PRACTICES
I. INTRODUCTION
Good operating practices (GOP) or good warehousing practices (GWP) generate less waste by making
existing processes more efficient. GOP/GWP is a general knowledge that measures and applies to the
human side of business rather than the technical side.

II. OBJECTIVES
To provide an easy, efficient and inexpensive yet effective guideline to handle and serve a safety and quality
products and services that benefits the employees, the general public, and the environment.

III. SCOPE
 This program is applicable to all personnel entering the Jentec Storage Inc. i.e.
 Employees- An individual show works full time under a contract of Jentec Storage Inc.
 Client- a person served by or utilizing the Jentec Storage Inc. Services
 Contractors- organization or individual that contracts with Jentec Storage Inc.
 Visitor- someone visit and who is not directly hired/part of Jentec Storage Inc . operation.
 This program is relevant to warehousing and distribution of stored products.

IV. GOOD OPERATING PRACTICES

4.1 Warehouse Personnel


All personnel working in direct and indirect contact with the product, food contact surfaces, and
packing materials should conform to hygienic practices while on duty to the extent necessary to
protect against contamination of food.

4.1.1 Personal Cleanliness


4.1.1.1 All warehouse employees/personnel must take a bath prior to working. Every person
should wear the appropriate clothing or the prescribed uniform.
4.1.1.2 All warehouse personnel shall not use perfume and wear jewelry inside the warehouse.

implemented for cold and dry storages, for these things might fall in raw materials,
equipment or containers during product handling/preparation.
4.1.1.3 Hands should always be washed before commencing work, after using the toilet, after
handling contaminated material or as needs arise whenever necessary.
Hand Washing Procedure:
 Wet hands with running water.
 Lather with hand soap for 10 seconds.
 Scrub hands, nails, in between fingers, and up to elbow for 20 seconds.
 Rinse hands with water until it is no longer soapy.
 Sanitize hands with sanitizer plus.

4.1.1.4 Hand washing signs and procedure shall be posted at designated in hand washing
areas.

4.1.2 Personal Behavior


4.1.2.1 Eating, smoking, spitting, eating candies, chewing gums, or any behavior which could
result in contamination of food and unhygienic practices shall be prohibited in the
warehouse area.
4.1.2.2 Jumping off dock and climbing on the racks are prohibited also to ensure safety of
property and personnel.

4.1.3 Training and Supervision


4.1.3.1 All existing warehouse personnel should undergo GWP/GOP/GMP/Food Safety
Orientation before their first day to report for work and a refresher training annually.
Re-orientation will be conducted for failed results on exit criteria and whenever a new
policy/program will be implemented.
4.1.3.2 Exit Criteria 90% passing score
4.1.3.3 Re- Orientation and exam retake for personnel below 90% passing score

4.1.4 Control of Diseases


4.1.4.1 All existing warehouse personnel shall provide a Food Handler’s Health Certificate
obtained from the Local Government Municipality. This is a proof that the personnel
has undergone and passed the physical exam conducted by the City Health Office.
4.1.4.2 Warehouse personnel shall be inspected everyday upon entering the cold storage area
for skin disorders such as open wounds, skin allergies, sores, etc. Finger nails also are
inspected. It should be clean and short. All item handlers are not allowed to wear
jewelry, nail polish and watch.
4.1.4.3 Warehouse personnel with unhealthy conditions due to intestinal disorders such as
diarrhea and LBM (lose bowel movement), colds, fever, flu and other illnesses are
advised to rest and not allowed to work.

4.1.5 Appropriate Attire


4.1.5.1 Employees including visitors entering the Jentec Storage Inc. shall wear the
appropriate attire or the prescribed uniform. Wearing of skirt, shorts, opened toe foot
apparel, sando and/or sleeveless, torn garments and dirty clothing are strictly
prohibited in Jentec Storage Inc.
4.1.5.2 Warehouse personnel entering the cold storage area shall be checked by the Security
posted on the main gate.
4.1.5.3 Complete cold storage garment (thermal jacket) shall be worn before entering the cold
storage area. The gloves shall be intact and hygienic condition. The gloves shall be
made of an impermeable material. Below are the required garments inside the facility :
 Dry Warehouse – Hard Hat, reflectorized vest and safety shoes.
 Cold Storage Garments – Thermal jacket, thermal pants (optional), bonnet,
reflectorized vest, safety shoes and gloves (optional).
4.1.5.4 When going out of the cold storage room during breaks or every time they leave the
area; the thermal jacket shall be removed and kept in the lockers. Before using the
toilet, the garment for cold storage rooms shall be removed.

