We have taken our years of experience and compiled this complete “how to” manual to
you help open and operate your own shaved ice or snow cone business. This manual,
“Cold Cash”, is written mostly from a shaved ice and snow ball business point of view.
Snow cone business owners will still be able to gain useful knowledge from this manual
too.

We understand that doing business via the internet or mail order can be a little
impersonal at times. There is nothing that can replace that face to face meeting;
however we work hard to break down the long distance barrier. As an introduction, we
want to let you know who’s behind our business. We also want to warn you, we are
based in the South, North Carolina to be exact. So when you call, expect to hear a “yes
ma’am” or “yes sir”. We take southern hospitality seriously!
Gary Mac Herring: Founder and owner who started the company nearly 12 years ago
while he was attending college. Strapped for cash and needing some extra income for
college expenses, he decided to open his first shaved ice business called Tropical
Shavers.
With the help of his father, he built his first shaved ice trailer. While being the only
employee, he had to take on many tasks at Tropical Shavers. Luckily, the next summer
he opened up his second stand and hired 8 employees. He was able to learn from his
hard work and dedication. Gary Mac started distributing shaved ice equipment and
supplies on the Internet in 2000.
Gary Mac oversees the daily operations at 1-800-Shaved Ice. In addition, he will greatly
assist you with any questions or concerns you may have with your order or in
establishing your own business.
Gary Mac’s favorite flavors include Bahama Mama, Granny Smith Apple, Sour Grape,

Carli Herring: Carli started working in her brother’s shaved ice stands at age 13 where
she worked for 5 summers. After high school, she attended North Carolina State
University, where she majored in Business Finance and minored in Accounting and
Spanish. Upon graduation in May 2004, she moved back home to Newton Grove, NC
to continue working for us. Currently she is our advertising manager, web developer and
an excellent customer service representative.

Cream, Cake Batter and Margarita. Carli’s favorite mix is Pina Colada and Sour Grape
which gives her a refreshing combination of sweet and sour flavors.
Tammie Johnson: Tammie started working with the company in the fall of 2002 as the
kitchen production manager. Our flavors and concentrates are made with the finest
ingredients due to her expertise and knowledge. She manages the kitchen and
formulates flavors all while maintaining proper sanitation and quality control.
Tammie’s favorite flavors include Granny Smith Apple, Stawberry Cheescake, Cherry,
Candy Apple and Blue Raspberry.
Dustin Bryan: Dustin has worked for the company for the past three summers in our
shipping department. He ensures that all orders are properly packaged so they will get
to their destination without damage. Dustin is currently attending Campbell University
and plans to major in Pharmacy.
Dustin’s favorite flavors include Bahama Mama, Granny Smith Apple, Grape and Blue
Raspberry. His favorite mix is Dinosaur Egg, which is all Banana covered in Blue
Raspberry dots.
Tyler Britt: Tyler will start his second summer with the company this year in the
packaging department. He keeps our inventory stocked, packages orders and even
helps out in the kitchen where he loves to wear a hairnet!

We are located at 301 Raleigh Street in Newton Grove, NC, which is located
approximately 1-hour south east of Raleigh. We are located 1 mile from Interstate 40
and 12 miles from Interstate 95.
We are a mail order business. Approximately 99% of our orders are shipped from this
location. You are more than welcome to pick up your order in person anytime. If you
choose to do so, please call us at least two hours in advance so that we can make sure
your order is properly pulled for you. In addition, if you choose to pick up your order in
NC, sales tax will be added to your invoice, unless we have your North Carolina resale
certificate on file.
Normal office hours are Monday through Friday, 9:00 AM to 4:00 PM EST. We usually
take lunch from 11:30 AM to 12:30 PM daily. We are closed on all major holiday and on
weekends. Appointments on weekends or after hours can be arranged in advance.
What’s in a name?
People ask us all the time, “What is the difference between shaved ice, snow balls and
snow cones?” We tell them it depends on the texture of the ice and where you live.
The most common name for a cup of finely shaved ice is called, just that, shaved ice.
Throughout the United States, you may also see shaved ice sold as “Hawaiian Shaved
Ice”, the most popular name used. In New Orleans, a cup of shaved ice is called a
snoball or snow ball. In eastern North Carolina, some people call a cup of shaved ice, a
shaver. In Hawaii, the treat is shave ice without the letter “d”. Again, what you call
shaved ice really depends on where you live.
No matter what you call a cup of shaved ice, almost everyone agrees on two things.
First of all, shaved ice consists of smooth, fine ice that holds syrup. Second, snow
cones are not the same as shaved ice. Usually, snow cones are made from hard
crunchy ice that when snow cone syrup is added to the ice, the syrup goes straight to
the bottom.

Products Sold
The main product that your business will sell is shaved ice or snow cones. Customers
will be able to choose from 20 to over 70 flavors at most shaved ice stands. Variations
of shaved ice flavors might include creamers or mixers, which are explained in detail
later in this manual. Some business owners will add shaved ice as a sideline item to
their existing business. Shaved ice is very popular at ice cream parlors, smoothie bars,
coffee shops, concession stands and convenience stores.
In addition to shaved ice or snow cones, there are a number of other products you can
sell at your business location. You may also try selling lemonade, soft drinks, milk
shakes, pickles, ice cream, sundaes, banana splits, bagged potato chips or candy.
Some businesses also offer hot items such as funnel cakes, sandwiches or pretzels.
The items you sell will depend primarily on your location, setup and the size of your
business. However, the more items you sell, the more inventory and equipment you
have to purchase and keep. Additional menu items may require more preparation time
along with equipment maintenance and training. We have found that usually the
additional headaches do not always equal additional profits.
We kept our menu simple. We offered shaved ice with 45 flavors along with four flavors
of hand dipped ice cream. We also offered a number of toppings, creamers and mixers.
We felt by keeping our menu simple, our customers could make their decisions much
easier and faster. In addition, our employees worked much more efficiently by keeping
our business simple.

supplies through from them at inflated prices. In then end, most franchise companies
double their profit from your business.
The Season
Because shaved ice tends to sell better in warmer climates, the shaved ice season for
each part of the United States will be different.
Shaved ice businesses along the southern part of the United States will generally be
open from March to October. The mild winters and warm summers make states like
Florida, Georgia, Alabama, Mississippi, Louisiana, Texas, New Mexico and Arizona
great for lengthy shaved ice seasons. In fact, some shaved ice businesses stay open
year round due to mild winters.
In the mid to upper part of the United States, shaved ice businesses are generally open
between April to October. The farther north you go, the shorter the season. But with
almost any rule, there are exceptions. After a little experience in the business, you will
have a better understanding of your area.
There should be a couple of things you need to keep in mind to aid you in determining
the length of your shaved ice or snow cone season. First of all, take a look at other
shaved ice businesses in your area to see when they open. We suggest you open
around the same time if not sooner than your competition. We have found that after a
long winter’s break, customers from previous seasons are always eager to celebrate the
new season with their first shaved ice purchase. The first three to four weeks of the
season always tend to be the busiest.
In early spring, some businesses may open only on weekends. After a few weeks or
until warmer weather sets in, these shaved ice or snow cone businesses will begin to
open daily. This again will be up to you and your geographic area.
Business Hours
Having regularly established business hours is one of the most important practices
needed for any successful shaved ice or snow cone business. It is imperative that your
customers know when they can expect you to be open. If you need to take one day a
week off, do so, however establish this early in the season. Do not make the mistake of
opening your shaved ice business occasionally or only when you feel like it. In addition,
always be open whether it is sunny or rainy. Even on a rainy day, you can often do
enough business to make profit. You can always bring a book, do some extra cleaning,
catch up on paperwork or plan you next advertising campaign! Regardless of the
weather, make sure you stick by your hours so that your customers will know they can
count on you to be open. This is extremely important!
What time you open and close daily will also depend on your location. Some shaved ice
businesses, in high traffic areas, open as early as 10 AM and close as late as 10 PM.
We suggest investigating other shaved ice businesses in your area to see their hours of

too. Also, take a look at what else is located in your area. Are schools, baseball fields or
shopping centers nearby? Find out their schedules and set your hours accordingly.
Locations
There is a saying that the three most important rules for real estate is location, location,
location. The same holds true for your shaved ice business. Below is a list of possible
locations for your shaved ice or snow cone business.
1. High traffic areas such as the parking lots of local shopping centers, super
markets or malls. You may also be able to operate your business inside
one of these locations.
2. High traffic roadside locations with easy access.
3. Special events such as ball games, carnivals, fairs, rodeos, parades or
any other event that draws a crowd will usually have great sales volume.
4. Ball parks.
5. Daily mobile routes conducted at established hours with stops at local
swimming pools, ballparks, workplaces or neighborhoods.
6. Contract vending work – company family picnics, car lot promotions,
Grand Openings for local businesses and Youth Days.
7. Tourist areas.
The number one rule with your shaved ice building or location is that it must be brightly
colored, professional looking and inviting to your customers. A clean, professional
looking building or location will provoke curiosity from passing motorists and/or foot
traffic. This will help build your business. Often shaved ice businesses choose a tropical
or Hawaiian theme for their shaved ice building. The idea is to make sure your business
is unique and memorable. Nicely painted signs or specially made awnings usually
complement any shaved ice building.

