Homemade Ham

Ingredients
1 kilo pork loin
1/3 cup sugar
1 tsp curing salt
3 tbsp salt

Directions
1. Combine curing salt, sugar and sugar
2. Spread mixture all over meat
3. Refrigerate 3-6 days
4. Bake in ½ cup sugar, 1 cup pineapple juice and 3-4 pieces peppercorn and bayleaf

Structured Ham

Ingredients
1 kilo ground pork
Curing mix:
1 T refined salt
½ t curing salt
1 t phosphate
¼ cup water to dissolve phosphate
500g ascorbic acid tablet

Seasoning:
2 ¼ T refined sugar
1 t nutmeg
½ MSG
