~ LaBron’s Family Recipes ~

Apple Nut Square

3 eggs 1 ½ cups self rising flour


¾ cup brown sugar 4 cups chopped apples
1 tbsp. vanilla 1 ½ cups walnuts
½ tsp. salt

Preheat oven to 350°. Break the eggs into a bowl and beat until foamy. Add brown sugar, vanilla, and
salt and mix well. Stir in the flour. Add the apples and walnuts. Pour into a greased and floured 9X13
inch baking pan. Bake for 25 minutes until brown. Makes 12 squares.

Meatloaf

2 pounds ground beef


2 cups bread crumbs, grated or chopped fine
1 package onion soup mix
½ cup finely chopped green pepper
2 eggs beaten
¼ cup milk

Preheat oven to 350°. Blend all ingredients together. Press the mixture into a greased loaf pan and
bake 50 minutes or until done. Turn off oven and let meatloaf sit inside for 15 minutes. Serves 6-8.

~ Prince’s Family Recipe ~

Curry Chicken

4 chicken breasts 2 tbsp. flour


3 cups water 1 ½ tsp. curry powder
½ cup chopped celery 2 tbsp. mango chutney
1 cup chopped onion 2 tbsp. black currant jelly
½ tsp. poultry seasoning 1 cup chopped apple
¾ tsp. salt ¼ cup raisins
½ tsp. pepper 2 cups steamed rice
4 tbsp. butter

Simmer chicken in water with celery, ½ cup onion, poultry seasoning, salt and pepper 30 minutes. When
tender skin and debone reserve stock. Melt butter in skillet. Saute’ remaining ½ cup onion until soft
stirring frequently. Blend in flour and curry powder and cook 3 minutes stirring constantly. Heat stock
and add slowly stirring until well blended. Bring sauce to a boil and simmer 5 minutes until thickened.
Add chutney and jelly blend. Season with salt and pepper. Add chicken to sauce. Cover and simmer 10
minutes. Stir in apple and raisins. Cover and continue to simmer 10 minutes. Serve over rice. Serves 4

~ Jesse’s Family Recipes ~

Hamburger BBQ

1 lb. hamburger 3 tbsp. onion powder


2 cups ketchup 3 tbsp garlic powder
2 tbsp. yellow mustard 2 cup brown sugar
1 ½ cup Worcestershire sauce 1 cup granulated sugar
3 tbsp. seasoning salt ¾ cup honey (optional)

Put the pound of hamburger in a large skillet. Cook hamburger thoroughly. Drain hamburger grease
and return hamburger to skillet. Mix other ingredients listed into hamburger until well blended.
Simmer mixture for about 10 minutes or until bubbly. Serve on hamburger bun.
*Best served with French fries or potato chips of your choosing.

Chicken Noodle Soup

4 chicken drumsticks 2 chicken thighs


6-8 baby carrots diced 3 stalks of celery chopped
¼ cup diced onion 3 pieces garlic clove diced
1 lb. wide egg noodles 1-2 cans cream of mushroom soup

In a large covered pot boil chicken approx. 1-2 hours. Prepare Vegetables. When done cut the
remainder of chicken off bone and add vegetables to broth. Return chicken to pot and add noodles and
boil until noodles are tender. Add cream of mushroom soup (optional). Mix well and turn to medium
heat for another 10 minutes. Serve with Ritz crackers or other crackers you prefer.

~ Cayle’s Family Recipe ~

Chicken Divine

1 whole chicken Sliced cheese


Broccoli 1 cup of Mayonnaise
Can of cream of mushroom soup

Boil chicken for one hour. Break chicken into pieces when done. Preheat oven to 425°. Line casserole
dish with broccoli and place chicken on top. Mix mayonnaise and soup and spread mixture over the
chicken and broccoli. Cover top completely with sliced cheese. Cover casserole with lid or foil and bake
for 45 minutes. Let cool and serve.

~ Savannah’s Family Recipe ~


Barbeque Meatloaf

1 lb. ground beef 1 onion


Sweet Baby Ray’s bbq sauce Crackers
Salt and pepper Seasoning salt
Meat tenderizer Italian seasoning
Parmesan cheese Accent

Pre-heat oven to 350°. Mix ingredients together and make the meat into a shape of a football. Every
half hour turn the meat over turning until done. Slice meat and pour barbeque sauce on top. Place in
oven for another 10 minutes. Let cool and serve.