We offer 4 sizes of shaved ice or snow cone concession trailers. The 6' x 14' trailer is
our best selling model accounting for over 80% of our sales. The 6' x 14' trailer will
provide room for additional concession items that may sell well with shaved ice or snow
cones. The 5' x 10' and 6' x 10' trailers are extremely small and not recommended for
high volume shaved ice businesses. In our opinion, the smallest trailer anyone should
buy is the 6’ by 12’ trailer. However, we always recommend the 6’ by 14’ trailer,
because it is roomier. All of our trailers can be customized to fit your particular needs.

Employees
Hopefully, you will be busy enough to need additional employees. Besides, everyone,
including the boss, needs time off every once in awhile!
As with any business, employees can make or break you. Be very selective when
choosing employees. Make sure they share your dedication. You can have the best
shaved ice in the world, but one bad employee can destroy your business.
Over the years we have been fortunate to employ several high school and college
students during the summer. You may want to consider looking at family members or
close friends for help. Contact teachers at your local high school for suggestions on
students in your area who may be looking for a summer job. Make sure the people you
hire work well with others and that you are confident they will benefit your business.
Personality is an important quality due to the fact that he or she will be interacting with
your customers on a daily basis. You can teach anyone how to shave ice, but it’s
extremely difficult to teach someone how to be friendly and courteous to your
customers.
Generally we paid our employees anywhere from minimum wage to $10.00 an hour.
Again, this will depend on your area. We usually based the wage on experience and
responsibilities. The longer an employee worked with us the more we paid him or her.
Good employees are hard to come by, so once you find a good employee, pay him or
her accordingly.
Depending how many employees you hire, you may be required to take payroll taxes
out of their paycheck. This will require some paperwork and record keeping. Quarterly
and monthly reports may have to be filed. Check with an accountant in your area to see
what will be required with your business.
Record Keeping
Daily record keeping is a necessity in order to keep track of your sales and expenses. It
will be necessary to keep up with daily sales, sales tax owed, expenses, payroll and
payroll taxes. Good, accurate books will prove to be beneficial when you prepare your
taxes at the end of the year.

You can purchase an accounting ledger book at a local office supply store for around
$15.00. If you have access to a computer, QuickBooks is a great software program to
help with record keeping.
Talk with your accountant about the best method to keep your records organized. Your
accountant can also give advice on how to best setup your payroll system. He or she
should be able to advise you about the taxes you will need to withhold from employee’s
paychecks and where to submit those taxes.
Daily Checklists
Over the years, one of the best tools we used was an opening and closing checklist for
our employees. The following list may provide a good example of the daily opening and
closing responsibilities for your employees.
Opening (arrive 15-30 minutes before opening)
1. Turn on the air conditioner.
2. Pick up any trash in the parking lot and around your business.
3. Wipe off the outside counters.
4. Make sure all signs and banners outside are neat and clean.
5. Mop the floor – we always mopped every morning. Since you are dealing
with very sticky syrup, you can NEVER mop too much!
6. Put trash bags in the trash cans.
7. Make sure all items are stocked and ready – napkins, spoons, straws,
cups, lids, back-ups, toppings, notepads, paper towels.
8. Call about inventory that may be needed or ordered.
9. Wash the windows.
10. Turn the open/closed sign at the correct time.

As with any new business, your new enterprise will need some type of cash infusion in
order to get your business off the ground. This primarily will come from a loan from a
local financial institution. Most likely a simple business plan, conveying your business
idea, will be needed. In your business plan you will need to describe the items that you
are going to sell, the location of your business as well as other items. Talk with your
local bank officers to find out all that is needed.
Another great place to look for loans or grants is the Small Business Administration,
also known as the SBA. Visit www.SBA.gov to find a SBA office in your area. The SBA
is a federal agency that can help you with your business plan and assist you in finding a
bank. Another resource that the SBA provides is SCORE (Service Core of Retired
Executives) which can be found at www.SCORE.org. SCORE has volunteers across the
nation that will give you business advice, guidance and planning tips. Both the SBA and
SCORE can provide you with tremendous resources and best of all it is FREE!
Other sources of startup funds include credit cards, loans from family, friends or
neighbors. You might even consider a partner or silent investor in your business.
Your snow cone or shaved ice machine will be the lifeline to your business. Without a
quality machine, your business cannot survive. As we stated before, we offer the largest
variety of shaved ice and snow cone machines that will meet the heavy demands of any
shaved ice or snow cone business. All of our machines are made to the highest
standards in order to provide years of durability and service.
We are often asked about the differences between cube ice shavers and block ice
shavers. It can be a little over whelming when trying to make a decision since we offer
so many different machines. Please review the following information for assistance in
choosing what type of ice shaver is best suited for your business. We also have an

finding the best machine for your business. It’s very handy!
In terms of fluffiness, we often compare the snow cones and the shaved ice on a
“Fluffiness Rank” from one to ten. One being chunks of ice and ten being like snow.
Shaved ice would rank anywhere from a 7 to a 9 depending on the machine you are
using (more about this later in the book). Snow cones would rank around a 5 or a 6. You
will see our Ice Scale ranking for all of our machines later in this manual. Remember the
scale, 10 is like snow and 1 is like chunks of ice.

The following are a few questions you need to ask yourself when deciding which ice
shaver is best for your business.
1. Is block ice available in your area? If not, a cube ice shaver may be your
best choice. If you still prefer a block ice shaver you can make your own ice
blocks using our block ice molds or by purchasing one of our block ice

makers. We offer either round or rectangular block ice molds to fit the
different types of block ice machines. The round block ice molds fit our Swan
and Hatsuyuki Block Ice Shavers. The rectangular ice molds fit the New
Orleans Snow Block Ice Shaver and the “Olde New Orleans” Block Shaver.
Ice that is produced from our round block ice molds is 7 ½” in diameter. Our
rectangular ice molds produce ice that is approximately 5 1/2" w x 5 1/2" h x
14 1/2" l. Block ice will be produced within 2 to 3 days with either type of
mold.
2. What type of ice shaver does your competition use? If your prospective
customers are accustomed to ice from block ice shavers, you may prefer to
purchase a shaved ice block shaver for your business. If your prospective
customers are accustomed to ice from cube ice shavers, you may prefer the
cube ice shaver.
3. Who will be using the ice shaver? If the ice shaver is being used by many
different people, a cube ice shaver may be your best choice. For example, at
school athletic concession stands you may have different volunteers from
week to week. Thus a cube ice shaver which tends to require the least
amount of training will probably work best in this type of situation. If you have
employees that are at your business daily, a block ice shaver should work
well. The block ice shavers take a little more skill to operate. Often an hour or
two of hands on training is needed to properly train your employees.
4. Who are your customers? A major factor to consider is your customer
base. For example, a neighborhood shaved ice stand will be dependent on
repeat business. Ideally, customers at neighborhood stands will come back,
day after day, week after week. In order to create this kind of loyalty you will
have to produce a high quality product. For this, consider the block machines
for top quality fluffy snow.
However, if you are mobile shaved ice business and your customers vary, try
a cube ice shaver. An example of this business may be one that sells at a
county fair, parade or festival. Since the repeat business is not as vital to
your business, you may not have to rely on the fluffiest ice possible. Cube ice
shavers will still produce a good quality product that should be sufficient for
mobile sales.
5. How fast do you need to serve customers? If you are at a large festival or
carnival and expect large amounts of customers, the cube ice shaver may be
your best choice. We have cube shavers that can easily produce more than
2000 servings a day. If you tried to serve 2000 people with a block ice shaver
you would need 2 to 3 machines.
6. Is your business permanent or mobile? Most mobile businesses use cube
ice shavers while most permanent businesses use block ice shavers. Block
ice shavers are generally much bulkier and heavier than their cube ice
shaver counterparts. The cube ice shaver machines are generally much
more compact taking up far less space, making them advantageous for
mobile applications.

