Note: Most recipes have been taken from various recipe blogs and websites and some were results of trial-
and-error of dishes familiar to me. All of these I have tried and rated and would have had measurements or
methods or notes revised/added to suit my taste. Most are simple or easy even when they seem to have a
long list of ingredients.
Feel free to experiment and substitute things; for example, if no access to vegan chick’n stock, just use
vegetable stock. Mushrooms and tofu can be substituted for each other in some recipes like sisig. The type
and number of kinds of vegetables may also be reduced or replaced in many instances.

NOTES
For the egg replacer, Orgran ‘No Egg’ is available in most supermarkets (like Countdown) and health
stores in New Zealand. If unavailable, just add a tablespoon of water to replace it.
The spiced seeds and nuts is optional and can be prepared up to 5 days ahead. Store in a sealed
container. You can use as few or as many kinds of nuts and seeds as preferred.
If not using the spiced seeds and nuts, add salt and pepper to the smashed avocado.

You can add pechay or bok choy or similar leafy green vegies 5 minutes before removing from heat.

Vegan chicken is optional and you can replace vegan chicken stock with vegetable stock and the
vegan fish sauce may be replaced with soy sauce to taste.

You may use any onion, skip the jalapenos, use only 1 kind of capsicum (bell pepper), adjust or skip
the cayenne and hot sauce to taste, skip the liquid smoke or replace with smoke paprika or the
cocoa powder
