PARANGIKAI PAAL KOOTU

This dish is very simple and one of my favorite This is prepared from half ripened red pumpkin.

1 cup of pumpkin pieces (peel it if the skin is hard)


1 cup milk added to 1 tsp of rice powder
1/4 tsp of turmeric
Salt to taste
To grind:
1/2 tsp of jeera
4 to 6 pepper corns
1 green chilli
1 tsp grated coconut
Grind the above ingredients to coarse paste
For garnishing :
14/ tsp mustard seeds
few sprigs of curry leaves
1 tsp OIL

Boil the pumpkin in thick pan with water and turmeric.Add salt, ground paste, milk .
simmer for few seconds til thick. Crackle mustard seeds in oil along with curry leaves. Pour over
the kootu.Goes well with rice , chapathi.
In the same way can use , snake gourd chow chow, ridge gourd etc.
