Chocolate Souffles

Ingredients:
Butter
Cocoa
Dark chocolate (chopped)
Cornflour
Milk
Egg yolks
Egg whites
Caster sugar

Step 1 Preheat oven to 180 C (350F) and butter 6 ramekins. Dust with cocoa.
Step 2 Mix cornflour with 2 tbsp milk then add remaining milk.
Step 3 Boil for 30 seconds, stirring. Add chocolate and whisk until smooth.
Step 4 Cool for 5 minutes then add egg yolks and beat with a wooden spoon.
Step 5 Whisk egg whites until peaks form and add sugar 1 tbsp at a time.
Step 6 Add 1/3 egg white to chocolate mixture then fold in remainder.
Step 7 Fill ramekins 2/3 full and clean rim with your finger.
Step 8 Bake for 12 14 minutes.
