Resumen
Este estudio se realizó con el objetivo de evaluar la calidad y diferenciación
sensorial de las variedades de manzana Granny smith e israel (Malus domestica).
Las características evaluadas en este estudio fueron sabor, textura y aroma. Se
instalaron ocho paneles sensoriales con ambas variedades de manzana y un test
sensorial de 9 escalas para calificar cada variedad en las características señalas.
Los resultados fueron evaluados en el programa estadístico Statgraphic centurion
XVI y estos mostraron una mayor aceptación en la variedad granny smith para el
parámetro de textura, en el sabor la variedad israel obtuvo una mejor calificación, y
para el aroma los resultados favorecieron por poco a la variedad granny smith. Se
concluyó que la calidad para ambas variedades fueron aceptables a nivel estadístico
pero cada uno resaltó por una característica que es propia de la variedad del fruto.

Abstract
This study was carried out with the objective of evaluating the quality and sensorial
differentiation of apple varieties Granny Smith and Israel (Malus domestica). The
characteristics evaluated in this study were flavor, texture and aroma. Eight sensory
panels were installed with two varied apple and a sensorial test of 9 scales to qualify
each variety in the indicated characteristics. The results were evaluated in the
Statgraphic centurion XVI statistical program and these showed a greater
acceptance in the variety granny smith for the texture parameter, in the flavor of the
Israeli variety it obtained a better qualification, and for the aroma the results little
favored to Variety granny smith It was concluded that quality for both varied was
acceptable at statistical level but each was highlighted by a characteristic that is
characteristic of the variety of the fruit.
