    CONCURRENTRESOLUTION
    WHEREAS,Texasisrenownedforitsdistinctiveanddelicious
    foods,andourstatehasputitsbrandonbreakfastwithaversatile
    itemthatisbelovedfromthePanhandletotheRioGrande:the
    breakfasttacoand
    WHEREAS,Thetacohasbeenoneofthefundamentalbuilding
    blocksofMexicancuisineforwelloveracenturyandpossiblymuch
    longerusingsavorybreakfastfoodssuchaseggsandpotatoesas
    tacofillingswasanaturalidea,andanaccountofpairingbacon
    withatortilladatestothe1850sinachronicleofaTexasto
    Californiacattledrivereferencesinthepresstotacoseatenfor
    breakfastarefoundbeginninginthemid20thcentury:inMay1959,
    theSanAntonioExpressandNewsreportedonatacoshopontheWest
    Sidethatfeaturedeggtacos,andtheElPasoHeraldPostreported
    inMay1962thatgubernatorialcandidateDonYarboroughhadtacos
    forbreakfastwhileonthecampaigntrailoneoftheearliestuses
    oftheterm"breakfasttaco"comesfroma1975newspaperarticle
    aboutafoodtourofSanAntonioand
    WHEREAS,Morerecently,aspiriteddebatehasarisenover
    whichpartofthestateoriginatedthebreakfasttacomanyTexans
    ofacertainagehavefondmemories,datingbackdecades,ofbeing
    servedtacosforbreakfastbytheirmothersandgrandmothersinSan
    Antonio,SouthTexas,andtheRioGrandeValley,andbythe1960s,
    the"tacoforbreakfast"couldbefoundfarthernorthintheLone
    StarState,onschoolmenusinKerrvilleandSeguinsomefood
    writersandrestaurateurshaveclaimedthatAustinoriginatedthe
    term"breakfasttaco,"ifnotthefooditself,whichhasledtoan
    energeticdissentfromresidentsofSanAntonioandotherregions
    andmunicipalitiesaroundtheLoneStarStateand
    WHEREAS,Nomatterwhereorwhenitgotitsstart,the
    breakfasttacohasquicklybecomepopularwithbothnativeTexans
    anddelightedvisitorsfromacrossthenationaslongasit
    includesatortillaandiseatenforbreakfast,thebreakfasttaco
    canrangefromthesimplest(tortillaandegg)tothetraditional
    (tortillaandmachacadoconhuevo)totheinnovative(tortilla,
    eggs,andhotdogs)tothemostextravagant(tortillapluswhatever
    elseisonthemenu),anditcanbeenjoyedineverycornerofthe
    stateand
    WHEREAS,WhetherpurchasedatadrivethroughinFortWorth,
    orderedatarestaurantinCorpusChristi,orservedbyaloving
    grandmotherinDelRio,thebreakfasttacohasbecomeasignature
    Texasfoodonaparwithbarbecueandchickenfriedsteak,anditis
    enjoyedbycountlessresidentsoftheLoneStarStateeachmorning
    astheperfectwaytostarttheirdaynow,therefore,beit
    RESOLVED,Thatthe85thLegislatureoftheStateofTexas
    herebydesignatethebreakfasttacoastheofficialstatebreakfast
    itemofTexas.
