My desire in running for city council comes from two places: my love for our town and
wanting to be involved in the community and a desire to help keep Lincoln thriving and
growing in positive ways.
My goal is to make sure we fully support our law enforcement and fire department;
bring businesses, community and our non-profit organizations together to help families
be successful; support the responsible growth of Lincoln while not forgetting the
neighborhoods that are the heritage of Lincoln; and keep Lincoln financially solvent and
responsible.

hen Dr. Eloisa Espiritu opened up her own

practice in March of 2006, she knew that she
had to create an atmosphere that challenged a
stereotypical dental office. Since her high school years
when she worked as a dental assistance, Dr. Espiritu
knew that dentistry was her calling.

Thats when I realized I loved dentistry. I loved

fixing teeth and making people feel better about themselves, stated Dr. Espiritu.

Several of her patients confirm that Dr. Espiritu has,

in fact, reached her desired dental environment. One
overjoyed patient expressed, The atmosphere of the office
is very comfortable. When you have children, this helps
them stay at ease. My children and the whole family
are pleased with the whole experience. While another
stated, I really like the fact that I dont have to hide my
smile, it looks natural. My dentist is caring, kind, and
careful and made sure I was well taken care of.
Some of the many differences that Dr. Espiritu
integrates into her office in order to create a relaxing
atmosphere include a selection of Netflix videos, warm
blankets, a variety of soothing essential oils, a complimentary hand paraffin wax treatment and more.
It sounds like going to the dentist has reversed from
feelings of trepidation to moments of anticipation. Dr.
Espiritu has transformed modern dentistry by integrating a holistic and spa-like approach to oral health.

Though the serene surroundings may seem

solely for the purpose of tranquility, there are also
several health benefits in several of the non-oral
related treatments. Certain essential oils have many
uses when it comes to total relaxation or calming
anxious nerves. Dr. Espiritu incorporates these
holistic medicinal techniques within her practice
and has received positive encouragement in doing
so. Whether the oils are dispersed in the air by a
diffuser or directly applied onto the skin, many of
Lincoln Smiles patients claim to have an easier
experience because of them.

Another additional measure that goes above and

beyond the ordinary is the complimentary paraffin
wax hand treatment. Not only does in induce a state
of calm by warming the hands, but it also works as
a skin softener. This type of heat therapy is commonly used for facials and relieving joint pain, but
Dr. Espiritu has found another use for the drug-free
and versatile remedy.
I feel so confident with the care I receive at
Lincoln Smiles and Dr. Espiritu. What I like most
is the extra care and attention, and the super nice
and friendly staff, commented customer Janice Binetti in her testimonial of her experience at Lincoln
Smiles.

While Dr. Espiritu and her staff do go above and

beyond for their adult patients, they also have extra
measures they take for their younger clients.
We love seeing children, stated Dr. Espiritu.

Within the office there is a play area for little

ones as well as what everyone in the office calls a
happy visit. A happy visit resembles an appointment without even looking into the mouths of
these very young patients. The entire visit consists of
allowing children the time to feel safe at the dentist.

Creamery in Lincoln is family

friendly and health conscious
WRITTEN AND PHOTOS BY NOELLE KONRAD

Getting up before six in the morning is not something

everyone wants to do especially when you know you have
a herd of cows to milk and an entire farm to maintain.
However, for Andrew and Krista Abrahams, everything
they do is 100 percent family driven. When they decided to begin the journey of opening their own farm and
creamery, the motivation behind it was based on health,
for them and their four children. They have found passion in what they do.
We were concerned about what we were eating and
what our kids were eating, Andrew stated.

After years of full-time dedication to their farm, the

Abrahams now have a complete, yet still expanding farm
and creamery. Their desire to make milk products more
family friendly and health conscious has been accomplished by altering a number of processes that would
typically be used in a commercial creamery.

Dream

Long Dream Farm in Placer

County is family run and
motivated by health
8

All the cows are grass fed with very little grain
and everything is non-GMO,
but the most unique difference that the Abrahams
incorporated into their
creamery is how they raise
and care for their cows.
All of the heifers
that produce
milk are

removes a great deal of stress.

rinsed thoroughly, the milking can begin. The product will then
be transferred into a separate room where it will be heated then
cooled in order to be transformed into either butter, a various
cheese, or simply milk.

Another stress reliever that Long Dream Farm has integrated

into their daily routine is that their cows are only milked once a
day rather than multiple times. Their state-of-the-art machines are
able to determine the flow rate, time, and weight of the milk that
is pumped with an automatic retraction when the process is completed. In the meantime the cows know when it is time to milk and
are placed in individual stalls. During this time there is a mixture of
alfalfa pellets and minerals to help maintain health. For the rest of
the day the cows are
able to feed naturally

longer life span.

In addition to their full functioning creamer, the Abrahams

also care for over 1,500 chickens that produce eggs that they
sell locally, pigs, dogs, emus, a horse, two donkeys, cats, alpacas,
and more. With a full farm environment, the Abrahams family
has decided to open their home for tour as well as overnight
stays in their fully equipped guest house for a complete experience of life on a farm.

They are regular animals and healthier for it, Andrew commented.

It takes a lot to sell dairy products in California, said Andrew.

You can also find their products like eggs as local as Gaias
Basket whereas their dairy is distributed into several restaurants
across Placer County. Soon their cheeses and other milk products will be offered through retail.

We want to do
things differently, said Andrew.

The milk produced is dependent on the different breed of cows.

Whereas another determining factor to the quality of the milk is in
the pre-milking sanitation process. Once the pipes are cleaned and

cup of blackberries
A handful of fresh basil
2 tablespoons peanut butter
A handful of chopped peanuts
2 cups of sliced cabbage,
carrots and broccoli
white onion
DIRECTIONS:
Cut the chicken into bite-sized
pieces and place on the stove in
a well-oiled skillet at medium heat.
(I used olive or grapeseed oil.)
Slice the onion and mince the garlic
and throw into the skillet.
Once fragrant, add the vinegar
and coco aminos. Next add the
blackberries and peanut butter to
the mix. The chicken should be
close to done before you throw in
the cabbage, carrots, and broccoli.

ometimes I crave something savory sweet. The balance between satisfying my cravings for
something salty and something sugary is found usually in Thai food. I love Thai food! This
recipe takes only about 20 minutes to make and would be great served over some jasmine rice
or eaten simply as a stir fry. I have started using coco aminos instead of soy sauce and it is quite
a pleasant sauce. With lower sodium and natural coconut, I dont think I will ever go back to just
regular soy sauce. Plus this dish has peanut butter in it, which makes every Thai dish delicious!

If the sauce is too dry add a dash

of water and some more coco
aminos. Take off the burner and
add the chopped peanuts and fresh
basil. Serve and enjoy

ver have those times when you really want to impress company,
but you dont want to spend eight hours baking? I recently had
this experience and that is when the French came through for me.

Clafoutis a strange word that is bound to get a few head turns

and glazed looks of confusion. However, it is not only a blast to say, but
also really enjoyable to make.
To break it down it is basically a fruit custard tart. I used raspberries and dark cherries that were then surrounded by a sturdy yet
moist custard base.