Machine Clogs and Freeze Ups
It’s 95 degrees outside, you are at an event and there is a line of people waiting to give
you $3.00 for a 16 ounce cup of shaved ice. You are working as hard as you can.
Business is great and you have been pumping shaved ice cups out as fast as you can
for the last 30 minutes. You turn the machine off to refill the hopper or place another ice
block inside of the machine. You flip the switch on and nothing happens. You hear a
humming sound coming from the motor. What do you do? Do you keep switching the
machine off an on? NO! STOP! Turn the machine off immediately!
What has happened is a typical machine clog. It is going to happen; it’s the “nature of
the beast.” While you have been shaving ice all that time, ice has been building up
inside the machine. The ice has almost completely frozen the metal. When the machine
stopped for that split second, all of that fine fluffy ice inside the machine caused the
moving parts to freeze to one another. This is known as a machine freeze up. It
happens to every shaved ice and snow cone machine we sell; both cube ice and block
ice machines.
To solve this problem, first make sure the machine is turned off as soon as possible.
You don’t want you motor to sit and hum for long because doing so will easily burn up
the motor. Now find a 12 or 16 ounce cup of water and slowly pour the water inside the
hopper to release the ice. It may take a cup or two of water to loosen the ice. After one
cup, try switching the machine on to see if it is still clogged. If so, repeat the process.
A counter mounted spray nozzle also works great in this situation. Simply spray a few
squirts into the ice hopper and you should be back to business in no time.

There are two distinct types of shaved ice machines that use block ice. There is the
Hawaiian Style block ice shaver, also know as the Corkscrew Style and there is the

This is one of the best block ice shavers available on the market
today. The Swan Block Ice Shaver is easy to operate while it

Every business is different. In the following section, we will discuss our typical
customers and give you our recommendations for each one.

When starting a neighborhood shaved ice business your number one priority should
be serving a quality product. By serving a quality product, you will quickly generate
word of mouth advertising for your company. Great word of mouth advertising is
invaluable to your business. Because of this, machine selection as well as syrup
selection is crucial to your business.
First of all, if shaved ice is already being sold in your area, check to see what type of
machine other shaved ice businesses use. If they are using a block ice shaver, you
should also use a block ice shaver in order to stay competitive. Customers who are
used to the quality product generated from a block ice shaver will notice a difference if
your shaved ice is not of the same or higher quality than your competitor.
If existing shaved ice businesses in your area are using cube ice shavers, you should
be able to get by with a cube ice shaver too. However, you might establish an edge over
them by purchasing and using a block ice shaver to create a higher quality product.
For block ice shavers, we recommend the New Orleans Snow Block Shaver or the SI-

Over the years, quite a few schools have purchased our snow cone machines. These
machines are easy to use and can serve hundreds of servings in a short amount of
time.
For snow cone machines, we recommend the 1888 Sno-King, the 1360 Echols Snow
Cone Machine and the 1002 Deluxe Sno-Konette.
The customer base will generally change from event to event for a mobile shaved ice
business. You will not be relying on repeat business as heavily as you would if you were
operating a neighborhood shaved ice business. A cube ice shaver should work well for
any mobile shaved ice vendor. You can still serve a quality product with a cube shaver.
If you purchase a block ice shaver, the logistics of lugging block ice around from event
to event can be very frustrating and time consuming. What if you are at an event, 100
miles from home and you run out of block ice? Finding block ice could be difficult at
times; especially when you are in an unfamiliar location. Cube ice would be easy to get
at the nearest convenience or grocery store.
Storage space is another consideration mobile shaved ice businesses have to consider
too. The cube ice shavers are generally lighter and more compact than block ice
shavers. This is another advantage as to why we feel that cube ice shavers work better
for the mobile shaved ice business.
Mobile businesses may also want to consider one of our 12 volt battery powered
shaved ice machines. Because electricity can sometimes be a problem to secure, a 12
volt machine might just be the solution.
For cube ice shavers, we recommend the HC-8E Hatsuyuki Cube Ice Shaver, the
Snowie 3000 or the 1027HD Hawaii’s Finest. The HC-8E and the Snowie 3000 are
available in 12 Volt models. Mobile shaved ice businesses expecting to serve more than
500 servings at an event should consider the 1027HD Hawaii’s Finest or the 1047
Super Shaver.
If you insist on using a block ice shaver for your mobile shaved ice company, we
recommend the New Orleans Snow Block Shaver or the SI-100E Swan Block Ice

Amusement Parks
A large volume cube ice shaver should work perfectly for any amusement park. We

service will most likely be your number one priority and a block ice shaver will never be
able to keep up with your demand. You will still produce a great tasting product, easily
satisfying all of your customers.
Out of all of the cube ice shavers we sell, we suggest the 1027HD Hawaii’s Finest or the
1047 Hawaii’s Finest for amusement parks. Both of these machines are easy to use,
easy to train and most importantly fast. Both machines have a ¾ horsepower motor and
will easily produce 1000 or more servings a day. For 2000 or more servings a day, we
suggest 2 machines. We would suggest adding the MaximIcers to these machines to
further speed up the serving efficiency.
Some amusement parks use snow cone machines in place of shaved ice machines.
These machines can easily serve thousands of people each day. We recommend the
Shavatron, a high output snow cone machine for fast and reliable use.
For the rental industry, durability, transportation ease, safety and simple operation are
important factors when choosing your rental equipment. Shaved ice machines and snow
cone machines are often rented on a daily or weekly basis.
The number one snow cone machine in the rental industry is the 1888 Sno-King. Its
polycarbonate frame and safety switch make it very attractive to our rental buyers. The
2nd most popular snow cone rental is the 1360 Echols Snow Cone Machine. Its two-
piece design makes it a big hit because it is easy to transport.
For shaved ice rentals, we only suggest renting cube ice shavers. The machine we
recommend is the HC-8E Hatsuyuki cube ice shaver. It is compact, very reliable and
easy to transport.
Depending on your ice shaver, you will either need cube ice or block ice. In most cases,
regular cube ice, also called bag ice, will be readily available in your area. Cube ice is a
generic term. The ice does not have to be exactly in cubes. We are asked this question
frequently. For cube ice shavers, you simply need some sort of ice that is not more than
3” in diameter. DO NOT attempt to use crushed ice, flake ice or pellet ice. You want to
make sure the ice is hard and fairly clear. Your may purchase this type of ice at your
local grocery or convenience store. You should also look in your local yellow pages for
ice suppliers. Your ice wholesaler may deliver the ice directly to you. At first, you may
have to provide your own freezer for ice storage. As your shaved ice business grows
and your ice volume increases, your ice supplier may provide an outdoor ice freezer for
storage.

While cube ice is almost the same throughout the country, block ice comes in two very
different forms. There is compressed block ice and solid block ice. DO NOT USE
COMPRESSED BLOCK ICE FOR BLOCK SHAVED ICE MACHINES.
Compressed block ice is made at ice plants by forcing chucks of ice or crushed ice into
compression molds. This type of block ice does not provide a smooth shaving surface
for your block shaver. Compressed block ice is usually filled with air bubbles and will
not produce smooth ice.
Solid block ice is the preferred form of block ice for the shaved ice industry. This type of
block ice produces the best snow for shaved ice. However, solid block may not be
readily available in all parts of the country. Where available, block ice is usually
purchased in 10 - 15 lb or 300 lb blocks. We suggest the 10 to 12 lb blocks for easy
handling and storage. If needed, your local ice house can often cut down the 300 lb
blocks for you.
If you business continues to grow or if block ice is not available in your area, you may
find that you can make your own ice at a fraction of the cost. You can freeze your own
ice blocks in our specially made block ice molds. The ice block tubs/molds are available
in a round or rectangular form. Simply fill the tubs with water and place into a deep
freezer for 2 to 3 days. When freezing your own ice blocks be sure not to freeze your ice
too fast. We suggest setting your freezer to around 10 degrees Fahrenheit. This will
allow the ice to freeze slower which will produce a better ice block. Ice frozen too
quickly will crack when shaved. This is extremely important!
Need larger quantities of block ice? Tired of paying all that money to your local ice
company? We also sell Sno Block Ice Makers that can produce up to 18, 40, 80 or 120
blocks of ice per day. We have several models of the Spinner Block Ice Maker that can
produce round blocks of ice that are perfect for our Hawaiian Style block ice shavers.
If you do decide to make your own ice, you might want to check your water quality to
make sure that it will not negatively affect your shaved ice or snow balls. Try making a
batch of ice to taste for quality. You should also check with your local health department
about water testing and purity standards.
Whatever type of ice you use please be sure that you understand the advantages and
disadvantages of using cube ice shavers over block ice shavers.