4.1.5.5 Client’s personnel are also required to wear the cold storage garments while inside the
storage areas.

4.2 Plant Construction and Design

4.2.1 Grounds
4.2.1.1 Grounds shall be kept clean and free from odor on the following areas: back lawn, front
lawn, offices, guard house, engineering room, stock room, and car park area.
4.2.1.2 All garbage containers shall be covered, collected and disposed properly.
4.2.1.3 Unused equipment, facilities or any other material shall be kept in the storage room.
4.2.1.4 Pathways and roads shall be free from dirt and visible waste.
4.2.1.5 Grasses and weeds shall be well trimmed.
4.2.1.6 Grounds shall be constructed and maintained to protect against weather, flood, ground
seepage, and the access and harbouring of vermin, rodents, insects and other
animals.
4.2.1.7 Good housekeeping shall be done by storing cleaning equipment properly and
removing litter/waste within the vicinity of the warehouse/storage area.

4.2.2 Floors and Drains


4.2.2.1 The floor-wall joint shall be covered or rounded.
4.2.2.2 Drains shall be smooth and have sufficient capacity.
4.2.2.3 Cleanliness shall be maintained at all times.

4.2.3 Walls and Ceilings
4.2.3.1 Walls and ceilings shall be resistant to moisture and washable with no obstruction
below 4 feet.
4.2.3.2 Walls and ceilings shall be smooth with crack-free surfaces, white or light in color, and
always kept clean.
4.2.3.3 There shall be no presence of cobwebs.

4.2.4 Lighting
4.2.4.1 Adequate lighting shall be provided to storage rooms, ante-rooms and loading bays.
4.2.4.2 Lights suspended over the product shall be provided with protective cover, shatter proof
and must be kept clean.

4.2.5 Aisle or Passageway


4.2.5.1 Aisle or passageway shall be at least 1.5 meters of distance to provide access for
transportation of stocks from one area to another.
4.2.5.2 No stocks shall be blocking the way and must be kept clean.

4.2.6 Truckers Lounge Area


4.2.6.1 This zone shall be the recreation and resting area for client drivers and truckers.
4.2.6.2 This area must be kept clean and maintained.

4.3 Sanitary Facilities

4.3.1 Water Supply


4.3.1.1 Water shall be sufficient for the operations intended and derived from an adequate,
clean, and potable source.
4.3.1.2 Microbiology testing is conducted quarterly and Physico-Chemical testing is conducted
annually by any laboratory services accredited by DENR, DOH and PAB.

4.3.2 Materials Disposal System


4.3.2.1 Garbage disposal shall be segregated properly (Biodegradable, Non-biodegradable
and Recyclable).
4.3.2.2 Biodegradable or wet materials shall be disposed in green garbage containers.
4.3.2.3 Non-biodegradable or dry materials shall be disposed in yellow garbage containers.
4.3.2.4 Recyclable materials shall be disposed in blue garbage containers. The recyclable
materials in yellow garbage containers are transferred in the Materials Recovery
Room.
4.3.2.5 Garbage containers shall be kept closed, maintained, not over flowing and regularly
cleaned.

4.3.3 Toilet Facilities


4.3.3.1 The toilet facilities shall be provided in a convenient location for employee. It shall be
constructed with walls, ceilings and floors of a material which can be easily cleaned
and maintained in good repair.
4.3.3.2 Hand washing facility (hand washing sink, hand soap and water supply) shall be
available inside. There shall be a hand washing signage on the area requiring workers
to wash their hands especially after using the toilet.
4.3.3.3 Toilet shall be cleaned every two hours and whenever area gets dirty.

4.3.4 Hand Washing Facilities


4.3.4.1 Hand washing facilities and signage shall be provided in comfort rooms and cold
storage entrance area.
4.3.4.2 Adequate supply of potable water and liquid soap, sanitizer and hand dryer shall be
provided. As a corrective action for the absence of hand dryer, a paper towel shall be
provided in all hand washing facilities.
4.3.4.3 Cleanliness of hand washing facilities and surrounding areas shall be maintained.

4.3.5 Chemical and Cleaning Materials Storage
4.3.5.1 All cleaning materials shall be kept in an accessible area for cleaning.
4.3.5.2 Cleaning materials shall be placed in a cabinet wherein it is arranged according to its
use.
4.3.5.3 Each storage area shall be group of cleaning material of its own (i.e. push brush, broom
stick, plastic dustpan and etc.).
4.3.5.4 Cleaning chemicals and sanitation implements shall be stored in a secured storage
room.

4.3.6 Equipment
4.3.6.1 Warehouse equipment shall be clean at all times, non-reactive to food and can be
easily maintained.
4.3.6.2 Warehouse equipment shall be resistant from corrosion, good condition and can
facilitate repairs.
4.3.6.3 All utensils and equipment shall be cleaned after use.
4.3.6.4 Cold storage room (freezer and chiller) shall be fitted with proper measuring devices
for regulating the control parameter such as the temperature.
4.3.6.5 All digital and/or analogue testing instruments shall be calibrated once a year and
maintained in good working condition.
4.3.6.6 Man-Handling equipment (fork lift and jack lift) shall be properly cleaned after work
shift.
4.3.6.7 Equipment shall be clean and undergo preventive maintenance program.
4.3.6.8 Clean-as-you-go (CLAYGO) policy shall be implemented to all section to ensure
cleanliness.

