Carbonara Recipe

Ingredients

1 lb spaghetti noodles, cooked according to package instructions

4 pieces eggs, beaten

3/4 cup heavy whipping cream

3/4 lb bacon, chopped

1/2 cup parmesan cheese, grated

2 tablespoons green onion, minced

4 cloves garlic, minced

4 tablespoons butter

Cooking Procedure
1.

Combine beaten eggs, heavy whipping cream, and parmesan cheese then mix well. Set aside.

2.

Heat a cooking pot or pan then place the butter and let melt.

3.

Fry the bacon until the texture becomes crisp. Set aside.

4.

On the same cooking pot or pan, remove excess butter then saut the garlic and green onions.

5.

Put-in the spaghetti noodles and beaten egg- heavy whipping cream parmesan cheese mixture then mix well. Cook for 1 to 2 minutes.

6.

Add the fried bacon and distribute.

7.

Transfer to a serving plate then serve.

Filipino Chicken Macaroni Salad Recipe


Ingredients
1 lb. elbow macaroni
1 lb. chicken
3/4 cup light mayonnaise
1 (20 oz.) can pineapple tidbits, drained
3/4 cup minced carrots
3/4 cup raisins
1 cup shredded sharp cheddar cheese
1/4 teaspoon garlic powder
4 cups water
Salt and pepper to taste

Bring water to a boil. Once the water starts boiling, add 1 teaspoon salt and then put-in the chicken. Boil the
chicken for 25 minutes. Drain the water and let the chicken cool.

Discard the bone from the meat and then shred the chicken meat using your clean hands. Set aside.

3.

Cook the elbow macaroni according to package instructions. Drain and then set aside

4.

In a large mixing bowl, combine the mayonnaise, garlic powder, 3 tablespoons of pineapple juice from the
canned tidbits, salt, and ground black pepper. Mix well and then taste. Adjust the taste as necessary.

5.

Add the shredded chicken, carrots, macaroni, raisins, and pineapple tidbits in the mixing bowl. Toss
thoroughly until the ingredients are well distributed.

6.

Add the cheese. Gently toss.

7.

Cover the mixing bowl with a cling wrap. Refrigerate for at least 1 hour.

8.

Transfer to a serving plate.

9.

Serve. Share and enjoy!

Crispy Pata Recipe

Ingredients

1 whole pigs leg (pata; about 3 to 4 lbs), cleaned

6 pieces dried bay leaves

2 tablespoons whole peppercorn

4 to 6 pieces star anise (optional)

6 teaspoons salt

2 teaspoons ground black pepper

2 to 3 teaspoons garlic powder

12 to 15 cups water

8 to 12 cups cooking oil

Instructions
1.

Pour water in a cooking pot then let boil.

2.

Put-in dried bay leaves, whole peppercorn, star anise, and 4 teaspoons of salt.

3.

Add the whole pigs legs in the cooking pot then simmer until the leg becomes tender (about 45 to 60 minutes).

4.

Remove the tender leg from the cooking pot and set aside until the temperature goes down.

5.

Rub the leg with garlic powder, ground black pepper, and remaining salt. Let stand for 15 minutes to absorb the rub.

6.

Heat a clean large cooking pot (preferably with cover) and pour-in cooking oil.

7.

When the oil becomes hot, deep fry the rubbed pork leg. Continue cooking in medium heat until one side becomes crispy,
and then cautiously flip the leg to crisp the other side. Note: Be extra careful in doing this procedure.

8.

Turn-off the heat; remove the crispy pork leg; and transfer it to a wide serving plate.

9.

Serve with atcharang papaya and soy sauce vinegar dipping sauce.

10.