The number of servings per bag or block of ice will vary greatly depending on the type
of ice shaver you choose and the size of your cups. Ice temperature, handling and
blade settings all play a key factor. The next page contains estimates for servings

For block ice shavers, the temperature of your block ice can make or break your shaved
ice business. Block ice that is too cold when shaved will not stick together. Ice that is
too warm will create a clumpy mess. Either way, you will not get ideal results if your ice
is not at the proper temperature.
To solve this problem you can “temper” or “warm up” your ice blocks in order to get the
correct ice consistency. Tempering allows the ice to reach an ideal shaving temperature
of 18 to 20 degrees Fahrenheit. To temper your ice, simply remove an ice block from
the freezer about 25 to 30 minutes before you need it. You can place your block ice in a
5 gallon bucket or a restaurant bus tray during the tempering process. Once the ice
block begins to melt on the outside surface, simply place the block into a chest type ice
cooler. A 48 or 60 quart cooler works best in order to maintain the temperature. This
sweating or melting of the ice block will be your signal that the ice has reached the
tempered stage. If for some reason your block ice gets too warm during the tempering
process or while in the cooler, the ice will become clumpy and will not hold flavor well. If
this happens, simply place the ice back into the freezer to refreeze.
Another tip that will help with tempering is to adjust the temperature of your block ice
storage freezer as close to 18 to 20 degrees Fahrenheit as possible. Simply place a

freezer thermometer inside your freezer to determine the temperature setting. Allow 24
hours to pass for each temperature adjustment before taking your readings.
Tempering ice will take some practice. You will need to adjust how many ice blocks are
tempered at the same time. This will be determined by how busy you are at your
location. You will get a feel for how often you need to replenish your tempered blocks.
Remember, if you temper too many blocks at once you can always refreeze them.
Tempering is not necessary for shaved ice and snow cone machines that use cube ice.
We suggest just the opposite, drop the temperature of your freezer to around 5 to 10
degrees Fahrenheit. You can do this by placing the cube ice in an ordinary chest freezer
overnight. We have found that the harder the cube ice, the fluffier the snow a cube ice
shaver will produce. This also applies to snow cone machines as well.
If the cube ice gets too warm or watery, or as we call it “wet”; the ice shaver will produce
very clumpy or crunchy snow. For example, the outdoor ice merchandiser that you see
outside of your local convenience store often keep the bags of cube ice around 15 to 20
degrees, just cold enough to keep it from melting. If you take that ice directly from the
store merchandiser and shave it you will get a decent cup of shaved ice. Instead of
taking it directly from the ice merchandiser, drop it in a freezer overnight to allow the
cube ice to get colder and harden a bit. Now when you shave the harder, colder ice, it
will be fluffier than if taken directly from the merchandiser. One word of caution, if you
get the ice too cold, the ice will be so fluffy that it will melt once syrup is added to it. If
you find this is happening, simply increase the temperature in your chest freezer. We
suggest that you experiment with your machine and ice for time prior to opening your
business. This will allow you to gain needed experience in shaving ice and maintaining
the best ice temperatures.

flavors. Most snow cone businesses will offer 3 to 10 flavors. We have found that the
more flavors you have the harder it will be for your customers to make a decision. This
often causes a longer wait time for other customers.
When selling at high volume events such as festivals, carnivals or company picnics, we
suggest only serving from 3 to 8 flavors of shaved ice. Since these events tend to be
extremely busy, you want to keep your customer’s choices easy and your lines moving
quickly.
In order to maintain the freshness of our snow cone and shaved ice flavors and
concentrates, we recommend storing the flavors at room temperature, out of direct
sunlight. Always keep the bottles sealed and shake it well before each use. This is
especially important for concentrates that may not have been used for an extended
period of time. Shaking your concentrates is the number one way to keep your
flavors tasting their best!
All of our flavor concentrates are sold in a liquid form only. We periodically get calls from
customers who want to buy our concentrates in a powdered form. We do not endorse
powdered concentrates. In our opinion, it is almost impossible to get the same quality
from a powdered concentrate as you can from a liquid concentrate. Remember, the key
is to serve a quality product that will create repeat customers.
As with anything else, prices will vary from company to company. This is true with
shaved ice concentrates and syrups. Currently, our quarts of concentrate are selling for
$12.95 and our gallons of concentrate are $33.95. We admit, we are not the cheapest,
but we are not the most expensive. If you look hard enough, you can find concentrates
that range in price from a watered down $17.00 per gallon to an unbelievable $192.00
per gallon. Now that is a huge difference!
In our opinion, the $192.00 per gallon concentrate is nothing more than a rip off. It
would take $6.00 worth of this high priced concentrate just to flavor a gallon of simple
syrup. At our price of $33.95, you can flavor the same gallon of simple syrup for $1.06.
You have a savings of almost $5.00 per gallon of syrup. If you used 10 gallons of syrup
a day, your daily savings would almost be $50.00. At that rate, your monthly savings
would be almost $1500.00. Shaved ice concentrate is not worth $192.00 a gallon. We
promise you! We will put our concentrates next to their overpriced version any day!
The concentrates we sell are used in thousands of shaved ice business throughout the
world resulting in millions of dollars worth of retail sales every year. We are not a
distributor that is selling the cheapest concentrate we can get, at the cheapest price
possible. We believe in quality, sometimes this means you have to pay a little extra for

Ready-to-Use Syrups
If you are just starting out or if you want to test the market before jumping in headfirst;
try using our ready-to-use shaved ice syrups. They are a great way to begin your
shaved ice or snow cone business. Available in all flavors, our ready-to-use syrups
require no special mixing. We do all the work for you! All you have to do is open the
syrup bottle and pour. No long hours spent mixing or measuring ingredients for your
syrups. You don’t have to worry about preserving the syrups! Our ready-to-use syrups
are made to our exact specifications.
We have found that before buying flavor concentrates, many customers will purchase a
bottle or two of ready-to-use syrup in order to test the market. Once a new flavor has
proven popular with customers, the concentrate is then purchased.
Concentrates
If ready-to-use syrups are not preferred, all of our flavors are available in concentrate
form. This is a much more economical way for higher volume businesses to operate.
When using flavor concentrates, you can cut your syrup cost by about 70% to 80% by
making your own snow cone or shaved ice syrup. Simply purchase the desired flavor
concentrates, add simple syrup and you are ready to go. A quart of shaved ice or snow
cone concentrate will flavor 8 gallons of syrup (32 quarts). A gallon of shaved ice or
snow cone concentrate will flavor 32 gallons of syrup (128 quarts). If you are not sure

To mix large quantities simply add the desired amount of warm or hot water to the
mixing container. Please note that boiling water is not necessary, however, very hot
water will dissolve the sugar easiest. Slowly add the correct amount of sugar while
stirring with the mixing paddle. Stir thoroughly to ensure that all of the sugar is
dissolved. Next, you will find a chart that provides the recipes for various quantities of
simple syrup.
Simple Syrup Recipe Chart
Preservatives, such as sodium benzoate and citric acid should be added to the simple
syrup batch in order to increase the shelf life. Unpreserved simple syrup will have a
shelf life of only 7 to 14 days. Adding the correct amounts of sodium benzoate and citric
acid to your syrup can extend the shelf life to 3-4 months.
When adding preservatives, add one ounce of sodium benzoate for every gallon of
simple syrup in the mixing container first and stir thoroughly. Now, add ¼ ounce of citric
acid for every gallon of simple syrup in the container and stir well. IT IS EXTREMELY
IMPORTANT THAT EACH PRESERVATIVE IS ADDED SEPARATELY. BE SURE TO
MIX THE SYRUP THOROUGHLY BETWEEN ADDING INGREDIENTS. Adding both
ingredients at the same time will cause the preservatives to solidify!
We get a lot of questions about the need to add both citric acid and sodium benzoate to
the syrup. Most people want to know why they can’t just add one or the other. The
sodium benzoate serves as a mold inhibitor, but it does not work properly at a pH above
4.5. If you don’t add citric acid your simple syrup would fall into the pH range of 6 to 7.
By adding the citric acid, you lower the pH to the appropriate level so the sodium
benzoate will work. Enough with the science class! Let’s make some syrup!

