TITLE
VALORPEIXE - VALUATION OF BY-PRODUCTS AND RESIDUAL WATERS OF THE FISH
CANNED PRODUCTS INDUSTRY

HIGHLIGHTS
From the scales and fish bones it was possible to extract high value constituents such as
hydroxyapatite, collagen, gelatin or peptides. Also, extracts rich in PUFAs, mainly omega-3
fatty acids, proteins and peptides with antihypertensive properties, from the cooking waters
of the fish, for example canned sardine. The incorporation of these extracts into products
of the fish industry has also been tested for the development of novel innovative products
with functional properties. As an example the development of a prototype of sardine pt
with antihypertensive properties with nutritional and biological potential, and with a
reduced fat content. Fish oils and fats were also studied for the production of biodiesel and
its quality and performance as biofuel was also evaluated.

ABSTRACT
The objective of this project was to develop solutions that avoid producing and / or reducing
wastewater and by-products from the processing of sardines, in the most appropriate way, to
obtain products with higher added value that can be used internally or commercialized. Thus, its
main R & D components were: a) recovery of wastewater by defining ways for its treatment, reuse
and recycling; b) definition of a biodiesel production process for the recovery of fish oils and fats;
c) valorization of fish scales extracting hydroxyapatite and collagen with biomedical applications;
d) extraction of PUFAs (Polyunsaturated Fatty Acids) from the fractions of fats obtained in the
processing of preserved fish.
