Hotel Operations

Course Overview
Through a simulated learning environment, students can gain basic knowledge
and receive hands-on training in various aspects of hotel operations, including
front office, housekeeping, and food & beverage. The course will enable students
to develop interest in the profession of the hospitality industry as well as service
culture, self-discipline and teamwork, and attain transferable skills on problem
solving, communication and presentation. This course covers the following topics:

1. Introduction to the Hospitality Industry


• Overview of hotel and tourism industry
• Essential knowledge for a hotel personnel
• Quality service concept and dimensions
• Providing quality customer service

2. Front Office Services and Operations


• Functions of Front Office Department
• Safety, security and emergency
• Front Office service principles and procedures
• Practices of Front Office services

3. Housekeeping Services and Operations


• Functions of Housekeeping Department
• Safety, security and sanitation
• Housekeeping service principles and procedures
• Practices of Housekeeping services

4. Food and Beverage Services and Operations


• Functions of Food and Beverage Department
• Food service hygiene, health and safety
• Food and Beverage services principles and procedures
• Practices of Food and Beverage services

5. Sustainable Development of the Hotel Industry


• Current key trends and challenges of the hotel industry
• Developing an eco-friendly hotel
• Technology of hotel and its future
• Enhancing customer experience

• Certificate in Front Office and Housekeeping Operations
• Certificate in Hotel Apartment Housekeeping Service
• Certificate in Hospitality Industry Foundation

Graduates of the above Higher Diploma courses may articulate to related top-
up degree programmes offered by local and overseas universities, e.g. BA (Hons)
in International Hospitality and Tourism Management offered by the University of
Northumbria at Newcastle(UK) and BSc (Hons) in Hospitality Business Management
offered by the Sheffield Hallam University(UK) in collaboration with the VTC.

Graduates may pursue career in the hotel/tourism industry as trainees, taking up


positions like reservation clerk, bell attendant, room attendant, butler and waiter. Upon
successful completion of the above advanced courses together with the accumulation
of substantial operational experience in the field, graduates will be able to rise to
positions of supervisory or management level.

Chinese (supplemented with English terminologies) or English

Selection Arrangement
Students applying for the course have to attend an interview to

assess their interests towards the industry, grooming, attitude,
ability of communication, language skill, etc. They will be selected
according to their performance at the interview.

Time
Every Saturday 9:00 a.m. – 1:00 p.m. or 2:00 – 6:00 p.m., 4 hours per session.