To make almost any quart bottle of ready-to-use syrup you need a flavor concentrate
and preserved simple syrup.
Follow these instructions to make ready-to-use syrups with any of our liquid flavor
concentrates:
1. Shake the flavor concentrate well before using it. This is extremely
important! This is the number one rule! Shake and then shake it some
more!
2. If making a quart of shaved ice syrup, add 1 ounce of 1-800-Shaved-Ice.com
concentrate to an empty long neck quart bottle. If making a gallon of syrup, add 4
ounces of concentrate to an empty one gallon jug.
3. Fill the quart bottle or gallon jug with preserved simple syrup (see recipe from
previous pages). Cap and gently shake.
Where am I going to store 10 gallons of Root Beer?
A common misconception of many of our new customers is that they will need to make
5 or 10 gallons of each flavor on their menu in order to start the business. This is not
true. The syrup making process is fairly simple if you follow the steps below.
At our stands we made all of our flavored syrups by the quart on an as needed basis.
Before we opened for the season, we made two quarts of each flavor. One quart served
as a backup while the other quart served as our pouring quart. We installed shelves on
the walls of our shaved ice stands to hold our backup syrup bottles. The pouring bottles
used for dispensing the syrup were usually kept to the right or left our shaved ice
machine. Once the pouring quart was emptied, we simply grabbed the backup off the
shelf and it then became our pouring bottle. The empty bottle was then filled with
flavored syrup and placed on the backup shelf to serve as the next backup.
In order to keep this process running smoothly, we had a quart squeeze bottle filled with
concentrate for every flavor that was on our menu. We also had a 20 gallon mixing
container that held our unflavored, simple syrup. We dispensed the simple syrup from
the mixing container as needed. If your stand does not have city water and sewer, you
will need to make your unflavored syrup offsite, dispense the syrup into gallon jugs and
bring the jugs to the stand as needed. You can flavor the syrup at the stand, quart by
quart, as needed.

water for your syrups and ice making. If you have unsuitable tasting water, we suggest

Kids will go crazy about almost any rainbow combination that you create. Simply use a
variety of colored syrups in order to produce a rainbow effect. Start pouring syrups, one
at a time, in straight lines starting from one side of your shaved ice or snow cone cup to
the other. Use colors that when mixed together will create new colors. For example, if
you use Banana (Yellow) on one side of the container and use Bubble Gum (Blue) on
the other side of the container, a green strip will form down the middle (yellow and blue
make green). It will look as if three flavors were used when in reality only two were
used. We often charged an additional 25 to 50 cents for rainbows.

Mixers
Many customers will request that two or more flavors be served on their shaved ice. We
call these mixers. A great moneymaker, mixers can easily get you an additional 25 to 50
cent for each cup of shaved ice or snow cone sold. We charged an additional 25-cent
for each flavor added. If three flavors were used, we added 50 cent. Some businesses
do not charge extra for mixers at all. Mixers will be very popular at your business.
Cream Flavors
Add some variety to your flavor menu by offering mouth-watering creamy flavors.
Adding evaporated milk (cream) to a flavor gives the shaved ice a creamy taste and
texture close to homemade ice cream. When cream flavors are used, we suggest
adding 25 to 50 cents to your base shaved ice cup price.
To make a quart of any cream flavor, simply add 4 ounces of evaporated milk to an
empty long neck quart bottle. Top off the bottle with any flavor of syrup.
You can also make a gallon of any cream flavor by adding 16 ounces of evaporated
milk to an empty gallon jug. Top off the jug with any flavored syrup.
Concentrates that work great as cream flavors are Banana, Peach, Vanilla (most
popular cream flavor), Strawberry, Pina Colada, Coconut, Chocolate, Strawberry
Cheesecake, Almond and Egg Custard. Acidic flavors usually will not work well since
they may cause the evaporated milk to curdle.
Once the evaporated milk is added, the flavor must be refrigerated and will usually last
for 4 to 5 days.
Snow Caps
Instead of offering cream flavors, some shaved ice businesses will offer what they call a
“Snow Cap.” This is where a cup of shaved ice is made and flavored as normal. After
the final pour of shaved ice syrup, the prepared cup of shaved ice is lightly topped with
a layer of fresh snow. This unflavored layer is then covered lightly in evaporated milk to
form a white “Snow Cap” on top of the shaved ice. As the cup of shaved ice is eaten,
the milk and the flavor will mix together to provide a creamy treat. This is worth at least
an extra 50 to 75 cents.
Toppings
You can always get an additional 25 to 50 cents for each cup with the addition of
various topping or ingredients. Again, check with your local area to see what toppings
are popular in your area. For example, dill pickle juice and cayenne pepper are
extremely popular in some parts of Texas, but may not be popular in other parts of the
country.

Hand dipped or soft serve ice cream can be used to add a special touch to any cup of
shaved ice. At many shaved ice businesses, ice cream is added to the bottom of a cup.
Then ice is shaved and flavor is added to the cup as usual. As the customer eats the
shaved ice, the ice cream will begin to melt and take on the same flavor as the shaved
ice. We sold thousands of these shaved ice treats at our shaved ice business. Some

shaved ice businesses add the ice cream to the top of the shaved ice cup instead of the
bottom. Use your imagination and create your own special recipe. Think of a unique
name so your customers will come back for more. We suggest adding 50 cents to $1.00
additional for each cup with ice cream.
One more thing, when you are practicing we suggest using at least a 12 ounce cup. An
8 ounce can be very hard to learn at first.
Make sure you follow your machines instructions and manufacturer’s recommendations.
Some machines will have blade adjustments, while others won’t. If you ever run into a

The first thing you do with any shaved ice machine, whether it is a cube ice shaver or a
block ice shaver, is to cool down the machine. Since the machine is at room
temperature, you want to cool the machine down by running a few pounds of ice
through it. By doing this, the ice will cool all the metal parts inside the machine. This will
help the machine produce a fluffier snow. A machine cool down should be done every
time at opening and throughout shifts as needed.
To make the perfect cup of shaved ice you have to start with a good
foundation. This foundation starts with a cup of shaved ice complete with a
rounded dome on top. The easy part is filling the cup with shaved ice; the
hard part is getting a perfect round dome. This is generally accomplished
in one of three ways: cup rotation, funnel technique or with a gloved hand.
Cup rotation
Cup rotation is the hardest technique to master, however it is faster than the other
methods. To use this method, first fill a cup of shaved ice level to the top. While holding
the cup at a 45 degree angle, begin to build up ice near the edge of the cup. Rotate
your wrist, while keeping the cup on a 45 degree angle, until a dome of ice is formed on
the top of the cup (see picture to the right). It is definitely a learned technique and will

Funnel Technique
The funnel technique (see diagram below) is one of the easiest techniques to learn
because it produces a uniform dome every time. The only drawback is that if you pack
the shaved ice too much with the funnel, the shaved ice will harden and may become
too crunchy. The key with this technique is a gentle but firm touch with the funnel.
Collect shaved ice on top of the cup, forming a large oversized dome of ice (#1 in
diagram). Use an appropriate sized, round funnel and gently place on the ice (#2).
Gently pack the ice with the funnel and then spin the funnel back and forth to release
(#3). Carefully lift the funnel off the ice and apply syrup (#4). To purchase our rounded

Gloved Hand
If cup rotation and the funnel technique do not work for you, you can always try shaping
the dome with your hand. Please wear a plastic glove to ensure proper sanitation. This
technique is used most often with the Hawaiian style block shavers, such as the Swan
Block Ice Shaver.
Once you have perfected the perfect dome (#1 in diagram), you are ready to pour the
syrup (see diagram on next page). Take any long neck, quart bottle with a pouring

spout, filled with your favorite shaved ice syrup and begin to pour the syrup on the ice.
Start pouring the syrup at the outside edge of the cup (#2) and work around the dome in
a circular motion, going from the outside edge to the center of the dome (#3). The goal
is to let the syrup meet at the top (4). Pour an extra shot of syrup down the middle of the
cup to ensure that the syrup goes to the bottom.
The biggest mistake business owners make is pouring too much syrup. This not only
wastes money, it often makes the shaved ice too sweet. We tell customers that you
want to eat the shaved ice with a spoon not drink it with a straw. Adding more syrup
does not make the shaved ice better tasting. Unflavored ice or white spots in your
shaved ice cup is ok. If you give the ice around 15 to 30 seconds, the syrup will
dissipate throughout the cup. The chart below will give you an estimate of the amount of
syrup to use for each size cup.
Layering
The fluffier the snow, the more syrup you will need to use. In addition, when your ice is
extremely fluffy, your syrup will have a harder time getting to the bottom of the cup. To

alleviate this problem, some of our customers use a layering technique as seen in the
diagram below. This is especially effective in taller cups such as 16 or 20 ounces.
Start the process by filling your cup about 3/4 full with shaved ice (#2 in diagram on next
page). Next add about ½ of your syrup to the bottom of the cup (#3). Form a rounded
dome on top of the cup (#4) and finish flavoring the ice (#5). The trick with layering is to
NOT POUR TOO MUCH SYRUP. You will actually want some unflavored ice (white ice)
in the bottom and middle of the cup. The syrup will eventually flavor the rest of the ice
as your customer eats it.
Straw Technique
Some customers prefer the straw technique instead of layering as seen on the next
page. First, shave a cup of ice with a rounded dome (#1 below). Next, take a straw and
insert in the center of the dome and push gently to the bottom (#2 below). This will
create a void or hole (#3 below) which will allow syrup to travel straight to the bottom
when poured (#4 below). Finish flavoring the ice with the syrup while making sure not to
pour too much (#5 below). Remember, too much syrup is not good!

