Chatpata (small) brinjal

Step 1: Cut brinjals (longitudinally) into fours with calyx

salt & turmeric


Step 2: Heat oil and fry the brinjals.till half-fried (not too

soft).and remove and keep aside


Step 3: In same oil add mustard, broken red chilli, panchphora (jeera, saunf, onion seeds,

methi, mustard)
Step 4: Put sliced onion.till brown..add ginger-garlic paste.sliced tomato.turmeric (little)
Step 5: Put brinjal, dhania powder, chilli powder..Cover & cook (tomato oozes out

water.for about 7 mins


Step 6: (check for salt)add coriander for garnishing.
