SCIENTIFIC METHOD

Problem: Is the amount of sugar used in the recipe will affect the size of the
bread loaf?

Materials: All-purpose flour, Water, Instant Yeast, Sugar, Salt, Milk, Butter,
Oven

Hypothesis: If more sugar is added, then the bread will rise higher.

Procedure: There are three set-ups:

Set A: 50g sugar (control)
Set B: 60g sugar
Set C: 70g sugar
1. Mix all the ingredients together in a food mixer for 5
minutes.
2. Place into a bowl. Cover ad prove till doubled in size
somewhere warm but not hot.
3. Remove the bread dough and divide into three. Knead and
shape into loaves then place it to the baking trays.
4. Lightly spray with water to stop the dough drying out then
prove again until doubled in size.
5. When ready, bake on trays at 230oC for 15-20 minutes until a
deep color is achieved and the bread is cooked.
6. Removed from the oven and place into cooling racks.
7. Measure the loaf.

Observation: Size of Baked Bread (L x W x H) cm3 Trials

Amount of Trial 1 Trial 2 Trial 3 Average
Sugar (g) Size (cm3)
50 1296 1440 1296 1344
(control)
60 1404 1296 1440 1380
70 1638 1638 1560 1612

Control: All ingredients and materials except for the amount of sugar.
The control in the amount of sugar is 50g.

Conclusion: Based on the observation, I therefore conclude that if more sugar is

added, then the bread will rise higher.
