’m a pretty good cook, especially when it comes to


grilling. But this issue’s Web Find discovery has literally
turned my world upside down. Like a lot of guys, I’ve
always subscribed to the “flip it once” theory of how to
cook a great thick steak. However, the site Rouxbe.com has
completely flame-broiled my grilling paradigm. Rouxbe.com
is truly the best online cooking school we’ve seen. Read the
article, then go to delightmag.com to watch their video on
how many times you should really flip a steak.

This month’s TV Find is also food focused. It’s about a show


called Food(ography) from the Cooking Channel. One of the
best things I discovered personally by watching this eclectic
and entertaining array of food history, culture and trends,
is that there is a chocolatier on New York’s Lower East Side
called Shoppe Roni-Sue. It specializes in “Pig Candy”—crispy
fried bacon strips dipped in a thick layer of milk or dark
chocolate. If that whets your appetite, read more on page

foodie discusses his or her favorite food experience
while casually preparing a recipe—minus the step-by-
step instructions (pencils down, people!). Food(ography) may include cooking and history, but it focuses on
appreciating food and how it contributes to shaping our world.

Comic, writer, faux-news man, and master of snide observations,
Mo Rocca seems an unlikely host for a food show. That’s the beauty
of Food(ography). It’s an atypical show worthy of an atypical host.
Although Rocca classifies himself as a “non-cook” with a yen for
dining out driven by his “pathetic refrigerator,” he doesn’t come to
Food(ography) lacking opinions about food. He lives for red meat,
finds nothing more tragic than a gamey duck, and dies a little on the
inside when chicken meat is dry or tough. Not exactly groundbreaking
views, but enough to earn him a brief stint as a judge on Iron Chef
America in 2008 where he lampooned master chefs with the same
nasally commentary with which he deprecates himself.
Obviously, to Rocca food is fun. And now we understand why
Food(ography) brings him along for the ride. After all, what other
middle-aged man could pull off discussing food origins while
sprawled across a dining room table with legs bent and feet
mindlessly fluttering like a lovesick teenage girl?
Food is fun. History is interesting. Food(ography) is both. Get
ready for Mo’.

his chocolate-inspired “21st Century Cocktail”:
1-1/2 oz. London dry style gin
3/4 oz. fortified white wine with bitter orange
1/2 oz. white crème de cacao
3/4 oz. fresh lemon juice
5 drops chocolate bitters
Shake with ice for 15-20 seconds.
Double strain into chilled cocktail glass and
garnish with grated coffee bean.

You’d be hard-pressed not to find this
offbeat series a welcome treat. Beyond

focusing on science and nature. Better

so kudos to PBS for continuing its long-
standing commitment to keeping its pro-

season—the celebrity roster is downright
impressive. Look for Modern Family’s Julie
Bowen, Heisman Trophy and Super Bowl
winner Reggie Bush, former American Idol
judge Kara DioGuardi, actors Colin Farrell,
Jennifer Garner and Jude Law, and popu-
lar recording artist Usher to find their way
onto the street. Let the learning begin …
