Hufflepuff Holiday Fajita Pasta

This dish is a delicious pasta twist on chicken fajitas, combining it with the
colors of the Hufflepuff house (yellow corn and black beans), as well as
Christmas (red and green bell peppers)!
Youll Need:
3-4 large chicken breasts
1 large package of bertolli cheese tortellini (or penne, if you prefer)
2 cans black beans, rinsed
2 12-oz bags frozen corn (or canned [drained], or fresh off the cob if you prefer)
3 cups chicken broth
cup heavy whipping cream
1 can Ro-Tel diced tomatoes, drained
1 large red bell pepper
1 large green bell pepper
a whole white onion
2 cloves minced garlic
6 tbsp. oil (vegetable, canola, or olive)
About a third cup of Fajita Seasoning (either a store-bought packet, your favorite
pre-mixed blend, or DIY; feel free to adjust)

DIY Fajita Seasoning (amounts can be adjusted according to taste preference):


2 tsp. garlic powder
4 tsp. Cumin
4 tsp. Chili powder
2 tsp. Smoked paprika
2 tsp. Turmeric
2 tsp. Oregano (optional)
Fresh ground sea-salt (to taste)
Fresh ground black pepper (to taste)
If available, Adams Reserve Ancho also works well!
Directions:
1. Slice onion and peppers into fajita strips.
2. Cut chicken breasts into cubes (or strips).
3. Toss chicken with about 3 quarters of your fajita seasoning (Ziploc bags and the shake
method work well for this!).
4. In a large non-stick skillet, heat about 2 tbsp. of oil until very hot.
5. Add corn to skillet, and add half or your remaining fajita seasoning. Cook until corn
begins to brown, stirring frequently.
6. Remove corn from skillet and set aside.
7. Add another 2 tbsp. of oil to the skillet, and allow to reheat.
8. Add seasoned chicken to the skillet, and cook (stirring occasionally) until the chicken
is fully cooked and the seasoned-coating has begun to caramelize.
9. Remove chicken and set aside.
10. Add remaining 2 tbsp. of oil to the skillet, and allow to reheat.
11. Add peppers and onions to the skillet, and cook until the vegetables begin to blacken.
12. Remove peppers and onions and set aside.
13. Add chicken broth, heavy cream, pasta, and the can of Ro-Tel to the skillet. Bring to a
boil.
14. Once boiling, reduce heat to medium-low, cover skillet, and simmer for about 15
minutes (until most of the liquid is absorbed).
15. Add in cooked corn, chicken, peppers and onions, and black beans to the pasta, and
stir to combine all ingredients.
16. Cook for two additional minutes until all ingredients are reheated and thoroughly
combined.
17. Fix yourself a plate, and enjoy!!

This will feed at least 4-5 people.
