commitment to music as
a profession, being far too young to hang up his
hat or his flute, although the tights and codpiece
have long since been consigned to some forgotten bottom drawer.