For purchasing sugar, you may want to check your local grocery store. Often times,
prices on sugar between your local grocery store and a warehouse club will not be that
different. Granulated cane sugar will work great. We have not found any difference in
the brand name sugar versus the generic brand of sugar.
Concentrates and preservatives are bought directly from us. We offer over 70 mouth-
watering flavors for shaved ice and snow cones. Generally, for successful shaved ice or
snow cone businesses, flavor concentrates are the best way to go. Your price per gallon

Pricing
As with almost everything we have discussed, the prices of your shaved ice or snow
cones will vary depending on your location. If you have competitors in your area, we
suggest keeping your prices close to theirs. If you are the only shaved ice business
around, you will most likely be able to charge a little more for your products.
The price at our shaved ice businesses ranged in the above average category. We had
the only shaved ice business in town, along with a fine reputation of serving a quality
product.
If you attend special events, like festival and carnivals or are located in high traffic,
tourist areas, your prices should be adjusted accordingly. 12 ounce cups of shaved ice
can easily sell for $3.00 to $4.00 each in high traffic areas. We have heard prices reach
as high as $5.00 for a 16-ounce cup. Now that is a great profit!

Whatever you work out with your landlord, be certain to have a contract or agreement in
writing. If possible, agree to a fixed number years for your lease. Too many times, a
snow cone or shaved ice businesses has been forced out of business and lost
thousands of dollars in revenue after one season at their location. Try to get at least a
one-year lease with the option to renew for one to two more years. This option will give
you the opportunity to get a feel for the location before committing to a long-term lease.
Labor
Unless you plan on operating your business completely by yourself, labor will most likely
be your largest expense. Because of this, it will be imperative that you keep a handle on
your labor costs.
During warm weather, we tried to keep at least two employees at each of our stands at
all times. However, if it was rainy or cloudy outside, we were quick to send one of the
employees home. By doing this, we were able to keep our labor costs down and save
hundreds of dollars.
At businesses where the owner is not the manager of day-to-day activities, labor costs
should be around 30 – 33%. This includes your manager’s wages. If the business is
owner-managed and the owner works a 40 hour work week at the business, the cost of
labor should average around 25 to 28%.
Insurance
As with any business, insurance is an important factor. It would be terrible for something
unexpected to occur and cost you a large sum of money. Insurance is a great way to
prepare for the unexpected. You can never be too careful.
There are four basic types of insurance that you may need. As always, check with your
local insurance agency and/or a local attorney to determine what may fit your business
and location the best.
1. Product Liability – generally protects you if any of your products harm any
customers
2. General Liability – generally protects you if a visitor to your place of
business is harmed or injured in any way
3. Worker Compensation – generally protects your employees as well as the
company if they are injured while at work. It’s usually required by the state
that your business is located and may or may not cover the owner of the
business. Our worker compensation proved to be invaluable one summer
after an employee was injured on the job.
4. Property Insurance – generally protects you in case of fire, theft or other
type of damage to your business or equipment
Again, it is important to speak with a local insurance agent and/or attorney to determine
what types of insurance best fits your business. As with any business expense, check

Vehicle Expense
Did you know that you might be able take a portion of your mileage on your personal car
as a tax deduction on your yearly tax return? The IRS will allow a deduction of 48.50
cents a mile (in year 2007) for every mile that you classify as business mileage. Visit the
IRS website for more information.
Business mileage may include a trip to your local grocery or wholesale dealer to pick up
supplies. It may include travel to and from your place of business. We suggest keeping
a logbook in your vehicle and write down any mileage that is used for business. You will
need this information as proof for the IRS.
As with any legal or accounting advice in this manual, it is imperative that you first
speak with an attorney or certified public accountant to make sure this applies to your
situation.
Advertising
Now that you have your business open, how do you make sure customers stop by and
see what you have to offer? Besides having a good location and an eye-catching
shaved ice or snow cone building, trailer or stand, what else can you do? Be creative
and think of unique ways to advertise cheaply. You should know your area and
customers better than anyone else.
The idea is to have as many prospective customers visit your establishment as
possible. The more people who sample your shaved ice or snow cones the better
growth your business will experience.
There is an old saying in advertising that says one half of all the money spent on
advertising is wasted. The problem is determining which half is wasted. Listed below are
ways that we have advertised over the years and what seemed to work best for us.
Free Day
We have tried almost everything, including radio spots, newspaper ads and even large
roadside signs. But we have found that the most effective form of advertising that we
have used is an idea that we had on opening day back in 1994.
We were new to the area and there wasn’t another shaved ice stand around for 30
miles. The local people knew what snow cones were, but they were not familiar with
shaved ice. So on opening day, we placed colorful helium balloons all around our
location. We placed a large lettered roadside sign beside the highway in front of our
building that read “Grand Opening, Shaved Ice, 32 Flavors, FREE SAMPLES.”
To kick off our business, we gave samples of shaved ice away the first day. In fact, we
gave away around 430, 6 ounce cups of shaved ice. There was a line of customers

outside our stand all day long, which help to create curiosity for passing motorists. The
next day we sold over $170.00 of shaved ice. The following day we sold over $300 and
from then on we never looked back!
For around $40, the total cost of all the shaved ice given away on opening day, we
launched our business and soon became the talk of the town.
The week following our grand opening was crazy. Sales were great and customers were
happy. Many of our customers that bought from us the first week were the same people
that had stopped for a free cup of shaved ice on opening day. However, the majority of
the customers were brand new. They were customers who were curious about the new
business in town or had learned about us from word of mouth. The latter of the two,
word-of-mouth advertising, has proven to be the most lucrative form of advertising for
our business.
Coupons
Coupons are an effective and economical way to advertise your business. We always
have several hundred “Free Small” coupons printed to give away throughout the
summer. You can have these coupons printed by a local print shop or you can make
your own on any personal computer and printer.
Often times, we were approached to help sponsor a local charity event. Instead of
donating cash, we always offered the coupons. Coupons are a much cheaper way to
make a donation and much more effective for your business than giving cash.
For example, every year we donated 300 coupons to the local “Relay for Life” cancer
walk. Everyone who participated in the walk received a coupon for one free small cup of
shaved ice. Out of the 300 coupons given at the cancer walk, we had around 30
coupons redeemed. Most people lost their coupons, but all 300 people received a
coupon, in their hand with the name of our business on it. Hopefully, they remembered
us and stopped the next time they drove by our shaved ice stand.
Other places to give away free coupons are local swimming pools, baseball and softball
fields, schools and local businesses. We are sure that schools in your area would love
to give away your coupons to students that made the honor roll, principal’s list or perfect
attendance.
For the fastest and quickest results, be sure to place an expiration date on the coupon.
This will encourage your prospective customer to visit your shaved ice business as soon
as possible.
Frequency Cards
Made famous by a national sub sandwich chain, frequency cards or club cards are
extremely popular with all of our customers. Kids as well as adults love to have their
club card stamped for every cup of shaved ice they buy. The cards are usually about
the size of a business card with around 30 squares on one side.

The idea is that for every 10 or so cups of shaved ice a customer buys, they get one
free. Usually each size cup is assigned a stamp value. We had 4-cup sizes. For each
small cup the customer bought, they received one stamp on their club card. For each
medium, the customer received two stamps. For each large cup, the customer received
three stamps and so on. Customers could redeem 10 stamps for a free small (8 ounce),
20 stamps for a free medium (12 ounce), 30 stamps for a free large (16 ounce) and 40
stamps for a free jumbo (20 ounce). Often customers would keep their club card or
frequency card from year to year.
Another promo with frequency cards is to have double stamp days. Let’s say you find
Tuesday to be your slowest day of the week. Try and boost sales by giving double
stamps every Tuesday. This could also be done on rainy days. You might be able to put
a sign out beside the road advertising the double stamps. By just making a few changes
you might make your slow days a little busier.
If you would like to have a club or frequency program of you own, check with your local
print shop or office supply store. They may be able to design a club card for your
program. Usually the cards will be the same size as a business card and cost around 10
to 15 cent each. In addition, your printer may be able to customize a rubber stamp to
work with your frequency program. The upfront costs of this program may be a little
expensive however we have found it to be well worth it.
Newspaper and Radio Ads
Advertisements placed in newspapers and on radio stations can often be helpful,
however they are usually quite expensive. We would suggest keeping the use of this
type of advertising medium to a minimum. You may want to use print or radio ads to
announce your grand opening every summer or you may offer a coupon or two in the
newspaper throughout the summer. It all depends on your area, your budget and how
effective you feel that the ads are working. You may get great results!

Miscellaneous Tips
You can buy cups, spoons and napkins in bulk from a warehouse club like Sam’s,
Costco or Wal-Mart. However, you may have a hard time finding spoonstraws, flower
cups and snow cone cups locally. You may want to purchase these items directly from
us.
Electrical Tape
White electrical tape is a cheaper way of labeling your syrup bottles. Simply write on the
tape with a permanent sharpie and stick it on the bottle. You may purchase white
electrical tape from hardware stores such as Lowe’s or Home Depot. We also sell
printed or blank, high density synthetic Mylar Labels that you may purchase to label
your bottles. Our 3” by 1” labels are moisture and syrup resistant.