4.4 Processes and Controls

4.4.1 Plastic curtains are used to minimize flow of hot air to cold air and vice versa. It
should be clean and not torn.
4.4.2 Plastic pallets shall be used inside the Warehouse Storage Area. Broken/damaged
pallets shall be segregated and shall not be used. If in case a wooden pallet will be used, carton
liners shall be used as protection of the products from wood splinters. Disposable wooden
pallets accompanying imported meat can be used as long it is clean and in good condition, this
will be a onetime used only. Doors shall be free from corrosion and with a signage of ALWAYS
KEEP THE DOOR CLOSED.
4.4.3 Doors shall be free from corrosion and with a signage of ALWAYS KEEP THE DOOR

4.4.4 Supply of water shall be enough to supply the needs of the operation. Water shall be
potable.
4.4.5 The use of power supply in cleaning shall be limited since the dirt can be removed by
the use of push brush.
4.4.6 Stocks or products shall not be placed under the evaporator or placed directly
touching the floor.
4.4.7 Stocks in the warehouse shall be stored away from the walls.
4.4.8 Room temperature shall be maintained at all times.
Below are the lists of required temperature for storage rooms:
Freezer (Other Products) >> -12°C to - 23°C
Freezer (Ice Cream Products) >> -22°C to - 28°C
Chiller >> 1°C to 4°C
Ante Room >> 1°C to 7°C
Aircon >> 20°C to 26°C
Dry Warehouse >> 27°C to 31°C
Loading Bay >> 1°C to 10°C
4.4.9 Temperature monitoring is conducted by Jentec Engineering Services (JES).

PRACTICES
4.4.10 Lockers shall have a padlock and designated for each employee. Bringing food inside
the locker is not allowed as well as eating. Any damages shall be reported to the Jentec Admin
Personnel.
4.4.11 Delivery personnel shall abide by the rules and regulations of the depot. Upon arrival,
personnel shall wash and sanitize hands on the hand washing station to prevent contamination.
4.4.12 Delivery van must be clean, sanitized, no holes/gaps on the interior van and free from
infestation prior to loading.
4.4.13 All incoming delivery vans with loaded products for storage or dispatching shall remain
locked or sealed upon arrival, before unloading, before leaving the premise and during
transportation.
4.4.14 All outgoing delivery vans without products shall be unlocked for security checking
before leaving the premise.

4.5 Warehouse and Distribution

4.5.1 Storage and transportation of stocks shall be free from physical, chemical and microbiological
contamination and/or deteriorations of the food and the container.
4.5.2 Warehouses shall be free from rodents, insects, birds, animals and other pests.
4.5.3 All product spills shall be cleaned up immediately, as this is an important preventive measure
against pest harbourage. Affected product should be segregated and inform client for proper
disposition of affected products, disposal of product should comply with regulatory procedure.
Affected materials and equipment should be segregated and cleaning should be done
immediately, follow procedure in cleaning equipment (QFS MSP 2011-06)
4.5.4 No pesticides, disinfectants, toxic chemicals and/or other hazardous materials shall be stored
near the storage of incoming products or ready-to-eat products.
4.5.5 Storage shall be organized to ensure that potentially contaminated incoming materials are not
stored next to finished products.

4.5.6 Defective stock, wrong orders or complaint goods shall be tagged with “DAMAGED
PRODUCTS” or “HOLD ITEMS” for proper identification. Contaminated products are restricted in
Jentec Storage Inc.
4.5.7 Storage facilities shall be secured.
4.5.8 First in first out policy (FIFO); First Expiration, First Out (FEFO); Last expiry, First Out (LEFO)
shall be followed in the operation and a stock control system must be in place.
4.5.9 All storage premises shall be kept clean and tidy not only inside but also the surrounding areas.
4.5.10 GOP/GWP signage are posted in all areas where product is stored, staged or handled; most
importantly inside the restrooms, locker rooms and inside the warehouse.
4.5.11 Appropriate signage must be strategically located and visible in all direct entrances to
warehouse storage, handling areas and restricted areas.
4.5.12 All personnel who are absent and diagnose with disease must first submit their self to the
residing nurse for checking and must secure fit to work certificate prior back to work.

VII. EVALUATION

7.1 Internal Audit

7.1.1 Frequency of internal audit required by other Clients are set by their own Program or as
requested by the Clients.

7.2 Review of Documentation

7.2.1 The review of this program shall be held annually and whenever necessary. The members of
the Review Committee shall consist of the Depot Manager, Depot Supervisors, Leadman and
Depot Clients.
