The newest lady to join the Napa Valley Yacht Club fleet is Mark
Cordeiro’s elegant 55’ Sea Ray Sundancer luxury sport yacht,
“Rhiannon”. She sports twin 660 hp Caterpillar diesel engines, two
luxurious staterooms, and a cockpit that enters into a full size flying
bridge. Mark has been an avid boater for years and a NVYC member
since 1992. His parents, Bob & Gloria Cordeiro, members since 1993,
are frequent guests aboard his boat when he cruises with the club.
Congratulations, Mark. She is just beautiful!

Turkey Enchilada Spoon Bread Casserole
Casserole Over high heat, combine 1 Pkg “Jiffy” Corn Muffin Mix
1½ lb ground turkey turkey, onion, garlic, ½ C margarine or butter, melted
½ C chopped onion cumin in oil until crumbly 1 8 oz. can whole kernel corn, drained
1 T minced garlic and stir in 1 C sauce. Cut 1 8 oz. can cream style corn
½ t ground cumin tortillas in half, and layer 1 C sour cream
1 t salad oil in casserole, alternating 2 eggs.
1 can red enchilada with meat, cheese and
sauce -29 oz sauce. Top with sauce and Pour margarine or butter into 1½ qt casserole. Blend in
1 T sea salt cheese. Bake in 425° oven corn. In separate bowl, beat eggs, add muffin mix and sour
12 corn tortillas 20 minutes. Sprinkle with cream and stir into casserole. Blend thoroughly. Bake 35 -
1 C shredded jack cheese cilantro. (6-8 servings) 45 minutes at 375° or until center is firm. (6-8 servings)
