ABSTRAK
Tujuan dari penelitian ini adalah untuk mengevaluasi komposisi
asam lemak dari minyak biji tomat oleh Gas Chromatography
dikombinasikan dengan Mass Spectrometry dan parameter utamanya
fisik-kimia . Minyak biji tomat yang digunakan untuk analisis telah
diperoleh dengan metode ekstraksi tekanan dingin. Hal ini diketahui
bahwa asam lemak dapat diidentifikasi dengan GC karena adanya
perbedaan waktu retensi, sampel minyak biji tomat yang diesterifikasi
untuk dirubah ke fase uap, mengubah asam lemak dari minyak biji tomat
menjadi asam lemak metil ester. Hasil penelitian menunjukkan bahwa
komponen utama dari minyak biji tomat adalah asam linoleat (48,2%),
diikuti oleh asam palmitat (17,18%) dan asam oleat (9,2%), semua asam
lemak yang dinyatakan dalam metil ester. Dapat disimpulkan bahwa
minyak biji tomat adalah sumber asam lemak esensial omega-6 (asam
linoleat) dan omega-9 (asam oleat).

1.PENDAHULUAN
Tomat (Lycopersicon Lycopersicum) merupakan sayuran yang
sangat bergizi yang dibudidayakan oleh seluruh dunia untuk
menghasilkan buahnya. Memiliki nilai gizi yang tinggi dan karena memiliki
banyak kegunaan dalam bidang kuliner karena merupakan salah satu
sayuran yang paling penting. Tomat diproses di industri untuk
mendapatkan produk seperti jus, saus tomat, pasta dan bubuk tomat.
Limbah padat yang tersisa setelah proses ekstraksi jus / pulp, terdiri dari
kulit, biji, materi berserat dan limbah tomat , merupakan masalah
ekologis.
Pengembangan industri pengolahan tomat bukan hanya diajukan untuk
daerah yang memiliki masalah ekonomi, tetapi juga masalah teknis dan
lingkungan, karena jumlah limbah yang dihasilkan dari industri sangat
diperdebatkan dari hari ke hari.