If you don’t have a permanent location for you shaved ice business, you may have to
build or buy a concession trailer, portable building or cart. In the next section we will
discuss options available to those who seek to start a mobile shaved ice business.
Portable Building
Many shaved ice businesses across the country use portable buildings, also know as
stands, that are often built on 8” x 8” or 10” by 10” skids. These businesses generally
range from 8’ by 10’ to 10’ by 16’. One end of the building usually has a sliding service
window that allows you to take and hand out orders. Shaved ice buildings are often built
with the same materials as your home. Walls are constructed of standard 2” x 4” studs.
The siding is either wood or vinyl.
Almost all of these shaved ice stands are custom built buy local building contractors
which you should be able to find in your area. You might want to look in your local
yellow pages to find a contractor.

customers in line at the same time. Customers will be able to make their menu
selections before arriving at the order window.
Running Water – Hot Water – Some, but not all, states require hot and cold water. Hot
water is a necessity if you plan to mix your own syrups on site. If city water is not
available for your location, you may get by with using potable water tanks. These tanks
often have a capacity of 10 to more than 50 gallons. Usually a pump is attached to the
water tank than provides pressure for your water system. If portable tanks are used, you
will also need a wastewater storage tank that is usually at least 25% larger than your
fresh water tank. For hot water, you can usually find a 1 to 6 gallon hot water heater at
your local building supply store. Some health departments will allow you to use the hot
water from a coffee pot instead of having a dedicated hot water heater. In depth
information on water and sewer systems is discussed later in this document.
Awnings and Signs – Many snow cone and shaved ice business owners decorate their
building or mobile unit with brightly colored awnings or signs. Check with an awning and
sign company in your area to help you add that special touch to your location.
Air Conditioner – Highly recommended for any shaved ice or snow cone business.
Spray Nozzle - One handy option that we feel is a must for all shaved ice businesses is
a counter mounted spray nozzle that is located beside your shaved ice machine. The
spray nozzle must be hooked up to a pressurized water line to work properly. The spray
nozzle helps you clean your ice shaver as well as help to remove any clogs or freeze
ups that may occur during heavy use. The nozzle recommended is similar to the spray
nozzle found in any kitchen sink.
PH Test Kit - This kit is used to check the PH of your syrups. This is required by some
health departments.
Freezer – Chest type freezers are used for storing block or bag ice. Uprights freezers do
not work well with ice blocks.
Large Ice Coolers – Will be needed for storing cube or block ice for easy access. These
are especially useful for tempering block ice. See instructions about tempering ice
detailed earlier in this manual.
Refrigerator – Will be used to store any creamers or toppings that require refrigeration.
Under counter refrigerators work well since they take up less room.
Drip Pan and Drainage Line – We suggest placing a drip pan under all ice shavers. The
drain pan collects ice overspray, water and spilled syrup and drains it away from the
machine. Drain pans are connected to a hose that discharges into the drainage system.
Shelves for Storage – Usually the more shelves you have, the better off you’ll be.
Shelves will be used to store a variety of items from cups to concentrates. Make sure
that the shelving material is easy to clean.
Ice Cream Dipping Cabinet – A must have if hand dipped ice cream will be served. Ice
cream dipping cabinets are specially made to keep ice cream at the proper temperature.

A regular chest type freezer often will freeze the ice cream too hard. Your ice cream
vendor may be able to provide a dipping cabinet for your business.
Picnic Tables and Benches – During busy times of the day, your customers may have to
wait a few minutes for their shaved ice order. Picnic tables and benches can be very
helpful during these times. You might want to add an eye catching umbrella.
Fire Extinguishers – These are usually required by local fire marshals. Even if it isn’t a
requirement, we strongly suggestion you keep at least one good fire extinguisher
mounted within easy reach in case of an emergency.
First Aid Kit – Be prepared, just in case. There are some first aid kits designed
especially for food service businesses. You may want to check with your worker’s
compensation insurance to see what type of first aid kit they recommend.
Syrup Mixing Tank and Paddle – Used to mix up simple syrup, we suggest at least a 20
gallon mixing container.
Radio – It will aid in passing the time on those slow rainy days or to help entertain
customers.
Paper, Pens, Notepads – Useful for taking orders or making simple notes. We often
purchased notepads from our local print shop or office supply store.
Business Cards and Brochures – Always have some information on hand. You never
know when you will meet a potential customer.
Cash Register/Cash Box – A designated place to keep cash and change secure. Cash
registers are suggested when the “owner” of the business is not always on the job!
Utilities
If you operate your shaved ice business out of a permanent building you should already
have power. For shaved ice stands and concession trailers however, you will need to
have an electrical utility pole installed by your local power company. This is often
referred to as a temporary service pole. This pole will provide the electricity to your
location. If you have a shaved ice stand, you can hard wire the building directly to the
service pole. If you have a concession trailer, you should be able to connect the trailer
directly into a plug on the utility pole. This plug setup will allow the trailer to be mobile
when needed. Please consult with an electrician for the proper method and installation
of electrical wiring.
Generators
If you plan to travel with your shaved ice or snow ball business you most likely will have
to know where your electricity will come from. Ideally there would always be an

electrical plug within 25 feet of anywhere you decide to set up your business; however
we all know that is not the case. What do you do? Do you get out two of your 100 foot
extension cords? Absolutely not! More on drop cords later, but most of our shaved ice
vendors will turn to a generator to supply their power needs.
Generators come in all sorts of sizes and are generally rated in kilowatts often referred
to as KW. This is the measure of watts produced by the generator. Thus a 5 KW will
produce 5000 watts. A 2.5 KW will produce 2500 watts. So how many KWs do you
need? It will depend on the ice shaver your buy. For example, currently our most
powerful ice shaver is our 1047 Hawaii’s Finest, which requires almost 1600 watts. So,
would a 2 KW generator work? NO! You want to make sure that you have a constant
and reliable power source for your ice shaver. Insufficient power will cause the motor in
your ice shaver to overheat and ruin your motor. In order to safely operate the 1047 ice
shaver we would suggest at least twice the amount of watts that is needed. The extra
watts will cover the startup power that is needed by the motor. The smallest one we
would suggest for a 1047 would be a 3500 watt or 3.5 KW generator. Ideally you would
purchase at least a 5 KW generator for any machine.
When determining the size of your generator, don’t forget about the other items that you
will pull electricity. You might have to power a freezer, an air conditioner, a refrigerator,
radio, hot water heater or another ice shaver. Add the wattage requirements of all your
equipment and double the total to get an approximate wattage requirement.
What is the ideal generator? We say the bigger, the better and that you get what you
pay for. We would try to buy or rent the largest generator that we could. A 5000 -7500
watt should do the trick for most businesses, but just be sure and add up all your watts.
Look for generators that run quiet and have electric start. These features will come in
handy when you are in the field.

Extension Cords
First let us say whenever possible avoid using long extension/drop cords. We know they
are needed from time to time so limited use is generally OK. However, we have seen
many ice shaver motors burn up over the years because someone tried to run power
through 300 feet of 16 gauge extension cords.
When you do have to use extension cords, we suggest obeying 2 rules. First of all, use
the shortest cord possible. Don’t use a 100 ft drop cord when a 50 ft will suffice. The
second rule is use a heavy gauge cord. Extension cords are measured in gauges
ranging from 10 to 18. The lower numbered cords are thicker and better for heavier
uses. So don’t buy anything higher than a 12 gauge extension cord.
The reason you want to use the shortest and heaviest gauge is that when electricity
flows through a cord, some of the wattage is lost. The longer electricity has to travel, the

more power that is lost. In addition, thicker gauge cords lose less power than thinner
gauge cords. Lose too much power and as we said before, your ice shaver motor will
burn up, leading to expensive repairs. Don’t run multiple pieces of equipment on one
cord. If you are operating two ice shavers, use two separate drop cords.
If your shaved ice location already has city water and a sewer connection, you should
have this covered. If city water and sewer are not available, you may have to build your
own water and sewer system.
For shaved ice stands that do not have access to water and sewer, you may be able to
build your own pressurized water system inside your stand or trailer with a few of the
basic parts listed below. Please remember that all the concession trailers we sell come
complete with a water and sewer system, similar to the one in the diagram below.

