Delicious Carrot Salad

(A variation of Disappearing Carrot Salad from The New Laurels Kitchen)

To Serve 8: To Serve 4:
cup cup walnut pieces
2T 1T shredded coconut
4 cups (about 12 2 cups (about 6 grated carrot

2-3 1-2 apple(s), cored and grated
1 lemon lemon Zest and juice

(1 cup) ( cup) (currants or raisins)
Dash salt
1T 1 tsp jarred grated ginger
(1 T) (1-2 tsp) (honey)

Conventions:

T = tablespoon t = teaspoons (Ingredients in parentheses are optional.)

Instructions:

While grating and zesting, toast walnuts at 300F for about 5 minutes.

Add coconut and toast another 5 minutes. Chill.

Combine grated carrot, apple, lemon and orange juice, lemon zest, salt

and ginger. Adjust to taste. To make it sweeter, add more grated apple,

the currants/raisins, and/or the honey.
