Description of Duties:
My primary teaching responsibility (25%) is to teach Food Chemistry II (or called Food Analysis, FDSC
402/602) and its labs (every Spring semester) and Food Chemistry I (FDSC 401/601) and its labs (every
Fall semester), and I have also been teaching course 821 special topics on Advanced Food Chemistry:
nutraceuticals and flavors and course 421 for undergraduate creative inquiry program. My research
(75%) interests have been focusing on several aspects including: (1) functional food/nutraceuticals, which
focuses on characterizing the impact biochemicals in foods and agricultural products, especially those health
benefiting chemicals from medicinal plants, and inducing bioactive phytochemicals through various
techniques of chemical stresses, fermentation, genetic engineering, etc; (2) food flavor chemistry, which
encompasses determining the volatile chemical profiles of interested foods and non-food agricultural matrix
by using modern state-of-art instruments, such as GC-MS, LC-MS, etc, and studying mechanisms and
pathways of characteristic flavor formations; (3) Food safety on rapid chemical analyses and development

Major advisor for my graduate student, Ms. Changqing Wu, who was awarded the Wade
Stackhouse Graduate Fellowship winner for the 2003-2004, 2004-2005 academic years during
her Ph.D (2002-2005) program. She also won the 4th place award of the Phi Tau Sigma of IFT
Dixie section for her research presentation: extraction and GC/MS determination of bioactive
constituents in feverfew.
