Chicken and Broccoli Dish

Ingredients:
900 gm - 1 kg chicken breasts
2 head of broccoli
2 x 293 gm tins of Campbells condensed Cream of Mushroom Soup (Dont dilute it.)
1 cup (8 fl oz) of mayonnaise
10 fl oz/ 284 ml double cream
15 ml mild curry powder
2 - 3 slices bread made into crumbs
3 - 4 oz (about 125 gm) cheddar cheese
Method:
1.
Cut broccoli into florets and steam for about 7 mins (dont overcook it) and lay in
bottom of baking dish (about 9 x 12 )

Cook chicken, cut into 1 inch cubes and arrange on top of broccoli. (Ie fry on high
to seal, and then add lid and turn temperature down to low and cook for about 5
mins until cooked through. Dont overcook it!)

Mix sauce ingredients together and

Spread sauce over chicken.
5.
Make bread into crumbs (food processor is easiest or use grater) and grate
equivalent amount of cheese. Mix together.
6.
Sprinkle bread crumbs and grated cheese over the top of sauce.
7.
Cook at 180 C for about 30 mins until golden brown.