Above is a rough diagram that shows how to use the materials listed to build your own
pressurized water and waste water system. Use this as a starting point. You may want
to plumb additional sinks, a counter mounted spray nozzle, etc. Don’t forget about a
drain line for your machine’s drip pan. Just be sure to follow all local building codes and
regulations. You may want to have a plumber and/or an electrician to look over your
work.
Water pressure is created by the Shurflo pump which will turn itself on automatically
when it senses a drop in pressure. When pressure returns to a certain level, the pump
cuts itself off. It works great!
One caveat, before buying your freshwater and wastewater tanks be sure they will fit in
your stand or trailer. Also think about how you are going to fill and empty the tanks. You
might have to do some additional plumbing. Tanks are sold in several different sizes
and shapes. Some good places to look for tanks are www.USPlastics.com and
www.Plastic-Mart.com.
To keep the water in your water tanks and lines fresh and free of mold, you can buy
some chlorine additives from any local RV store. We also recommend using a water
filter when filling your freshwater tank.
The 6’x14’ is great if you ever want to add other items such as hot dogs, popcorn,
cotton candy, nachos, etc. It even has enough room for a second shaved ice machine.
The added room is great for those busy times when there are 3 to 4 people working in
the trailer.
These concession trailers have it all! In our opinion, they are beautiful. We have been to
the factory, met the owners, the sales manager, the graphics design department and
even the workers who build your trailers. The concession trailers we sell are not your
typical, mass produced, concession trailer that look just like all the others you see.

We searched for years to find a concession trailer that met our high standards and
expectations. We finally found our ideal trailer with this manufacturer. We wouldn’t buy
anything except this line of trailers; we certainly wouldn’t recommend anything else to
our customers. In fact, years before we were a dealer for this line of trailers, we
recommended them without making a single commission.
Typically, all our concession trailers are made-to-order. However, a few trailers may be
in stock during slower times of the year. Just give us a call at 1-800-742-8334 to find out
what is available. If you need to order a trailer, you can usually have one manufactured
within 2 to 6 weeks depending on the time of year. Our busiest time for concession
trailers is April through August, so order early. An $1800 deposit can put a trailer into
production for you. The balance will be due upon delivery or pickup.

Serving Windows
The serving window comes standard on what we call the curbside of all of our
concession trailers. You can see the “curbside window” in location A, in the diagram
above. However, on some of our trailers, you have a few options for placing additional
serving windows.
For the 6'x14' concession trailer, you have the option of having one, two or three
windows. For the 6'x14' concession trailer, you can choose from location A, B or C. Our
most common configuration for the 6'x14' is to have two windows, one at location A and
the other at location B.

For the 6'x10' and 6'x12' concession trailers, you have the option of having one or two
serving windows. The locations available for the 6’x12’ are the curbside location (A) or
on the rear of the trailer (see location B).
For the 5'x10’ concession trailer, the concession serving window can only be placed in
the standard curbside location (A).

Construction
These trailers have been manufactured for almost 20 years. Many improvements have
been made over the years to comply with Federal and State Regulations. Trailer walls
are framed with 2”x2” fir strips, covered with plywood and then with easy-clean
sheeting. The floors are constructed of ¾” plywood covered with sheet vinyl for ease of
cleaning. The trailer’s exterior is covered with baked aluminum sheeting and comes in a
variety of colors. The roof is one piece fiberglass that prevents leaking.
Each trailer comes with an 18 gallon fresh water and 40 gallon wastewater tank. The
water system is considered an open system since you fill up the fresh water tank as
needed. The water fill connection is of a quick-disconnect type. You cannot hook up a
pressurized water line to the trailer and maintain constant pressure. The water system
pressure is maintained by an on-demand 12 volt water pump. Hot water is supplied by a
2.5 gallon, 1500 watt, quick recovery, 110v hot water heater. Water and drain lines are
made of schedule 40 PVC or CPVC pipe. The fresh and waste water tanks are made of
heavy duty ¼” thick polyethylene. The tanks can withstand a constant operating
temperature of 140 degrees F to intermittent service up to 160 degrees F. The tanks are
translucent and UV stabilized. A drain valve is located on the outside of the trailer near
the rear to provide a quick and easy way to drain the waste tank.

Tank gauges
Many states now require that tank gauges be installed on the fresh and waste water
tanks of all concession trailers. These gauges allow you to quickly monitor each tank’s
capacity. Tank gauges can only be installed during the manufacturing process and
cannot be retrofitted on existing trailers.
Tank gauges are not standard on our concession trailers but may be added as an
option. We highly recommend adding tank gauges to all concession trailers.
Sinks
There are 4 sinks in all of our concession trailers. One sink is designated for hand
washing only. The other three sinks are located side by side and will satisfy the three
sink requirement mandatory with most health departments. The dimension of each sink
is 12”l x 10”w x 5.5”d.
Electrical System
There are 5 pieces of equipment in the concession trailer that require electricity. The
electrical requirements for each are below:
Inside the trailer you will find multiple 110v plugs and 12v plugs. For example, a 6’x14’
trailer will have five 110 volt plugs and two 12 volt plugs in the following locations:
• (1) 110 volt outlet above the hand wash sink counter (for additional equipment)
• (1) 110 volt outlet below the hand wash sink counter (great for a small
refrigerator)
• (1) 110 volt outlet above the chest freezer (used for freezer)
• (2) 110 volt outlets on rear wall above the ice shaver counter (for 110 volt ice
shavers or other equipment)
• (1) 12 volt plug on rear wall above the ice shaver (for 12 volt ice shavers)
• (1) 12 volt plug located on hand wash sink cabinet (for cell phone)
The concession trailer is supplied with a 30 amp electrical plug and cord which can be
used to plug directly into electrical service. This is handy if you have an electrical pole
nearby. The plug is wired directly to a breaker box inside the trailer that distributes
electricity throughout the trailer.

The concession trailer also comes with a 12 volt battery and a battery charger that will
power the 12 volt lights, water pump, the cell phone plug and a 12 volt ice shaver if
needed. When power is supplied to the concession trailer, the battery charger
automatically keeps the battery fully charged.
Bottle Racks
Each trailer comes with white wire bottle racks that are located on the rear wall of the
trailer just above the ice shaver counter. Depending on whether or not a rear window is
added, the wire racks will hold between 25 to 36 bottles in the 6’x14’ concession trailer.
Menu Light
Each concession trailer comes with a menu light that is located on the left side when
you are facing the serving window, from the street. Menu lights are only available on
curbside windows only. Menu lights cannot be added to additional windows due to
space requirements.
Lighting
There are two types of light fixtures located inside the trailer. You will have regular
halogen lighting which runs off of 110 volt electricity. You will also have 12 volt lighting
which operates off of the 12 volt battery.
Freezer
A residential style chest freezer comes standard in all of our concession trailers. The
6’x14’, 6’x12’ and 6’x10’ trailers come with a 13 cubic foot freezer that will hold around
50 blocks of ice (5 ½” by 5 ½” by 12”). The 5’x10’ trailer has a 9 cubic foot freezer that
holds around 36 blocks of ice (5 ½” by 5 ½” by 12”). Of course these chest freezers will
also hold bags of ice for cube ice shavers!
The chest freezer in the concession trailer is designed for keeping ice cold; it is not
designed for freezing blocks of ice.
All counters have a standard 25” depth. The rear counter on the 6’ x14’ trailer that holds
the ice shaver measures 72” w x 25”d. In the 6’x14’ trailer there is extra counter space
beside the hand wash sink that measures 42”w by 25”d. This extra counter space can
be used for another ice shaver or other equipment, such as hot dog steamers, popcorn
machines, etc.
There is a space for a small refrigerator underneath the hand wash sink counter in the
6’x14’ trailer.

Lettering/Pinstripes
Standard pinstripes are included in price. Custom lettering is not included in base price
but can be added at the factory for a very reasonable charge.
Delivery is not included in the price. The trailer can be delivered directly to you for
around $1 per mile, plus fuel surcharge. The delivery fee is based on mileage, one way
from the factory to the destination. It is not based on round trip mileage. If you desire,
you can pick up the trailer directly from the manufacturer.
Buyer will be responsible for all titling and sales taxes that are applicable. Buyer will be
issued a MSO at the time of delivery or pickup. Residents of Alabama will be charged
sales tax.
The 5’x10, 6’x10’ and the 6’x12’ trailers use a flat 4 pin wiring hookup for the lights. The
6’x14’ trailer uses a 6 pin, small, round wiring hookup for lights and brakes.
Towing Equipment
All trailers use a 2” ball for towing. Ideal ball height from the ground to the top of ball is
15” to 16”.
Trailer Payment
If there is not a trailer in stock that meets your requirements, an $1800 deposit is due in
order to build your trailer. Balance is due, in full, in the form of a cashier’s check, prior to
delivery or pickup. If the trailer is to be delivered by the factory, full payment is due
before trailer will leave the factory. All transactions must be completed within 30 days
from the completion date of the trailer or your deposit will be forfeited. Credit cards are
not accepted for trailer payments or deposit.
Make it easy for your customers to buy from you and watch
your sales multiply. The insulated compartments will hold ice
for hours.

Most shaved ice and snow cone machines will fit on the counter top. Great for shaved
ice or snow cone machines that are smaller than 18" W x 18" L x 30" H and not heavier
than 85 lbs. (Check dimensions first!)
