Explanation
In the experimental determination of the reaction order on the rate of
corn oil rancidity by iodometric titration method that aims to determine the
peroxide value, how to determine rancidity, the reaction order in corn oil
rancidity process. The samples used were corn oil as much as 10 mL. First of all
the samples was added to the beaker and boiling above the burner methylated for
2 hours. After boiling oil becomes brownish. Then the samples were taken at

as a comparison, we feed the 3.6 mL of glacial acetic acid was added 2.4 mL of

saturated KI solution, the solution is not color. then was allowed to stand for 1
minute at any time shaken. Then added 6 mL of distilled water and two drops of
starch 2% and the solution becomes blue, then drops solution using 0.1 M
Na2S2O3 until the blue color disappeared. Volume Na2S2O3yang used for
blank titration was 0.8 mL. The reaction is:

substances miscible. This is done so that the fat in these oils can react with saturated KI
to be titrated with sodium thiosulfate to titrate excess iodnya. The sample was mixed
with a solution of acetic acid so that the sample had an oxidant properties and takes
place under acidic conditions. Once oil is added with glacial acetic acid and chloroform
solution is colorless and the solution will form two layers, namely a layer of oil on the
top and the bottom layer is a colorless clear solution. After addition of saturated KI
solution became white turbid and allowed to stand for 1 minute in order to function as a
substance that is oxidized KI can walk complete. Then the addition of 6 mL of distilled
water and the solution remains turbid. Aquadest used as a dilution of the solution.

In this titration Na2S2O3 solution required to titrate bit I2 formed. Means just a little
peroxide is formed. The smaller the obtained peroxide value, the smaller the damage
caused to these oils. And the longer heating Na2S2O3 needed volume is also growing.

From the table it can be seen that the longer heating the peroxide will also increase. So
between the heating time and the peroxide has a proportional relationship. The greater
the peroxide value determines the higher the level of rancidity in oil quality of the oil
decreases. Obtained on blank titration Na2S2O3 volume used in the titration was 0.8
mL.
The principle of determination peroxide number is a compound contained in the oil will
oxidize to form I2 KI freely bound by sodium thiosulfate solution so that the number of
moles of thiosulfate equivalent is equal to the mole equivalent I2 free which means the
same as the equivalent number of moles of peroxide compounds in the oil

2. rancidity palm oil can be determined by iodometric titrimetry method. The longer
the time of heating oil, the smaller the peroxide value of oil. And the smaller the
peroxide value of oil, the oil rancidity level so the better the quality of the oil.
3. the oil randicity of coconut oil can be use by iodometry titration. The coconut oil
randicity reaction occurs at second order.
