VERKA AND BHUSHAN STEEL & POWER , CHANDIGARH
PREFACE
This whole report is based on the tour of two industries BHUSHAN STEEL &POWER and VERKA
.The former one is a textile industry and later a milk production company. The report includes their
origin and their development. It contains a comprehensive insight of our views and prospective about the
two industries, their mission , vision and organizational network according to our point of view.
1
It includes our direct exposure to these two industries.
BHUSHAN STEEL & POWER is the largest manufacturer of auto-grade steel in India. Bhushan

leveraged company. The company's consolidated debt stands at 31,839 crore, having risen
18 per cent from a year ago. The Company is spending Rs. 260 billion to expand its capacity to

History of VERKA PLANT
The brand name of Milk and Milk Products was adopted as Verka.
The Foundation stone of Milk Plant, Ludhiana was laid by Hon. S. Parkash Singh
Badal, the then Chief Minister of Punjab in 1970.
Inauguration was done by Late Smt. Indira Gandhi the then Prime Minister of India.
The capacity of the plant was 1.00 lac. Litre per day, Including powder plant of 7 MT.
And now the milk handling capacity is 4.00 Lac Liter per day.

Raw Milk Reception Dock
Verka follows a strict system of quality assurance to maintain a high quality of milk
provided to the consumer.
The milk is received from local societies at Village level, where chilling centers are
installed.
On the basis of some main tests the milk is graded into categories.
10
Grading of Raw Milk
On the basis of physical condition and some tests the milk is graded into four categories :
Curd 3
Dirty milk 4
11
After that
Raw milk is sucked by means of vacuum from the truck and collected in dump tank.
Every batch of incoming milk is tested for Fat, SNF, Acidity and bacteriological
quality, adulterants and presence of any preservative.
12
In the Plant there are three main labs:
13
Dock Lab
Microbiological Lab
DOCK LAB
In Dock Lab raw milk, pasteurized milk, butter milk, Skim milk, are checked w.r.t. the chemical quality.
A. Acidity Test
C. MBRT Test
D. Adulteration Test
14
(A) Acidity Test
Bacteria that normally develop in raw milk produce more or less of lactic acid.
In the acidity test the acid is neutralized with Sodium hydroxide and the amount of alkaline is measured.
15
(B) Fat and SNF Test
Fat & SNF can be determined using Gerbers method or using a milcoscan.
Milcoscan is the latest technology machine for scanning of milk and uses infra red rays to analyze the
milk for Fat, SNF.
Calculations/Formula Used :
% SNF = CLR/4+0.2fat+0.29
Instead of counting bacteria directly, a correlation is made between the time required to reduce dye to
colorless in milk.
16
To overcome the increasing need of milk and milk products and to make maximum profit there is
increase in adulteration cases.
In adulteration test we used raw milk in 2 test tubes for each test, one of them containing only raw milk
and the other one was added with the tested material.
In Q.C. lab sensory evaluation of milk and milk products is done, in which there is testing of shelf life. A
check is put over cleanliness of dairy equipments and overall sensitization of plant. The products
produced in the plant are checked for their quality and Shelf life before they are sent to the market.

Microbiological Lab
Microbiological testing services help ensure products are safer, meet quality specifications and
regulatory compliance.
Microbiology analysis is available for food and food ingredients, agricultural products, cosmetics,
water, fuels, pharmaceuticals, and many other products and materials.

MILK PROCCESSING SECTION
20
Equipments used in milk processing
21
Pasteurizer
It is device used to pasteurize the milk i.e. heating at 63C for 30 min or 70C for 15 minutes in
approved and properly operated equipment. At one end of the device the temperature is 75-80C and at
the other end it is 4-5C, i.e. instant cooling of milk is done after exposure to high temperature.
Homogenizer
Homogenization is a process wherein fat globules are broken down to 2 microns or less under high
pressure. It consists of a high-pressure piston pump that forces the milk and thereby subdivided into
smaller particles of more uniform size.
Equipments
22
Cream separator : It is a device which separates cream from the milk by means of a set of plates
which rotate around a central axis using centrifugal force There are 135 plates in each cream separator.
Cream and skim milk are obtained. After extraction cream is chilled to 4-6C through plate chiller.
STORAGE TANKS :To store the milk in different states like raw, chilled, pasteurized and standardized.
They have capacity of 10000-20000 litres.

24
MILK PACKAGING
10 machines of packing are used each of which has two packing sections.
Each machine has capacity to pack 1000 litres of milk per hour i.e. 2000 pouches of
500 ml / hour.
25
EFFLUENT TREATMENT PROCESS(E.T.P)
Effluent treatment is the process of treating effluent released from the plant.
It includes physical, chemical, and biological processes to remove physical, chemical and biological
contaminants.
Its objective is to produce an environmentally safe treated effluent and a solid waste or treated sludge
suitable for disposal or reuse.
According to government regulations waste water should be treated to certain standards before they are
disposed off.