~ Jacob’s Family Recipe ~

Cheese Flan (Flan de Queso - a traditional Puerto Rican Dessert)

1 – 8 oz. cream cheese 1 cup regular milk


½ cup carnation milk ½ cup condensed milk
1 tsp. vanilla (optional) 3 whole eggs
3 egg yolks

Blend all ingredients. Make caramel out of sugar on the stove with caution until you get a honey color
or darker. Transfer caramel to pan and add mixture to completely cover the caramel. Have a separate
pan filled with 1-2 inches of water and add pan with mixture into the other pan. Bake in oven at 350°
for about an hour. Once fully cooked let it stand room temperature for ½ hour then refrigerate and
later enjoy.
* The bottom pan servers as a protector so that the Flan cooks evenly.

~ Atticus’s Family Recipe ~

Easy Potato Salad

Cook: 4 or 5 medium red potatoes for 30-35 minutes and cool.


Boil: 3-4 eggs 10 minutes or so, drain, rinse in cool water and allow to cool before cutting.
chop ½ cup – ¾ cup celery
chop 2-3 tbsp. onion
add 1 ½ tsp. salt and ¼ - ½ tsp. pepper.

Dressing:
½ cup Hellmanns Mayonnaise ¼ tsp. vinegar
2-3 tbsp. milk
Mix together adding eggs last after dressing

Course Description:

Our MDS/Life Skills classroom is using the Unique Learning System® as the classroom curriculum. The
curriculum program has been designed specifically for children with special learning needs. While the
foundation of Unique is the academic content standards (reading, writing, math, science and social
studies), the lessons are modified to make sure that all children have a way to participate and learn.
There is a strong emphasis on life skills that are embedded in each lesson. Unique Learning System
provides monthly units that teachers are able to download from the Unique website. Each month there
is a new topic built around a science or social studies theme. There are six grade bands; Preschool,
Elementary, Intermediate, Middle School, High School and Transition, so learning is new as children
progress through the years. I have selected the grade level band that matches the ages and grades of
the children in my classroom. There is also a three-year cycle of new units for each grade band. In that
way, your child will have new learning materials even if he or she is in the same classroom setting next
year.

General Outline- Units of Study:

 We Have Leaders (Government)-Introduces the basic role of authority figures at the school,
local, state and national levels.
 Living in an Ecosystem (Life Science)-Introduces plants and animals in various ecosystems and
how they survive.
 Load ‘em Up (Geography)-Explores maps, landforms and different types of transportation.
 It’s Just a Phase (Physical Science)-Explores the physical changes of matter.
 Cultures of Change (History)-Explores how cultures have changed over time with a focus on the
people who helped bring change.
 Energy Around Us (Physical Science)-Explores different forms of energy and how electricity
makes things work.
 To Market, To Market (Economics)-Explores wants and needs, producers and consumers, and
production of goods.
 Making It Last (Earth and Space Science)-Focuses on renewable and non-renewable resources
and how we can conserve them.
 Fall (Earth Science/History/Physical Science/Life Science – Focuses on the season of fall; The
plants and animals in the ecosystem and how they survive, the physical changes of matter
(weather), renewable and non-renewable resources, cultures and how they have changed
overtime

Types of assignments, activities, and assessments used in class:

Teachers who have worked with special learners have created all of Unique’s lessons and materials.
Lessons include stories, chapter books, comprehension activities, writing activities, math lessons for
time, money, counting and problem solving, as well as recipes, craft projects and science experiments.
Many of the materials are designed in three levels so children of various abilities can actively participate.
Materials have been created with SymbolStix™, which is a graphic library of symbols to help children
who learn best with picture supports. These pictures can also be seen in books available on the online
library called the n2y Library. These books can be used to help support the theme of the monthly unit,
to help build your child’s reading skill or for enjoyment. Unique Learning System has several tools that
monitor your child’s progress within classroom learning. The primary goal of Unique is to give each child
a way to participate, learn and succeed in the classroom.
