1/3cupstrawberrypreserves

Directions
1.Preheatovento350degreesF.Greasethebottomand1/2inchupthesidesofa9x5x3inchloafpan
setaside.Inalargebowlstirtogetherflour,bakingpowder,bakingsoda,cinnamon,salt,nutmeg,and
ginger.Makeawellinthecenterofflourmixturesetaside.
2.Inamediumbowlcombineeggs,mashedbananas,sugar,oil,andpeanutbutter.Addeggmixtureallat
oncetoflourmixture.Stirjustuntilmoistened(battershouldbelumpy).Foldinpeanuts.Spoonbatterinto
thepreparedloafpan,spreadingevenly.Drizzlewith1/4cupofthestrawberrypreservesswirlslightlyto
marble.Ifdesired,sprinklewithStreuselNutTopping.
3.Bakeabout70minutesoruntilawoodentoothpickinsertednearthecentercomesoutclean.If
necessarytopreventoverbrowning,coverlooselywithfoilforthelast15minutesofbaking.Coolinpan
onawirerackfor10minutes.Removefrompan.Coolcompletelyonwirerack.Wrapandstore
overnight.
4.Inasmallmicrowavesafebowlmicrowavetheremainingstrawberrypreserveson100percentpower
(high)for15to20secondsoruntilmelted,snippinganylargepiecesoffruit.Drizzlemeltedpreserves
overthetopofbreadbeforeslicing.
