Brief history of Industry

Barbecue is considered as street food in the Philippines, because almost anyone could
vend at any street. It does not require a big capital – a starting amount of Php 500 would be
enough to make Php 1,000 in a single day. Filipinos could easily pass the skills to another, so
there is no need to become a great cook to prepare great barbecues.

Filipinos selling barbecue at the streets practically use coal made from highly-heated
wood (called as “uling” in the Filipino language) so that they could save money in the production
of heat. In preparing barbecue with available grill appliances, they could either use electricity or
LPG (which means “Liquefied Petroleum Gas” in case someone does not know). The smell of
grilling barbecue is already good enough to attract the attention of any passerby. There is no
need for a barbecue vendor to actively invite people to look at his or her barbecue products.

For the other types of barbecue, they may only be available in the Philippines because
Filipinos try not to waste any part of any animal that can be used as food.

Isaw (Intestines) – These may be the intestines of either pork or chicken. Pork intestines
are cut into small pieces then placed horizontally on a stick, while chicken intestines are cut in
larger lengths and folded before placing vertically on a stick. The reason why people do not eat
this because they think that undigested animal food may still be present with these parts.

Adidas (Chicken feet) – They may sound like a brand for shoes, but do not mistake this
for what Filipinos refer the word to. They are made of cleaned chicken feet. They are also sold at
low prices.

Betamax (Pork or Chicken blood) – These are of course dried and solidified first. They
are sold at much lower prices.

Barbecue vendors are available in most streets in the cities. The prices of the barbecues
from each vendor do not differ much (based from my recent purchases). In fast foods, I notice
that about 1 out 4 of them offer barbecues as part of the menu. That does not include barbecue-
style meals that do not have real barbecues. It depends on their prices if I would buy them.
Buying a barbecue meal in the Philippines will most likely be served with rice.
In the Philippines, there are really many types of food. For barbecue alone, there are
simply many recipes which may differ in every local community. That said, I hope that this
article about barbecue in the Philippines would have informed you about how to make barbecue,
where to get it and what types are available in the country.

In accordance to the estimated cost of production mentioned above, this business shall be
classified as small business, with estimated assets from Php 500.00 to Php 1,000.00.
3. Geographical Description

The Barbecue business is one of the popular foods in Golden Ribbon, Butuan City. According to
the survey conducted by Father Saturnino Urios University BP. Pueblos Senior High Students, Economics
220 students in Barangay-2 Golden Ribbon, there are 5 out of 10 respondents said that the Barbecue
business is the main street food of their Barangay, putting Lechon manok as a second to the list. Golden
Ribbon, Butuan City as a result from the survey conducted, consisted mostly of teenagers, a perfect
business proposed.

4. Product and Business Description

The food industry is one of the most successful kind of business that isn't seasonal. A
Barbecue or a street food can operate ever day regardless of what season or day it can be, which
is why a lot of entrepreneur are encouraged to build their own brand in the field. Barbecue,
commonly referred to as “BBQ”, restaurants are popular all across the country. Some BBQ
restaurants are old-fashioned, family-style establishments, while others try to break from the
norm and serve BBQ inspired by various different types of cuisines. Having business of a BBQ
sidewalk can be enjoyable and quite profitable. This industry comprises establishments that
manufacture barbecue and grilling equipment, including gas and solid fuel barbecues, grills and
braziers as well as parts and accessories. Other outdoor cooking equipment, like outdoor stoves,
is excluded from this industry.

In The Philippines, street food business use paper fan when grilling the food products. It
is marinated meet that will be skewered with the bamboo stick and grilled using charcoal. Our
menu consists of juicy, thick steaks that are coated with a secret combination of flavorings and
zesty spices. These steaks are grilled to perfection. The menu is Isaw (Intestine), Adidas,
Betamax, Hotdog, Pork that includes the specialty sauce that can penetrates into the meat for real
barbecue taste. This product is very affordable to the buyers especially to the Filipinos.
Characteristics and Attributes

The Barbecue contains raw meat. The sauce itself has a lot of varieties like sweet & sour
and spicy sauce. Both can be eaten with or without rice. Less hassle to the buyers and can be
done in any location. Barbecue is usually done outdoors by smoking the meat over wood or
charcoal.

5. Economics Forces: Supply and Demand Analysis

The Philippines is basically loves to eat street food specifically grilled foods. For so
many years, barbecue business maintain as a one of the well known and affordable food in the
Philippines. With the data given below, it is obvious that most of the prospective buyers of
barbecue in Golden Ribbon are teenagers and household. According to Mr. Frediano Catubag, 57
years old, one of the residents of Golden Ribbon who tends to sell barbecue few years ago, he is
willing to sell again to the people of Golden Ribbon, the barbecue since he is a good cook and
has a background in this business.
