First of all, lets say our praise and gratitude to Allah Swt due to all of His
rahmat, taufiq, and hidayah upon all of us. shalawat and salam may ever
lastingly be upon our Great Prophet Muhammad Saw who had guided and
led us from dark into shining bright path.
Pandeglang is a regency of Banten province, Indonesia. It is mainly
located on the island of Java, which is the most southwestern regency of the
island of Java and also includes Ujung Kulon National Park. The regency has
an area of 2,746.9 km. The capital is the town of Pandeglang.
Pandeglang also called santri city. there are many boarding schools in
this city. pandeglang has many culinary, especially traditional like white apem,
emping, balok, angen lada, otak-otak, leumeung, jojorong, and pasung.
Talking about pasung, does anyone know why this cake is called
Pasung cake?. No one knows for sure why this cake is called Pasung cake,
it's just that name is a typical name of the Sundanese. Pasung cake is also
made of rice flour, this cake consists of two dough, rice flour and palm sugar
/ red, then sago flour and coconut milk to make it chewy. Usually in the
dough, also added pieces of coconut or jackfruit so the cake more textured
and fragrant.
The special of this cake is its shape that resembles a funnel. If the
banana leaf on jojorong in the form of a box like a small tray, on pasung the
leaf is rolled up like a funnel or a piece. Cooking technique is also unique, the
dough of rice flour and brown sugar put in into the funnel then steamed
until harden. After that, lifted and put the dough of coconut milk and sago flour
and steamed again until cooked about 15 minutes. When we bite the cake
slowly from the top, we will taste the sweet palm sugar melt and the dough
texture that is not too chewy. Gentle and tasted coconut scent, then bite to
the end of the sweetness of palm sugar increasingly combined with the
cheesy dough of rice flour.
Although Pasung is a traditional food, but about the taste it is not
inferior to modern food. Besides, pasung itself includes healthy food because
it does not contain food preservatives.
Therefore, on this good occasion, I invite all of you to love traditional
food, especially Pandeglang traditional food. Let's love and popularize our
traditional regional cuisine. if not us, the younger generation, then who else
will keep this priceless tradition?
